RUN BY FISH FRIERS, FOR FISH FRIERS INTRODUCING THE NATIONAL FEDERATION OF FISH FRIERS (NFFF) The National Federation of Fish Friers (NFFF) is the official body that represents the fish and chip industry, protects the interests of fish friers and their businesses, and promotes the fish and chip brand. Our organisation is run by fish friers, for fish friers - and to our members, we're the 5th emergency service! Established in 1913 by individual fish and chip shop owners who united and, working together as a team, they ensured their voices were heard, by suppliers, by government and by the regulators. Today, the NFFF continues to be the voice of the fish frier, dealing with government departments and collaborating with other organisations to help shape the legislation that directly affects fish and chip businesses, and as a communication hub, liaising with local, national and international media organisations, addressing and deflecting adverse issues and promoting the positive – protecting the fish and chip brand.

THE ART OF FISH CUTTING - MADE SIMPLE! ZOOM WORKSHOP

The course will teach you the skills needed to obtain the best out of the species of fish that you are working with. This will then enable you to take these skills back into the business and make your business more profitable. What you will learn: Show how the fish has been thawed correctly. Show how fish is stored awaiting use. Show equipment required e.g. types of cutting board and which are a good size etc types of knives available and again good ones to look for. Show how to prepare for the fish cutting e.g. sharpen knives, prepare cutting board etc. Show fish and explain the different species – how they differ and explain the sizes available. Cut the fish showing skills and techniques. Explain portion sizes and what can be done with left over bits. Weigh fish and show what can be obtained from one fillet that is being cut. The course will show you how to maintain the consistency from one shift to another. What you will learn: Explain the need for producing a good batter. What to look for when choosing your supplier, variety and much more. What you will learn: Explain both potatoes and pre prep- advantages and disadvantages of both. Show and explain equipment required for potatoes- chips from scratch. Explain the different potato varieties. Explain what to look for when preparing the potatoes – bruising, green potatoes etc. Show & explain the rumbling process – discuss over rumbling. Level 3 Food Hygiene Our Level 3 Food Hygiene course is certificated by the CPD Certification Service. The NFFF Level 3 Food Hygiene course is aimed at supervisors or small business owners and for anyone who would like to take on more responsibilities within food safety. The course is in an E-book format, written in a plain English user-friendly style to prepare candidates for the Level 3 food hygiene examination. The online multi-choice exam is also included, and on successfully passing the exam the Level 3 Food Hygiene certificate, which bears the logo of the National Federation of Fish Friers, will be posted out to you. There are 9 modules that cover the following topics, Unit 1 – The need for food safety supervisors – In our first unit we will be looking at what the role of the supervisor is, as well as why food hygiene is so important. Unit 2 – Contamination hazards – In this unit we will be covering the types of contamination and the hazards, as well as exploring the best ways to reduce risks of hazards. Unit 3 -Micro-organisms and viruses – This unit will explore microorganisms, as well as the responsibilities of supervisors. Unit 4 – Cleaning and waste – This unit will look at the benefits of cleaning, why cleaning schedules are important and what Clean in Place (CIP) is. Unit 5 – Pest management – This unit will look at the most common pests, how to reduce the risks of a pest infestation and what to do in the event pests are found near food preparation areas. Unit 6 – Food premises – In this unit we will look at how a food premise should be planned out and what equipment should be tested. Unit 7 – Supervising food safety – In this unit we will look in more detail about what the supervisor’s responsibilities are and the essential skills they must have. Unit 8 – Training – This unit will look at what the legal requirements are for training and the benefits of staff training. Unit 9 – Safety management – In our final unit we will look at the food safety management systems and what the supervisors role is in implementing these.
