Celebrate America Germantown, Collierville host annual Independence Day festivities

J

uly Fourth is a day to celebrate our nation’s independence. July 4 also is a time to enjoy and celebrate the rich history of summer. It is a time to kick back, listen to some music, to enjoy a picnic with friends and family members, and it is a time for ireworks.

In the Memphis area, two of the best examples of communities that know how to celebrate Independence Day are Germantown and Collierville. Collierville’s Independence Day celebration was July 3 at H.W. Cox Park and Germantown’s was July 4 INSIDE at Municipal Park. G3 also played backup to Elvis impersonator David Lee. This year’s celebration saw the ireworks set of nearly an hour earlier because of weather considerations.

In Germantown, the evening began with live music provided by John Paul Keith. As the spacious lawn continued to ill up, many found the food court to be an excellent source of food and drink. For others, coolers full of food and drink provided the needed amount of sustenance. After John Paul Keith and his band completed their set, it was time for the Memphis Wind Symphony to paly and keep the crowd entertained with show tunes and patriotic music. As time came ever closer for the ireworks display to begin the symphony orchestra inished up their set with “Old Man River.” Once the music ended, the ireworks began.

Germantown’s waste management company has 60 days to improve service after a slew of complaints from residents in the last two months. The contract with Inland Waste Solutions allows for up to 100 complaints per month. In the month of May, the city ielded 755 calls about trash, recycling or yard waste that had not been picked up. While June numbers haven’t been tallied, City Administrator Patrick Lawton said it was over 700 again. Residents have also taken to social media to express frustration with trash not being collected consistently. The contract, worth $3,138,800 a year, allows for the city to terminate the agreement if the company does not fulill its obligations, but Lawton said they are giving Inland 60 days to improve. The clock started July 1. “It’s frustrating,” Lawton said. “We just want them to fulill the contract.” Jerry Church, vice president of operations for Inland’s headquarters in Austin, Texas, said a recent rerouting of drivers caused the hiccups, although he would not say why the rerouting was necessary. The company took over the contract from Republic Services in October, which caused a spike in complaints as drivSee TRASH, 2

Animal Tales, an educational company that “brings the zoo to you,” visited the Germantown Community Library. This summer’s show “Animal Avengers: Heroes of the Wild” featured creatures with amazing powers, including a Von der Deckens hornbill, an African crested porcupine, an Egyptian fruit bat, a hog island boa constrictor and a baby red kangaroo. The hornbill caught worms in midair as they were tossed by volun-

teers from the audience. Children learned that the African crested porcupine makes a rattling sound with its tail but doesn’t actually shoot its quills. Eleven new troopers joined the Tennessee Highway Patrol’s Memphis District last week. The new recruits will join 67 troopers already assigned to the district that patrols 10 counties in West Tennessee.

State Sen. Sara Kyle, DMemphis, has iled legislation that would stop the state of Tennessee from issuing vanity license plates that feature the Confederate lag. It would eliminate Tennessee Code Annotated Section 55-4-257, which set up the Sons of Confederate Veterans plate in 2002. The plate contains the SCV logo, which prominently features the Confederate battle lag. “Anytime we protect divisive symbols of the past, we empower those who support hate,” Kyle said. “The Confederate lag has no place on state-issued license plates or in any other public government space.” Rep. Jason Powell, DNashville, iled the House companion of the bill. They won’t be considered until the legislature convenes again in early 2016. Kyle Veazey

tennessee highway patrol hires 11 new troopers

The new troopers bring the number of oicers in the THP Memphis District to 78, but “we’re still probably around 10 to 12 people short for what we’re allotted in our area,” Lt. Cary Hopkins said. During each training session, Hopkins said, the office typically aims for 21 to 22 trainees but generally ends up with a lower number because applicants either don’t pass background

checks or drop out after completing part of the training. At one point, Hopkins said 17 new troopers looked promising, but six dropped out. “It’s a lot thrown at you at once, but senior troopers do really well at breaking everything down for us and catching us up to speed,” said Tyler Milam, 27, who started the job last Tuesday. The academy consists of training for crash investigations, report-writing, driving a patrol car (and) proper use of firearms, among other tests. Those things can be “strenuous at times,” Milam said. “The main thing is to stay calm and

everything will work out.” Mariah Woodman, 22, graduated at the top of the class and is the only woman in the group of new troopers. Hopkins said the office is open to having more women on the force. “There’s a lot of people that could’ve got it. … I just want to learn how to do my job the best I can. I don’t want any special recognition,” Woodman said, adding that being a state trooper was always a childhood dream. The 11 new troopers joined the highway patrol right before the Fourth of July holiday weekend. They will be assigned to one of 10 counties in the district. For the next 10 weeks, they will be in field training, where they will drive with senior troopers. Woodman, who will patrol Crockett County, said the good part about witnessing an arrest would be to “see how that whole process is going to work outside of the training environment.”

Man indicted in car crash that killed

A five-count indictment has been returned against Melandus Penson in the car crash that killed two Briarcrest students in Marshall County, Miss. The Marshall County Circuit Clerk’s oice conirmed that the indictment was returned last Tuesday, charging Penson with ive counts of aggravated DUI. Penson, of Belden, Miss., is in custody after his $3 million bond was revoked by Circuit Judge Kelly Luther in New Albany on June 10. Luther revoked bond because, he said, he had no reason to think that Penson, 32, would not drive again if released and, by doing so, further endanger the public. Penson has four previous DUI convictions from as many diferent Mississippi jurisdictions, in addition to a reckless driving conviction in Mississippi and speeding in Florida. Ron Maxey

Lawton said Inland oicials have expressed that they want to keep the contract. “They assured us they were going to do everything they needed to do to ix the problems,” he said.

ALL HIM, ALL THE TIME Stamp, auction top Elvis Week events Plans for Elvis Week 2015 have been announced. The annual celebration of the life and music of Elvis Presley will run from Aug. 8-16. Among the week’s highlights will be the oicial First-Dayof-Issue dedication ceremony for a new Elvis BOB USPS MEHR Forever MEMPHIS MUSIC BEAT Stamp. Part of the U.S. Postal Service’s “Music Icons� series, it will mark the second such Elvis honor. The 1993 U.S. commemorative stamp of Elvis remains the biggest seller of all time. Priscilla Presley will join Postmaster General Megan J. Brennan for the dedication on the morning of Aug. 12 on Graceland’s front lawn; it’s free and open to the public. On Aug. 13, Graceland Auctions will stage its “most extensive and comprehensive auction,� featuring rare Elvis artifacts. An auction in January at Graceland saw a rare acetate of Elvis’ irst recording, “My Happiness,� sell for a record $300,000 (to musician Jack White). The upcoming auction will feature a number of historically and personally signiicant Presley items including a jumpsuit worn during his 1973 concert run at the Las Vegas Hilton; a “Viva Las Vegas� jacket worn in a dance

The highlights include new and classic works from Ballet Memphis and Opera Memphis, a 20th anniversary season celebration from Voices of the South, and Elvis Presley’s biggest chart competitor in the 1950s — Pat Boone — at the Bartlett Performing Arts and Conference Center. Concerts International and the Memphis Chamber Music Society are ofering lineups of concerts featuring highly regarded classical musicians, and the Memphis Symphony Orchestra has announced its Pops Concert series.

Classic works are being restaged, including “Romeo & Juliet� and “Cinderella,� both with scores by Prokoiev and both choreographed by the company’s artistic associate, Steven McMahon. The perennial “Nutcracker� will play again at the Orpheum during the holiday season. Contemporary works are showcased in February, with “Places� featuring the work of

OPERA MEMPHIS Ned Canty, Opera Memphis’ general director, says, “Our mission to be broad, like that of a library or museum.� Since he arrived in 2010, he’s been working to widen the appeal and presence of opera in the region. This coming season, Opera Memphis plans two classic operas — “Pagliacci� and “The Magic Flute� — as well as a concert by Kallen Esperian in February. The fourth annual Midtown Opera Festival returns for a 10day run in April with two operas anchoring numerous activities and events at Playhouse on the Square. And the popular 30 Days of

Opera will return in September, with at least one public operarelated event somewhere in the area every day for a month. T

o celebrate America’s independence, Bellevue Baptist Church staged its annual Star Spangled Spectacular. As soon as the event opened, cars entered, and when it comes to throwing a party to celebrate our nation’s independence, the Star Spangled Spectacular says it all. Years ago the celebration started out as a summer picnic for church members. The church’s formula for success is one that works well — provide a safe, comfortable and spacious setting where friends and families can gather. With 500 volunteers to direct traic, pick up litter, hand out brochures and assist their guests, the staf made the event’s success appear efortless. As the crowd continued to arrive, they were entertained by Acoustic Soul Orchestra. The annual celebration has become a great location to hold a family reunion. The McKinley family was there as they settled in and waited for the ireworks to begin. As the daylight turned to dusk, it was time for Steve Gaines to lead the large gathering in worship. As the start time for the ireworks grew closer, the crowd at Bellevue grew even larger. Once it began, it began with a bang. Both young and old were in awe at the light show.

At Jerry’s Sno Cones, every order for a snow cone is followed up with a one-word question: “Supreme?” You might say yes, because who doesn’t want the very best, the supreme? But what you’ll get is a big swirl of soft-serve ice cream in your snow cone. There’s nothing wrong with that, and about half of Jerry’s customers like the two mixed.

“It’s about even, maybe a little more go for the supreme,” said Jerry’s owner, David Acklin. “But some people think that sounds gross. They just don’t get it.” Ahem. Let’s just say I’m for the separation of snow cone and ice cream. “Well, you’re just wrong,” a woman told me in line last week when she asked why I didn’t have ice cream in my snow cream-lavored cone. For what it’s worth, I’ve been wrong before. But on this most everyone will agree: We love Jerry’s. The snow cone stand opened around 1970; current owner Acklin, who purchased it from L.B. and Cordia Clifton in 2005, says he hears different dates from everyone. What he knows is that they opened shop in the former Sinclair Gas Station. “I’ve had three diferent people tell me that they used to come with their parents to Sinclair’s, and if they were running around while the car was getting worked on, Mr. Sinclair or whoever would take the kids in the oice and make them a snow cone to keep them quiet. I don’t know if it’s even true, but on the other hand, that could be why the Cliftons opened a snow cone stand,” Acklin said. “There could have been snow cones here back to the ’40s or so.” And everyone loves them. Snow cones, with ice cream or not, and milk shakes (available in any of the 100 or so snow cone lavors) are not really what this is about, because in this, Jerry’s reigns supreme. Let’s talk about the food, a variety of dairy-barn standards and a host of surprises. Surprise No. 1: Tamales. Acklin orders them from a woman in Arkansas who makes them with chicken. Relax — these are deinitely not your standard chicken tamale. They’re Deltastyle, thin, wrapped in corn husks, just wet enough, and plenty spicy. They’re great, and crazy cheap, starting at $2.60 for an order of three and going to $9.35 for a dozen. Take them home (there’s nowhere to sit at Jerry’s, though folks often bring lawn chairs and eat their snow cones in the parking lot), grab a bottle

of hot sauce and saltines. They should have been included on the tamale list in last week’s issue, but I didn’t eat them until they day after it printed. Others have been, though; he orders 1,500 at a time and they last about three weeks. As the surprises continue, here’s the bad news irst: The mufuletta is of the menu for now. I came across this a few years ago and made a special trip several times for it. But keeping the right amount of bread in stock, which Acklin ordered from La Baguette, was diicult. He’d run out or it would go bad, so for now, it’s gone. But you’ll ind items such as a Nathan’s All Beef hot dog for — get this — $1.50. In the day of the $10 hot dog, this is a pleasant surprise. You’ll ind a third-pound hand-

patted burger for $3.75, and a ine one it is, cooked on a griddle and dressed to order. If you want to dress your burger up, try a steak burger, topped with mushrooms, steak sauce and grilled onions; it’ll set you back $3.99. Want to go over the top? The Lumpy burger will get you there: A patty between two grilled cheese sandwiches, which serve as the bun. And while much of Jerry’s items are made from scratch, Acklin admits the fried dill pickles aren’t. Still, try them. They’re dill pickle spears that are soaked in jalapeño juice before they’re breaded. While we’re killing ourselves, let’s not forget the barbecued bologna, a thick slab served with cheese, barbecue sauce

and slaw on “Tennessee” (Texas) toast. Or course, you don’t have to try all this over two days, or even over one summer, as Jerry’s has been open year-round for several years. Make a list, spread it out. A new menu is being printed, and two new items will be available on Monday (Jerry’s will be closed Saturday for Independence Day). Hand-breaded chicken tenders will be on the menu, as well as a pork tenderloin sandwich that’s popular in the Midwest. Pork tenderloin is cut and pounded to a thin patty roughly 8-by-5 inches, dipped in milk and in rolled in a crust of crushed Ritz and Club crackers before frying. The sandwich is traditionally served on a regular-size bun and at Jerry’s will be dressed like a burger. Acklin says he’s working on a white gravy for dipping, as there is so much extra meat. The lines at Jerry’s are legendary, but don’t be dissuaded. (“We’re going to stand in line for 30 minutes for a snow cone?” A friend was incredulous when I explained the phenomenon a few weeks ago. “They better have vodka in them.” They don’t, but what you do with your snow cone at your house is your business; some might suggest rum is also nice with something frozen.) There are two lines open, which makes a world of diference. It’s fun, convivial — no one dreads going to Jerry’s just because there’s a line; it’s a fun destination. The back of the building is a big chalkboard full of bucketlist items — the “Before I Die” board. Goals are set, promises are made, then they’re scribbled with little nubs of chalk. Strangers become friends, if only for a few minutes. The proposed third line, one for food orders only, is still not open and Acklin says it might be in a few weeks, but it could be as late as early fall. And there will still be a Jerry’s in Cordova, around Germantown Parkway and Dexter, but it’s still in the planning stages. “We’re hoping by next year,” Acklin said. “That’s our goal.”

n 2010, we went all over town tasting tamales, from Delta style to Memphis style to various Hispanic and Latino-style tamales. We picked our favorites then and now have updated the list, cutting a few, culling the ones that have closed, and adding some new places. The pizza at Lost Pizza Co. is good, and so are the sandwiches, but the Delta tamales — made by a man named Willie in Greenville (that’s what they say) — are plainly top-notch. These and the tamales at Babalu are the true Delta-style ones, and both are new to the list. Delta tamales are wrapped in corn husks, but they typically have a higher ratio of meat to masa (or just corn meal) than the ones you’ll ind in most of the Mexican restaurants on the list. Meatier still are the Memphis-style tamales, fat cigars of spicy beef (usually) barely coated with cornmeal, wrapped in paper and either steamed or submerged in spicy broth to cook. Another valid classiication of tamale is one we’ll call smothered. It’s usually, though not always, found where the beer is cold and lowing freely. These are tamales covered with chili, cheese and diced onion, or your preferred combination of these toppings. You might even add jalapeño peppers and sour cream or whatever — they’re as adaptable as nachos. You might prefer one to another, but chances are good you’ll like them all.

But you’ll want the tamales every time you stop by this little takeout place. Sadly, you might not be able to get these very often, because when they’re out, they’re out until the next delivery. Call ahead if you’re making a special trip for these Memphis-style tamales, which are bigger than most you ind wrapped in paper. They’re $1.50 each. The Belmont Grill, (4970 Poplar; 901767-0305) ofers a plate of decadent

tamales covered in cheese and onions. These, which are made by Uncle Charlie’s, are so meaty that they’re Memphisstyle without the papers. (Owner Jef Anderson says the supplier he uses has changed over the years; hopefully, these are here to stay.) A $9 order brings six tamales, and they’ll serve you the buttery wing sauce if you ask for hot sauce. Utterly delicious, but don’t tackle them at the end of day. menu here is limited, and tamales are the star. Beef, chicken, pork or cheese with pepper are the choices, and the latter is the favorite as it’s the spiciest. Huge tamales ($1.19 each) are served with habanero salsa, Chinese peppers or salsa verde.

The tamales, made by a neighborhood man, are available straight up or as Tamales Three Ways. Go for it. The tamales are topped with spaghetti and chili, and served with garlic bread. You can eat forever and barely make a dent in it. Add onions. Cheese if it suits you. Tamales Three Ways are $8.50.

South Memphis Grocery (9 W. Mallory; 901-775-2135): Memphis-style, about 70

percent meat to 30 percent cornmeal, these are wet without being mushy, and on the spicy side. Tamales are $1 each.

barbecue and tamales go together, but surprisingly few places in Memphis sell both. Take advantage of these, which are spicy and 99 cents. Las Tortugas Deli Mexicana (1215 S.

chicken tamales (the chicken is spicier) are on the menu daily, and they’re good, solid examples of a nice tamale. Ask for the salsa verde with the chicken — yum. They’re $2. The Grille (3035 Lamar; 901-744-7458)

is known for its chicken on a stick, and they grill up a mean chicken wing, too.

full-on Delta-style: spicy, wrapped in corn husks, and served with a bottle of hot sauce and packs of saltines. Order the cheese dip with a tamale in it, and give tamale dip a try. Think Rotel with tamales. Think delicious. An order of six tamales is $6.99. Hot tamale dip is $5.99. Babalu Tacos & Tapas (2115 Madison; 901-274-0100) serves Delta tamales

from Hot Tamale Heaven in Greenville and dresses ’em up with a little housemade tri-pepper corn hash and pimento oil. They cost $9.50 for four tamales. Dyer’s Cafe (101 Center, Collierville; 901-850-7750) sells Pasquale’s Tamales,

a nice Delta-style version. $5.50 gets you three, served with crackers and ketchup. Germantown Commissary (2290 Germantown Road, Germantown; 901-7545540) is one of several place around

town that serve Memphis-made La Rosa tamales. But as far as we know, it’s the only place where you get deviled eggs with your tamales. A tamale plate with chili, cheese and deviled egg on the side is $7.95. Corky’s: All locations sell El Terriico tamales, where you’ll get four tamales on a bed of chili covered with cheese for $9.99.

COVERT ADVENTURES Couple shares their traveling stories with Germantown Plantation residents By Linda K. Bourassa Special to The Weekly

M

ary Ann and Jack Covert have seen it all. The globe-trotting couple has visited countries near and far, from South Africa to Antarctica and above the Arctic Circle. The Germantown couple also visited Iceland, the Amazon River region, Italy, Japan, East Berlin and more.

The new residents at Germantown Plantation Senior Living recently discussed their many travels and their trips to South Africa, a country that they hold closely in their hearts. While on one of their many trips to South Africa, they saw the release of Nelson Mandela. It was in that country that the two music professors/ performers not only saw it all, but actually were able to share American

teaching methods with local universities. It was common in South African public schools for music to be taught on the instrument the teacher specialized with versus multiple instruments, which is the more comprehensive style of music education taught in the United States. Many students they inluenced and taught, both in the U.S. and abroad, went on to play in prestigious American organizations like the Boston, Philadelphia and Chicago Symphony Orchestras and have become teachers in universities and public schools. This gives a great deal of satisfaction to the music lovers. The couple retired to the Memphis area to be near family, moving south from Ithaca, N.Y., where they were on the faculty of Ithaca College for many years. They enjoy the comforts of Germantown Plantation, and certainly the other residents and staf enjoy hearing all about their adventures abroad. Linda K. Bourassa is the president of Blue Moon Inc. McCaslin wins Cox Scholarship Plans to attend UT this fall By Julia W. Parker Special to The Weekly

Collierville High School graduate Kailee Morgan McCaslin is the 2015 recipient of the Herman Cox Scholarship from BankTennessee. The scholarship, named in honor of former Collierville Mayor Herman W. Cox Jr., is based on grade-point average, community and school involvement and attendance all four years at Collierville High School. “Kailee its all of the criteria perfectly. She is a model student and individual. My dad would be proud of her accomplishments and leadership abilities,” said Wright Cox, community president of BankTennessee and son of the former Mayor. Attending the University of Tennessee at Chattanooga this fall, she plans to major in child and family studies.

At Collierville High, McCaslin excelled in academics and was involved in school, church and the community. She received several honors, including the AWANA — Timothy Award. She also was on the principal’s honor roll and was a member of the National Honor Society. McCaslin tutored kindergarten classes at Tara Oaks Elementary and commented, “There was a sign

in the kindergarten hall that said ‘Presenting the Class of 2027.’ It was heartwarming to know that even though I may only tutor them twice a week, I am making a different in these children’s lives. I have a huge heart for children, and to watch them grow in God’s love is such an unforgettable experience.” She was squad leader on the band leadership team, a member of the varsity band

honors for four years and a Key Club member. McCaslin served as a leader in training for the AWANA program at Collierville Bible Church for ive years. At Life Church in Collierville, she helped feed 2,000 children in East Memphis who would have gone hungry on the weekends without the help of the church. She is the daughter of Michael and Kris McCaslin of Collierville. BankTennessee created this scholarship to honor Cox who served as Mayor of the Town of Collierville for 24 years. He dedicated his life to serving his hometown. Known as “The People’s Mayor,” he led the historic town through many years of growth while focusing heavily on protecting the schools and assuring residents the best quality of life. He also served on the board of directors for BankTennessee. Julia W. Parker is the senior vice president of marketing for BankTennessee.

On June 30, Anne and Anna Raheem, both Collierville High School alumni, spoke at the White House in Washington D.C. regarding “Celebrating Innovations in Career and Technical Education,” and they presented on the STEM program at CHS. Anne and Anna were honored for their contributions and they received the highest honor given by the

United States Department of Education for Career and Technical Education, Student Innovator Awards. Only 16 students in the nation are recognized for this each year. Shelli Brasher, teacher and STEM advisor at CHS, also attended the event, which included remarks by the First Lady of the United States, Michelle Obama. Four businessmen graduate leadership program at UT Special to The Weekly

Ordis Copeland, Jim Crone, Jerry James and Steve Young, all of Shelby County, graduated June 18 as members of the University of Tennessee at Martin WestStar Leadership Program’s 2015 class. This year’s cohort included 29 members from 17 West Tennessee counties, who now join more than 700 program alumni. Copeland is the business development consultant for the State of Tennessee Department of Economic and Community Development in the greater Memphis regional oice. He is a Leadership Millington graduate and currently serves as a Tennessee Achieves mentor. He has served as the executive director of the Millington Industrial Development Board, a member of the Millington Chamber of Commerce and the economic development director for Weatherford, Okla. Crone is the west Tennessee business development manager for The Trane Company. He is a Rotary International Paul Harris Fellow and serves on the boards of directors for the Gift of Life and the

Memphis Chapter of the Building Owners Management Association. James is the director of business development and associate of A2H Inc. Collierville High cheer squads win dance titles By Courtney Ellett Special to The Weekly

Col lier v i l le Hig h School’s dance team recently attended a 2015 Universal Dance Association Camp where they took home several honors and earned a bid for the 2016 National Dance Team Championship, which will be held in Orlando, Fla., in January. Under the leadership of Carol Lloyd, coach, and Terrance Moore, teacher sponsor, the team also netted other awards, including: Superior Trophy (varsity and JV): This honor is given to teams in each division that have the highest ribbon accumulation score. This qualifies the team to compete at the National Dance Team Championship. Drill Down team winner (varsity): The team with the highest number of gold superior ribbons given during drill-down competitions. Drill-Down Queen: This honor went to CHS dance team member Ashley Maxwell, who was the “last lady standing” during the drill-down competition on the final day of

camp. Pass-It-On Award: This was bestowed to CHS dancers Anna Hicks and Alexia Wooten for random acts of kindness during the camp. The UDA’s 2015-16 All American Team also was chosen. Two of Collierville High School’s dance team members were named All Americans — seniors Anna May and Hannah Adams. The All Americans are chosen based on memory, showmanship and technique, and they qualify to perform with UDA at the 2016 London Varsity Tour parade at the end of the year. “This was an unforgettable team-building experience for us,” Moore said. “Camp always sets the tone for the rest of the season and creates friendships that last for years. Bring on competition season.” There are 27 members of the 2014-15 CHS varsity dance team. The members are Lizzy Boyd, Hannah Adams, Madison Molnar, Abby Smither, Kaitlyn Brown, Emily Duke, Megan Calitri, Anna May, Jewelia Carrier, Ashton Martin, Anna Lauren Kornegay, Rebecca Manseau,
