It’s rumoured Prince Charles has been paying millions of pounds extra from his private income – on top of Harry’s base allowance of $4.3 million – to Meghan and Harry. At one stage, he even paid the Sussexes more cash than William, who is second in line to the throne.

ustralia fell in love with the adorable yet hapless Nudge on Hey Dad..! more than 30 years ago, yet these days Christopher Truswell is earning a nice living renting out the properties he bought at the peak of his fame. “Airbnb has really saved me,” admits Chris, who jokes that his pet snake now earns more than him from acting gigs. “I have [investment] properties in Katoomba, Newtown and Mudgee, so that’s giving me a nice, reasonable income.”

STILL RECOGNISED Chris, now 53, sat down with Woman’s Day in his quirky home tucked away in bushland at Leura in the Blue Mountains, and opened up about life after the popular sitcom, and why he’s still thankful today for being able to play a character that made Australia smile. “It was so good playing Nudge,” he says. “I made people laugh – that was the main thing. People were always yelling my name out from the side of the road, it was great.” And despite the show wrapping up in 1994, it’s still something that happens now. “The other day when we were in Hobart, he wasn’t even an old person, it was a 34 WD

Vietnamese guy driving the courtesy bus to the airport and he was like, ‘Aren’t you the guy from Home And Away?’ and then he was like ‘Wait, no, Hey Dad..!’.” “A lot of people grew up with the show – it’s like the soundtrack to your life and people reminisce about it.” After Hey Dad..! Chris moved into theatre and appeared in TV shows such as All Saints, Underbelly and Packed To The Rafters. But what many fans don’t know is he also tried his hand at music. “I was the lead vocalist in some cover bands, the Australian Beatles and the Australian Monkees,” he laughs. “We played lots of bars and weddings but I kind of wrapped it up six years ago after I got a bit bored with it.” While he’s enjoyed regular work in the entertainment industry, Chris says he’s had to move with the times and earn a living from the boom in accommodation sites like Airbnb. And while you’d think it was his work on Hey Dad..! that gave

him the money to buy his homes, Chris reveals it was his nightclub appearances that put him on the road to financial freedom. “I didn’t make all that much money with [Hey Dad..!]. You just didn’t on TV back then, so the money that I put towards my first property came from disco appearances,” he says. “You’d just get drunk and then get paid a nice amount of cash out the back. I saved that money up and I bought myself a little investment property.” While Chris continues to work as an actor, he revels in his downtime, which he spends at his sanctuary in the NSW Blue Mountains.

ANIMAL RETREAT “I love living in the mountains,” he says. “I used to live in [the Inner West Sydney suburb of] Balmain for a long time but I just love being here. It’s nice to be away from the crowd.” Chris’ tight-knit mountain community also houses a bevy of actors and filmmakers – Hey Dad..! co-star Julie McGregor lives just down the road – and he recently shot a feature film and a TV series in the area. When he’s not working, Chris enjoys “the very simple things in life”, with partner Suzanne Richards and their collection of rescue animals. Suzanne, 52, owns Action Animals, an agency that represents animals for TV and film, so under their roof they live with four snakes – Amelia the jungle carpet python, diamond pythons Douglas and Veronica, and Blondie the albino Darwin carpet python – who has graced the covers of Vogue and Harper’s Bazaar. Chris jokes their star power could very well outshine his own.

They also have two dingoes, Shelia, 13, and Shady, 12, and nine-year-old saluki Raj. “Don’t forget about Paul,” says Suzanne, referring to their four-and-a-half-year-old giant panda snail. In between spending time with their furry and very photogenic companions, Chris reveals he’s working on “something very exciting”, which will please Hey Dad..! fans. “I can’t say too much but I’m going on tour this year with someone from Hey Dad..!,” he reveals. “It’ll be a lot of fun and we’re hoping to attract some big audiences. When he saw his mum Amrei weeping after she learned her beloved yoga studio of seven years had burned to the ground, this special little man said something that helped her heal in an instant. “Mummy, I’m going to build it again with my new toy drill and paintbrush I got for Christmas, and then you can stop crying,” big-hearted Noah told his mum. “My heart burst with so much gratitude,” Amrei, 40 tells Woman’s Day. “But I’ve realised this community of ours, like so many others, is going to need a lot of help to recover and heal.” It was New Year’s Eve when the huge fire wall raged through the NSW Bega Valley and engulfed the quaint, small NSW town of Cobargo. Leaving nothing but tragedy in its wake, the fire took the lives of locals and dozens of homes and businesses were reduced to ash. On hearing word of imminent danger, Noah’s dad, local Cobargo photographer Ben Marden, sent Amrei and Noah along with the family dog Ella to the evacuation centre set up at the nearby coastal town of Bermagui for safety.


Amrei is determined to rebuild her yoga studio to help others deal with their pain.

“We’re humbled by the sheer generosity from so many kind people,” says Ben. As Cobargo begins the long journey of rebuilding, Amrei has one heartfelt message to all those who lost their homes. “When I stood in the wreckage just days after the fire, I prayed for all who’ve lost everything, and especially for the family whose father and son perished – their pain is unimaginable,” she says, adding she hopes her studio can be a space for fellow locals to come and take their minds off the tragedy, if only for a small amount of time.

HELPING EACH OTHER “I didn’t want to take any chances so I got them to a safe place,” says Ben, 49, who stayed behind to defend their land. “We own a historic property called Waterloo about 20 minutes from town, so I made the decision to prepare it for the worst. We don’t live there – we rent in town to be closer to Amrei’s business, The Sapphire Coast Bikrum Yoga Studio, on Cobargo’s main street.

COMMUNITY SPIRIT “The irony is, we thought the studio was safe – but how wrong we were. I was out at Waterloo fighting the fires, while our amazing neighbours saved our rental home from burning down. To see the studio now just a pile of ashen rubble – it’s like we’ve lost our very being,” he says. Back at the Bermagui Surf Club, Amrei and Noah sat huddled in a corner surrounded by shocked friends and strangers, all doing their best to support one another. “The community spirit is what’s kept us going. Since 2012 when I first opened the doors, I have over 200 members who attend daily classes. I love teaching yoga and watching our community thrive,” says Amrei. “About 20 of my students who lost their own homes were with us that day, and they asked if we could rebuild our happy hub – its a safe place to help heal our

little community. That was the moment I decided we could do this but would need some help.” Amrei and Ben never expected such an outpouring. Three “wonderful strangers”, who run their own yoga studios interstate, set up a GoFundMe page for the couple, so their beloved studio could rise from the ashes.

“Once I’m up and running, I want to gift every one of you a 12-month membership to help with the healing – we’ve suffered enough. “When Noah hugged me and said everything is going to be OK because we have each other, I wiped away the tears and looked at our beautiful little boy, and reminded myself just how blessed we are.”

‘My five-year-old forgot who I was’ Mum Emma’s worst nightmare came true when her little boy was diagnosed with dementia

mma Siddal thought there was something not quite right as she watched her toddler son Harley playing in the park. While the other kids happily played on the slides and swings, Harley was tearing around, acting more boisterous than usual. Most parents would have put it down to his age, or just seen a young boy with plenty of energy to burn. But there were other things, too. Lately, Harley was always getting sick with colds and infections. He had a constant runny nose and his speech,

rather than improving, began to deteriorate. Emma and her husband Wayne, 47, were beside themselves with worry, having no idea what was going on. Then when Harley turned three, the family was hit with devastating news – their little boy had a rare condition called Sanfilippo syndrome, otherwise known as childhood dementia. Worst of all, it was life-limiting, with sufferers only expected to live between 10 and 20 years of age – and there was no cure.

For Emma and Wayne, the future they’d been looking forward to for their son evaporated in an instant. Each birthday that passed wouldn’t just be a celebration – it would be a time to wonder how many more precious years they would have left together as a family. Stoically, they vowed to make every second count, but it wasn’t easy. Harley developed sleep apnoea, where he would momentarily stop breathing during the night, and he began to forget simple things like knowing

how to use the toilet or what was food and what was not. He would try to eat plants, bushes and rocks. “Harley was getting to a point where he couldn’t even recognise Wayne and I,” says Emma, 38. “He stopped calling us ‘Mummy’ and ‘Daddy’. ”

NEW TRIAL The couple were devastated. Yet hope was on the horizon. Hearing of Harley’s diagnosis, medics from Great Ormond Street Hospital, London, contacted Emma and Wayne to suggest their son take part in experimental treatment. “The hospital spoke to us and let us know about this new trial, but they told us they would need

to study him for a year to assess his memory,” Emma tells Woman’s Day. It was a long time to wait, and little Harley’s memory continued to deteriorate. “The whole thing was soul destroying,” Emma recalls. “There were months when he couldn’t recognise us, and it was heartbreaking. He even struggled to make eye contact with us.” Thankfully, by the end of the assessment period, the family received good news. “His memory was good enough to be able to get onto the trial – he could remember enough of what

he was told to show there was hope,” says Emma. The trial involved a device being implanted into Harley’s head, releasing a synthetic version of the enzyme he was missing directly into his brain. The enzyme would wash away the sugar build-up that was causing the neurons in his brain to die.

‘There were months when he couldn’t recognise us’ Following the treatment, Harley’s memory gradually improved to the point where he was able to utter those precious words that his parents

had feared he might never say again – ‘Mummy’ and ‘Daddy’. Seeing the look of recognition and love dawn on their young son’s face as he looked up at them filled Emma and Wayne with a hope they thought had been lost to them forever. Sadly, the reality is that despite his progress, Harley will never fully recover.

STAYING POSITIVE “He has good and bad days with the clinical trial he’s on,” says Emma. “But at the end of the day this condition is naturally supposed to just get worse and worse – the trial is a treatment, not a cure.” Despite everything, Emma and Wayne are determined to stay positive, and are in awe of how their brave little boy is battling on. “When you watch him go through all of this, he seems

invincible – he rarely complains,” says Emma. “He’s such a strong boy and we are so proud of everything he is achieving. And he seems to be improving slightly in some cases.” Although Sanfilippo syndrome is rare, affecting one in every 70,000 children, Emma can’t help but think of the others suffering with this condition. “It’s awful knowing that other children like Harley may get to a point where they can’t even recognise their own parents,” she says. “We’re hoping by sharing his story, and the success behind the pioneering clinical trial, other parents with children like Harley might feel some hope the same way we do with our little boy. “We realise it won’t cure him, but it means everything to be able to make more cherished memories with our son.” WD 39

‘I was addicted to KFC’ uffering crippling back pain after the birth of her twin girls and unable to pick them up, mumof-five Hannah Pech, 33, was relieved to finally get pain relief medication from her doctor. But when the GP warned her that due to her weight she would have to have an adult present when she took it to be safe from the side effects, she knew she had to do something. “My job is to look after my five children,” says Hannah, whose little ones range between two and eight. “My kids need me, and not being able to look after them due to my size wasn’t right.” Hannah was hellbent on slimming down and never took the medication. Instead she stuck the prescription onto the fridge door as a reminder of her goal. She’d heard about The Healthy Mummy program and joined, immediately making better food choices and taking up light exercise. After a few months Hannah had shed 10kg. With a new lease of life, she threw the prescription away and over the next 10 months lost a further 26kg!

“I was emotional eating. I’d be up all night breastfeeding and go to the fridge on the way to bed,” says the healthy mum who now weighs a slender 69kg. Twice weekly buckets of KFC – large chips, a huge burger, chicken drumstick, mashed potato and gravy were a staple. “I’ve turned my life around. I ride a bike with the twins strapped on the back now. Before that I hadn’t ridden one in 17 years. And the kids love that I can play, run and muck around with them.” Hannah still allows herself to indulge in her guilty pleasure – the odd KFC meal, but only now and then. “I loved KFC before and I still love it but now I have a little burger and chips. That’s 600 calories and I’m satisfied,” she says. “Most importantly though, being a mum is everything to me and losing weight means I’m living my dream and being the best and healthiest mum I can be for my gorgeous kids.”

‘I couldn’t look in the mirror for 10 years’ um Chelsea Dixon knew she had to change her life when she saw a photo of herself at Pizza Hut on a family night out. Working from home, and with four children under 10, she avoided looking at herself in the mirror for almost a decade. She was shocked when she stepped on the scales to see she was 130kg. “I was gutted. I cried for weeks,” says Chelsea, 32. “I felt helpless, that I couldn’t give up takeaway.” Signing up for a lifetime membership of The Healthy Mummy was “the first step” Chelsea took to turn her life around. Now I think, ‘Who has time for that?’” Her four children are reaping the benefits, too. “My older two are used to sitting on the couch and doing nothing, but they’ve learnt to make better choices,” says Chelsea. “I can now enjoy them, we go to the aquatic centre, I play with them. Losing weight has changed the way we live.”

The new book How Not To Diet by American physician Dr Michael Greger is a diet based on medical evidence (there are almost 5000 references from medical literature in it!) that explains weight control as being a lifelong process – not a quick or short-term fix. “Lifelong weight control requires lifelong lifestyle changes,” says Dr Greger. “It’s not what you eat today, tomorrow or next week that matters, but rather what you eat over the next months, 56 WD

First, you need to work at making your eating habits sustainable over the long term. “Any long-term eating pattern must be nutritionally complete, containing all essential vitamins and minerals,” Dr Greger explains. “We should eat real food that grows out of the ground. A wholefood, plant-based diet was found to be the single most effective weight-loss intervention ever published in medical literature, proven in a randomised controlled trial with no portion control, no calorie counting and no exercise component.”

Sleep enhancement and stress hormone relief are two of Dr Greger’s weight-loss boosters. Essentially we need more sleep (at least seven to eight hours a night), and less stress! “On average, sleep deprivation tends to lead people to overeat by 180 to 560 calories a day,” says Dr Greger. People who are stressed may gain weight, too. “Though some people eat less during stress, the majority not only eat more, they tend to gravitate toward foods high in sugar, fat and calories,” says Dr Greger. “They don’t call it comfort food for nothing!” He advises trying to avoid major stressors and use exercise to work off any unavoidable stress. “This can include yoga, walking, or resistance band stretching,” Dr Greger says. “Mindfulness techniques can be used to reduce stress and deal with cravings. To buffer the release of the stress hormone cortisol, we can reduce our intake of saturated fats and added sugars.” Dr Greger recommends nine minutes of moderately intense activity a day, which he says is the optimum duration for weight loss.

You’ll need to say “see ya later” to processed foods as well. “An effective weight-loss diet is [an] anti-inflammatory diet,” says Dr Greger. “It’s free of processed foods and free of ‘obesogenic pollutants’, endocrine-disrupting chemicals in certain foods and plastics that can affect our hormonal balance. [It’s] a diet that is high in fibre-rich foods that trap and dilute calories and flush them out the other end. A diet low in added fat, sugar, meat, salt and refined grains, and low in calorie density. Put all of these factors together and the kilos should come off naturally.”

“Rather than cutting calories day in, day out, what if you ate as much as you wanted every other day? Or for only a few hours a day? Or what if you fasted two days a week or five days a month?” asks Dr Greger. These are all examples of intermittent fasting regimens, which have become increasingly popular. “Combining intermittent fasting, such as early or midday time-restricted feeding with a healthier diet during the feeding windows, may prove to be particularly powerful,” he says. “The weight may be worth the wait.”

Rule number one – do NOT use it to pay off your credit card. “Most people have been trained to see their credit card as their ‘emergency backup money’, ” Scott pens on his Barefoot Investor blog. “Yet, if you’re in trouble, high interest rate debt won’t help. [Instead] save your refund into a savings account. Cash is the ultimate

emergency back-up. WARM GARLIC PRAWNS & PASTA SERVES 4 PREP 15 MINS COOK 15 MINS ✦ 500g dried pasta ✦ 1kg uncooked medium king prawns, peeled, tails intact ✦ 3 garlic cloves, crushed ✦ ½ cup olive oil ✦ 400g baby tomato medley ✦ ¼ cup lemon juice ✦ ¼ cup fresh dill sprigs 1 Cook pasta in a large saucepan of boiling salted water, uncovered, until just tender, drain. Lightly grease a 26cm springform pan with removable base. Line base and side with baking paper. 2 In a large clean bowl, using an electric mixer, beat egg whites until stiff peaks form. Spoon evenly into prepared pan. 4 Reduce oven to 120°C. Bake pavlova 1½ hours. Cool in a turned-off oven with door ajar. 5 Carefully remove pavlova from pan and place on a serving plate. Spread over cream, arrange raspberries, kiwifruit and cherries on top and drizzle with passionfruit pulp.

Beating the egg white and sugar together takes about 8-10 mins.

1 In a large bowl, combine buttermilk, chives, garlic and lime zest. Season to taste. Add chicken, tossing to coat. Marinate at least 30 mins. 2 Combine Sao crumbs and cheese on a large plate. Drain chicken from marinade and coat in crumb mixture. Chill 15 mins. 3 Heat oil in large frying pan on medium. Cook chicken in 2 batches, 2-3 mins each side, until crispy and cooked through. SERVES 18-20 The Sydney Opera House, with its distinctive white sails, is one of the 20th century’s most famous buildings. Designed by Danish architect Jorn Utzon, it opened in 1973 and is among the most popular visitor attractions in Australia. In 2007 the Sydney Opera House was named a UNESCO World Heritage Site. In this dessert, I’ve combined the iconic silhouette of the Opera House sails (don’t they look smashing in pink?) with our beloved pavlova, which at times can be a structural feat in its own right. So, a bit of architectural elegance meets edible engineering! 66 WD

1 Preheat oven to 160°C fan-forced. Line a large baking tray with baking paper and draw a 20cm circle on the paper. 2 Using an electric mixer, whisk egg whites and sugar on high speed for 15 mins or until thick and glossy and sugar has dissolved. Whisk in cornflour and vinegar until combined. 3 Spoon meringue mixture onto the tray in the centre of the circle and smooth the surface. Using an offset spatula, drag meringue upwards from the bottom into peaks. 4 Place in oven and reduce temperature to 100°C. Bake for 1 hour 20 mins or until the outside of the pavlova is crisp and dry. Turn off oven and leave pavlova to cool in oven with the door ajar for at least 6 hours or until cooled completely, preferably overnight.

SPICED PEACHES

✦ ½ cup water ✦ / cup caster sugar ✦ ¼ tsp ground allspice ✦ 4 cardamom pods ✦ 1 cinnamon stick ✦ 4 peaches, stones removed, thinly sliced 13

1 Combine water, sugar, allspice, cardamom pods and cinnamon stick in a saucepan. Stir over medium-low heat until sugar has dissolved, then simmer for 8-10 mins or until slightly thickened. 2 Place peach slices in a heatproof bowl and pour in syrup. Chill in the refrigerator for 1 hour.


RASPBERRY SWIRL WHITE CHOCOLATE

✦ 500g good-quality white chocolate, chopped (see decorating tips) ✦ pink oil-based or powdered chocolate colouring ✦ ½ cup freeze-dried raspberries 1 Line a large baking tray with baking paper. 2 Melt white chocolate using either the microwave or double-boiler method. 3 Place 1/3 cup of the melted chocolate in a smaller heatproof bowl and mix in a small amount of pink colouring until the desired shade is reached. 4 Pour white chocolate onto the baking tray. Use an offset metal spatula or a metal spoon to spread chocolate in an even layer over the tray. 5 Dollop pink chocolate onto white chocolate in various places. Working quickly, use a skewer to swirl chocolate to create a marbled pattern. As soon as you are happy with the pattern, press freeze-dried raspberries into chocolate. Give the tray a little shake to help embed the raspberries. Place in the freezer for 1 hour or until completely set. 6 Carefully snap the set chocolate into sail-like shapes. If chocolate has set firm enough, it should snap quite easily.

ASSEMBLY & DECORATION

✦ 500g mascarpone cheese ✦ 2 tsp vanilla bean paste ✦ 300ml single cream, whipped ✦ 1 handful fresh raspberries 1 Carefully place pavlova on a cake stand or serving plate. 2 Combine mascarpone and vanilla in a bowl, then gently spoon into the centre of the pavlova. 3 Top pavlova with whipped cream and drained peaches. Adorn with chocolate “sails” to emulate the sails of the Sydney Opera House. Add a handful of fresh raspberries. Serve immediately.

STORAGE The pavlova is best served as soon as it’s decorated. It can be refrigerated for 4 days, but will soften once it absorbs the moisture from the peaches. DECORATING TIPS If you are using any type of couverture chocolate (my personal favourite), which has a high cocoa butter content, you will need to temper (also known as “crystallise”) the chocolate in order to obtain the best taste, texture and overall results. You will find freeze-dried raspberries in most health food stores and specialty grocers, or you can buy them online. You could also top the pavlova with some fresh passionfruit pulp. WD 67

Season. Form ¼ cups of mixture into rissoles. 2 In a frying pan, heat oil on medium. Fry rissoles 4-5 mins each side until cooked through. Drain on paper towel. 3 PILAF In the same pan, heat oil on medium. Saute onion and garlic 2 mins. Add kale, carrot and spice, cook 3-4 mins. Add rice, stirring. Pour over stock, add dates. Simmer, covered, 10-12 mins until liquid is almost absorbed. 4 Add rissoles to pilaf. Cook, covered, 4-5 minutes until rice and rissoles are cooked through. Remove from heat and set aside 5 minutes. 5 Top with yoghurt, almonds and mint.

PORK SAUSAGES WITH VEGETABLES SERVES 4 PREP + COOK 50 MINS ✦ 500g Italian-style pork sausages ✦ 300g orange sweet potatoes, peeled, 2cm wedges ✦ 1 medium fennel bulb, 1cm wedges, fronds reserved ✦ 3 small corella pears, quartered ✦ 8 red eschalot, peeled, halved ✦ ½ bunch kale, stems removed, leaves torn ✦ 1/3 cup apple cider ✦ 2 tbsp pure maple syrup ✦ 1 tbsp balsamic vinegar ✦ 30g butter ✦ 4 large sprigs rosemary ✦ 2 tsp wholegrain mustard 1 Preheat oven to 220°C. Line a roasting dish and 1 oven tray. Arrange sausages and sweet potato on tray. Place fennel, pear and eschalot in dish. Spray both with olive oil, season. Roast 15 mins. 2 Reduce oven to 200°C. Add kale, cider, sausages and sweet potato to roasting dish, turning over. Drizzle with maple and balsamic, dot with butter and rosemary. Roast 15 mins until vegetables are tender. 3 Pour pan juices into a saucepan. Whisk in mustard, boil 5 mins to reduce by half. Drizzle over roasting dish, scatter with reserved fennel. WD 69

ROAST DUCK SALAD SERVES 4 PREP 30 MINS COOK 1 HOUR 50 MINS ✦ 1 tbsp sugar ✦ 1 tbsp salt ✦ 1 tsp ground Sichuan pepper ✦ 1 tsp five-spice powder ✦ 1.8kg duck, trimmed, rinsed, dried ✦ 3cm piece ginger, sliced ✦ 1 garlic clove, sliced ✦ 1 long green onion, chopped 72 WD

DRESSING ✦ 2 tbsp orange juice ✦ 1 tbsp soy sauce ✦ 2 tsp malt vinegar ✦ 1 tsp ginger, grated ✦ ½ tsp sesame oil SALAD ✦ 1 bunch asparagus, trimmed, sliced finely ✦ 200g sugar snap peas, trimmed, halved lengthways ✦ 2 oranges, segmented ✦ 1 bunch watercress, trimmed

until skin is crisp and golden. 4 Remove from oven and rest, covered loosely with foil, 15 mins. Remove duck breast and remaining meat with skin attached. Slice thinly. 5 DRESSING In a small jug, whisk all ingredients together. 6 SALAD In a large bowl, combine all ingredients. 7 Drizzle salad with half the dressing, tossing to coat. Add duck and drizzle with remaining dressing to serve.

3-4mm thick. Chill 10 mins. 3 Lightly grease a 12-hole muffin pan and line with two strips of baking paper that cross at the base. Using a 12cm round cutter, cut out circles from pastry. Ease into recesses. Chill until required. 4 Meanwhile, preheat oven to 200°C. 5 CUSTARD In a medium saucepan, combine sugar and water. Stir over a low heat until sugar dissolves. Increase heat to high and bring to boil. Remove syrup from heat and cool. Whisk condensed milk and eggs into cooled syrup. Pour into a large jug. 6 Pour custard mixture evenly among cases. Bake tarts 15-20 mins until set. Serve warm. WD 73

1 Heat half the oil in a wok or large frying pan on medium. Stir-fry onion 1-2 mins until tender. Add ginger and garlic, stir-fry 30 secs until fragrant. Add water, stock, shaoxing wine, XO sauce and sugar. Bring to simmer, cook 1-2 mins until slightly thickened. 2 SALAD In a bowl, toss all ingredients together. 3 Heat remaining oil in a frying pan on high. Season salmon to taste. Cook 3 mins, turn and cook a further 2-3 mins for medium, or until cooked to your liking. 4 To serve, spoon sauce over salmon and top with salad.

MAKES 8 PREP 20 MINS COOK 4 MINS ✦ 6 large green prawns, peeled, deveined ✦ 100g smoked salmon slices ✦ 4 long green onions, chopped ✦ 4 thick slices white bread ✦ ¼ cup sesame seeds ✦ oil for shallow frying

1 Place prawns, salmon and onions in a food processor. Process to a paste. Season to taste. 2 Spread salmon mixture onto bread. Remove crusts and halve diagonally. Dip tops into sesame seeds. 3 Heat oil in a frying pan on medium. Working in 2 batches, fry bread, coated-side down first, 1 min each side until golden. Drain on paper towel.

Garnish with mustard cress, available at good greengrocers.

Add celery, garlic and ginger, cook a further 1-2 mins until fragrant. 2 Stir sesame seeds, soy, shaoxing, sugar and sesame oil through. Remove from heat and mix through chopped chives. Allow to cool. 3 Working with 6 wrappers at a time (keep remaining covered with damp cloth to prevent them drying out), place 1 heaped tsp of pork mixture in the centre of each wrapper. Brush edges with water and gather together in centre. Wrap a whole chive around each parcel to secure. 4 Heat oil in a deep frying pan on high until a small piece of pastry sizzles as soon as it is added. Deep-fry money bags, in 3 batches, 3-4 mins each or until golden and crisp. Drain on paper towel. Serve with sweet chilli sauce.

Combine 150g spreadable cream cheese, 2 tbsp drained and chopped jalapenos, and 1 tbsp chopped coriander. Spread evenly over 8 Soy Linseed & Sesame Vita-Weat lunch slices. Top with kumato slices, season and serve with extra coriander leaves.

Cherry cupcakes easy to bake... and eat! MAKES 12 Line a 12-hole muffin pan with paper cases. Preheat oven to 180°C. Using an electric mixer, cream 150g unsalted butter, ¾ cup caster sugar and 1 tsp vanilla extract together until light and fluffy. Add 3 free-range eggs at room

beating well after each addition. Sift 11/3 cups self-raising flour over mixture. Using a large metal spoon, gently stir to combine. Fold through 250g pitted halved cherries. Spoon mixture into paper cases. Bake 20-25 mins or until golden and cooked when tested with a skewer. Cool in pan 10 mins,

transfer to a wire rack to cool. To decorate cupcakes, place 100g white chocolate melts in a heatproof bowl. Microwave on high for 20-30 secs until just melted. Stir with a metal spoon. Lightly spread cakes with melted chocolate. Top each cupcake with a fresh whole cherry. Set aside until chocolate sets, then serve.

What’s been the reaction to you appearing on DWTS? I’m getting so much positive feedback. I’m really stoked that everyone’s looking forward to being entertained by a big dude jumping around in sequins. Former Bachelorette star Lee Elliott has said you shouldn’t be on the show because you’re an “intolerable, sexist, chauvinistic bigot”. What do you make of that? I find it really bizarre that he would say that stuff because he’s never met me. Anyone who has met me knows I’m the opposite of all those things, but everyone’s entitled to their own opinion. I just choose to be positive and move forward with the next chapter in my life. I’m looking at DWTS as a way to improve myself as a person... I’m ready to prove everyone wrong. There are so many different celebrity reality shows now. Why did you pick DWTS? Well, the show donates the money you win to charity, and I have an amazing charity – the BridgIT Water Foundation, which deals with some of the poorest people on the planet. So if I have the chance to make myself look silly and raise money for an amazing charity, then I’ll take that opportunity any day. Have you ever danced before? I have never done any formal dancing of any kind before. I’ve dabbled here and there at parties and whatnot, having a few beers and shaking my ass a little bit! Who’s your major rival? I know Chloe [Lattanzi] has had some dancing experience and I’ve already seen her strut some moves in rehearsals, so she’s definitely one to beat. She only recently sent me a text message after seeing me on the ABC to say she likes my new haircut and that I finally look handsome, which is great!

Who are your three kids most likely to turn to for advice, you or your wife? My wife! But the three of them seem to have been born with old souls, so I’m probably more likely to get advice from them. So what’s the worst piece of advice you’ve ever received? I got told not to bother pursuing a career in radio because my voice wouldn’t work for it!
