Not only is March Nutrition Month, it’s also the beginning of spring, and the time of year when many people start thinking about getting fit and healthy for summer. Spring cleaning comes to mind, providing the perfect opportunity to not only clean house, but also clean up your diet and refresh your exercise program. We all tend to eat heavier comfort foods and stay indoors more during the colder months. As the weather starts to get warmer, it’s time to switch gears. Visit your local farmers’ market to see what fruits and vegetables are in-season and incorporate a few each week, eliminating some of winter’s heavier, more processed foods. Eating with the seasons not only reduces your carbon footprint, it supports your local farmers and promotes community living.

Perfect Pesto Sauce! Ingredients: •

1 ½ cups chopped fresh basil

3 tbsp pine nuts

3 garlic cloves

½ cup virgin olive oil

½ cup freshly-grated parmesan cheese

1 tsp Gandalf Spirulina powder

Ground pepper to taste

3 tbsp chopped fresh coriander (optional)

Place all ingredients in a food processor except for the olive oil. Blend together, slowly adding the oil until a smooth consistency is achieved. Serve in a pasta salad, or as a spread.
