Focusing on minimising food waste and sustainability, the use of local produce and fresh fish caught daily is a focus, ensuring a delicious, yet environmentally conscious menu is available. The Rémy Salon and Bar is named after Eden Rock’s original owner, paying tribute to his pioneering spirit. The décor is a ‘yacht-on-land’ theme and treatments are by acclaimed local artisanal brand Ligne St Barth, creators of natural, sun-drenched products manufactured exclusively on the island, using only natural ingredients including frangipani flower, melon, sugar cane and mango butter.
