We have made every effort to ensure the guide is as comprehensive as possible and we’d like to say a massive thank you to all the venues that put faith in us and signed up for the guide. We are confident that we will be able to grow year on year and help to promote all the venues who choose to work with us. A huge thanks also goes out to all our sponsors, Visit Bradford, Ilkley Town Council and The Box Tree Restaurant. Did we also mention that Eat Drink Ilkley is also online? You can now browse all the venues featured in the guide, along with all our sister guides in Bradford and Harrogate, to find new and exciting places to visit. Expect more developments over the next year including the opening of our online shop, the launch of the Eat Drink card and possible an Eat Drink app. In the meantime we hope you enjoy reading the guide and we’d love to hear what you think. Bon Appetit!

An Interview with Simon Gueller Simon and Rena Gueller took over the iconic Box Tree restaurant in 2004 and have firmly re-established it as one of the stand-out fine dining restaurants in Yorkshire. What attracted you to take on t he Box Tree back in 2004? It was a massive opportunity to take over an iconic business. I’d known of it since I was a young boy and when the opportunity came up we threw everything at it.

What would you say are the key things you have done to put your own stamp on the restaurant? We’ve tried to move with the times but maintain its classical roots. It’s been tricky but I think we’ve made a good job of it. More specifically we have kept up refurbishments to give the place a modern, classical feel. The food has moved forward significantly with substantial changes this year. We felt the menu was looking dated and needed

11

The Box Tree is a husband and wife operation, how does that dynamic work? We are both very driven and quite competitive. So we are always pushing each other to improve standards. I’m pushing in the kitchen and she is pushing in the restaurant so we work really well together in that respect, we’re a good team. Are you still motivated by the same things or is that constantly evolving? I’m motivated at the moment by an ambition to make sure the Box Tree is better than its ever been. The industry is contantly evolving as are food trends so we need to make sure we stay focussed and driven to stay on top of our game. How do you approach motivating your staff, is it a softly softly approach or are there pan’s flying across the kitchen? A bit of both. Although softly softly works most of the time, my staff have to know there is a sting in the tail and that I’m always going to have that. If I didn’t I wouldn’t care. It doesn’t mean there are pans flying everywhere but if standards aren’t met it undoes all the good work everybody has done. So we can’t allow for complacency.

You recently took on Michael Carr, who stood out on the Great British Menu this year, what impact has he had on the restaurant so far? He has settled in well and we work very closely and very well together. He has brought a new feel and a new modern approach to the food so I’m looking forward to seeing how that relationship develops going forward. What’s your favourite ingredient to work with? And do you have a particular dish that stands out as a favourite? I love working with all high quality ingredients really. If I’m eating for myself I’m a big meat fan but I love working with fish. A favourite dish would be roast sea scallop with celeriac, apple and truffle. That’s pretty special. How did you get into cooking? I started cooking in school holidays, when I was 12. When I got to 15 and left school to start work in a very classical French Kitchen. Other than the Box Tree, What’s the most memorable place you have worked at? Rascasse in Leeds.

Eat Drink Ilkley Vol 1

bringing into line with other top modern restaurants. I feel we have done that and the standard of food is as high as its ever been at the Box Tree.

Celebrating Local Producers with

Real Food Ilkley Real Food Ilkley is a speciality fine food and local produce market held on the first Sunday of each month (except January) behind the Black Hat Pub in Ilkley. The market acts as a non profit making organisation, set up and run by three volunteers and features a wide range of local and specialist produce. Two stalls each month are also given for free to community groups to help them raise awareness and funds for their initiatives. We spoke to market organiser Lucy Allen to find out more.

Can you tell us about some of the produce available at the market? The market has grown over the last three years and now features over 30 stalls who showcase their produce. One of the market’s aims was to connect producers with the community and we love to see visitors talking to the people who have grown, made, cooked and baked the items in front of them. Our stalls can range from bread and baked goods, gluten free goodies, cheese, teas, coffee, herbs, chocolates and brownies to honey, soups, pickles and condiments, sweets, lasagne, pretzels, organic fruit, veg and meats.

How did you come to be running a local produce market? All three directors (Paula Connor, Bernie Baldwin and Lucy Allen) felt that Ilkley would benefit from a local and speciality food market which was not only a place where people could sell their produce but also somewhere the community could come together and learn more about the food they eat and how it is produced. We conducted feasibility studies and research from retailers, residents and visitors to the town and the support was overwhelming. It was a long journey to find a location, get permission, brand the market and raise funds to buy equipment but we got there. The work to raise more funds and gather more volunteers is still ongoing as the market grows and continues, but we’re proud to see how popular Real Food Ilkley has become.

What are your backgrounds and what do you all bring to the (ahem) table? My background is in PR, marketing and events and I’ve worked with many restaurants, food festivals, chefs, retailers and tourism organisations including Welcome to Yorkshire and Cumbia Tourism. Bernie brings valuable experience for the community, volunteering and funding side of the market, having worked in social care and community work for many years. Paula’s background is in project management for international companies, Paula also brings valuable experience as a stall holder having run her own very successful local produce business until a few years ago.

Eat Drink Ilkley Vol 1

Eat Drink Ilkley Vol 1

14

How important is it for people to support local producers and what do you do to encourage people to do that? One of the aims for Real Food Ilkley was to ‘promote local economic growth’ and to ensure that a presence of a regular food market in Ilkley would bring new opportunities for the local economy and existing retailers. We support a ‘start up’ each year, offering them support in business set up, fees and a place at the market. We’ve since seen these businesses flourish and in turn support individuals and businesses around them. A number of retailers and venues in the town have discovered new suppliers through Real Food Ilkley and the presence of a market provides a destination for customers and encourages people to shop in the areas in which they are based. We also have a changing range of guest stalls at the market. This compliments our range of regular stall holders perfectly and, as well as knowing they can pick up their favourite produce from their favourite stalls, ensures visitors always have something new to see.

Do you think Ilkley is a good place for producers to base themselves? Ilkley is a great town with so much going on. People based here have a genuine passion to see the town succeed and in particular are keen to support independent businesses and projects and see them thrive. We have a large number of food retailers with a reputation for high quality produce and, sandwiched between the beautiful River Wharfe and Ilkley Moor, inspiration and natural beauty is never far away.

Harden Shipley

Bradford

This waymarked circular walk takes you on a tour of some of most beautiful countryside, pretty villages and attractive moorland in West Yorkshire. Starting in Shipley, this walk takes in Shipley Glen, Baildon Moor and Ilkley Moor on the way to Ilkley, before continuing past Addingham, Silsden Moor and across the Worth valley towards Bronte country. The final section takes you back to Shipley via Goitstock Wood, Harden Beck and Bingley.

Cow and Calf Rocks High on Ilkley Moor the Cow and Calf Rocks are a large rock formation consisting of an outcrop and boulder, also known as Hangingstone Rocks. The rocks are made of millstone grit, a variety of sandstone, and are so named because one is large, with the smaller one sitting close to it, like a cow and calf. According to local legend, the Calf was split from the Cow when the giant Rombald was fleeing an enemy, and stamped on the rock as he leapt across the valley. The enemy, it is rumoured, was his angry wife. She dropped the stones held in her skirt to form the local rock formation The Skirtful of Stones.

The rocks are a great place to climb and the moor offers spectacular views of Ilkley and beyond.

Bolton Abbey Just a few miles outside Ilkley, Bolton Abbey offers a fantastic family day out in a stunning setting by the River Wharfe. There are several riverside and woodland walks which take in Strid Wood and the awesome Strid (a narrow rocky chasm through which the whole river flows with great force), the great medieval hunting lodge of Barden Tower, and the Valley of Desolation with its fine views from Simon’s Seat. The Estate has been carefully managed by the Devonshire family since 1755 and is still the Yorkshire seat of the 12th Duke of Devonshire. Plus the Abbey itself and the iconic stepping stones. The Cavendish Pavilion offers various refreshments if you need to rest after all that walking!
