The Celebrating Ceramics Festival offers visitors the opportunity to see the best in contemporary ceramics - all with the ‘wow’ factor. The month of June signals the start of the British cherry season and for this month I have used my original toasted hazelnut parfait recipe first used when we opened 21 years ago! and replaced the hazelnuts for toasted almonds which fit perfectly alongside the unctuous cherry compote. You could also swap out the nuts for a couple of tablespoons of apricot preserve folded through your parfait mixture.
At the restaurant we are extremely lucky to have access to a private cherry orchard in my home village which has a
selection of heritage trees all offering fruits with distinctive characteristics. However luscious English cherries should readily be found during this month from markets, farm shops and of course supermarkets, when the harvest is in full flow. The local areas surrounding the restaurant and out to Flackwell heath were once famous for their cherry orchards and today wild cherries trees can be discovered in parkland, hedgerows, and fields as a reminder to our much loved area’s association with this delicious fruit bounty.

RECIPE: ALMOND PARFAIT WITH ENGLISH CHERRY AND VANILLA COMPOTE, SABLE BISCUITS
Ingredients
Serves 12
Pate a bombe
• 100 ml water
• 150 gm caster sugar
• 5 large free range egg yolks
Meringue
• 300 ml double cream
• 2 egg whites
• 80 gm caster sugar
• 150 gm whole blanched almonds
Method
Pate a bombe
Cherry Compote
• 1kg fresh cherries washed
• 150 gm golden caster sugar
• 250 ml water
• 1 tablespoon kirsch or cherry liqueur
• 1 lemon and I orange, zested and juiced
• 12 coriander seeds
• 1 star anise
• ½ fresh vanilla pod split
1. Place water and sugar into a heavy pan, stir to dissolve
2. Boil the syrup until it reaches a temperature of 120 degrees C using a sugar thermometer. This should take 5-7 minutes.
3. Meanwhile, whisk the egg yolks until they are pale yellow, thick, and creamy
4. Then slowly pour in your boiling sugar syrup, whisking all the time
5. Allow to cool
Meringue
Sable Biscuits
• 175g plain flour
• 100g unsalted butter diced
• 50g icing sugar
• 1 egg yolk
1. Toast the blanched almonds until golden brown in a hot frying pan with no oil or under a grill. Roughly chop the almonds.
2. Whisk the egg white until it peaks, slowly adding the caster sugar until you have a stiff meringue – set aside
3. Whip your double cream until softly stiff then fold your cream and meringue mixture into the sugar syrup and egg yolk base, finishing by adding the almonds.
4. Place the mixture into a lightly oiled ice cream container then freeze overnight.
Cherry Compote
1. Please the caster sugar, the lemon and orange juice, zest star anise and coriander seeds, kirsch and water into a heavy bottomed pan bring to the boil and reduce by three quarters until syrupy
2. Prepare the cherries by de stalking and cutting in half and removing the stone
3. Remove the spices and the citrus peel from the syrup and discard.
place back on a low heat for 5 mins and then allow to cool and infuse
Sable Biscuits
1. Place the flour into a bowl, add the pieces of butter, sugar, and the egg yolk
2. Using your fingertips mix together turn out onto a lightly floured surface, form into a ball again then repeat for 1-2 minutes
3. Cover and place in refrigerator for 30 mins
4. Pre heat the oven to gas mark 5/ 375 degrees F/ 190 degrees C
5. Roll out the dough on a lightly floured surface until very thin
6. Cut out using a 7.5 cm biscuit cutter
7. Carefully transfer to a baking sheet
8. Bake for approximately 7 mins until lightly browned
To Serve
Dip in a little boiling water, run a blunt knife around the edge and turn out onto a board. Slice with a warm wet knife. Serve with the Cherry Vanilla Compote and Sable Biscuits

Agreeing child arrangements over the Summer holidays
It is always better to agree child arrangements for the Summer with your former partner or spouse directly (unless there are safeguarding concerns or it is impossible to have direct communication with the other parent) since your children will feel more comfortable knowing that the arrangements have been agreed rather than imposed by an anonymous third person, such as a judge. Ella Moxey, family solicitor at B P Collins, offers key advice on how to reach an agreement.
1. Keep the children’s best interests at the forefront of your conversations. It may be challenging to engage with your former spouse or partner, but your separation affects your children’s lives and (save for any safeguarding concerns) they will thrive by having a close, loving relationship with both parents and seeing you both regularly.
2. Agree a date, time and place to discuss the arrangements. You may find it helpful to meet in a neutral space – or if that isn’t possible use email or WhatsApp. Keep your language impartial and open. Make suggestions, not demands. You could consider suggesting that a mutual friend is present as it can often be helpful to have an independent perspective.
3. Think carefully about the day-to-day arrangements and handovers including timing and cost of travel, your plans for telephone or video calls and schedules for trips abroad. Remember that you are likely to
need your former spouse/ partner’s consent to take your children out of England and Wales and, if that is not possible, permission from the court.
4. Allow for some flexibility in arrangements. You may need to accommodate both of your work schedules/ annual leave and that of any other relevant person such as a new partner or child minder.
5. Think about creating a calendar or parenting plan showing your agreed arrangements and explain it in an age-appropriate way to your children. Do listen to their views and allow them to express their feelings but remember that the decisions should be yours and not your children’s.
6. At handovers consider inviting the other parent in for a tea or coffee if appropriate. This shows your children that you can work together. Take a positive and enthusiastic interest in the activities the children do with their other parent as this puts the children first.
7. If you need to change arrangements, let the other parent know with as much notice as possible. Unless there is an emergency or unforeseen circumstances, you should not change arrangements frequently or without consulting the other parent as this can cause distrust and is likely to be confusing to your children.

Racehorse Syndication which enables racehorse enthusiasts to come together to co-own a racehorse is the fastest growing sector of the British racing industry. There are some 14,500 racehorses in training in Britain and more than half are owned by two or more people.
Solario Racing is a specialist racehorse syndication company run by Berkhamsted-based Racing Manager, Simon Double, who this year is celebrating 30 years in the racing industry as a syndicator.
He cut his teeth with local multi-millionaire businessman and former trainer, Peter Harris, after which he co-founded Pat Eddery Racing with the former 11-times champion jockey. He then successfully launched Harwoods Racing Club before setting up his own company, Solario Racing in 2010. Besides managing syndicates at Group One level, Double has been associated with purchasing many good horses at the yearling sales including Spring
Romance, Dancinginthewoods and Hearts Of Fire, who cost just £13,000.
Hearts Of Fire won on his debut at Doncaster and went on to win three major races including a Group One in Milan, all as a 2yo. The following year, he was third at Royal Ascot in the Group One St James’ Palace Stakes. He won over £300,000 for his twelve syndicate owners and was sold for £577,500 at Newmarket’s prestigious Horses in Training Sale in October 2010, at that time, the second highest ever figure at that sale. He added, “I spotted the horse and of course was delighted Pat Eddery Racing purchased him. However, whilst on that occasion, the owners made a massive profit on their initial investment, I always point out to prospective owners, they shouldn’t go into racehorse ownership in the expectation of making money. Owning racehorses should be for fun, it’s a lifestyle choice. Any monies received should be regarded as a bonus.”
Solario Racing has syndicate horses available in 1/12th and quarter shares trained by Newmarket’s second youngest trainer Amy Murphy and they’ve enjoyed much success together.
Owners can go up to Newmarket to see their horse on the gallops as well as enjoying fabulous hospitality at home and abroad.

Infected blood scandal: Legal support for those affected
The infected blood scandal has tragically impacted thousands of individuals and families in the UK. This medical damage, stemming from contaminated blood transfusions in the 1970s and 1980s, resulted in numerous victims contracting life-altering viruses such as HIV and Hepatitis C. Recent developments indicate that victims could receive over £2 million in compensation, a step towards acknowledging their suffering and loss.
Understanding the scandal
During the 1970s and 1980s, blood products supplied by the NHS were tainted with deadly viruses, infecting thousands of patients. This primarily affected individuals requiring regular blood transfusions, such as those with haemophilia. The government’s failure to adequately screen and ensure the safety of these blood products resulted in a public health disaster.
The term ‘victim(s)’ refers to anyone directly or indirectly impacted by infected blood who is eligible for compensation.
Eligibility
As defined by the Government website you were a victim of infected blood, whether you were infected or affected as follows:
An infected person is someone who has:
• HIV through the use of NHS supplied blood, blood products and/ or tissue
• An acute or chronic case of Hepatitis C through the use of NHS supplied blood, blood products and/or tissue
• A chronic case (more than 6 months) of Hepatitis B through the use of NHS supplied blood, blood products and/or tissue
• An acute case (less than 6 months) of Hepatitis B through the use of NHS supplied blood, blood products and/or tissue and died as a result of Hepatitis B infection during the acute period
A person who suffered the impact of infected blood through their relationship with a living or deceased infected person is known as an affected person. Affected persons include:
• Spouses
• Civil partners
• Partners cohabiting with an eligible infected person for at least one year following the infection
Partners who separated from the eligible infected person prior to infection will not be eligible for compensation.
People who were registered on current UK IBSS or who were in receipt of support payments from Alliance House Organisation (AHO) will automatically be eligible and registered for the scheme.
Estate application
The infected person who has passed away, the personal representatives of the deceased person’s estate may apply for compensation on behalf of the estate of the infected deceased person.

The compensation due will be judged under the five criteria’s below:
1. Injury and harm caused
2. Social impact from stigma and isolation
3. Impact on autonomy and private life, such as not being able to have children
4. Care costs
5. Financial loss

There’s a reason why the fashion set can’t resist bringing out the timeless print during the warmer months. Adding an appropriate dose of colour and interest to any look, there are countless ways to wear florals to make them modern and trendy.
CO-ORDS
Although florals are harder to style than more neutral prints such as stripes or polka dots, the beauty of a flowery print is that it can totally elevate your look in one simple yet timeless step.
Step out of your comfort zone and embrace the modern floral trend with one of these simple yet stylish outfit formulas that will serve you well all through the season.
Co-ords will look chic no matter what print or style you’re wearing, but they work especially well with florals. Rather than a predictable maxi dress for the summer, a co-ord gives a similar feel but with much more edge. Embrace the Gucci-esque style with a statement floral suit, or shop for some floaty trousers and a matching oversized blouse to look and feel cool in the warmer weather. Finish off the look with some neutral or plain accessories, like some black boots and a minimalist handbag, to let the print do the talking and to avoid making your outfit appear too busy.
CLASHING
One of the best ways to make florals look more modern and trendy is by clashing them. This is not a trend for the fainthearted, but when done right, it looks impossibly cool. Simply opt for two different floral prints in your top and bottoms and pair them together for a head-turning ensemble. FESTIVAL GUT HEALTH – TIPS FOR KEEPING GUT TROUBLES AT BAY
June is now well-known as the start of festival season here in the UK and this once-maligned activity is now enjoyed by vast numbers of people and includes events that vary from Glastonbury and major music festivals to local farm, family and even cheese festivals.
We all love a festival and are aware of the potential fun, laughter, varied activities, late nights and dancing that they offer.
However, many of us have also experienced some unwanted side effects of spending time sleeping in a tent in the rain and mud, with minimal sleep, restricted food options, dodgy toilets, limited washing facilities and various other excesses thrown in for good measure…all of which can have a negative impact on our digestion and potentially lead to symptoms both during the festival and when we return home.
To help you avoid these symptoms, we’ve put together some basic tips to help keep your gut in good shape if a festival or two form part of your summer plans.
Tip #1: Be aware of what you’re eating Quick and easy food options, such as pasta, burger and chips are often the only choices available, and these ‘beige’ foods have low nutritional value and can contribute to gut symptoms.
Some festivals have vegan and ethnic food options , based around beans, lentils and legumes and include healthier options such as rice and veg. Limiting your intake of processed and sugary foods, taking some healthy long-life snacks with you, such as low-sugar protein bars, nuts and dried fruit, and getting back on track as soon as you get home, can all help too..
Tip #3: Maximise your sleep any way you can
Festivals are synonymous with late nights and reduced sleep due to noise and early morning light if you are camping and lack of sleep can also impact digestion.
Take a sleep mask and some ear plugs or ear defenders, and make sure you have warm clothes and sleeping bags or blankets to put under and over you, as well as a comfortable pillow - they can all help to maximise those precious minutes of sleep.
Bonus tip: Don’t forget your probiotics
Tip #2: Drink more water than you think you need
People tend to drink more alcohol and fizzy drinks and less water whilst at a festival, which can contribute to dehydration and in turn cause gut health issues and constipation. Summer sunshine can also increase sweating and mean that you need to drink more.
Drink water continuously throughout the day and try to match each of your alcoholic drinks with at least one large glass of water to help prevent dehydration.
To prepare your gut for a festival and support it through the fun and return to your normal routine, try taking a probiotic supplement a few days before going, every day while you are there and for a week or two after you come home.

We asked Senior Designer Alfie Guard and Designer Connor Warren from Ripples Beaconsfield to give their thoughts on whether trend-led or timeless design is best when it comes to bathrooms.
Trend led
First up is Senior Designer Alfie, sharing his thoughts on trend-led designs.
Historically, bathrooms were driven by functionality rather than style and luxury, however, today’s bathrooms are all about merging all these elements to create a fun, stimulating and personalised environment in which to spend time.
To me, a bathroom should reflect your unique individuality and flair by including a range of materials, colours and textures and shouldn’t be restricted by the status quo of a ‘timeless’ design. A trend-led design can be what you make of it.
As a designer, developing a scheme based on trending concepts is incredibly exciting as it allows me to explore my client’s personality and incorporate it into a one-of-a-kind space. My favourite way to embrace trends within a

bathroom design is through tiling and a feature tile is a fantastic way to introduce a popular colour, texture or pattern. By configuring tiles in an interesting way, you can create a look which is unique to you, even if you’re using the must-have tile of the moment. You can also incorporate trends through painted furniture or even a painted bath, allowing you to embrace the most sought-after colour.
Another way to introduce trends within your bathroom design is through accessories. Experimenting with stylish soft furnishings, towels and decorative items can allow you to

explore trends as and when they arise, rather than being tied to the longevity of trend-led furniture for example.
Whichever way you decide to renovate your bathroom, make sure the design reflects your style and personality and is something you’re going to love. Your designer can help guide you through all the styles choices and latest trends to help bring your vision to life.
Timeless
Next to present their debate is Designer Connor, who sets his focus on timeless designs. I love creating bathrooms which I know will be enduring and although some people might consider timeless style to be a safe option, it doesn’t have to be boring or bland. Marble, for example, is an ageless material but it can also be bright and bold and can add interest and colour

to a space. Equally, a rolltop bath in copper or tin is a classic choice but can also create a big style statement within your room, making the space anything but dull.

Investing in quality sanitaryware and classically shaped brassware will ensure your bathroom will not only stand the test of time but will always remain in style. Brassware finishes such as chrome and brushed nickel might not be the newest on the market, but the beauty lies in how understated they are and the elegance they can bring to the room.
Whilst timeless designs typically use a more neutral colour palette, this also makes them easier to update in the future. For example, you might opt to half-tile your room in a neutral tile and then subtly introduce other colours or patterns using wallpaper or paint on the rest of the walls which can then be easily changed when required. Sometimes interior trends can be short-lived so be mindful to take your time and consider all design options before rushing to create the latest look.

The colours came in all guises, from gleaming lacquer to please-tell-me-where-yourquarry-is heavily veined marble; carried best on forms that were simplistic in
order to let the rich pigment lead the way and set the tone in stone.

‘Shinier, glossier, more polished!’ yelled the walkways of Salone del Mobile, and the designers delivered, with hard furniture from dining tables to storage covered in layers of practically mirror-like brilliance at every turn. How does lacquer impact a space? It turns any object into a sculpture, a working reflection-distorting piece of art that draws all eyes in.
Long associated with extravagance and elegance, lacquered furniture has a history of making an impact indoors. This year, lacquered furniture is all about contrast: classic tones such as iconic deep red and dark bottle green are being combined with experimental, contemporary forms, the designs standing monolith-like within a room, awaiting discussion and admiration alike.
