I often reflect on “this time last year” when I write my letter, but I think we all do, as we’re searching for normalcy- whatever that is. I’ve been told recently that reading FOCUS feels like a constant and I am thankful our team has been that “normal” for some of you. I am proud of the work we put into each issue, as we try to tell stories that are uplifting and positive. Of course, we celebrate Father’s Day on June 20. Our feature this month highlights the dads in our city. You, our readers, submitted photos and tributes to the fathers, step father, and father figures in your lives. Thank you to everyone who submitted and we’re so excited to share this gallery with the rest of the city. Always with a Plant City focus-no pun intended- the balance of our content is always on local connections. This month, we feature Mike Goodwin on the cover. Mike took ownership of O’Brien’s in 2013 and in December 2019, opened Bubbakoo’s Burritos. While the vibe of each restaurant couldn’t be anymore different from one another, Mike shares his passion for the restaurant industry and serving up not only a good meal, but a good time. This month’s Meet the Maker features a creative we’ve never showcased before: Peyton Collins. Plant City Toastmasters Club Celebrates 35 years By Jennifer Jordan On May 13, the Plant City Toastmasters celebrated 35 years in the Winter Strawberry Capital of the World at Keel and Curley Winery at Keel Farms. Several members came out to celebrate the journey and achievements of Toastmasters in Plant City, in addition to acknowledging the club for the various awards that have been bestowed in the last 35 years of its existence in Plant City. Toastmasters International officially formed in 1924 and focuses on improving skills to make an individual a more confident speaker and leader. In Toastmasters, members learn how to speak comfortably in front of a group and lead with a purpose. As an educational program, Toastmasters focuses on communication and leadership development. From young professionals to experienced managers to those seeking personal growth, you will find a warm, supportive group that shares your goals. Jeremy Rhodes, V.P. of Public Relations at Plant City Toastmasters, said when asked what someone should know about Toastmasters, “The confidence, personal growth, and new relationships is so rewarding; it’s great to join if you want to get better at public speaking or making speeches.” The 35th anniversary celebration began with a Call to Order by CL Townsend, followed by Rick Norman leading the invocation. President of Plant City Toastmasters Adrian Smude welcomed members and guests, and Jeremy Rhodes led and proposed the Toast, reminding attendees that “the best things in life are the people we love, the places we’ve been, and the memories we make along the way.” 2013 Plant City Citizen of the Year Joe Sedita was the ceremonial host and gave a speech on his journey as a member of Toastmasters. Jeannie Elliott recognized honored guests, the Current Executive Committee, Previous Presidents, and Sponsors. Drinks and dinner were provided by Keel and Curley Winery, with dinner that consisted of salad, slow roasted chicken with a homemade smokey bbq sauce, mojo pork, roasted red potatoes, and vegetable medley. Sponsors included My Wife Buys Mobile Homes, Cameron Financial Management, Dignity Memorial, and Hillsborough Title. With 51 active members that support one another, Plant City Toastmasters has a reputation amongst Toastmasters Clubs around their District and the country as an icon, having won the Golden Gavel award two consecutive years: 2020 and 2021. The Golden Gavel award is the highest-ranking award a Toastmasters Club can win. District 84 director Pim Parpart presented the Golden Gavel Award at the celebration to Toastmasters Club President, Adrian Smude. There are no membership restrictions to join Toastmasters, and the club is open to all interested parties. There are weekly zoom and in-person meetings at the Chamber of Commerce every Thursday from 7:30AM-9:30AM. Three Hands Mead Company bringing the oldest form of alcohol to Plant City

FEMA Offers COVID-19 Funeral Assistance: How Plant City funeral home can help

Mead has made its mark on Plant City as Three Hands Mead Company held its grand opening on Friday, May 28. The new tasting room is located at 111 S. Evers Street, across the street from Plant City Photo Archives & History Center. What exactly is mead and what can Plant Citians expect from the world’s oldest boozy drinks? Mead—or honey wine—has existed for thousands of years; it’s roots are traced back to China's Henan province in the seventh millennium B.C. Almost every civilization on Earth figured out how to ferment honey at some point or another, long before beer, wine or liquor. Antioch residents Cody Lenz and Jamie Paff were home brewing the drink for years before opening Three Hands Mead last month. Lenz says it started at a 2019 Topics on Tap meeting, hosted by Plant City Main Street, discussing the amended alcohol ordinance allowing establishments to serve alcohol in downtown without also serving food. According to Lenz, it was discussions that took place within that meeting that gave him and Paff the push to bring their home brews to a brick and mortar meadery. The pair say mead contains simple ingredients and takes about four to six weeks to ferment, but the payoff is a delicious drink with an alcoholic content between 3% to 20%. “Mead is made up of honey and water fermented in yeast,” said Lenz. “We flavor it with fruit or spices. One of our signature meads is ‘Not for the Faint of Tart,’ which has tart cherries, pomegranate, and cranberries.” At Three Hands Mead Company, customers can enjoy four signature meads, four additional meads which will rotate flavors every few weeks, and four taps are reserved for guest brews, craft beers, etc. Despite all of the Evers Streets bars using the same distributor, the couple will never serve the same alcohol as Roots or The Tipsy Bookworm. It’s a community over competition kinship between the business owners. “We don’t want to compete with Roots or The Tipsy Bookworm, we want us all to succeed, but we also want customers to come down to Evers Street and have a unique offering at each of these businesses,” said Paff. Plant City residents are buzzing with excitement about the new establishment and the opportunity to try something unique —and for many— try something they’ve never heard of or tasted. Jeremy Rhodes, broker at Evers Street’s Marzucco Real Estate and Plant City Main Street President said: “Cody and Jamie add so much value to Evers Street and the new businesses that opened recently have brought personality and life to the street- t’s turning into a destination. The COVID-19 pandemic has brought unimaginable grief to families across the U.S. and around the world. The restrictions set in place for large gatherings then affected these families as they made funeral arrangements with a limited capacity and unexpected funeral costs were a financial burden, especially in times of mass furloughs and unemployment. The Federal Emergency Management Agency, or FEMA, reimburses families up to $9,000 per funeral and a maximum of $35,000 per application per state, territory, or District of Columbia if more than one family member died for coronavirus deaths after January 20, 2020. David Wolf, director of Plant City’s Haught Funeral Home, said he and his team helped dozens of local families with funeral services and he wants those families to know FEMA can help financially. “Whether you use our funeral home or another one, we can help guide families in applying for this reimbursement,” said Wolf. Wolf advises families to keep documentation of the funeral expenses, proof of funds received from other sources, such as insurance or other government agencies, and an official death certificate. Durant Student Headed to National Rodeo Competition; Asks for Donations Jennifer Jordan Dakota Watson, a 14-year-old Sophomore at Durant High School has achieved some amazing feats in her young life while participating in rodeo competitions. Starting with competitions at just five, the born and raised Plant Citian has been awarded the Top Hand for two years and the Reserve All Around for two years and is now in the running for Little Britches All Around. She is also 10th in the nation for the Trail portion of the competition. For the past two years, Dakota has been named an ambassador for Tin Haul, which is a brand of Western style clothing that is comparative to Adidas or Nike in the fashion clothing world. Due to her hard work, passion, skills, and respect for her peers, she has been given the chance to compete in the National Little Britches Rodeo Association Finals in Guthrie, Oklahoma in July. While Dakota has been making her own handmade beaded necklaces, bracelets, and hydro-dipped PVC tubes for goat strings under the name Wild K Creations and setting her own booth up at various local businesses to sell her creations to raise money for her trip, she still needs help. Wisty Watson, who is Dakota’s mother, stated about the cost of the trip, “It takes a lot of money to make a trip like this happen; there are entry fees for the competition, fuel, veterinarian costs, and lodging, but Dakota is determined to make it to the National Little Britches Rodeo Association Finals and any donation is a blessing.” With the trip costing roughly $5,350, Dakota and her mother Wisty have raised about 30% of the money as of June 7. Dakota and her mother will be leaving for the competition on June 26, to ensure they have plenty of time to stop and rest along the way. Plant City YMCA to Honor Jodi Stevens with Strong Leader Award By Cierra Craft

T

he Plant City Family YMCA is pleased to honor Jodi Stevens at its 2020-2021 Strong Leader Dinner on August 26th, 2021. Last year’s annual Strong Leader Dinner was postponed due to COVID-19 so the Y is very excited to honor Jodi with this prestigious award in person. Jodi was an integral part of founding the annual Y event while she served on the Plant City YMCA Advisory Board from 2003-2008, most notably as Rookie of the Year in 2004, MVP of the Annual Giving Campaign in 2005, Board President from 2006-2007, Strong Leader Dinner Chair and Co–Chair 2002 – 2006. “I’ve lived in Plant City for 27 years. I love this town. It’s like a big extended family to me. I’m so happy that I’m raising my children here,” says Jodi, who has a long list of accomplishments but her most memorable is starting Plant City Pig Jam, which she has co-chaired since 2002. “I like to say that was my first born child as I was a part of it from its inception and way before I had my kids. That event has come so far and brought so much to our city.” Another highlight: Dancing with the Locals. “That is such a fun night and so great to see so many dance the night away,” she says. An employee of South Florida Baptist Hospital for 15 years, Jodi also has been a Plant City Strawberry Festival volunteer since 2001 in a number of roles and currently serves as Ambassador Co-Chair, and on the Strawberry Ball Committee. Jodi is a current board member and treasurer on the East Hillsborough Law Enforcement Appreciation Association, served various roles with the Plant City Chamber of Commerce, Plant City Rotary Club, American Cancer Society and Plant City Lions Club. She’s also been involved with the American Business Woman’s Association and Boys and Girls Club. The former Plant City Little League treasurer shares, “my children, Evan, 9, and Jena, 7, are my life so my community boards and events have shifted a little to work around their lives,” citing it’s more about PTA meetings and cheering on her son and his teammates at baseball games now and her daughter at gymnastics. “My heart is definitely out on that field and in that gym,” exclaims Jodi, who shares her hobbies are her community. “If I had to look at all the money raised that I’ve been on a committee for, it’s simply amazing that it comes out of our town and how those same sponsors sponsor, year after year, and event after event. This is such a

Hillsborough joins other Florida counties with Text-to-911 Hillsborough County announced a new system where residents can text a 911 dispatcher. The program was designed for those who are hard of hearing or deaf, those with a speech disability, in a situation where a traditional call is too dangerous, or have tried to call 911 and are in an area with poor reception. "We want to be proactive in helping our residents feel safe and prepared for an emergency," said Hilllsborough County Sheriff Chad Chronister. "An emergency can happen to anyone, anywhere, at any time, so our goal is to give the community just one more way to get help during a crisis." How to Text to 911: • Using your mobile phone, send a text message to 911 (no spaces or dashes) • You will get a reply confirming you're in contact with an dispatcher and asking for more details • Answer the 911 dispatcher's questions and instructions as quickly as possible as you would on a call Important tips: • Always provide your exact location and details of the emergency • Do not use slang or abbreviations • Do not send photos, emojis, or videos • Do not send a group text • Silence your phone if you are in a dangerous situation • Text message delivery is not guaranteed. Limited wireless or cellular service may cause text messages to be delayed or not received by the Public Safety • Answering Point. Text messaging apps such as WhatsApp, Viber, or other social media messenger apps may not support Text to 911. It's important to remember that while Hillsborough County now offers text to 911, the service may not be available in other neighboring counties or cities. You may find yourself in an area where SMS text services are not available, but calls may go through. “With all the changes in technology, we are extremely excited for our citizens to be able to communicate using Text to 911,” said Plant City Police Chief James Bradford. “Providing people with another means to communicate in an emergency is phenomenal. We encourage everyone to always try to make a 911 voice call first. However, if that’s not possible, use the Text to 911 function. Always remember, we will still need to know your address or location for us to best assist you. Unity in the Community Hosts Appreciation Dinner for Volunteers By Jennifer Jordan On May 7, Unity in the Community hosted its Volunteer Appreciation Dinner at the John R. Trinkle Center as a way of showing the organization’s gratitude for all the volunteers who help make the three fundraisers that Unity in the Community holds every year a success. Dinner was served by Second Plate Catering. The event began with Chairperson Sharon Moody thanking everyone for attending and recognizing the many sponsors that contributed to the Volunteer Appreciation Dinner. Moody discussed Unity in the Community’s three annual fundraisers: the Corvette Raffle at the Strawberry Festival in March, the Henry Falcon Memorial Golf Tournament happening on October 8 this year, and the Plant City Clay Shoot happening on November 12 this year. Moody shared that $334,000 was raised by the Corvette Raffle, to give those in attendance a prime example of how their hard work and commitment to serving the community leads to positive changes, as the money raised is used to serve underprivileged families in the Plant City community. Entertainment for the evening was provided by the Mixx Group, which consists of three women who play a variety of blues, R&B, country, and pop music. Door prizes were given away via a raffle drawing, with gift cards and gift certificates from Maryland Fried Chicken, 1916 Irish Pub, Winn Dixie, Felton’s, and Walden Lake Car Wash being distributed amongst winners. ith summer 2021 upon us, warm weather, sunshine, and vacations are in full swing. As families and children are looking for some outdoor fun, why look farther than the parks available in our incredible hometown? Parks offer free or low-cost fun and allows for kids to run and play, families to get together for parties, individuals a scenic spot to read or relax, and fitness gurus a chance to get in touch with nature while burning some calories. This park guide will go through some of the amazing parks in Plant City, so whether you’re looking for playgrounds, fishing spots, or a chance to shoot some hoops, look no further than FOCUS’ guide to Plant City Parks. Note: All parks are free entry EXCEPT Edward Medard Conservation Park, which costs $2 per vehicle (up to 8 people per vehicle) and $5 to launch your boat. Most of the parks are open sunrise-sunset, with Edward Medard open in the summer from 8AM-7PM, Mike E. Sansone open from 9AM-9PM, and Dort Street Tennis/Basketball allows players to use the courts from dusk until 10PM.

Wheeler St)- At Courier Field, you’ll find a beautiful monument to honor our Veterans of past and present. There are even engraved bricks that you can purchase if you’d like to honor someone special that defended our country. two big gazebos are perfect for family photos, or just sitting and reading a book. • Village Green (205 Renfro St)- At Village Green, you’ll find a gorgeous three-tier fountain that’s perfect for photos, a chess/checkers table, and plenty of benches for reading and reflecting or meditating. FOR THE PETS: • Edward Medard Conservation Park (6140 Turkey Creek Rd)- Offers one three-mile trail for equestrians/horses. • Gilchrist Heights Dog Park (905 N. Knight St)- While most parks allow dogs, this park is specifically made for your dog and is newly upgraded! It offers a 16,300 square-foot fenced-in play area divided for smaller and larger dogs, a dog obstacle course that includes a tunnel, double jump, pause table, and fire hydrant jump, and drinking fountains for people and dogs. With plenty of shade and a newly paved parking lot and bridge to allow easier access to the dog park, the ribbon cutting was officially held on June 10 for the re-opening. • Lower Green Swamp Preserve (3540 E. Knights Griffin Rd)- Offers four different sized trails- ranging from 1.6-5.5 miles- for equestrians/ horses.


Otis M. Andrews Sports Complex is on the east side of Plant City. The nearly 40-acre park features four full size football/soccer fields, football practice fields, playgrounds, and pavilions. The complex is home Plant City Dolphins, Parks and Rec Youth Flag Football League, and the Plant City Lancers soccer team, among many others. Village Green is a beautiful scenic park, perfect for photos or reading and relaxing in Plant City’s midtown district.

Samuel W. Cooper Park offers a paved trail around a gorgeous pond with two fountains, and also has free exercise stations and equipment throughout the paved trail.

Lower Green Swamp Nature Preserve is a county party featuring native longleaf pine habitat. The perserve is nealy 13,000 acres with walking trails and open to horseback riding.

Edward Medard Park is known for its hills with giant trees and roots that are perfect for working out or running around having fun. PAGE

Plant City Says Goodbye to Buddy Freddys E By Cierra Craft

lton & Evelyn Johnson sold sandwiches and a drink for a dime through their SuperTest gas station back in the 1950s. People couldn’t get enough of Elton’s barbeque and Evelyn’s cornbread and fried chicken, which gave birth to Johnson’s Restaurant. Fresh vegetables, slow roasted meats, simple food — real food. Buddy and Fred, the couple’s sons, followed in the footsteps of their parents, opening Buddy Freddys in 1980. The brothers owned that restaurant until 1997. Buddy continued his

career in politics and Fred opened Fred’s Market Restaurant the following year. In late 2020, Buddy Freddys announced it was closing the iconic restaurant, where diners were “always welcome to our table.” On Thursday, May 20, the Buddy Freddys was demolished to make way for a restaurant Plant Citians have been asking for relentlessly: ChickFil-A. The job was contracted to Wetherington Tractor Service. In a Facebook post by the City of Plant City, it confirmed the chicken restaurant

received approval of all permits to construct. “The City team is committed to supporting businesses interested in coming to our community as we continue to make Plant City the best place to live, work, and play for all,” said the post. Despite the family’s departure from the brand, they’re sad to see the restaurant come to an end. “It saddens me to see the work we had done come down, but the family tradition carries on at Fred’s,” said Fred Johnson. “Our family legacy began back in 1954 and when we opened Buddy


Freddys people from all over the world came there to eat. When we opened the restaurant, it was the same food mom and dad sold. It was just family dining and Southern Hospitality at Buddy Freddys.” The menu from 1980 read, “Our goal is for you to enjoy your time with us as much as we will in serving you,” signed Buddy and Fred Johnson. The breakfast Weekday Buffet was $3.65 and on the weekends or holidays, the buffet was $5.65, as the menu read “we dress things up a bit.” The service greeted the table with buttermilk biscuits. The reaction to the demolition was divided among Plant City residents. Some are excited to have waffle fries and frosted lemonade on the regular. Others reminisce on their memories of Buddy Freddys. Sharon Everidge said she and her family celebrated many birthdays for her father, Buddy Everidge and her grandmother, Betty at the restaurant. The restaurant was a longtime gathering place for civic organizations and class reunions for Turkey Creek classes of 1955 and 1961, as well as Plant City High School Class of 1955. Many residents said they have photo albums of pictures taken on the restaurant’s wrap-around porch. As photos of the demolished restaurant were shared on social media, one user chimed in that her family frequented the restaurant after church on Sundays and others joined the sentiment, sharing how their first job was at Buddy Freddys or it was one of the first restaurants they ate at after moving to the area. It was at Buddy Freddys where people celebrated good moments. While Plant City may be saying goodbye to this renowned restaurant, the memories of a 40-year legacy remain.

The Buddy Freddys menu featured a message from the Johnson brothers, welcoming customers to good cookin’ and southern hospitality.

Demolition on the building began in late May. The site on Goldfinch Drive will become home to a Chick Fil A restaurant. PAGE

Why is your dad so special? My daddy is special to me, for the simple fact he is my daddy, the person that I look up to and love so much. He has worked hard to provide for his family, while setting an example of hard work ethics. He has always been my place of security when I needed someone. I know with him no matter how old I get or what I do, I will always be his little girl and he will always be my hero.

My daddy is my favorite guy. He is a Navy vet, and no matter how long, late or hard he worked he always took the time to teach me how to fish, work on cars and how to carry on a conversation entirely pure of Star Wars quotes. Our dad is the most giving and selfless dad we know. We learned by his example to see the often-forgotten people, care for family above self, and to always thank God for His many blessings. like I once was. We serve Plant City families through our five programs. I also love learning about each child and family’s story. There is so much richness in listening and truly hearing where someone comes from. Before the pandemic, I would also lead mission trips to developing countries. Those are memories I will treasure forever. What motivates you? Purpose. Utilizing my life experiences and trials and turning them into good. My life verse is Genesis 50:20 “You intended to harm me, but God intended it for good to accomplish what is now being done, the saving of many lives.” Whether sharing coffee with another adoptee or raising money for foster care, serving people is my ultimate motivator. Helping them find their own purpose through their own unique life circumstances. You’re currently in the process of an adoption journey. What made you feel called to adopt? Well, I am actually adopted. To make a long story short, I discovered part of my birth family through an online DNA test and found out my biological family has been living in Plant City my entire life. Today, we are currently fostering one of my family members and will soon add her as a permanent member of the Rothman family. The timing of it is all God. It has been a wild ride, but she is such an unexpected blessing.

orn and raised in Plant City, Rebecca Rothman is now raising her four kids with her husband in her hometown. As an adoptee, she’s found her purpose helping families as the Director of Foundations at Florida Baptist Children’s Homes + One More Child. The mission is near and dear to her heart, especially as her own family continues to grow and evolve with the upcoming adoption of her youngest daughter.

What were your favorite places to visit in Plant City as a kid? What are your favorite local places to visit now? As a child, I loved shopping for clothes with my mom downtown at Lad & Lassie. I would pretend I was putting on a fashion show as I exited the dressing room. Now, I really enjoy Hole-In-One donuts. My kids especially love to walk around Brewer Park and feed the ducks. What’s the best part of your job? Knowing each dollar I raise for the organization goes directly to helping provide care for vulnerable children

What is your advice to anyone else currently going through the adoption process, or looking at the possibility of adoption? Educate yourself. Learn everything you can about trauma and adoption first. Pray through the process and ensure you have chosen an ethical adoption agency. Then love your child through the good and the bad. It might be hard, but it will be worth it! What do you enjoy doing in your spare time? With four kids, I enjoy taking naps. I am kidding, sort of! I love writing. I am currently working with publishers to have my manuscript made into a book. But traveling with my husband Mark and my family is a close second. We have been to so many amazing places with many more to go on our bucket list. I also lead a Sunday school class for single ladies each week at First Baptist Church of Plant City. They are like family to me. If you could only eat one food for the rest of your life, what would it be? Absolutely pasta! Any kind. But Fred’s Market lasagna helped us make it through the pandemic shut downs so that would be my first choice. If you could have any superpower, what would it be? To be invisible. I could eat snacks without my kids seeing me.

What does Irish pub food and Guinness have in common with fast-casual southwestern cuisine? Well, in Plant City, O’Brien’s Irish Pub & Grill and Bubbakoo’s Burritos share one common denominator: Owner Mike Goodwin. The restaurateur purchased O’Brien’s in June 2013, creating a Cheers-like gathering place for people to grab a delicious meal, watch sports and enjoy live events. Itching for a new venture, Goodwin kept his ear to the ground looking for a new business opportunity. In 2019, Goodwin and his business partner Tracey Garrison opened Florida’s first Bubbakoo’s Burritos, a New Jersey-based brand serving tacos, burritos, bowls and more.

‘Where Everybody Knows Your Name’ at O’Brien’s Irish Pub & Grill O'Brien's Irish Pub & Grill opened in 2007 and after leaving the corporate world, Mike Goodwin decided to go back to his roots and dive into the restaurant industry where he had spent 11 years with Ruby Tuesday and Winegardner & Hammons. Looking for restaurants for sale in Tampa Bay, he acquired the Pub in 2013. Goodwin says he was welcomed by the business community and the bar's regulars. Why is O'Brien's so loved? It's like Cheers- you never meet a stranger. The bar has become a gathering place for old friends after a round of golf or a place to grab hearty Irish fare and catch a Lightning game. O’Brien’s has weekly specials such as $7 burgers or $9 specialty burgers on Tuesdays, bar bingo or karaoke on Wednesdays, live trivia on Thursdays, and on Fridays you can grab a bucket of Bud Light for $13.99 and enjoy live music. O’Brien’s offers many domestic and imported beers, both on draft and bottled, including Guinness, Budweiser, Corona and much more. They also serve cocktails and wine, offering something for everyone at an incredible value.

O’Brien’s Plant City hosts fun community events such as a Super Bowl Party in February, Redneck Prom in May, the annual Halloween costume party in October, a Golf Cart Christmas Decorating contest in December and of course, a huge St. Patrick’s Day parking lot party and celebration with generous helpings of corned beef and cabbage being served. O’Brien’s Plant City, along with their loyal customers, help support local charities, schools and the food bank by donating toys and non-perishable food items during the Customer Appreciation Event in early December. In December 2020, bartender Tisha Howard was in need of a hip replacement and the bar held a ‘Hip, Hip, Hooray’ fundraiser in her benefit. The event raised a little over $20,000 in support of Howard, who had set a goal of $23,000 for the procedure. In what was a tough year for restaurants, it is the family atmosphere at O’Brien’s that encouraged everyone to support a bartender who has served them for 14 years.


Some of the employees have worked at O'Brien's since the bar originally opened and others have been there 10-plus years. Goodwin is blessed with an experienced staff and people who love their jobs. "COVID-19 and the aftermath have been a challenge, but we are fortunate to have such a dedicated and dependable staff," said Goodwin. "I want to recognize my team: Vinny Michalski is our new General Manager; Shawn Keen has been with us for 13 years and is our Kitchen Manager; Lenore Vaughn started as a server eight years ago and is now our Manager of Operations; Anthony Johnston has been here seven years and is our Night Manager. Tina Baccamazzi is our Server Trainer and has been with us for 14 years along with bartenders, Cherish Harrelson and Tisha Howard. Following closely behind them are Karen Fuentes and Briel Maddalena who have been with us for 10 years.” Goodwin—who also owns the O'Brien's in Wesley Chapel— says his Wesley Chapel chef recently revamped the menu,

bringing in new ingredients and new flavor options while taking some of the old menu items and giving them new life with a fresh take but at the same affordable prices. "The new menu has been a big hit, some of the favorites have been the Reuben Cuban Sandwich, the Grouper Sandwich and the Prime Meat A River Burger," says Goodwin. O’Brien’s offers a menu of traditional Irish pub food including Fish and Chips and Shepherd’s Pie, Emerald Isle or for a twist, try out the Mac & Cheese Shepherd’s Pie where the mashed potatoes are replaced with creamy macaroni and cheese and topped off with a slice of cheese and bread crumbs. "We are also going to freshen up the dining room soon without losing the neighborhood pub feel. We've signed on with C&K Architecture out of Tampa and we expect the complete remodel to be completed in a year to year and a half." PAGE

Creating Something Different at Bubbakoo’s Burritos Mike Goodwin and his business partner Tracey Garrison met many years ago, when Garrison was a vendor for the Pub, servicing the deep fryers. He jumped into partnership with Goodwin on Tampa Joe's, a sports bar serving wings, pizza and burgers at 9316 Anderson Road in Tampa. In 2019, the pair went to the National Restaurant Association Show and saw Bubbakoo’s Burritos showcased as one of the top 500 franchises in the country. "When we got back to Plant City, we were interested in the concept and called the owner," said Goodwin. "Within two weeks, we were in New Jersey and were impressed with what we saw. We committed to opening five stores with developing rights, so no one else could open a Bubbakoo's Burritos in Tampa Bay." The pair opened the Riverview location in November 2020, making it the first Bubbakoo's Burritos in the state of Florida. One month later, the fast-casual build-your-own burrito concept was opened in Plant City- just four doors down from O'Brien's. The pair didn't intentionally plan to open the restaurant in such close proximity to O'Brien's, it just so happened the space became available and they knew there would be synergy between the two restaurants. “We have customers who will order at Bubbakoo’s and bring it down to O’Brien’s because they want a beer with their meal,” said Goodwin. “We’ve had families come in and they’re enjoying meals from both restaurants.” Goodwin and Garrison have also signed a lease to open a Bubbakoo's Burritos in the Zephyr Plaza in Zephyrhills and a letter of intent in the Bexley area of Suncoast Parkway and Highway 54. At Bubbakoo's Burritos, guests choose their entree: Bowl, Tacos, Burritos, Quesadilla, etc. Then choose their protein and toppings, but the food is beyond typical "Mexican fare" of ground beef and grilled chicken. At Bubbakoo's, customers can put hibachi-grilled steak or shrimp, hand shredded carnitas, or shredded beef as a protein option. As for chicken, guests can choose among crispy fried, marinated and grilled, and salt-and-pepper shredded. Nonmeat options include bean and cheese or a vegan Boca patty. They also offer non-typical items such as wings, tots, southwestern eggrolls, and even fried Oreos. The company’s slogan is “Create Something Different,” and with out-of-the-box protein options and variety of sauces, hungry customers can put just about anything on their meal making it completely customizable. While nachos, taco salads, and bowls aren’t unique to Bubbakoo’s, there is one menu item that is proprietary to the brand, called a Chiwawa, a deep-fried, softballsized, panko-crusted cheesy rice ball. “We make the guacamole, pico de gallo, house salsa, tortilla chips, and the taco shells in-house, fresh, daily,” said Garrison. “You’re not going to find that level of freshness at our competitors.” But the Plant City location isn’t just in the business of feeding a hungry lunch and dinner crowd. Garrison says the restaurant is kicking off programs to benefit the community. “We have started our Read It to Eat It program, where kids in our local schools can earn free kids meals by reading books,” said Garrison. Bubbakoo’s Burritos also offers fundraising opportunities for local schools, sports teams, and other organizations. Bubbakoo’s Burritos offers catering for any size group at both locations. On the catering menu, customers can order burrito and taco trays, quesadillas, chiwawas, chips with salsa, pico, queso and guacamole, among many other options. From sport teams, business lunches, family events, and even weddings—yes, the Plant City team has catered a wedding—the door is open to “create something different” for a dining experience.

With changes coming to O’Brien’s and the appeal of the unique hybrid skater-surf atmosphere that can be found at Bubbakoo's Burritos, Goodwin, along with Garrison, and the team at both restaurants have their eyes set on long-term growth.

The Man and the Legend of the Cucumber King: Joe McIntosh, A Knights Station Farmer By Dr. Scotty and Hsiu Huang History Center Plant City Photo Archives, Inc.

T

he name Joe McIntosh may not be in some history books, but Joe McIntosh made history in Hillsborough County during his 40 years of farming here. After his discharge from the Navy in 1929, he started farming with a one-third interest in a fiveacre plot. By 1951 Joe McIntosh had accumulated over 550 acres. By 1946 McIntosh had become known as the Cucumber King and sometimes would have as much as 350 acres in cucumber. In 1951 one newspaper reporter wrote that McIntosh, who was harvesting a record amount of 25 acres of collard greens, could also be called the Collard Crown Prince. Herman Kennedy, who made Plant City’s Southland Frozen Foods one of the largest frozen food operations in the U.S., bought his collard greens straight from McIntosh, stating, “These are the best collards I have ever seen.” McIntosh grew just about every kind of vegetable that was desirable. And he was generous. During WWII he would donate 15 acres of tomatoes or carrots and deliver them to the port in Tampa for food for the GI’s. He was chairman of the Hillsborough County Farm Bureau fish fry and talent show and volunteered at the Turkey Creek chicken and rice dinner to raise money for the March of Dimes program to fight polio. In a dispute with local markets who refused to lower their prices, McIntosh advertised a “you pick” system and sold his tomatoes directly to the people for $1 a bushel. Understanding the local farm worker, Joe McIntosh would work alongside his employees, sometimes 75 to 100 of them. In the hottest weather he would call for a break time for all of them and join them for a breather. Some days he would drive into town in his truck and come back with a truck full of farmhands for vegetables ready for harvesting. At cucumber harvest time Joe and his wife, Violete, and the farm workers would fill two to three railroad cars each day. And at sugar cane time, they would fill the fields with harvested stalks awaiting the cane grinding, which would surely follow. And the people would come from a distance once the smoke from the cane grinding billowed into the farm fresh air. McIntosh was well-known in the county; he ran for county commission five times, receiving many votes but never quite enough. Regardless, because of his following he was appointed as a Deputy to the Commission for agriculture issues such was drainage and drought. When the county would not respond to a problem he reported, McIntosh rounded up some friends and did it themselves, sloshing through the clogged drainage canals to remove the overgrown

hyacinths. He served on the Board of Directors of the Hillsborough County Wildlife Association, and the Hillsborough County Farm Bureau, and was a member of Plant City First Baptist Church, the Masons, Knights of Pythias, Elks Club, and the Hillsborough County Cattleman’s Association. In addition to his vegetables, McIntosh raised about 100 head of cattle, some of which he slaughtered for his barbecues, and dove shoot events. In addition to cucumbers and collards, McIntosh grew watermelon, peppers, peas, corn, which he used for wind breakers for his other vegetables and fed his cattle, and cantaloupe, eggplant, tomatoes, squash, beans, and mustard greens. McIntosh was a family man and Violete would work right beside him, and sometimes daughter Fern joined in. But not on Sunday. That was a day set aside for church and family. Joe McIntosh may be remembered by some as a road, but the man and the legend loom much larger than that – Joe McIntosh (1909-1969) is the epitome of a great man, and a great and highly successful farmer. On June 10, 2021, the City of Plant City dedicated McIntosh Preserve, named for Joe McIntosh and the land he farmed. Avery

Coons By Katie Hamilton

Avery Coons is an outstanding rising senior who participates on the Track team at Plant City High School. Avery has been running on the team for the past three years and now is continuing this sport into his final year at PCHS. He has set many personal records this season including dropping seven seconds off his time in the 800-meter race with a 2.06 best. Avery plans to beat the school record during his senior season by shooting for a 1:58. Avery receives lots of support from his family, especially from his mother, quoting “She always tells me not to give up regardless of the consequences.” With everything that track has provided him, Avery also enjoys taking honors as well as Advanced Placement classes. With a few plans after high school, he strives to continue running for his future college. In his free time, Avery enjoys 2D art, basketball, and football. Avery chose track because it is one of the few sports that he enjoys. Avery says, “I like pushing myself every day and doing what others can't but better.” Avery has made quite a few memories along his journey throughout the PCHS athletics program especially with his teammates. He recounts times when he would go to practice with the graduated seniors while pushing each other to the limits while still having fun. Avery is unsure of what keeps him going; however, he knows that he wants to be a part of something greater in his future.

The Plant City Bulldogs Baseball Team By Katie Hamilton

T

he Plant City Bulldogs baseball team is an all-boys team ages seven to nine. These boys are coached by Glenn Lyle, Paul Littrell, Derek Dubose, David Deal, and Matt Roberts, many of which are dads of children on the team. When the boys can see their dad coaching a team, it make an impression on the young athletes, proving that baseball is much more than a sport, it is a community. With great coaches and great Dads, the boys have done outstanding this season, certainly winning their fair share of games. Many boys on the team aspire to continue playing baseball throughout the course of their life because of the enormous impact playing has had on them. “Seeing their love for the game makes me the happiest baseball mom ever,” said Becca Littrell, mother of Eli and Caleb Littrell. “I am their biggest fan, and they are my favorite players.” The passion for the four bases has carried into all the boys’ everyday lives, from playing in the pool, eating in the kitchen, and watching TV, their parents say they are always throwing balls

in the air and running to catch them. Glenn Lyle Jr. is a die-hard baseball player, enjoying his games and sometimes special treats with mom after games, win or lose. A wonderful environment has been created with this team, where young boys can flourish in their all-time favorite activity as their supportive family cheers them on. Charlie Roberts is a student at Walden Lake Elementary and with a great start in baseball, he strives to reach his goal of becoming an MLB player. Samantha Roberts is Charlie's mom and she explained how they found baseball to be a great fit for him. “We did not choose baseball for Charlie, it was something that he wanted to try, and he fell in love with it.,” said Roberts. “It is rare to see Charlie without a glove and ball in his hand.” For the Bulldog baseball team, it is beautiful how much love these boys have working together towards a common goal and learning some big life lessons while doing something they love.

Meet the

Maker: Peyton Collins By Emily Topper

P

eyton Collins never set out to be an artist. At least, not beyond the doodles she created on her iPad as a student at Southeastern University. “When I graduated high school, I really thought I was going to go into nursing,” Peyton, 23, said. “I’m petrified of needles, so I don’t know why I thought that was for me.” It was when she got to college that she found her passion for all things social media. And when she was hired at RAOK Boutique, locally owned and operated by motherdaughter duo Brigitte Hodge and Hannah Benton, her creativity had a chance to blossom. “Originally, I was hired for the sales floor,” Peyton said. “And eventually, I became the social media manager. When RAOK was launching their website, Hannah asked us what we liked to see when we get a package from an online boutique. And my answer was thankyou notes I can frame, and stickers.” The RAOK team jumped at the suggestion, and it was Hannah who encouraged Peyton to begin pursuing graphic design. Using the Procreate app and her Apple pencil, Peyton set to work designing shirts for the boutique’s kindness line and transforming her previous classroom doodles into stickers. Though she was nervous at first, she quickly saw people wearing her designs in Plant City, Brandon and even Orlando. “It didn’t hit me until I saw it out in the wild,” Peyton said. “I was like, ‘Someone’s wearing my shirt!’ It always makes me so happy.” And it makes customers happy too. Over the last six years, Peyton has designed bestselling graphic tees for the boutique’s popular strawberry line and serves as their in-house designer and product photographer. But it’s her designs and stickers that leave shoppers wanting more and more. “It’s been so rewarding,” Peyton said. “And it’s definitely been a team effort. Hannah has always been so supportive of the designs I’ve come up with. For my designs for our strawberry line, I design the picture but also pick out the t-shirt color and quality. For our last strawberry line, I think I did eight or nine shirts.” Peyton’s designs are just like her: optimistic, happy, bubbly and bright. In addition to coming up with her own color palette, she’s also created textures and brush strokes specific to her art. Most of her stickers are designed using teals, yellows and pinks. Since much of her design work is faith-based, she often listens to worship music while she works and uses lyrics for inspiration.

When she’s not creating designs for RAOK, Peyton works doing social media for Jessi Rae Bridal in Plant City and Brick Media in Tampa. When she found herself bored during the coronavirus pandemic, she picked up her Apple pencil and began creating even more designs. Eventually, she opened her own Etsy shop to “spread joy one sticker at a time.” Her stickers are available for about $2.50 a piece. Peyton’s favorite designs for both RAOK and her shop are the ones she creates doing her own lettering and design, like her popular “make heaven crowded” sticker and a candy hearts graphic tee she designed for a RAOK strawberry launch. For Peyton, the biggest reward has been being able to spread a little happiness and joy through her art. “It’s definitely given me a lot more confidence,” she said. “To see people loving things that make them happy makes me happy, and it makes me inspired to design even more.” Peyton’s stickers and graphic tee designs are available at RAOK Boutique, 2804 James L. P

astor Tim Partridge and his Life Journey Baptist Church congregation have a very big dream – AND the faith to see it become a reality. They desire to build a storm recovery center on 10 acres at 110 North Forbes Road that will serve residents of West Plant City, Dover, and Thonotosassa. And we can help them accomplish this mission! Affiliated with the Southern Baptist Convention, the church changed its name recently from Lebanon Baptist to Life Journey Baptist. “We love our new name, and we are beginning to do everything as a brand-new church,” shared Pastor Tim. Now some may ask why did they change the name; the reason for the change is to reflect where people are in life. We are all on a journey that will lead us somewhere and as a church we want to walk that Life Journey with you and your family. The self-sustained 16,000 square-foot, two-story space they envision will withstand hurricane force winds and feature a 1,500 square foot commercial kitchen, laundry and shower facilities, generators, device charging stations, and a comfortable, soundproof space to house recovery workers. Additionally, the space could be used by Hillsborough County deputies and private ambulance crews 24/7 for air-conditioned rest in recliners, bathrooms, internet, and snacks. The exterior will also include four 50-amp trailer hookups. The bi-vocational pastor is familiar with disaster relief as he spent 25 years as Paramedic with the majority being a Rescue Lieutenant with Hillsborough County Fire Rescue. In the future, he also envisions a potential tutoring program, perhaps headed up by a retiring teacher. The church hopes as well to serve the community with a clothing closet and a once-monthly free meal. Pastor Tim sees the dream as a five-year, $2,000,000 project, “unless God quickens our plans,” he added. The congregation of approximately 30 members (and growing) is grateful for the response to its recent Spirit Night fundraiser at Fred’s Market Restaurant. Next, on June 26 from 2:00 to 5:00 p.m., the community is invited to a Hawaiian Luau at the church. Children will enjoy the bounces houses and other activities, too. hristian faith and the support of loved ones is the recipe for The Cheesecake Lady, a business owned/operated by April Farkas. Farkas bakes up speciality and custom cheesecakes with flavors like Banana Pudding and Maple Bacon Pecan, among others. Farkas says starting a business centered around baking was a happy accident and a little divine intervention. “My husband wanted a cheesecake for his birthday a few years ago,” said Farkas. “...So, I decided I could make one. I wasn’t a good baker so I was taking on quite a task. It turned out to be the BEST cheesecake any of us had ever eaten!" That spark led to Farkas taking cheesecake orders from those around her. Farkas made The Cheesecake Lady a legitimate business in November 2020. Not knowing anything about the food industry, she reached out to her close friend, Duke Mendel, owner of Duke’s Brewhouse. Duke and his wife Renae have supported Farkas every step of the way. Browsing thecheesecakelady.net, it’s apparent Farkas doesn’t make your grandma’s cheesecake. These are decadent experiences transporting the taste buds to another planet. While customers are welcome to purchase from The Cheesecake Lady’s menu, Farkas is up for anything. If a s’mores flavor or a character themed cheesecake is what you seek, The Cheesecake Lady is up for the challenge. “Some of my favorites are the maple bacon pecan, the lemon blueberry and my all-time favorite was the cheesecake I made in the image of The Grinch—that was such a unique, fun design!” said Farkas. “I am currently working on a German chocolate cheesecake. I had a request for a cannoli cheesecake & one for an éclair cheesecake, too. Don’t they both sound decadent? I may try to come up with a recipe for those two very soon!” On June 27, The Cheesecake Lady will be at the Walden Lake Food Truck Rally selling individual slices. Her June Flavor of the Month is Chocolate Chip Cookie, featuring her daughter’s chocolate chip cookies as a crust with a thin layer of rich chocolate ganache, topped with a crustless cheesecake. Thin little ribbons of Farkas’ delicious homemade caramel sauce, mini chocolate chips and whipped cream garnish the top. Summer Peach

Caprese Salad BY CYNTHIA DIAZ, THE CORNER STORE

This salad is a perfect side for summer barbeques! Sweet, savory, and perfectly peachy! • • • •

3 ripe peaches sliced (about 10 slices) 3 ripe tomatoes sliced (about 10 slices-can use watermelon or cantaloupe too) 16oz log of sliced fresh mozzarella 1/2 cup fresh basil about 10-15 leaves roughly chopped (or if you have the patience and want to be fancy you can layer one basil leaf in between each layer of cheese and fruit) salt/pepper olive oil balsamic glaze (2cups balsamic vinegar, 1/2 cup sugar of choice, combine in a saucepan and simmer for about 20 minutes until reduced by half and coats the back of a spoon) store bought is great too!

Directions: Layer alternating slices of mozzarella, peach and tomato (or cantaloupe/ watermelon if using), sprinkle with the roughly chopped basil, salt, pepper and drizzle with olive oil and balsamic glaze. Serves 4-6
