HAPPY EATING Another year has just flown by and this year we celebrated our 7th birthday. It really made us look back and appreciate our humble beginnings and the company we have grown into today. Wow what a ride! For me food is about the people we share it with. Sitting down to eat over a glass of wine, sharing stories over a simple meal made from fresh ingredients, has to be the highlight of my day and Christmas is certainly no exception. A time to reflect and enjoy the all good things that we have. At Farro Fresh, we are all about showcasing ‘food from people who love to cook’. In this magazine we hope to tempt and delight your tastebuds, and hope that you’ll be inspired to add something new to your repertoire. This year we have made a couple of new additions to our Christmas meat selection. The first is a wonderful stuffed free range turkey roulade, that you simply defrost, roast, rest, and then slice into lovely round portions. The second is our individually portioned turkey carvery legs, deliciously pre-stuffed with orange and cranberry, so you have more time to spend with your friends and family on Christmas Day. Take a look at my selection of Farro favourites in the coming pages - these are products that have all become essentials on my shopping list in 2013! OUR GUIDE TO ALL THINGS DELICIOUS One of our favourite past times at Farro is chatting with shoppers about how much they enjoy sharing delicious artisan products with family and friends. I truly believe one of the greatest pleasures in life is being able to share great food with others, especially with a glass of good wine and music!

In the following pages you will find a selection of our favourite products this Christmas at Farro... some are old favourites that have become entertaining must-haves and others are brand new to store. I’m sure you’re going to fall in love with them as much as we have.


WILD WHEAT Wild Wheat breads are renowned in local restaurants, cafés and good food stores. Andrew Fernside established Wild Wheat after a stint in the UK as a chef, and on returning to NZ he found a rather desolate bread offering! Created with free-captured yeasts Andrew’s sourdoughs are his most celebrated breads with their beautifully thick, crunchy crust and tart, chewy interior. Andrew has developed his original sourdough starter for over ten years to be deliciously matured and tasty. Delivered fresh daily and perfect for festive eating!

KAPITI ARTISAN BREAD There is a lot to be said for a hot loaf of bread straight from the oven and Kapiti Artisan Breads have worked hard to produce just thatthe perfect bread for you to heat and eat at a home. Parbake breads give you the freedom to choose when to eat your loaf by finishing the baking process at home. Great for keeping in the fridge for those bread emergencies. We recommend these if you’re heading away this Summer!

RINGAWERA Ringawera produce these delicious lavash crackers on Waiheke Island. And like true artisans- their scrumptious lavash use local ingredients wherever possible and are all free of additives. Each of the five flavours is distinctly different making them perfect for enjoying with a summer platter. Try sea salt, sesame, spiced, herb, as well as the delicious Chilli and Olive. Perfect for topping with your favourite meats, spreads and salad ingredients for a light and delicious summer lunch.

CULLEY’S This delicious range of multi-award winning hot sauces has been carefully crafted to achieve a balance of exquisite flavours with the heat of chilli sauce you would expect. The range caters for everyone, from mild to scorching hot – these flavoursome condiments are a must have on the bbq, at the bach or in your hampers this summer! We love the Culley’s range here at Farro because it is a delicious way to give your food an extra kick!

BLACK BARN SAUCES Hawkes Bay based Black Barn Vineyards’ delicious range of sauces have become a real favourite in Farro stores, because lets face it, who doesn’t adore a gourmet sauce that can transform just about any dish into something special. With flavours such as chunky tomato, spicy chilli, steak sauce, smoky BBQ and their divine salad splash which is great served over a bed of crisp salad greens.

THE VILLAGE PRESS A great way to raise the bar for salads and steamed, baked and boiled vegetables is with one of our newest favourites ‘Shake it Up’. Splash it over warm or cold seafood, chicken or other meat salads, or add a dash to mayonnaise and creamy dressings to really make them sing. Shake it Up is a blend of premium New Zealand grown olive oil from The Village Press, high quality red wine vinegar and seasonings put together by chef and Masterchef judge Ray McVinnie.

TAIHIKI ORCHARDS Grown just outside Glenbrook, Taihiki Orchards create one of the most delicious vinaigrettes from the figs they have been producing since 1985. A hard lot of hard work goes into growing these beauties, that Taihiki Orchards have left largely unadulterated, allowing the wonderful flavour of fig to shine! We love this just as it is on a salad, but don’t be shy in tossing this about on a good roast leg of lamb or chicken too. See page 10 for our Summer Fig Chicken recipe!

MARTIN BOSLEY Martin Bosley’s Palm Sugar dressing lends itself to almost anything you can think of. Not to be confused with palm oil, palm sugar comes from the crystallised nectar of date palms and coconut palm flowers. I use it in everything from a bowl of salad greens to something more complex like barbecued duck and rice. This dressing should come with a warning- it is that good! Watch out, it’s addictive!


BAGEL LOVE Bagel Love bagels have become a staple in our pantries and this summer they’ll be on high rotation at breakfast. Bagel Love follows a simple and traditional recipe to help them achieve the New York Style bagel they are famous for. The dough is boiled prior to baking giving them a distinctive shiny skin and chewy texture. And with no added preservatives these are perfect for the whole family to enjoy. They’re perfect topped with just about anything from sweet spreads to savoury salmon or bacon.

MOUTERE GOLD A long time classic at Farro Fresh Moutere Gold products are all about small batches and really intense quality. Their passionfruit curd is a summer must have. Made in batches of 12 at a time using locally grown fruit, the care and attention taken to produce Moutere Gold’s curd and jams is exceptional. Try is as a pavlova topping or simply pop into some sweet pastry cases!

CLEARWATER’S Heading away over summer? Clearwater’s delicious organic yoghurt is a great option for those who want a great tasting yoghurt for the festive season. It is especially good with chopped summer fruits. The yoghurt is a thick greek style, which lends itself well to cooking and eating, just make sure you mix in the delicious ‘cream top’ first! SUNSET EGGS If you are anything like us, choosing free-range is very important when it comes to what our families are eating, which is why Sunset Free Range eggs are always on our shopping list! Not only are they delicious, but knowing that they are from a SPCA approved family farm just fifty minutes from Auckland is absolutely great! Use these eggs for tasty breakfasts and easy afternoon quiches and frittatas this summer.

ALLPRESS XMAS BLEND Sitting down to a great cup of coffee amongst the chaos of Christmas is a remarkable thing. MAHI FARMS BACON There is something comforting about knowing you have bacon on hand over the festive season - it is so easy to turn into a number of dishes from breakfast right through to dinner! Since arriving on our shelves, Mahi Farms bacon has been a huge hit with customers and staff alike. We particularly like how it doesn’t shrink like other bacon can, meaning more bacon for your buck!

ARANO JUICES Arano, New Zealand’s oldest chilled juice brand, was born in 1982. They are absolutely obsessed with perfection and bringing you New Zealand’s best chilled juice. DIVINA MOZZERELLA Carefully crafted from the milk of buffalo - the richest milk in the cheesemaking arsenal, buffalo mozzarella is a gorgeous contradiction: feather-light and unmistakably rich, delicate and full flavored. PROPER CRISPS Proper Crisps have been a favourite of ours for a long while, as we had been searching for a chip that wasn’t full of nasties but also one that tasted great. This Nelson based business has created what we think are the most delicious chips we have tried. They start with South Island potatoes then cook them in small batches and flavour using only natural ingredients. A definite entertaining staple over the festive season.

SUNTORY PREMIUM BEER Ten years of development was undertaken by Suntory Japan to create a pilsner style beer with a delicate hoppy aroma, firm body and a deep rich flavour. Taking from the beer making traditions of the Czech republic and Germany and adding a Japanese twist, Suntory Malt is a true Japanese beer ideal to match with food and a great new addition to the imported beer seection at Farro Fresh.

FIRSTLIGHT MEATS Wagu has taken it’s place in the restaurants of Auckland being a much celebrated and eventful dining experience but at Farro we have been enjoying Wagu at home for some years courtesy of Firstlight. Grass-fed beef is not only better for the cow but also creates a more delicious meat, higher in Omega 3 than grain-fed meats. As the only commercially sized producer of Wagu beef we are proud to have them as part of the Farro family. Firstlight also raise ethical venison- another aspect we are very proud to support.

SIX BARREL SODA CO Six Barrel Soda Co. grew from a love of classic sodas and soda fountain culture. Their syrups are made from all natural ingredients and from hand juicing lemons to bottling and stamping labels, every step of their production process is designed to make each of their syrups unique. Try them at home, mixed with one part syrup to five parts soda, or sparkling water. This summer we will be enjoying their delicious new celery tonic over ice for a refreshing cocktail!

EDEN FARMS EXCLUSIVE Eden Farms raise free-roaming and well cared for chickens and this is evident in the superb quality of the meat they produce. O’NUTS O’Nuts are a delicious hand crafted nut snack from Alexandra’s that is batch roasted right here in Auckland. They are the perfect snack for enjoying with a few drinks on a summers day. Their premium mix of specially coated peanuts, crunchy almonds and pumpkin seeds, dusted with a little Marlborough sea salt adds something special to your Christmas celebrations, and don’t forget their ‘Raving Roast’ and ‘Raving Cajun’ (with a little chilli for those who like things spicy.)

PINOLI PINENUTS Finally a delicious pinenut grown right here in New Zealand. Pinoli Pinenuts have been flying off our shelves and for good reason... they taste fantastic! Grown in Marlborough and processed in small batches means you get the freshest pine nuts possible. Pinoli Pine nuts can be used in both savoury and sweet dishes - great in salads, added to pasta, stirfrys, pesto or added to deserts and baking. A pantry essential and a fantastic Christmas gift for foodies!

ROCKET KITCHEN Rocket Kitchen, Auckland’s iconic cake store, specialises in hand-crafted cakes and cookies. Their delicious treacle flavoured festive cookies are hand-made with love, hand iced and are a hit with both young and old. Great for popping into lunch boxes, picnic baskets or even as a small present from Santa. Delivered daily, you will find Rocket Kitchen cookies, as well as their popular range of cakes in our central deli. Look out for their cookies from mid-November.

COLESTOWN The Peanut Bar by Colestown is a new favourite - roasted, salted peanuts, peanut butter and virgin blue coconut oil, blended with creamy callebaut milk chocolate. It is the perfect snack bar for when you are on the go and would make a delicious addition to the family’s Christmas stockings this year. Recently the bar was a finalist in the NZ Food Awards, so the word is out about these delicious morsels!

In Italy, Christmas wouldn’t be complete without a round of the traditional spiced cake typical of Siena – Panforte. And here in New Zealand we are lucky enough to have our own handcrafted Panforte, made fresh in Christchurch. Our pick of the four flavours is Panforte Fichi – roasted hazelnuts, fig and glace peel combined with spiced honey and topped with icing sugar and cinnamon.. Christmas at Farro wouldn’t taste quite the same if we didn’t have this delicious panforte. It certainly does taste like Christmas!

ARTISAN CAKES We are always on the hunt for the best artisan products New Zealand has to offer and as far as Christmas puddings are concerned we feel that we have definitely found a winner! These delicious puddings come in two sizes and are handmade with time and care by Bill and Judith Hanrahan. One secret they did give away is that that the delicious taste comes from the fruit which is soaked in a mixture of spices, spirits and stout! Delicious on its own or dressed up with a vanilla custard.

PANETTONE New and exclusive to Farro Fresh we have imported some of what we believe to be the best Panettone you can find. This beautiful italian fruit bread is a festive favourite as it is so light and airy. Containing candied orange, lemon zest and raisins, it is unbelievably good. We are also stocking two varieties for those with a sweet tooth: fruity pineapple, pistachio and apricot or a moorish chocolate. Perfect for french toast on Christmas morning! BOUDICA FLOWERS Katherine has been part of the team at Farro since we were a startup in Lunn Ave, and her fresh-cut flowers have been present at every Farro dinner party since! The beautiful blooms you see instore are delivered fresh from the market and are perfect for brightening up any room or making a beautiful table centrepiece. Christmas lillies are a December favourite, or if you’re after a pop of colour, blooming peonies are absolutely wonderful this year.

LITTLE CAKE KITCHEN We look forward to these little beauties every year. The Little Cake Kitchen make delicious Christmas mince tarts bursting with the flavours of plump raisins, juicy currants and fresh apple. Try serving them at room temperature with a light dusting of icing sugar or, for a more decadent experience, warm gently and serve with a dollop of fresh cream and a spoonful of brandy butter. TURKEY APPLE SALAD Leftover turkey salad needs to be about freshness and bright flavour. Core and thinly slice 2 apples, toast 50g Uncle Joe’s walnuts, soak 50g raisins in warm water for 10 mins and drain, then assemble together with crispy cos leaves. Dress with a simple sherry vinegar dressing.

SUMMER FIG CHICKEN BBQ Sundays dont have to be snarlers and chops. Marinate chicken thigh pieces in Taihiki Orchards Fig Vinaigrette and 1 tsp brown sugar. Cook the chicken pieces on the BBQ or in the oven until cooked through and golden. Make a salad of micro watercress, fresh raspberries, cooked barley or farro grain, and toasted pistachio nuts, then mix through the cooked chicken juices as a dressing to serve.

SUMMER SAFFRON RICE

ZUCCHINI & PUMPKIN SUMMER SALAD

Cook 300g basmati rice with 40g butter and 1 tsp of saffron threads.

Roast pumpkin wedges till softened. Using a potato peeler make long ribbon-like strips from 3 zucchinis.

Allow to cool before adding ½ cup toasted pistachios, a handful of chopped fresh dill, the zest and juice of 1 lemon, ¼ cup dried cranberries or blueberries, then add salt and pepper to taste.

Blanch broccoli slender stems. Make a dressing from ¼ cup walnut oil, 3-4 Tbsp white wine vinegar, 1 Tbsp golden syrup and 2 Tbsp of chopped fresh sage.

Perfect with roasted meats and seafood fresh off the BBQ.

Mix well and pour over vegetables. Dress with toasted walnuts.

TOMATO, BASIL & MOZZARELLA SALAD A delicious and simple salad which will go with just about anything. Blitz one slice of Wild Wheat sourdough in a food processor then pay fry until golden in a non-stick pan with a little olive oil. Leave to cool. Roll the Massimo Baby Bocconcini in the breadcrumbs Slice Curious Croppers Summer Medley tomatoes in half, scatter on plate with fresh basil leaves. Gently place the crumbed bocconcini on top. Season with salt and freshly ground pepper, then drizzle with Al Brown’s Lemon and Fennel dressing.

MOROCCAN INSPIRED POTATOES

SALMON W/ MANGO & COCONUT SALSA

Left over potatoes can be revived with a little spice to create a Moroccan inspired salad, or toss the dressing through your Christmas roast vegetables.

To make the salsa: peel 2 juicy mangos and roughly chop the flesh. Add in ½ cup roughly chopped coriander leaves, juice and zest of 2 limes, 1-2 tsp fish sauce, 1 finely chopped chilli, 4 Tbsp olive oil, 2 tsp caster sugar, 2-3 Tbsp desiccated long thread coconut and mix well.

Make a dressing with a ½ clove of garlic, 1 tsp toasted cumin seeds, 1 tsp caraway seeds, toasted, 2 Tbsp harissa paste, 1 Tbsp lemon juice and 4-5 Tbsp extra virgin olive oil, all pounded and mixed well together in a mortar and pestle.

Bake a whole side or portions of salmon in a preheated hot oven until cooked through. Allow to cool and serve with the mango salsa piled on top. Garnish with lime wedges, fresh coriander and toasted coconut threads before serving.

Chop up left over roast potatoes and smother with dressing. Mix through a nice big handful of chopped Italian parsley and serve.

VERMICELLI NOODLES & EDAMAME SALAD A bright and light summery salad that can work alongside just about anything. Soak a packet of vermicelli noodles in just boiled water for 20 mins. Drain well and place in a bowl. Make a vinaigrette of 1/4 cup white vinegar, 1 tsp sugar, 2 tsp sesame oil, ½ tsp fish sauce. Mix well and add to the noodles.

Chop 1 chilli very finely chopped and add 2 cups defrosted shelled edamame beans, half pack of fresh mung beans, handful chopped fresh coriander, 3 Tbsp toasted sesame seeds. Mix well and serve.


THE SOUTHERN CHARMER HAM GLAZE

SALMON ESCABECHE A wonderful way to serve fish this will feed an army as a side or lunch dish.

A touch of Southern charm will go a long way for your ham in creating a rich and intense taste...

Heat 6 Tbsp sherry vinegar, 6 Tbsp red wine vinegar, 1 dried chilli finely chopped, 2 tsp coriander seeds, 1 tsp fennel seeds, 1 tsp black peppercorns, 1 tsp sugar, 4 bay leaves, 2 tsp sea salt and 250ml water in a saucepan and bring to a boil.

Remove from heat and allow to infuse for 10 mins. Lay the side of salmon (cut into portions if needed) into a large oven tray and pour over the hot marinade.

In a saucepan heat all the ingredients to a simmer. Allow to cool and infuse overnight. To glaze your ham, preheat oven to 180oC and and line an oven tray with baking paper.

Cover with cling film and refrigerate overnight.

Carefully remove the skin of the ham by easing your fingers between the skin and meat, working gently to keep the fat layer intact.

Bring the salmon back to room temperature prior to serving with a big salad of blood orange segments, shaved fennel, Italian parsley, sliced radish and blanched green beans.

At the hock end, make a cut around the top of the hock so the skin can be removed. Score the fat evenly across the whole ham making sure you don’t cut too deep into the body of the meat.

Remove and discard the whole chilli from the glaze mix and, using a basting brush, cover the whole ham with half of the mix. Place in oven for 15-20 mins, remove and baste again with half the mix again and return to oven for a further 15 mins. Remove for a final basting and cook for a last 15 mins.

SUMMER ROAST LAMB A slow roasted lamb leg fragrant with spices is a good option to revisit cold the next day! Use whole spices and grind as needed to make this really amazing blend. Once ground, combine 2 tsp freshly ground black pepper, ½ tsp cloves, ½ tsp cardamom, ½ tsp fennel seeds, 2 tsp cumin, 2 tsp coriander, 1 tsp smoked sweet paprika, 1 tsp sumac with 2 cm piece freshly grated ginger, juice of 2 lemons, 120ml oil and 1 tsp of rock salt. Rub the lamb leg all over and place in a preheated over at 170oC for 3 hours. Cover with foil if spices begin to blacken. Serve with bulgur wheat and rice salads, or wrap into Lebanese style bread.

FENNEL & POTATO GRATIN Try a different dish to serve alongside your Christmas Day turkey this year - A fennel and potato gratin. Preheat oven to 200oC. Slice 3 fennel bulbs and 3 peeled potatoes thinly and place in a large bowl with 3-4 cloves finely chopped garlic, salt and pepper, grating of fresh nutmeg and 2 tsp fresh thyme. Mix well and tip into an oven proof dish . Pour over 200ml cream and top with 1/2 cup fresh breadcrumbs mixed with 100g grated Parmesan.Bake 45 mins or until golden brown. Serve hot out of the oven.

SIMPLE ASPARAGUS & FENNEL SALAD Blanch one or two bunches of fresh asparagus and plunge into iced water immediately. Finely shave 2 fennel bulbs using a mandoline. Make a dressing of 1 part verjuice to 2 parts olive oil, salt and pepper. Dress the vegetables and mix in a handful of freshly chopped dill or fennel tops and ¼ cup toasted pinenuts.

5 WAYS WITH HAM LEFTOVERS 1/ The morning after ham hash complete with finely chopped chives and a poached freerange egg on top. 2/ Ham steaks on the BBQ and grilled pineapplenow that’s summer! But dress it all up with the fresh bright flavours of mint, chilli and lemongrass. 3/ Make up a batch of pizza dough and get creative in using up those leftovers in a big calzone - diced ham, fresh herbs, cheese and left over roasted veges from your Christmas dinner. 4/ Fry some finely sliced ham with garlic and red onion, add a good handful of fresh chopped coriander and heat some refried beans for a delicious tortilla mix. Finish with freshly squeezed lime, a dollop of crème friache and a dusting of smoked paprika. 5/ A ham and pea risotto is a nice and easy option for post Xmas eating on Boxing day – freshen things up with fresh peas, broad or long beans and plenty of lemon zest. 13

5 WAYS WITH TURKEY LEFTOVERS 1/ Shred leftover turkey meat and toss a can of rinsed cannellini beans through with cherry tomatoes, and add a big handful of Italian parsley, green beans and halved boiled eggs. 2/ Fresh mint, dried cranberry, orange and watercress with left over turkey is bright and zesty for a lunch time salad. 3/ Layer puff pastry with turkey meat, a good robust cheese such as Taleggio, chopped leeks and olives for a savoury open tart. 4/ Keep your leftover turkey and bones to make a great stock that can be used to create an udon noodle and turkey meat soup. Add in a cleansing handful of Asian greens for a super fast supper. 5/ Stir-fry turkey meat with a touch of miso paste, soy sauce and long-stem broccoli and serve with a bowl of steamed sprouted rice.


DIPPY BITS AND SUPER SPREADS 1/ EDAMAME DIP Edamame beans make a beautiful bright green spread. Simply defrost 2 cups shelled edamamae beans and pop into food processor with 1 cup of blanched toasted almonds. Pulse until combined adding olive oil to loosen as you pulse. Add salt and pepper to taste and 1 Tbsp sesame oil. Serve along side blanched beans as a dipper or spread onto crostini and top with smoked salmon, fish or duck. 2/ CANELLINI BEAN & TUNA SPREAD Cannellini bean and tuna spread is a good cupboard stand-by for visitors. In a little olive oil, gently cook 2 sliced garlic cloves until just brown. Remove from heat and scoop garlic from oil. In a food processor pulse a well rinsed can of cannellini beans, handful Italian parsley, a well drained can of sustainable tuna and the garlic until smooth. Taste and add salt, pepper and lemon juice to taste. Perfect served with thick slices of toasted sourdough.

ZUCCHINI FRITTERS These tasty vegetarian fritters are a great easy side dish or delicious to serve with afternoon drinks. Coarsely grate 400g zucchini, one large potato and a small onion. Transfer to paper towels and squeeze dry. Mix together vegetables with 1/2 cup matzo meal or quinoa flakes, 2 large eggs, good squeeze of lemon juice and season with salt and pepper and stir well. Heat olive oil in a medium pan until shimmering and add teaspoonfuls of mixture about two inches apart. Cook latkes over moderately high heat until edges are golden - about 2 mins. Flip and cook for a further minute. Remove and drain on paper towels. Fold a little fresh horseradish through creme fraiché and serve warm.

3/ MUSHROOM & SAGE SPREAD Sauté 3 large flat mushrooms with 6 white and 6 brown button mushrooms, thinly chopped in 30g butter and 3 Tbsp chopped fresh sage. Cook until well browned and cooked through. Place mushrooms into food processor and add 1 cup toasted skin on almonds and ½ cup ricotta. Pulse to combine and taste to check seasoning.

CUPBOARD CAKE An easy emergency cake for those unexpected Christmas visitors. This Italian classic that tastes like sunshine on a plate! Beat 3 eggs with 300g caster sugar until pale yellow. Stir in 300ml good quality fruity extra virgin olive oil, 300g plain flour, 1 tsp baking powder and the zest and juice of one orange. Pour into a prepared cake tin and bake in a preheated oven for 45 mins at 180oC. Serve with Lewis Road Creamery Double Cream or Kohu Road Ice Cream!

CHERRY & ALMOND PUDDING A quick and easy summer pudding, simply grind 200g almond meal with 200g caster sugar in a food processor and slowly add 450ml water to form a marzipan like paste. Cover and refridgerate until needed. In a saucepan heat 200ml water with 500g pitted cherries, three large strips of orange zest and 100ml vodka. Bring to the boil and simmer until the cherries are tender. Chill the cherries until needed and serve on top of the almond pudding with a sprinkling of toasted chopped pistachio nuts and a drizzle of rose water. Delicious with Clearwater’s Clotted Cream. 14

DELICIOUS DRINKS 1/ PEACH WINE Simple and super tasty for a brunch beverage Pour a bottle of crisp white wine into a bowl. Add 6 ripe peaces cut into wedges and chill for at least 2 hours. Serve with fresh mint and a little ice. 2/ POMEGRANATE & WHITE WINE SANGRIA In a 2 litre carafe, mix the juice of 3 lemons, 500ml pinot gris, 120ml white rum, and 100ml sugar syrup. Stir through a large handful of mint leaves, a lemon cut into wedges and ½ cup fresh pomegranate seeds.

ROASTED FISH WITH LEMONS AND FENNEL 750g new potatoes, halved 2 red onions, peeled and sliced 1-2 cloves garlic, peeled and chopped 1 large sliced fennel bulb, core discarded 1 lemon, thinly sliced 250ml vegetable stock 3 Tbsp extra virgin olive oil 4 x 175g white fish fillets, such as gurnard or tarakihi 2 Tbsp parsley, finely chopped 1 Tbsp capers or caperberries, rinsed Juice and finely grated zest of 1 lemon Salt and freshly ground black pepper

Preheat the oven to 200°C/fan bake. Place the potatoes in a roasting tray and scatter over the sliced onions, garlic, fennel and lemon. Season with the salt and black pepper, then gently mix everything together and pour over the vegetable stock and 1tbsp of the olive oil. Roast for 25 minutes or until lightly golden.

Season the fish well and arrange on top of the potatoes. Drizzle with a little more oil, return to the oven and roast for 8-10 minutes until the fish is just opaque. Mix the parsley, capers and remaining oil, adding the zest and juice to taste.

Spoon over the fish and serve with fresh green vegetables or a crisp salad.

SEARED PRAWNS, HERB SALAD & SPICY BLOOD ORANGE DRESSING HERB SALAD 12 Large Prawns, peeled & de-veined ½ cup fresh mint, chopped ½ cup fresh Thai basil, chopped ½ cup coriander leaves, chopped ½ fresh pomegranate, pods removed 6 slices of pickled Daikon or radish 1 long red chili, thinly sliced 1 Tbsp coconut oil

DRESSING 1 Blood orange, juice and zest 2 cm young ginger finely grated 2 French shallots finely grated 2 tsp Dried chili Flakes 2 Tbsp Fish sauce 5 Tbsp Extra Virgin Olive Oil

FOR DRESSING Combine, blood orange juice, chili flakes, zest, grated ginger, shallots stir to combine, add fish sauce to taste to achieve a balance between sweet, sour and salty. Whisk in olive oil and set aside. FOR SALAD 1. Heat coconut oil over high heat in a fry pan, stir fry prawns for two minutes until just cooked through, remove immediately from heat, season lightly with a tiny pinch of salt. 2.

In a bowl combine picked herb leaves, pomegranate, pickled daikon and prawns, dress lightly with dressing and toss gently to combine.

Divide salad between two serving dishes, lightly plating with two hands, creating as much height as possible, sprinkle with coconut relish, drizzle with a little extra olive oil. Serve imme

diately.

ALL GOOD FAIR TRADE BANANAS Pedro Chamaidan and Graciella Apolo grow All Good Fairtrade bananas on their five-hectare banana farm in Barbones, Ecuador. They’re family farmers, who grow and harvest their fruit in small batches with care and attention, to produce great tasting bananas. They use sustainable farming techniques to preserve the integrity of the fruit, the health of their family, workers the local environment and community. Since joining the El Guabo Fairtrade cooperative, Pedro & Graciella have enjoyed the security of a fair and stable price, the freedom to invest this in their own community and the independence to make decisions for their own future. THE FARM BUTCHERY Based in the charming Warkworth village, the good folk at The Farm Butchery are all about healthy eating and getting the essential nutrients back into the food we eat using heritage animals best suited for the table and organic farming. Along with their artisan growers and farmers, they use organic and biological methods constantly striving to achieve optimum food compositional profiles with low residues of the undesirables. They combine that with traditional and natural methods of creating small goods both themselves and in partnership with the deep European traditional approaches of Otellos and Salash and their wonderful varieties of flavors and products. The Farm Butchery is a great fit for us here at Farro Fresh because of the ethical and sustainable approach to producing the food that ends up on our plates.


KOHU ROAD PURE DELISH The Pure Delish range has been a staple on our shelves for years here at Farro, because not only do they handcraft each and every one of their products but they jam pack them with all the good stuff, real ingredients such as the ones you would find in most home bakers kitchens. What began as a seasonal venture making Christmas Cakes for owner Karen; has grown over the years into a wide range of award winning products that include breakfast cereals, snack bars, cookies and slabs. For the team at Pure Delish it’s all about the end result- creating quality products that show their uncompromising determination to produce food that is contemporary and delicious using only the best real ingredients they can lay their hands on!

Kohu Road’s mission is “making happiness”, happiness in an ice cream. Using organic milk and cream, whole vanilla pods and solid chocolate, among others, Kohu Road quietly goes about their business of making the best ice cream in the world. Full of pure, natural, real food ingredients and absolutely no artificial additives, it puts a smile on your face and a sparkle in your eye. They love food and want something good... that’s incredibly delicious, we love their dedication and ethics, their environmental care, attention to detail and passion. Greg’s passion has won him a number of well deserved awards and we especially enjoy the Kohu Road teams sensational offerings like Brandy Cream and Fruit Mince Ice Cream for Christmas. UNCLE JOE’S NUTS Uncle Joe’s family business is situated on the outskirts of Blenheim, Marlborough - a region with a rich resource of deep alluvial, free draining soils on the Wairau Plains. Uncle Joe’s supplies us with some of the freshest, healthiest walnuts and hazelnuts that are grown in New Zealand. That great flavour is transferred into their other products including; walnut and hazelnut spread and walnut and hazelnut oils. Marinated Goats Cheese & Roasted Pumpkin Pizza Serves 4-6

1 Pizza Base Tomato Paste or passatta Spinach Leaves Roasted Pumpkin or raw shaved pumpkin (Hint– use a vegetable peeler) Meredith Dairy Marinated Goat Cheese Olives Oregano Extra toppings could be Salami, sliced capsicum, mushrooms Preheat oven to 200oC. Spread the tomato paste onto the pizza base. Place spinach leaves, any extra toppings and roasted or raw pumpkin. Crumble the Meredith Dairy Marinated Goat Cheese on top of the spinach and pumpkin and drizzle on a little of the olive oil from the cheese. Add the olives and oregano and bake for 15-20 mins.
