DELICIOUS DAIRY-FREE CHOCOLATE MOUSSE
This decadent chocolate mousse is rich and smooth, made with 73% dark chocolate. It’s a luscious way to end your Christmas dinner. It’s so easy to prepare and is completely dairyfree too. SERVES: 6 INGREDIENTS 300 grams Chocolate Brown 73% dark chocolate callets (buttons) 2 large ripe avocados 3 tablespoons cocoa powder 3 tablespoons maple syrup or honey 425ml can of coconut cream TO SERVE Dark chocolate shavings
METHOD Place a heatproof bowl with the chocolate callets in it over a pan of simmering water, making sure the base doesn’t touch the water. Allow to just melt and remove from the heat to cool slightly. Meanwhile, in a food processor, place the skinned and chopped avocado, the cocoa, maple syrup and coconut cream and churn well to combine, pausing to scrape down the mix. Churn for 2-3 mins or until all the avocado is smooth and combined. Pour in the cooled chocolate, then pulse a final time until creamy and smooth. Divide the mixture between six small bowls or pour into one large bowl to serve at the table. Chill for at least 30 mins before serving with an extra grating of chocolate or chocolate curls on top.

Serves: 6 | Prep time: 20 mins | Cook time: 10 mins INGREDIENTS 15 mls extra virgin olive oil, plus extra for dressing salad 800 grams Mt Cook Alpine salmon fillet, de-boned and skinned Horseradish cream 125 grams Zany Zeus sour cream 45 mls traditional German grated horseradish Apple and fennel salad 1 medium fennel bulb, thinly sliced on a mandoline 1 green apple, thinly sliced off the core, then into thin sticks Juice of ½ Lemon 3 pink radishes, cut into thin sticks 1 bunch Italian parsley, picked 1 teaspoon Farro fennel seeds 3 teaspoons Delmaine capers Seeds of ½ a pomegranate
An impressive salmon dish by Ray McVinnie perfect for a barbecue, dinner party or the christmas table. METHOD Preheat the oven to 200C. Line an oven tray with baking paper and brush with half the oil. Place the salmon on the paper and brush with the remaining oil. Place in the oven for 10-15 mins or until just cooked through. Remove from the oven and allow to cool to room temperature. Meanwhile, put the sour cream and horseradish into a bowl and mix well. Taste and season. Place the fennel, apple, pomegranate seeds and lemon juice into a large bowl. Add the parsley, radish, fennel seeds and capers and toss together gently with a little olive oil. Place the salmon onto a serving platter. Place the apple and fennel salad on top of the salmon. Serve with the horseradish cream.
