Greetings! As cooking and baking for the holiday season is quickly approaching, I found it fitting to create a magazine with the latest recipe ideas, along with the people who have made modern day cooking what it is today. What better time than to relax with family & friends and enjoy a delicious meal and even better desserts! If your family is anything like mine, your family get-togethers turn into an all-day and all-night festivity! This year my mother asked for everyone to come to the house with a delicious recipe to share, sparking my idea for the photo essay. Nobody enjoys a well-prepared Thanksgiving dinner like me. Going to college in Cedar Falls, IA, my friends and I are always trying to hit up the most hip, new, and fun places in the Cedar Valley. When we heard about Scratch Cupcakery we just had to check it out! Driving down what seemed-to-be the ever familiar Main Street, we came upon it, Scratch Cupcakery. There was so much hype going into its new opening we had to see what it was all about. It seemed like Main Street had this new kind of buzz about it. The atmosphere at Scratch was like none other. The staff was extremely helpful. It was a place where you just wanted to sit, relax, and enjoy a delicious cupcake. I found it necessary to share this experience and encourage others to visit Scratch Cupcakery. If you are looking to enjoy your time with friends and chatting, I would strongly suggest going to Scratch and having the best cupcake you will probably ever taste.

With this being my first magazine creation, it was an exciting and challenging experience. After finding a main theme, it was tough trying to stick to a main motif as ideas started pouring in! Originally, I wasn’t planning on talking about Scratch Cupcakery, or even the women who make up the famous Hollywood chefs. However, Scratch was too fun of a place to pass up. Anyone who watches the Food Network is amazed by the number of chefs who, day in and day out, make some of the tastiest dishes around. Most have them around in recent years, but Julia Child set the stage for all of them. This brought in my idea of timeline. While looking at the career of Julia Child, I wanted to look at the careers of the women who have surpassed her. Those who are doing equally as good things, and some even better. Whether you like to make meals for the entire family, enjoy a gourmet cupcake with friends, or learn about the every changing baking and cooking world, you’ll be able to find what you’re looking for here. SCRATCH CUPCAKERY Main Street in Cedar Falls, Iowa is known for its nightlife, fancy restaurants and small boutiques. Within the last few years, Scratch Cupcakery has made quite the impact on Main Street. Scratch Cupcakery was opened in Cedar Falls in June 2010 by Natalie Brown. This shop was located on W. 2nd Street in Cedar Falls. The location was only 900 square feet, and that included the kitchen. In an interview with the Des Moines Register, Brown said regarding the first location that it could only fit about ten people inside at a time.

Scratch has 40,464 Facebook likes and over 4,500 followers on Twitter. Make sure to go like and follow their pages so that you can stay up to date with everything Scratch. Scratch has over 100 flavors of cupcakes. They have almost anything you could imagine. Some of these flavors include Almond Joy, Bazooka, Carnival, Chocolate Doughlicious, Dirt Cup, French Toast, Guinness, Monkey Business, Razzle Dazzle, Salty Dog, and much, much more. (Don’t forget to check out the next page for some of their most famous and unique flavors!) Scratch celebrates almost every holiday with holiday cupcake boxes. These boxes are made for holidays such as Christmas, Valentine’s Day, Thanksgiving, Halloween, Easter, and the 4th of July. They also celebrate things like “National Candy Corn Day” and “National Apple Day.” They celebrate by having cupcakes that correlate to these days. Scratch supports Breast Cancer Awareness month in October and has pink cupcakes with a pink ribbon on the frosting. These are just some ways that Scratch is creative when it comes to their cupcakes.

Because of the attention Scratch was getting, they opened a new location in Cedar Falls on Main Street in November of 2011. This location has over 6,000 square feet, including a very large kitchen. It also holds many more people than the original shop. According to Brown, Scratch is more about the experience than the actual cupcake. Scratch has been with some of the same families since their very existence. They’ve been through invitations to prom, engagements, weddings, baby showers, first born children, baptisms, and so much more all with the same families. Brown told the Des Moines Register, “I think it really has a lot less to do with the 120 flavors we have on the menu, and a whole lot more to do with a person can bring in their three year old and have a great day, just hanging out and talking about a cupcake.” Scratch Cupcakery also has a Facebook page and a Twitter account where customers can look for anything about Scratch. Some posts are location specific while others are for customers of all locations. They use their Facebook and Twitter to be in touch with their customers and they also run promotions every now and then.

This is the Black Bottom cupcake that is offered at scratch. It is made up of chocolate cake, real chocolate chip cheesecake, homemade chocolate fudge, and a white chocolate frosting.

8 They also serve what they call a frosting shot. A frosting shot is exactly what it sounds like, a shot of their frosting. Some people are not huge cake lovers, but they sure like frosting. This would be the perfect treat for them. If you think the cupcakes and frosting sound great, then you must know about the gelato that Scratch serves. Gelato is Italian ice cream that is just right to compliment your Scratch cupcake. Scratch has four locations across the state of Iowa; locations are in Cedar Falls, Waterloo, West Des Moines, and Coralville is opening this fall. Not only does Scratch have four physical locations, they also have a truck that travels to towns surrounding Cedar Falls called Scratch Curbside. Brown said that they hope to hit all 99 counties in the future. The truck has traveled to Dike, Hudson, Evansdale, Charles City, Iowa Falls and many other places since its birth in the fall of 2011. Scratch Curbside does not have the capacity to carry all cupcakes with it while it travels, but they do carry six to eight flavors to all locations. Four of the flavors stay the same while the other two to four are rotated among seasonal flavors and other flavors.

You can buy one cupcake, two cupcakes, or packages of four from Scratch Curbside. According to Brown, there are no other locations in the works. She did mention though that the Scratch Curbside truck helps give them a better feel for where they could maybe go in the future. It seems that the future is very bright for this once very small, 7 employee company. Scratch Cupcakery accepts call ahead orders and will even deliver in certain cases. The West Des Moines location opened on January 18, 2013. Opening day was sure hectic there as staff work hard behind the counter baking, decorating and boxing the different flavors of cupcakes.

“You’ll never hear me boast or declare us better than anyone else... because this is all about so much more than the cupcakes.” Scratch Curbside is a great way for Scratch to make it to all locations throughout Iowa. The van drives to nearby towns for the day and sells cupcakes to those who cannot always make it to Cedar Falls.

The very first location of Scratch Bakery in Cedar Falls was opened in 2010. It was so small only 10 people could fit in the entire shop.

Can’t stand the pain it is to make mashed potatoes? Try our overnight crockpot potatoe recipe. Ingredients include potatoes, sour cream, butter and chives. You’ll wish you knew it was this easy before.

Pecan pie is another favorite dessert around the Thanksgiving holiday. Instead of having pumpkin pie, try pecan this year. You won’t regret it.

Not everyone likes sweet potatoes for their Thanksgiving meal. Make this recipe and your guests will want sweet potatoes every year.

Have you ever had to worry if your gravy for turkey and mashed potatoes is going to turn out. Use this recipe with milk, turkey insides, and little turkey gravy powder. You will never have to worry about how the gravy tastes again!

Try an upside down apple pie. It is extremely tricky to flip the pie over before baking, but have the right touch and your pie wil turn out perfectly.

Julia Child

Julia Child (August 15, 1912 – August 13, 2004) is the iconic cookbook author who is credited with bringing French cooking to American households in the early 1960s. She has been hailed as the first true television food personality, whose “how-to” shows and cookbooks brought a passion for cooking and food into millions of American homes and paved the way for the generations of TV chefs afterwards.

Rachel Ray

(1968 - Present) According to Rachael, she grew up in food. “My first vivid memory is watching my mom in a restaurant kitchen. I tried to copy her and ended up grilling my right thumb! I was 3 or 4,” said Rachael, who insists that cooking is a way of life she was simply born into. Rachael has parlayed that birthright into a wildly successful career as a syndicated television star, an iconic Food Network television personality, best-selling cookbook author, Founder and Editorial Director of her own lifestyle magazine and Founder of the Yum-o! organization.

Paula Deen

Paula Deen (1947 - Present) is a self-made success story who learned the secrets of Southern cooking from her Grandmother some 30 years ago. She had no idea at the time that the love for Southern cooking her grandmother instilled in her would lead to a life-long career. Paula’s business continues to flourish with a series of successful cookbooks: Paula Deen and Friends: Living It Up, Southern Style, The Lady and Sons Savannah Country Cookbook, The Lady and Sons Too and The Lady and Sons Just Desserts.

Giada de Laurentiis

(1970 - Present)Born in Rome, Giada grew up in a large Italian family where the culture of food was a staple in and of itself. Giada’s career start on Food Network began in 2002 when she was discovered by a network executive upon reading an article about her and the De Laurentiis family in FOOD & WINE magazine. Since then, Giada has earned an Emmy for Outstanding Lifestyle Host and has become one of Food Network’s most recognizable faces. Her Emmy award winning, daytime cooking show, “Everyday Italian,” featured quick, healthy and satisfying Italian dishes.

Martha Stewart Martha Stewart (1941 - Present) was born on August 3, 1941, in Jersey City, New Jersey. Stewart rose to prominence as the author of books on cooking, entertaining and decorating. She then expanded her brand to include a magazine and television program, serving as CEO of Martha Stewart Omnimedia. Stewart resigned her post in 2002, following charges of insider trading of which she was subsequently convicted.
