With state-of-the-art kitchens in Soho, we offer full service catering and event production with the influence of world-renowned chefs at our fingertips. Menus are focused on flavor, presentation and perfection with both seasonal and local ingredients. We believe in a flavorful, creative and intelligent approach to fine catering with customized pricing specific to your event. FCI is the exclusive in-house caterer and event producer for the International Culinary Center in New York City.

Executive Chef Joshua Crane

With 23 years in the industry, and 15 years as an executive chef, Josh Crane is the mastermind behind FCI’s creative dishes and innovative hands-on catering model. Chef Crane began his culinary career at the age of 13 as a dishwasher, soon moving up through various kitchen and management positions for the next eight years. After graduating from culinary school in Portland, OR, he relocated to Southern California to accept the position of Executive Chef at Delicias Restaurant in Rancho Santa Fe. He made the leap into the world of catering and events with Coast Catering in 2006, a high-end social event company that was trend-setting in delivering restaurantquality food served off-premise in LA, San Diego, Orange County and the desert regions of Southern California. In 2010 he joined the Prom Management Group for the opportunity to travel worldwide and learn regional cuisines while executing events for PGA Golf Tournaments. In 2012 he relocated to NYC and soon joined FCI as Executive Chef. Throughout his years as a catering chef, Crane has learned to adapt to so many different styles and cuisines that he does not define his career by a certain style, but more a philosophy, of food. He is driven by a passion for techniques and history of food, and views cooking as an emotional connection of all five senses. FCI Catering & Events | 03

On-Site Offerings THE STUDIO AT 28 CROSBY

The studio accomodates up to 90 guests for a seated dinner and up to 125 for a cocktail reception. Kitchens are attached for hands-on cooking experiences. Private event entrance on Crosby Street, with TV screen signage and doorman are provided. THE ITALIAN DINING ROOM & KITCHEN

The Italian Room is perfect for more intimate events. It accomodates up to 40 for a seated dinner and up to 50 for a cocktail reception. Large windows overlook Broadway and Grand Street. Coat check and doorman are provided. A private kitchen is attached for hands-on cooking experiences.

Hands-On Experiences What sets FCI apart from other caterers is the interactive, hands-on capabilities we have for events. We are a perfect fit for both corporate and social team-building events.

Market Basket Competition

For this hands-on experience, guests will enjoy a fun and fast-paced culinary competition (similar to the show “Chopped”). Each team will receive a basket filled with mystery ingredients. In 45 minutes, each team will need to create a signature dish that features the mystery ingredients, while also being allowed to use items from FCI’s extensive pantry.

Bourbon & Butchery

During the tasting, guests will learn the history of bourbon, the process of distillation, and taste different types of batches. After, they are guided through a whole-animal butchery by one of our Master Butchers, who will walk the guests through a demonstration of ‘breaking down’ a suckling pig. Guests will learn how to utilize the entire animal from nose to tail. FCI Catering & Events | 09


Profiteroles

Guests will learn about this classic French dessert, where p창te a choux pastries are filled with fresh seasonal fillings of your selection and topped with warm chocolate sauce and fresh fruit.

Mozzarella Making

Guests will learn the the basics of cheese making, and how to stretch and form mozzarella with the guidance of the chef. Then choose from a variety of toppings, including olive oils, fresh basil and herbs to package and take home.

Truffle Rolling

Experience the techniques, flavors and textures of chocolates. Guests will get to roll their selection of white, milk and dark chocolate truffles in a variety of coatings and toppings, then package them to take home!
