EDITOR’S LETTER
What’s your appetite for change? How open are you to what’s new? Don’t worry, this is a judgment-free zone, and there’s no right or wrong answer. But I’ve been thinking a lot about the topic as we prepare this, our second annual trends issue. As editors, our job is to sort through the great, wide universe of stuff and select what we consider to be the best people, ideas, and products to share with you every month. It’s an imprecise process of looking over research and data, going to trade shows, and keeping a sharp eye on social media to see what’s trending. It was a challenge to distill all those choices down to a short list of the most useful and inspiring ideas we think you, our 32 million readers, will enjoy. We want to make you happy. But some readers are more open to the new than others, and that’s something we also keep in mind. As we make our magazine, we want to celebrate the diversity of our giant readership, from staunch traditionalists to those who love being in the know about the latest fad— even if they aren’t always going to necessarily participate. For me, the tolerance for change comes down to a push/pull between comfort and curiosity. Whether you gravitate to the same type of recipes made with ingredients you always have in your pantry (mine is lentil soup) or get a thrill from learning about a new recipe or sauce. (Zhoug anyone? See page 111. Come to think of it, zhoug on lentil soup sounds really good.) Sussing out and sharing stories about interesting people and ideas is what most of us editors like doing best. We love that you challenge us with a wide range of opinions on what you enjoy and what you dislike; that diversity inspires us to create a broader range of articles than we would if we were only trying to please ourselves. For every idea in this issue that one reader may not want any part of, another reader might cherish it. Change is inevitable. It’s our response to it that really sets the tone, and I for STEPHEN ORR, one am always happy to get a peek at what’s coming Editor in Chief over the horizon, especially in spring. instagram @steporr

It’s the hardworking furniture every home needs. Four reasons why, and six to buy: It turns any room into a guest room. A bench style won’t block the view of the window (or the TV). A deep seat means more space for pillows, throws, and the dog. It’s permission to take a nap.

baking benefits
Baking as therapy is on the rise. “In a world where everything is go, go, go, people are more hungry than ever for mindful practices,” says Julie Ohana, a culinary arts therapist. “Baking is one of those practices.” Here’s why our oven is always warm. The repetitive nature of kneading and stirring puts you in the same Zen-like flow as yoga (no mat required). Baking stimulates all your senses—a pinch of salt, the smell of spices, and the sound of a mixer. It requires putting down your phone. It’s hard to text with doughy fingers. Two words: warm cookies.

The biggest news in meat this year isn’t meat at all. Now that Impossible Burgers are on drive-thru menus, plant-based “ground beef” look-alikes are popping up in meat cases of large grocers. And they’re not only for the vegetarians out there. Flexitarians, #meatlessmonday dabblers, and curious carnivores, read on for the scoop.
WHAT’S THE BEEF?

Ingredients vary brand to brand, but producers of plant-based “ground beef” have figured out how to replicate the texture, aroma, and taste of meat using plant proteins derived from soy, peas, beans, rice, and wheat. Beet juice, pomegranate fruit powder, and other fruit and vegetable extracts imitate beef’s pink color. Coconut oil and cocoa butter add pockets of white marbling.
unseasoned meat patty. (Though lightly salted beef is comparable to the low end of the faux meat range.)
WHERE’S THE BEEF? You’ll find fresh faux beef alongside its counterpart in the refrigerated meat case. Major brands offer 12- to 16-oz. bulk packages and 3- to 4-oz. patties. In large stores you may find patties containing a blend of ground beef and pea protein.
DOES IT COOK LIKE BEEF? The short answer is, yes, you can cook these plant-based products as you would ground beef. Look for specific tips on package labels and follow guidelines for freezing and thawing.

HOW DO THE NUTRIENTS STACK UP? Plant-based meat and 80-percentlean beef both contain about 20 g protein in a 4-oz. patty. But the similarities end there. Most faux ground meat has fewer calories and fat, none have cholesterol, and, unlike beef, the faux meats provide some fiber. One thing to note: Plant-based patties tend to have more sodium, ranging from 370 to 580 mg versus 80 mg for an March 2020 |

We asked Ken Druse, author of the new book The Scentual Garden: Exploring the World of Botanical Fragrance, to share his favorite perfumed plants and tips for bringing them into the garden.
COM E BAC K STORY “In past decades some plants, especially roses, lost their scents to overbreeding. But today, some of the most popular roses are the introductions made by the late David Austin, who crossed heirloom types with modern ones to bring fragrance back while adding reblooming qualities and vigor.”

COLOR EFFECT
hristina Bryant, founder of the bohemian home furnishings brand St. Frank, achieved a restful mood by enveloping her living room, right, in inky blue, which naturally recedes, and punctuating it with an equally saturated mustard yellow sofa that reflects sunlight for a warm glow. “Tones should be well-matched unless you want one to speak more loudly than the other,” says designer Consuelo Pierrepont, who worked with Bryant. Sue Wadden, director of color marketing for Sherwin-Williams, offers another approach: Use one color in one room and another in a visible adjoining space for a peekaboo effect. The yellow of the dining room, below, livens up the adjacent living room. In turn, a glimpse of navy walls serves as a resting point against the yellow. “Putting a big impact of color in spaces that you’re not in all the time, like a dining room, lets you bring bold color in without getting overwhelmed,” Wadden says.

When the team at Peter Pennoyer Architects MONIKA EYERS designed this room for the Kips Bay East Coast Editor Decorator Show House last May, they “were hearkening back to a traditional yellowand-blue scheme you see in Provence,” says Alice Engel, Pennoyer’s director of interior design. A professional stylist with serious DIY chops, Brady Tolbert gives us a tour of his L.A. apartment full of black-and-white matchups and high-impact, low-cost projects.

FLANGE EDGES Wide, flat seams rather than the usual inverted seams are a casual, tailored detail.
rady Tolbert is not easily intimidated. The designer and stylist started as an intern on a project by world-renowned architect Frank Gehry. Then he worked for interior designer and blogger Emily Henderson’s company as creative director, a role he now holds for Bobby Berk, the designer on Netflix’s Queer Eye. But the most visible evidence of his intrepid nature is the black-and-white checkerboard floor he installed in the kitchen of the 1920s Spanish-style apartment he shares with his partner, Jason. “The whole project cost $50,” Brady says of the peel-and-stick vinyl tiles he laid on the diagonal. “And I did it in one weekend.” The new floor gave him the graphic impact he was looking for in a style that wouldn’t ruffle his landlord.

The black-painted beams and white walls of Brady Tolbert’s living room establish the apartment’s color scheme. The pairing is timeless so it ably works as a backdrop for both new and vintage pieces. Brady’s instinct as a stylist is to frequently add, subtract, and rearrange. “I treat our apartment like a lab,” he says.

Brady’s trick to keeping black and white from feeling stark is to layer warm caramel, rust, and brass in a mix of textures. He played off the red brick in the firebox (made a focal point with tiers of pillar candles) with soft linen curtains, a shaggy rug, and a smooth leather and blond wood chairs.
Brady credits his parents for his crafty nature and fearless approach toward home improvement projects. “I was raised to be thrifty and creative. If you don’t know how to do something, you read about it and figure it out.” To that end, Brady has added basic electrical work to his repertoire. “One of the first things I did was swap out all the lighting. It’s a really easy way to make a big change,” he says. As a designer and creative director, Brady can’t help but constantly change around his furniture and accessories. But his shopping habits make that easy. “I shop within a cohesive palette of black, white, and cream with leathers and wood, so I know whatever I buy will work somewhere.” In this case, taking work home has definitely paid off. Sculptural brass chairs stand out in the breakfast nook at the end of the narrow galley kitchen. The real star, though, is the pedestal table. The chairs can tuck up against the base, and the round top makes it easy for guests to slide in. Unable to change the kitchen layout, Brady focused on adding character. A vintage butcher block, patinaed copper, and a retro-style Smeg fridge echo the floor’s throwback style. Brady ripped out some boxy cabinets and replaced them with open shelving. Brass appears throughout the kitchen—on shelf brackets, a faucet he found for $75 on Amazon, and, far left, a rod and hooks that hold pans over the stove. The brass is a glamorous contrast to all the black and white.

A traditional headboard would have blocked the natural light. Brady’s solution was another weekend DIY. He made a channeltufted headboard that spans the wall by stapling olive velvet—a rare jolt of color in Brady’s neutral decor—over half-round foam bolsters and mounting the pieces on the wall as a single unit. ■

A hole in a well-loved jacket or duvet isn’t a bummer; it’s a style opportunity. With a little decorative mending artistry, you can revitalize treasured pieces. In antiques shops you’ll often find vintage tablecloths that have been patched by hand , a charming sign of the item’s long, happy life. These days, as we think more about sustainability, we’re coming back to the idea of mending— and making it visible with highimpact patches and stitches. With the techniques on these pages, you not only extend the usefulness of a piece but also give it a custom look entirely your own.
For patches, choose fabric close in weight to the item you’re mending.

STEP ONE Place a darning egg, darning mushroom, or even a tennis ball inside the sock behind the hole. Sew rows of vertical running stitches back and forth at least ½" beyond hole on all sides, taking long stitches over the hole. Now it lives in her family room, paired with watery blues and seafoam green pulled from the chinoiserie ottoman fabric, the launch point for the whole room. The palette flows because orange and blue are complementary colors. Although the rug and ottoman are boldly patterned, they work together because of their creamy backgrounds and contrasting scales. The fi nishing touch is more coral on the lampshade, pillow trim, and throw. “I do love a pop of color,” she says.

WANT NOW
We surveyed 2,000 recent home buyers and 500 real estate professionals to see what’s taking flight in today’s home search. What we learned may surprise you.
We were curious: What are millennials looking for in their first home? What do repeat buyers want? What trends have changed and which ones haven’t? For our first Home Buyer Study, we tapped into thousands of recent buyers, as well as real estate agents in our Better Homes & Gardens® Real Estate network, to find out. Here’s how the wish lists of next-gen buyers can influence the hunt for your next nest and the sale of your current one.
TREND NO. 1
An intriguing number of survey respondents buying their first home (36 percent) picture themselves staying for more than 10 years. Does this signal a new view of the so-called starter home—the first house that people buy (and keep only a few years) to launch their homeownership? In some ways, yes. Typical starter-home buyers are now investing in higher-end homes. They want features traditionally associated with move-up buyers, such as good school districts and more square footage, says Annette Cicinelli of BHGRE Rand Realty in Westchester County, NY. “Move-up buyers now compete with first-time buyers,” she says. “And I’m seeing empty nesters looking into those smaller starter homes.”
Millennials purchase with a plan to stay.

TREND NO. 2
First-time buyers say they spent an average of five months from research to closing; repeat buyers did it in four. Compare that to a 2012 National Association of Realtors report that found the process took first-time buyers only three months and repeat buyers two-and-a-half months. One possible reason for the longer hunt is the array of online property search sites. Agents say most clients use the websites to house hunt, which increases options but also expands the search time. In addition, 63 percent of all buyers report going online to educate themselves: reading articles, researching builders, signing up for newsletters, checking classified ads, reading blogs, and listening to podcasts. One-fourth of buyers reported also getting information from social media, such as Pinterest and Instagram. Another factor that can stretch the time frame is the loan process. That’s why agents consistently recommend getting preapproved. One proactive approach on the rise is ”people selling their current home and then renting or moving in with family so they can be as nimble as possible when the home they want comes on the market,” says Shannon Stumpenhaus of BHGRE Kansas City Homes in Kansas City, MO.
The homebuying process takes longer than it used to.

TREND NO. 3
Buyers used to seek out fixer-uppers. Outdated kitchens and baths, unnecessary interior walls, old carpet that might be covering salvageable flooring— all were high on the wish list, say, 10 years ago. People could usually get homes with those problems at affordable prices then eagerly update and personalize them. Now more buyers want homes that don’t require a lot of work. In fact, our survey found that 52 percent valued purchasing either a newly built home or one that didn’t require any renovations or repairs before moving in. No doubt it’s an issue of not wanting to spend time and money. “People are more willing to do cosmetic upgrades, but they don’t want to deal with expensive and extensive One-fourth work,” Stumpenhaus says. On of first-time the no-thanks list: replacing the buyers roof or heating/cooling system, considered making structural changes, repairing drywall, and dealing renting, in part because with mold or termites. Even if they don’t want to take it would spare them on big-ticket repairs, there is almost costly repairs. no escaping some jobs. Eightyfive percent of buyers ended up in homes that needed at least some work. Agents say projects like painting, replacing or refinishing flooring, and swapping out appliances shouldn’t scare off buyers. And Stumpenhaus encourages buyers not to automatically reject a house for a bad kitchen or bathroom. “They may not have the money to do them right away, but those are things they can do later,” she says.
Buyers are looking for move-in-ready homes.
35 PERCENT WERE CONCERNED ABOUT BUDGETING FOR RENOVATIONS Other renovation challenges: finding the right professionals and knowing which renovations will increase resale value.

TREND NO. 4
The heart of the home still gets to the heart of us. Buyers across the board told us that the kitchen was the room that most motivated them to purchase their home. What features do real estate agents say buyers are looking for? Islands are big, in more ways than one—room for seating, please. High-end appliances are in demand, as are specialty options, such as a wine refrigerator or built-in coffeemaker, and extra function. “People are asking for double ovens so they can easily entertain,” says Kerri O’Hara of BHGRE 43° North in Boise. Top-of-the-line kitchens The average include custom cabinetry, Wicost to Fi–enabled appliances, and remodel a an open floor plan with spots kitchen that’s for specific tasks. “I’m starting 150–350 to see ‘protein stations’—prep square feet areas equipped with a blender and a small fridge for making is $48,000, according to smoothies and other healthy the National snacks,” says Jessica Duncan of BHGRE Main Street Kitchen Properties in Pensacola, FL. & Bath The kitchen not only Association. influenced our respondents’ recent purchases but also was top of mind when they described the home of their dreams. The majority (66 percent) selected a state-of-the-art kitchen as their most desired luxury. Not even an outdoor pool or a theater room beat out the ideal kitchen.

CEO and president, BH&G Real Estate, explains a few of the trends that can impact a purchase. BUYING
“A company known as an iBuyer provides a seller with an immediate offer. The firm then usually hires a traditional real estate agent to sell the home at a profit. The seller essentially trades a higher fee and lower price for a quick sale.” AGING IN PLACE

TREND NO. 5
When naming the factors involved in their purchase, repeat buyers focused on features (size and style, for example); millennial buyers said homeownership was a step toward financial stability and adulthood. About 65 percent of millennial buyers say they think it’s a good investment, along with a part of being an adult (40 percent), a way to put down roots in the community (40 percent), and a sign of being successful (31 percent). To maximize the investment, agents recommend buyers picture themselves as eventual sellers. They should consider: Is this a growing, active area? (It should be.) Is it the most expensive home in the neighborhood? (It shouldn’t be.) “People need to look at homes that are a good investment in case they need to sell,” Duncan says. “You never know what life changes are around the next corner that will necessitate a move.” ■
The biggest factor for millennial buyers: It’s a good investment.

teatime
BH&G’s editor in chief makes the case for growing fresh herbs—and never settling for plain black tea again.
everal summers ago, I started experimenting with throwing a few homegrown herbs into the teapot. It started small with a sprig or two of mint or lemon verbena, but over the years my tea herb obsession has expanded, and now I grow dozens of herb plants solely for their drinkable properties. Sometimes I make a purely herbal hot tisane (a fancy French word for a beverage made from herbs instead of actual tea leaves). But being Texan, my refrigerator always holds a pitcher of iced black tea. I spruce mine up with lemongrass and tulsi one day or anise hyssop, lavender, and rose geranium the next. You can’t go wrong, really. The flavors live in such harmony that no matter the recipe, I’ve never made an undrinkable batch.

To make iced tea, pour nearly boiling water over two bags of black (or green) tea and add a tablespoon or more of fresh or dried leaves like mint or lemon verbena, a lesser amount of tulsi, and a pinch of lavender (too much can taste like soap). After a few minutes, pour into a pitcher and fill with water. For a noncaffeinated version, hold the tea, add more herbs, and let it steep a little longer. To make a single cup of hot tea, use one tea bag and a few pinches of herbs.

TIPS G ROWING
Start annuals like lemon basil and tulsi from seeds or seedlings, and provide lots of sun and water. Cut down for drying before first frost. n
Perennials such as thyme, pineapple sage, and anise hyssop will return each year in Zones where they are hardy if given sun and soil with good drainage. (Mint can be invasive, so position it carefully or grow it in a pot.) n
Tender perennials such as lemongrass, lemon verbena, and scented geraniums will grow year-round in warm climates. Elsewhere, overwinter them indoors as houseplants or grow as one-season annuals. n
I don’t fertilize my herbs because it can result in too much soft growth and a decrease of oils in the leaves. No oils; no flavor. n
DRYING AN D STORING You can dry herbs on drying racks or by hanging them in bundles. But I use an even simpler method: I lay the branches out in a single layer on dish towels covering a table for about a week. n
Once completely dry, hand-strip each variety’s leaves into a tin or a glass jar. Break up the stems, too, because they also hold flavor and scent.
n
Stored in a dry, dark place, dried herbs can last for a year or more, although they do lose flavor over time. n

REWARD
Before making a major commitment, designer Jessica Stambaugh layers (and relayers) fabrics, photos, and other items on a board to see how the colors and textures work together in each room.
t’s not every homeowner who dares to paint wood floors black, install chartreuse subway tile floor to ceiling, or choose cheetah print for curtains and a bedspread. But interior designer Jessica Stambaugh sees her Nashville home as a playground for exploring unconventional decorating choices and her love of color. “You gain decorating confidence by pushing the barometer, even if you mess up,” she says. To start, Jessica cracked open a box in which she’d been stashing bits of house inspiration while an apartment dweller in New York City. “If you’re always paying attention to what inspires you and collecting examples, when you go to decorate you’ll have something to draw upon.” Her box was heavy on Southwest influences—like a postcard from the Georgia O’Keeffe Museum in New Mexico—that guided her choices for paint, tile, and fabrics. That’s not to say every detail was ironed out in advance. She had to rethink a couple of paint colors, such as the vibrant mint green she painted her office that ended up being too saturated. In fact, she decided the whole space worked better as a guest room. “Often you don’t know exactly where you’re going in the beginning of a project, and you have to be ready to tweak things and say, ‘This isn’t quite right’—especially with color.” Risks and regroups are part of her process, which also hinges on modernizing vintage finds and hand-me-downs, deploying fabric in impactful ways, and contrasting soft colors with saturated ones. All of them go to the same goal: a personalized, comfortable, and soulful home. “I want things to feel natural and organically accumulated,” Jessica says. “I love a house that feels like you’ve always lived there.”
94
In the living room of her Nashville home, Jessica used a favorite bold flame stitch fabric as a table skirt rather than committing to it on a more permanent upholstered piece. She didn’t love the nailhead trim on the chairs so pried a few off in a discreet spot, liked the result, and removed the rest.

COLOR CUES
Jessica’s strategies for making a riotous palette work: ■ WA L L S “Think about color in terms of saturation. There’s a similar level of dustiness to the ones I chose.” She was inspired by the muted colors of Charleston house, right, where the early20th-century literary circle Bloomsbury gathered in Sussex, England. ■ C E I L I N G S Subtle nonwhite ceilings can unify a palette and create coziness. Her top choice: a pale blue like Benjamin Moore Ocean Air. ■ AC C E N T S Fabrics, rugs, and pillows will help you identify harmonious hues. “I’ll look at fabrics I really love and how they incorporated different colors to fi nd a combination that works,” she says.

When in doubt, pair something feisty with something grounded. Here, the industrial heft of stainless cabinets anchors chartreuse tile. “The cabinets also work like a neutral in that they blend with stainless kitchen appliances and reflect the green a little bit,” Jessica says. An Etsy vendor made the matching shelves.

refresh old things This Victorian headboard from Jessica’s childhood gets a refresh with help from turquoise walls and modern patterns. She painted the nightstand a deeper tone of the wall color so it would blend rather than compete.
Jessica doubled down on cheetah prints in her bedroom. “It’s classic yet not serious, and its colors are neutral.”

a fresh take In Victorian times, people in Great Britain and America were overcome with pteridomania, a craze for ferns,
often decorating upscale drawing rooms with terrariums. A contemporary alternative to those glass boxes is a wall-mounted planter, above, in which a variety of ferns grows surrounded by moss. Even simpler: Gather a handful of fronds from your garden into a leafy bouquet.

Fill the frame with potting soil, insert plants and the soil from six-packs, then work in some moss. The living wreath can hang out of direct sun on a covered porch or serve as a temporary centerpiece on an outdoor table.

Most ferns thrive in similar conditions: humidity and medium light. Mobee Weinstein, author of The Complete Book of Ferns, recommends placing indoor ferns near east-facing windows and cautions against overwatering. “Many people think that because ferns like moist air they need constant watering so end up killing them with kindness,” she says, adding that misting the leaves is ineffective. “Instead, try placing plants on a pebble tray that you fill with a bit of water or near a humidifier.” A few favorites for indoors:

C HIC KE N ADOBO WITH COCON UT RIC E Meet our new go-to weeknight main. Adobo, the unoffi cial national dish of the Philippines, is known for its bracing acidity (courtesy of a vinegar-soy sauce) and its fall-off-the-bone tenderness. Most adobo recipes call for marinating then braising meat or seafood for hours. This speedier rendition still relies on the tangy vinegar sauce but shortcuts the process so you can pull it off almost any night of the week.
D
riven by global food trends and a collective appetite for assertive, complex flavors, sour is showing up everywhere. Acid’s bite balances sweet and salty, counters bitter, and amplifies the flavors of individual ingredients. Although citrus and vinegars may be obvious choices for a spike of sour, these recipes highlight a few other options— like fermented ingredients and cultured dairy—for nuanced tang. Embrace the zing, and the next time you think a dish is missing a little something, we’re willing to bet you’ll turn to a splash of something sour for the fix.
SOUR PANTRY Go beyond lemon and vinegar with these acidic ingredients.
VE R J U S
A punchy, vinegarlike juice from unripe fruit (usually grapes).
C H I LE - LI M E S E ASO N I N G
Acid meets heat and salt. Sprinkle on fruit or stir into salsa.
TAMARI N D
The sticky, sweet-tart pulp from the seeds of tamarind trees.
FE RME NTE D HOT SAUC E In fermentation, naturally occurring good bacteria create funky, acidic flavors. If the idea of fermenting at home intimidates you, this subtly sweet hot sauce is an easy entry point. A mix of vegetables and spices + a week in a cool, dark spot = better-thanbottled hot sauce. Sprinkle it on roasted vegetables, eggs, and tacos.

MOZZARE LL ASTU FFE D KIMC HI MEATBALLS Chopped kimchi, a splash of its brine, and gochujang (a fermented chili paste) give spunk to the tomato sauce in this Korean-Italian crossover. The cheese-stuffed meatballs take their cue from South Korean cuisine, which is known for pairing sour fermented ingredients with mozzarella cheese. Serve the saucy meatballs over rice noodles and/or napa cabbage.

VEGETABLE L ASAGNA WITH L ABNE H This lasagna update has big things going for it: It comes together in a skillet, and a few tart ingredients give it a Middle Eastern accent. Labneh, a spreadable cheese made from strained yogurt, stands in for ricotta. (If you can’t ďŹ nd labneh, use whipped cream cheese.) And instead of a basil pesto, we whir together an easy batch of zhoug, a Yemeni condiment made from parsley, cilantro, spices, chiles, and lemon juice.
CITRUS - CUCU MBE R SL AW WITH PIC KLE D SHALLOTS The flavor of sweet-tart verjus hits somewhere between vinegar and wine. Much like wine, verjus is available in both red and white varietals. In this recipe white verjus serves as the base of the slaw vinaigrette, which doubles as a brine for the quick-pickled shallots. Any combination of red, green, and/or napa cabbage works in the slaw.
TAMARIND PEACH L AS SI
Swipe the edges of tall glasses with a lime wedge then dip in chile-lime seasoning for a flavor booster. The cooling yogurt drink tempers the chiles’ heat.
Akin to a smoothie, the Indian drink lassi starts with yogurt or buttermilk but can incorporate any number of spices, juices, and/or fruits. (Mango is particularly popular.) Our rendition combines tangy Greek yogurt with fresh peach slices and tamarind, a tropical fruit that starts sweet, finishes tart, and has an earthy, acidic note you can’t quite put your finger on. n

You may know how long you sleep every night, but do you know how well you sleep? The quality of your shut-eye is as important as the quantity. Find out how to get the rest your body needs.
Call us a nation of not-so-great sleepers: One in three Americans is chronically sleepdeprived, according to the Centers for Disease Control and Prevention. And in a Better Homes & Gardens magazine survey, 76 percent of readers said they very often wake up feeling tired. Only 5 percent rated their sleep quality as very good. “Consistent, restful sleep is one of the most effective ways to maintain good health, reduce stress, and boost memory and productivity,” says Sara Mednick, Ph.D., associate professor of cognitive science at the University of California, Irvine. “Lying in bed for eight hours but not getting deep, regenerative sleep can be as bad as sleeping for very few hours.” Are your z’s subpar? Take our quick quiz to find out, then read on for science-backed tips and tools to make the most of those precious hours of shut-eye.
HOW ARE YOUR Z’S?
It’s easy to know how much you’ve slept, but not so easy to tell if those hours were quality time. Take this quiz to find out.
1
How often do you snack?
A Mainly after dinner. B Throughout the day, and I often crave sugary stuff. C When I do snack, it’s usually something healthy between meals.
a night over the course of one week led to a 2-pound gain. “When you’re sleepdeprived, your body acts like it’s in a mild state of stress,” Mednick says. “It spurs you to reach for foods with sugar that provide quick energy.”
2
My memory is ...
A Sharp as ever. B I feel fuzzy-minded a lot of the time. C I often struggle to recall words and forget where I put my keys.
If you answered A or B, poor sleep may be throwing your hunger hormones out of whack.
If you answered B or C, your memory is begging for better sleep.
When you don’t get good sleep, levels of the appetitestimulating hormone ghrelin rise and levels of the appetitesuppressing hormone leptin fall. One study found that getting only five hours of sleep
“Sleep deprivation has a strong affect on the brain, especially the prefrontal cortex, the area that’s responsible for language, word selection, and memory,” Mednick says. It’s not uncommon for people

to notice words slipping their mind on six hours of sleep.
3
If I’m being honest, my mood can often be described as ...
A Sad B Short-tempered C Anxious D None of the above If you answered A, B, or C, poor sleep may be worsening your mood.
The regions of the brain tied to mood—the amygdala and prefrontal cortex—are adversely impacted by poor sleep. “The prefrontal cortex is like the CEO of the brain, and it controls the amygdala,” Mednick says. With less-thanideal rest, “the CEO can’t control the amygdala, and it leans more toward negative thoughts,” Mednick says. The result? A moodier you. March 2020 |

GOOD NIGHTS AHEAD
HOW GOOD SLEEPERS GET THEIR REST
Two must-dos for your p.m. routine.
Incorporate all or some of their tips into your routine to get quality z’s.
practice calm & slow breathing “If I wake up and can’t fall back asleep, I do some belly breathing. I inhale for four counts and exhale for six, focusing on my stomach expanding during the inhale and contracting on the exhale. Breathing at this rate is soothing and calming to the nervous system.”
sugar, which can disrupt sleep. Aim for 25–35 grams of fiber daily.” MARIE-PIERRE ST-ONGE Ph.D., associate professor of nutritional medicine and director of the Sleep Center of Excellence, Columbia University in NYC
LEAH LAGOS Psy.D., New York City psychologist and author of Heart, Breath, Mind: Train Your Heart to Conquer Stress and Achieve Success
load up on fiber “Our study found that people who got a lot of fiber tended to spend more time in deep sleep, when much of the body’s restorative processes take place. They also woke up less throughout the night. It might be because people who eat more fiber eat less

Your bedside table is part of your sleep environment, which should be calming and comforting. KAREN BRODY
create a restful spot “If work items—laptop, phone—clutter or fill your bedside table, they can interfere with the time-torest message your bedroom should send to the brain.
Create a tray of sleep-friendly items. Mine has a lavender essential oil and a dream journal. I also recommend a braindump journal for jotting down worries or to-dos for the next day. Consider the tray a permission slip to rest.” KAREN BRODY author of Daring To Rest and yoga nidra meditation teacher-trainer at daringtorest.com
plug ınto the right sounds “My job often involves sleeping outside bathed in the relaxing sounds of nature: rain falling in a forest, a gentle wind rustling leaves. These signal safety to your brain. When I’m not sleeping outdoors, I set my phone to flight mode and use an app to listen to sea waves lapping on a shoreline or the rustling leaves and flowing streams of a forest.” PHOEBE SMITH author of Extreme Sleeps: Adventures of a Wild Camper and creator of the Wander Woman podcast
CHOOSE A FEW WINDDOWN ACTIVITIES Listen to soft music, have a cup of chamomile tea, meditate. The key to an effective wind-down routine is doing the same things each night. This tells your body that it’s time to get tired and go to sleep, like a baby’s bedtime routine is designed to do, Brody says. GO TO BED AT THE RIGHT TIME For those with traditional schedules, that’s between 9:30 and 10:30, 11 at the latest. This is when much of the slow-wave stage of sleep happens, when your mind and body restore themselves, Mednick says. If you fall asleep at midnight, you’ll miss out on a lot of that stage even if you sleep eight hours.

BETTER PETS
TIME Experts weigh in on the pros and cons of pet nutrition trends. GRAIN-FREE Grain-free foods are considered by some to be healthier for pets. One theory is that undomesticated dogs and cats didn’t eat grains so grain-free food may be more easily digested and less likely to cause allergies or stomach issues. On the other hand, experts say that dogs have evolved to develop the ability to digest starches. So many vets are advising against a grain-free diet. “Grains aren’t necessarily good or bad per se. They can provide nutrients and are a good source of energy,” says John P. Loftus, Ph.D., D.V.M., assistant professor of small animal internal medicine at Cornell University College of Veterinary Medicine in Ithaca, NY.
NEW PROTEIN SOURCES Move over chicken and beef; pet food companies are introducing protein sources like crickets and buffalo. With an eye toward sustainability, even plant-based proteins like chickpeas and lentils are being used. One thing to know: Pet foods with novel animal proteins often contain a higher percentage of added plant protein, says Ken Tudor, D.V.M., holistic veterinarian and owner of The Well Dog Place in Claremont, CA. That may mean less of the nutrients found in animal protein (like taurine) that a dog or cat needs.
Even though studies haven’t confirmed whether organic foods are better for pets, there’s no downside as long as the food has the right nutritional makeup. The words “certified organic” on the label indicate that at least 95 percent of the ingredients are organic; “made with organic ingredients” means at least 70 percent are. What about added ingredients like probiotics and omega-3 fatty acids? They up the price but also increase beneficial vitamins, minerals, and nutrients, says Carol Osborne, D.V.M., veterinarian in Chagrin Falls, OH.

FRESH FOODS Although fresh pet foods (available via delivery services and in the refrigerated section of pet stores) may seem like a splurge given the prices, they can benefit pets. “Fresh pet foods usually have high-quality meat and are good sources of vitamins and minerals,” Osborne says. Because fresh foods are perishable, you’ll need to keep these items in the fridge or freezer. For any foods you choose, check labels for an endorsement from the AAFCO, a nonprofit regulating pet food quality. ■

MUSHROOM LAMPS
A favorite in ’60s and ’70s decor, these dramatic domes are lighting up our houses again.
THE ORIGINAL With its distinctive shape
and high-shine finish, the chrome lamp in this space from our May 1972 issue is a focal point, even next to the bold coverlet and matching mural that we suggested painting for drama on the cheap.
THE UPDATE Like the originals, these
new versions offer two benefits in one: Their silhouettes add a sculptural element to a room, and their domed shades cast light downward to create warm ambience wherever you put them.
