With the expertise of these physicians, we can rest assured that many tomorrow’s are available to us. Moreover, we need to remember that it often takes a team to provide our wellness. Let’s also recognize the many unsung heroes who work behind-the-scenes in the healthcare profession- the nurses, caregivers, receptionists, chefs and personal chaperones who help the doctors make our lives vibrant. My father spent a year in an assisted living facility where I discovered it was most especially the caregivers’ kindness, dedication and love that saw him through every step of his journey through this period of his life. I dedicate this issue to his memory. May we all be champions of health and above all, embrace the beauty of life every single day we are given the honor to live it.

A Revolution in Vision Correction – Laser Corneal Reconstructive Vision Correction for Better Vision

oday’s fast-paced lifestyle often means our eyes are doing more work than ever before. Habits such as abundant screen time, reading with poor quality lighting, and/or simply not regularly checking and correcting our eye problems have made many people’s vision suffer. The result is a number of people who need not just an optometrist but an excellent ophthalmologist. Astigmatism, nearsightedness,

and farsightedness are common eye distortions that find a solution at the Lasik Institute of Dr. Motwani. Moreover, the institute specializes in more complex eye problems that bring in many with “unfixable” diagnoses who are desperate to regain their vision. Dr. Manoj Motwani is a laser vision correction specialist who is also a visionary leader in his field. He has developed techniques for corneal reconstructive repairs while continuing to research, write, share, and most importantly, help more. “Number one thing right now is the topographic guided ablation which is a procedure that looks at irregularities of the eye and selectively decreases and removes those irregularities in the cornea, the main focusing part of the eye. The technique I developed utilizes a new system that was FDA Approved, but not enough was known about it to fully understand it. I developed a new protocol, and a new set of theories about how eyes focus vision and process it in the brain, and by reducing the irregularities we see something that would be closer to a machine than to a human. The limiting factor of the eye then becomes the density of the nerve receptors in the retina, or what’s the megapixel of your retina,” explains Dr. Motwani. With this technique 80 to 90 percent of his patients in his studies have been shown to achieve 20/15 vision, which is 50% better than the “ perfect” 20/20 vision, and many say their night vision is actually better than their corrected vision pre-surgery. The system that is used to treat these corneal anomalies is called the Wavelight Contoura System and only a certain number of doctors know how to perform the procedure. Dr. Motwani is not just one of the rare doctors in the world who do it, he is the only one of a few one who peform these procedures in the United States.


Although Topographic Guided Ablation was first invented in Germany, the LYRA Protocol (Layer Yolked Reduction of Astigmatism) was developed by Dr. Motwani, and fully harnesses the power of this technology to make the first procedure that has the potential to make someone who has never had laser surgery before to have vision better than normal, or better vision than can be achieved with glasses or soft contact lenses. The same system can be used to repair and reconstruct the irregularities in those that have suffered from corneal irregularity caused by disease, by trauma, or by past surgery from RK/ LASIK/PRK etc that had a poor outcome. Dr. Motwani took what he learned and developed in the LYRA Protocol to corneal reconstructive repairs, and created and published the San Diego Protocol for corneal repair “At this time, I’m one of the only people in the U.S. performing these corneal reconstructive repairs, and the only one in the western half of the U.S. For example, I can take someone with severe night vision problems and repair their eyesight. I can reconstruct their corneas so they don’t have that problem anymore“, says Dr. Motwani. With him being one of the only specialists performing this unique laser technique, Dr. Motwani’s practice has some of the most experience in the US doing the corneal repairs which has helped many patients avoid the need for corneal transplants, and attain better vision when other solutions simply would not work. We asked Dr. Motwani to recall some of his cases and share how he fixed the unfixable eye problems. “I repaired the cornea of one fellow who had a scissors go through his cornea when he was a toddler. We repaired the distortion in the cornea, corrected it, and he sees 20/25 out of an eye he had never seen with since then.. One patient experienced severe pain in her eyes when looking at headlights when she was driving at night. After I did a Contoura correction, for the first time in her life she was able to drive without having that problem,” remembers Dr. Motwani. “We have also eliminated chronic headache in a series of patients by removing the flaws in their cornea that their brain was straining to process” and repaired the night vision in patients with severe night glare and halos from past surgery.” He has helped patients with problems that could not be fixed at any other place and prior to coming to his office many of them were making plenty of visits from one eye doctor to the next, and were searching for a specialist who can help them for years. Helping so many people with the Contoura treatment and repairing severe irregularities

in numerous cases made the name of Dr. Motwani more and more recognizable. eave it to the French to forever change the relationship between hair and hair dye by creating balayage. One of the trendiest styles for 2018, balayage is the technique of actually “painting” color onto the hair. And while it’s many celeb’s-style-ofchoice, it is in fact a technique that was created decades ago in France. Balayage means to “paint” in French- and that’s exactly what happens when the color is applied to the hair with a tool similar to a paint brush. Yelena Chaulk, a stylist at The Lab A Salon in trendy North Park, explains the process. “Balayage is a free painting technique that gives a blonde natural looking sun-kissed highlights… it looks like you spent hours out in the sun.” However, because the dye is applied in vertical strokes with a brush, this isn’t for the customer seeking an all-over platinum look achieved with foils. Furthermore, any hair color can be enhanced with balayage. “I sweep the color onto the hair and then blend it to keep it consistent throughout. I go through and pick up (my customer’s) natural highlights and then enhance those.” A stylist can also contour around their customer’s face to help enhance their best facial features. Chaulk has been in the world of hair for over 15 years, so she’s seen many trends and over-night fads fade away as quickly as badhair dye. But, she’s confident this is one method that’s here to stay. Plus, because a balayage hair color isn’t considered harsh, it works well on any hair texture and base colors. A major win-win in any stylist’s booth. “Many clients say they feel more youthful and refreshed (after balayage). And it seems to enhance their complexion if it’s done in the right tones. It’s classic, but not in-your-face. Indeed, this rhythmic sound therapy coupled with the warm herbalized oil being massaged deep into my skin put a halting stop to any wandering thoughts or ambient noises. And as a newbie to the rejuvenation found in Ayurvedic Spa therapy, I had no idea this practice could truly leave me feeling THIS grounded and balanced. But, this came as no surprise to the silky hands of my therapist who performed the GANDHARVA (gaan-darva) therapy at the Chopra Center. Perfect Bar Gives San Diego ‘Perfect’ Nutrition The San Diego company has cultivated massive success nationwide with their healthy bars. By Lexy Perez

ave you noticed the colorful protein bar dubbed as the “Perfect Bar” yet? Our guess is you probably have; they’re virtually everywhere. Whether you’re visiting the local grocery store, scrolling through food blogger’s Instagram feeds or reading about the

latest health products, the Perfect Bar screams out “I’m healthy, Eat me!” The healthy protein bars are derived from San Diego local, Dr. Bud Keith, who opened the city’s first gym and juice bar- The Healthouse. Always brainstorming new ways to supply his children with healthy meals, Keith combined ingredients to make what he believed to be ‘perfect,’ thus creating the Perfect Bar. After Keith passed away in 2005, the eldest of his 13 children vowed to transform their father’s recipe into a business. “At the time, I had nine brothers and sisters under the age of 18, so my older siblings and I knew we had to come together to support our family,” Founder and CEO Bill Keith says of the bar’s origin. The same year of his dad’s passing, Keith passionately worked to share the recipe with consumers and create a legacy on behalf of his father. “When we decided to start the business in 2005, I went up to Northern California to the


Berkeley Whole Foods, going in every day to beg the buyer to let me demo,” Keith recalls. “For a month, I slept in my car and showered at the local gym, until he finally gave me the green light. Once I got in, I couldn’t keep the bars stocked – they were literally flying off the shelf.” The bars stood out with their quality and clean whole food ingredients such as dried fruits, vegetables, honey and nut butter. Each bar is free from chemicals, preservatives, gluten and soy. They also deliver up to 17g of protein per bar, are non-GMO Project Verified and Fair-Trade Certified. The brand offers 12 original flavors including: Almond Coconut, Blueberry Cashew, Almond Acai, Dark Chocolate Peanut Butter and Sea Salt, Carob Chip, Fruit & Nut, Maple Almond, Cranberry Crunch, Dark Chocolate Almond, Coconut Peanut Butter and traditional Peanut and Almond butter flavors. While eclectic flavors, a predominant ingredient in every perfect bar is nut butter, something Keith says hits on their “two main points:” Nutrition and taste. “Perfect Bar is like the more convenient and nutritious peanut butter sandwich most kids know and love,” Keith explains. “The taste is nostalgic, creamy and delicious, plus the added whole food protein and superfoods (fruit and veggies), make it a well-rounded snack for kids and adults alike.” With each bar having over 20 superfood ingredients, the bars require refrigeration, but can stay fresh at room temperature for up to a week. “The concept of having a protein bar that requires refrigeration wasn’t so much a decision, as much as it was the way our Dad originally crafted the recipe. With nut butter as the base, whole food protein and superfoods mixed in, and honey as the only natural binder, refrigeration is required to maintain the bar’s consistency, texture and shape,” Keith explains. While honoring his father’s refrigerated creation, Keith admits that it made it originally somewhat “difficult” to market. “It was extremely challenging to be the first refrigerated protein bar in every retailer we approached, as we were initially placed in dairy sets and had to compete with the sales of everyday household items like yogurt, milk and eggs. When we started 12 years ago, we helped pioneer this idea of “fresh

snacking” and had to prove that it was viable amongst consumers, as their demand for fresher options increased.” While they opted to “forgo” the refrigeration requirement, they abided by their father’s original recipe. “If we would have had the choice (and wherewithal to know how difficult it would

be to bring the first refrigerated protein to market), we probably would have opted to forgo the fridge. Looking back, though, I wouldn’t do it any other way,” Keith proudly says. The family’s hard work has proven to be a success for Perfect Bar is currently sold in more than 12,000 fridges nationwide in stores including: Whole Foods, Target, Vons, Ralph’s, Trader Joes, Sprouts, Jimbo’s and 7-Eleven. Food bloggers can also be seen posting about the product on their feeds which has done nothing but create an “extended family” for the brand. “Since we were kids, we invited everyone we knew to share meals with us – after all, there were 13 kids in the family, so what’s a few more to add to the dinner table?” Keith muses. While there is a myriad of protein bars on the market, Keith believes their family foundation is something that gives them an edge over competitors. “Our family dynamic today remains similar to that of our childhood; one that is built on respect and consideration, which is truly the foundation for our company,” Keith explains. Despite most siblings bonding over typical home issues such as school or work, Keith acknowledges that he and his

sister Leigh (co-founder) continue to uphold their older sibling roles for their younger siblings. “With 13 brothers and sisters, we’ve had to create checks and balances to ensure no one sibling has more than 50 percent of the company’s control, forcing us to work together to make decisions, particularly in the financial realm. It’s important that Leigh and I work together towards common goals and make decisions that are in the best interests of our family, as well as our company.” While proud to offer nutritious snacking, Keith says that he hopes the bars reflect their underlying message that “family always comes first.” “Of course, working with your family is also challenging at times,” Keith admits. “Dealing with issues that arise in the workplace and having to go to a birthday party or holiday dinner right after – those issues follow you into your personal life. We’ve certainly blurred the lines for work life and personal life, but I’m happy to say it’s worked out quite well for us.” And with their success, the family stays loyal to their roots, manufacturing and maintaining their headquarters in San Diego. “San Diego is our home. We grew up in Mission Beach… this city is a hub for health. San Diegans are constantly active and focused on bettering their health. As a brand, it’s been the most welcoming and warm place to build our family business, and allowed us to really lay the groundwork to get to where we are today.” Keith is also aware that the bar’s name can peg the question of what exactly makes the bar “perfect,” something Keith says is his “favorite question to answer.” “The name ‘Perfect Bar’ goes back to our original story of this recipe being the “perfect” option for a Dad to feed his hungry kids a fresh, nutritious snack while on the road. Now, with two kids of my own, I can finally relate to how perfect this simple concept can really be. Feeling good about the food you’re feeding your family is one of the best feelings in the world. To be able to do that while also having that food taste delicious, be fresh from the fridge and perfect to take on the go (which we always are), I’ll echo my Dad and say, ‘That truly is perfect.”

The ‘True-ist’ Food Kitchen The restaurant unveils a second location in La Jolla to promote healthy dining and wellness By Lexy Perez

W

hile some may still view the health-craze as a “fad,” San Diegans proves that maintaining a healthy lifestyle is truly a ‘trend’ that is here to stay. Renowned physician and True Food Kitchen co-founder, Dr. Andrew Weil, is well aware of our city’s embrace of nutritious eating. So, he recently opened the second location of his popular eatery in America’s Finest City. To welcomed applause, Weil’s True Food Kitchen opened its newest location at La Jolla’s renovated Westfield UTC Center, marking the second True Food location in San Diego. The first location already keeps people healthy in its Fashion Valley locale. “The restaurant itself is beautiful and the location is just stellar. That mall is just amazing,” Weil explains of the recently unveiled location at UTC. Moreover, he adds that San Diego is a city that “just gets it” when it comes to his vision for the health-concious restaurant. “I think San Diego’s really supportive of the concept. People get it there. They love the food and I think there’s plenty of space for more than one.” Weil’s True Food first opened its doors in 2008 in Phoenix, AZ, after the healthy trailblazer joined forces with restaurateur Sam Fox and Executive Chef, Michael Stebner. Fast-forward a decade later and the health-driven restaurant is just getting started. In fact, apart from San Diego, the chain is set to open additional locations in Austin, Houston and Dallas, Texas, as well. With 21 branches across the country, many may be quick to wonder what makes the earthy restaurant so appealing. But after a quick glance at the menu, it’s obvious. Popular food staples are offered, but with a healthy twist. For instance, a teriyaki bowl consists of quinoa, ancient grains and fresh vegetables. While a grass-fed burger is covered by a flax-seed bun and complemented with a kale salad and roasted sweet potato (instead of French fries.) Yes, this restaurant is committed to offering a varied menu that can satisfy any craving, but never strays from maintaining nutritional value. “Our dishes are unique. Our food looks terrific. It tastes terrific and there’s something for everyone there,” Weil says of the menu. And while a surplus of healthy eateries can be found around town, Weil’s True Food is home to an innovative concept that no eatery has thus tackledWeil’s innovative anti-inflammatory food pyramid. Based on the concept of an anti-inflammatory diet, the medical researcher created the pyramid as a way to guide those seeking the necessary foods needed to fight inflammation and assist in achieving and maintaining optimal health. “They (menu food items) perform to a coherent nutritional philosophy, my anti-inflammatory diet. I don’t think there’s other restaurants that do something like that,” Weil emphasizes. True Food’s menu is cooked-up from inflammatory-fighting ingredients such as lean protein, whole grains, fruits, vegetables and herbs and spices including tumeric and ginger. Additionally, customers can choose from a variety of salads, soups, entrées and desserts. The restaurant also features a

Most importantly, the menu also appeals to all allergies and diets with vegan, vegetarian and gluten-free options available. “My main motivation is to show people that there’s no opposition between food that’s good and food that’s good for you,” Weil explains. “Most people I meet think that eating healthy means giving up everything that you like and that’s absolutely not true. But many people have never had the experience of eating food that was healthy and also delicious.” Known as an avid traveler, Weil finds inspiration in cultural meals; he’s always eager to create his own healthy twists. And to this day, he

continues to remain heavily involved in creating the menu while assuring each ingredient, flavor and presentation meets the highest standards. “Some of the recipes on the menu are mine,” Weil reveals. “I source new ingredients. I travel widely. I’m always on the lookout for new ingredients and new ideas. I work with the chef. I taste everything and I approve it.” And if today’s climate seems to embody a new ‘health craze,’ Weil notes that his restaurant played an important role in influencing this healthy mindset, even when introducing the beloved kale salad years ago. “I think we’re really responsible for creating the craze for kale salad,” Weil explains. “When we opened, that was a really unusual dish to have on the menu. I think we’ve been very innovative and ahead of the curve.” Much like the restaurant’s Fashion Valley

location, the new UTC Kitchen is a 9,000 square foot space with both outdoor and indoor dining areas. The dining room seats up to 200 guests and allows visitors to marvel at the organic, contemporary ambiance of the restaurant. The décor maintains an eco-friendly vibe. Indeed, the chairs are constructed from recycled soda bottles, the hardwood floors are created utilizing reclaimed wood and the indoor/ outdoor garden basins are filled with organic herbs and spices. Weil notes that there’s always “tweaking” with the look of each location. For example, the La Jolla location introduces the restaurant’s first glassed-in kitchen; normally it’s open and accessible to guest’s in other locations. Naturally, the ambiance can be appealing to the eye, but it’s the eatery’s attitude that Weil finds the most special for customers. “There’s a culture at True Food that attracts people. Servers who lead the lifestyle… A lot of the people there look pretty, are enthusiastic, really believe in the mission of True Food and that’s really the outstanding thing,” Weil muses.
