Bristol Guide 2019

Foreword
Jake Platt I’ve been lucky enough to call Bristol home for close to 19 years. Born and raised in London, I moved to the South West in my teens and fell in love with the countryside and proximity to the coast. For me, Bristol is the perfect base; it’s got the excitement and vibrancy of a metropolitan city and yet it’s verdant and surrounded by lush countryside if you need to get back to nature. What makes Bristol so special is that it’s culturally and historically very rich, with great music, art and a very strong independent restaurant scene. The people are great – very proud, open-minded and liberal, which helps with the industry we’re in, and, of course, the distinctive Bristolian accent has a special charm. The Bristol restaurant scene has a fantastic reputation, and deservedly so. We get a lot of recognition from the major food guides and reviewers from the national press. I think it has developed massively in recent years, with more independent restaurants, the closures of the big chains, more farmers’ markets, and a resurgence of greengrocers, butchers and fishmongers proving that the general public has an increasing knowledge and appetite for quality food. Social media has definitely played a part, especially Instagram, which has opened things up and made restaurants more accessible than ever. A more food-educated clientele gives us chefs the confidence to do things we may not previously have been able to do, like cook fish on the bone, use less fashionable meat cuts, feature offal on the menu and use the forgotten heritage fruits and vegetables. Bristol is so well placed geographically that it has an abundance of great produce, like seafood from the coast, amazing farmers specialising in heritage breeds, local shoots, orchards and amazing fruit and vegetable growers. I have to give a special shout out to our veg supplier Hugo. The energy and drive he gives to support local farmers and growers in order to supply Bristol’s restaurants with the best-quality produce is inspirational, and makes him an absolute pleasure to work with. I also like to forage when I’m out walking my dogs, picking up wild herbs, fruit and mushrooms when in season. This year I want to focus on lowering our carbon footprint and cutting down on single-use plastics – something the industry as a whole really needs to look at and work towards as a collective. I can’t wait to see what the future holds for the Bristol food scene, and I hope you’ll use this guide to discover for yourself what makes this region so special.

Lido

Cf
Tucked away in the stunning area of Clifton you’ll find the Lido, a spectacular restaurant serving outstanding modern plates with Mediterranean and Middle Eastern influences. As soon as I entered the bar area I noticed the floor-to-ceiling windows that span the length of the bar overlooking the refurbished Victorian swimming pool. The decor is sleek, colourful and unpretentious, transporting diners to warmer climes. My dining partner and I were shown to our table upstairs in the restaurant area by the friendly, attentive staff, who made us instantly feel welcome. As soon as I sat down, a feeling of tranquillity washed over and I felt as though I was on holiday, just for the evening.
£27 to
£38
‘...outstanding modern plates...’ Before we perused the menu we were served a generous portion of crusty bread with top-quality extra virgin olive oil and balsamic vinegar. After much deliberation, we opted for albondigas in sweet pepper sauce and aged Manchego, and juicy wood-roasted scallops served in the shells with sumptuous sweet herb and garlic butter. We accompanied our meal with a glass of garnatxa blanca, which was delightfully fresh with botanical aromas; an ideal pairing for our delicious starters. Moving on to the main course, I chose the wood-roasted Cornish ray served with summer chanterelles, coco beans and sherry butter sauce, while my dining partner plumped for the seared Iberico pork bavette with chorizo, new potatoes, roasted Breme onion and Pedro Ximénez sauce. The Cornish ray was cooked to perfection and simply fell off the bone. The delicate flavour of the fish married beautifully with the rich butter sauce and summer chanterelles. The Iberico pork bavette was served pink in the middle, and the addition of the fried chorizo and Port sauce afforded the dish an impressive depth of flavour. To finish we decided to treat ourselves by sampling a selection of ice creams and sorbets alongside an expertly made flat white. The salted caramel ice cream and apricot sorbet were highlights of this most indulgent conclusion to a spectacular evening meal.

Nestled on Welsh Back in Bristol’s historic floating harbour, the Glassboat is something of a Bristol institution. Renowned for its romantic setting, the Glassboat occupies a beautiful boat with floor-to-ceiling glass frontage offering stunning views across the harbour. The atmosphere was warm when we arrived, with friendly and attentive staff setting the tone for a memorable evening. This light and bright restaurant is the perfect backdrop in which to celebrate a special occasion. Once seated at our table, our friendly waiter listed the specials before fetching our drinks – a refreshing local cider for me, and a crisp white wine from the carefully chosen list for my dining partner.

We admired the sunset before perusing the delightful menu. It’s the finer details that set the Glassboat apart. The seasonal menu changes regularly to make the most of the finest local produce available, and you can always find a selection of exciting dishes on the special’s board. To start, I plumped for heritage tomatoes, goat’s curd, romesco sauce and basil, while my dining partner went for chicken liver parfait with apricot and chamomile jelly. Both starters were a total triumph, and from here on, we knew we were in for a culinary treat. After some deliberation choosing my main course, I settled for the Tamworth pork belly, confit fennel, caper and oregano, which was simply outstanding. The flavours harmonised exquisitely, and the dish was presented immaculately. My companion’s main was met with equal delight: a beautiful rump of Devon beef, which was incredibly succulent and perfectly seasoned. It was accompanied by glazed organic beetroot and horseradish, and we couldn’t resist sharing a portion of pommes frites to go with our mains.

Desserts are bound to impress even the most passionate dessert devotees. I opted for chocolate fondant served with almond praline and salted caramel ice cream, while my companion devoured her almond tart accompanied by poached apricot and vanilla ice cream – the perfect end to a fabulous evening. The elegant yet warm surroundings, attention to detail and excellent service make any visit an unforgettable experience. It’s no surprise that this popular destination has been serving delighted diners for over 30 years.

£20 to

Over the years, Symonds has developed an excellent reputation for its sophisticated yet laid-back ambience and creative seasonal menus, and visitors are offered the choice of a formal restaurant or a more relaxed modern British bistro as their dining destination. Inside, the decor is a tasteful fusion of contemporary touches and traditional English charm: bottle green chairs, crystal chandeliers and polished wooden tables combine to form an interior that is both elegant and inviting. The stylish atmosphere calls for food to match, and the restaurant menu holds its own with modern interpretations of classic English dishes. To start, seared cod cheeks are paired with a trio of peas and a flavoursome pancetta crisp, while the Wye Valley asparagus comes with a poached hen’s egg, Béarnaise sauce and a drizzle of luxurious truffle oil. Local ingredients and European influences can be spotted in main dishes of pan-fried fillet of stone bass, which is enhanced by pickled samphire and shellfish bisque, and the impressive duo of lamb is accompanied by fondant potato, baby carrots and leeks, chestnut mushrooms and mint gel. There are a few vegetarian and gluten-free options too, including asparagus, basil and pea risotto. From the all-day dining menu, guests can opt for light bites and sandwiches – the chicken and tarragon mayonnaise option is especially popular – as well as classics such as chicken Caesar salad and juicy sirloin steak with chunky chips and onion rings. On warm summer days, the garden and terrace are sublime spots in which to unwind with a chilled glass of wine or even a cocktail. If you’re celebrating a special occasion, or just enjoying the weekend, you could even order afternoon tea to share. The themed teas change regularly, but there’s always a tempting array of delicate finger sandwiches and homemade cakes on offer.

Bristol Guide 2019
Named Independent Restaurant of the Year at the Sustainable Restaurant Association’s Food Made Good Awards in 2016, as well as Crumbs Magazine’s Best Casual Dining Restaurant 2017, Poco is a well-loved Bristol legend. A stand-out favourite of Bristol’s booming food scene, Poco is best known for its seasonally changing British tapas menu and multiple-award-winning sustainable business practices. Set on the corner of Jamaica Street in the shadow of Banksy’s famous Mild Mild West mural, Poco is one of the city’s best spots for people-watching, with windows facing Bristol’s legendary artistic quarter, Stokes Croft – one of the most dynamic stretches of pavement in the city. A central open kitchen fills the restaurant with irresistible aromas and brings the theatre of chefs at work. The menu showcases the very best of what the Dorset coastline and Somerset hedgerows and pastures offer seasonally. Much-loved classics like labneh with za’atar and roast Saddleback pork belly never stray far from the menu, but the main body of dishes changes to echo the shifting seasons. At the time of writing, plates like lamb shoulder, smoked beetroot, nettle and hazelnut pesto evoke spring, while signal crayfish and Fowey mussels with capers and dill brings a definite summer twist to the table. Dishes are big on flavour and designed for sharing, making Poco one of Bristol’s most sociable dining venues. The team’s dedication to sustainability is inspiring and showcased in its green manifesto, which can be found on Poco’s website. The team raises money for numerous charities, supports Bristol food producers and hosts many inspiring and educational events. Brunches and lunches are hearty, healthy and draw inspiration from creative New York establishments. Bristol Loaf sourdough toast is laden with organic eggs, and salads are fresh, vibrant and colourful, balancing myriad flavours and textures. Cocktails comprise homemade and foraged infusions, and the wine list boasts delicious and affordable organic house wine as well as natural, biodynamic and English options. Add good friends, passionate staff and warm service, and you have one of the city’s most welcoming, atmospheric dining experiences.

The striking stained glass window overhead affords plenty of light, while the seating area features thousands of colourful ornaments strung from the ceiling.

We took a seat on the mezzanine overlooking the hubbub of the bar. Our knowledgeable waitress talked us through the menu, and when my partner couldn’t choose from the extensive selection of local ales on offer, she helpfully brought over a hand-picked selection of tipples to try; it’s this kind of service that sets The Galli apart from its competitors. The food menu is concise and well crafted, with a range of meat, fish, vegetarian and vegan options catering to all tastes and making it a great choice for groups. There’s a clear Mediterranean influence, with a selection of small plates that can be shared tapas-style or sampled as starters. We devoured saltfish fritters, Padrón peppers, and a delicious Mexican-style salad of tomatoes, sweetcorn and black beans to start – each dish impressed with its impressive balance of flavours. I followed with creamy mushroom Stroganoff with nutty red rice and crispy kale, a sumptuous dish that just so happened to be vegan. My partner was equally enthralled with his delicate hake fillet served atop a rich broth with butterbeans, rainbow chard, red pepper and courgette. Knowing how delicious the starters and mains were, we couldn’t resist dessert, and shared a blueberry and almond tart with flapjack ice cream, and a scoop of strawberry and basil sorbet. Everything is homemade – the mouth-watering strawberry and basil sorbet was inspired by a flavour combination the chef discovered while working in Italy, while the innovative flapjack ice cream was initially created by accident, and has since become a firm favourite with diners. Next time you’re looking for a place to eat, take a trip to The Gallimaufry. This exceptional establishment has achieved a level of food, service and atmosphere that all good restaurants should aspire to.

On a crisp, autumnal evening I was invited to The Poacher in Portishead. This traditional pub has owner Gary Berwick at its helm, a fun-loving host who puts guests at ease with his easy-going nature. Gary and co-owner Sian Powell bought £21 to the derelict property in October 2018, and together they’ve turned it in to a £31 thriving venue. Using his expertise as a builder, Gary created a comfortable interior that features mismatched wooden furniture, atmospheric lighting and local artwork, while Sian brings years of experience as a landlady to this popular establishment. A team of three expert chefs have created a menu that sees traditional pub favourites meet modern flavours. We visited on a warm, sunny day and were delighted to find the expansive windows at the back folded away to allow the breeze and friendly chatter of al fresco diners to contribute to the relaxed atmosphere. We sipped large glasses of the refreshing house white and ordered a few nibbles to start. Fresh bread with confit garlic butter whet our appetite perfectly, as did the pork crackling with homemade apple and cider sauce. For my main course, I plumped for the summery spanakopita – Greek-style pastry filled with warm Food Served: feta, goat’s cheese and spinach Mon-Sat 9am-11.30am, – served with a beautifully fresh noon-9pm; Sun noon-8pm salad of candy beetroot, asparagus, peas and rocket dressed with pomegranate molasses and fresh mint. My partner’s lamb and chorizo burger was packed with flavour. To round things off, we sampled the light and zesty blood orange sorbet. We felt so at home at The Gloucester Old Spot that we could have whiled away the entire night, but we decided to wander home while it was still light and vowed to return soon.

Harbourside
Bristol’s Harbourside is the bustling heart of the city. The warehouses and workshops that lined the historic docks have largely been converted into cultural hotspots – a tour around the city isn’t complete without examining the Arnolfini’s art and the exhibits at M Shed, a museum dedicated to Bristol’s heritage. There’s plenty for history aficionados to enjoy, from Brunel’s SS Great Britain to the replica of the Matthew, a Tudor ship that sailed to North America in 1497. All around the Harbourside, culture and commerce rub shoulders, resulting in a lively city centre with something for everyone. Every summer sees the harbour fill with boats, including Royal Navy vessels and tall ships, for the annual Harbour Festival, and Lloyds Amphitheatre is now home to a series of gigs throughout the summer months. In recent years the area has benefitted from the development of new apartment buildings and the rejuvenation of residential areas. Wapping Wharf has become a thriving neighbourhood, with CARGO, a hub of independent retailers – including some foodie favourites – right at its heart. When it comes to food, Harbourside has something for every palate and pocket, so you’ll find something to tempt whether you’re looking for a fine dining experience or a street food-style feast.

Owner Adam Papa took the reins of this multi-award-winning restaurant 26 years ago £15 to and strives to provide high-quality, traditional fish dishes to locals and tourists £18 alike. The first thing we noticed on arrival was how immaculately clean the tastefully decorated dining room was. Specials boards adorned the walls detailing the latest catch and drawing attention to the wine selection, and the waiting staff were abundant. The kitchen area is partially in view, so we were able to watch the efficient operation of the team in action. The restaurant’s varied menu caters for all tastes with fish-based dishes Open: complemented by a range of burgers and steaks. We opted for the Anglesey Mon-Sun 11.30am-10pm chargrilled sea bass and an extra large cod, both of which truly lived up to the (last takeaway orders 10.30pm) hype. For dessert we ordered ice cream from the board, although a separate full dessert menu was also available. Papa’s boasts special offers for children and senior citizens, as well as special deals at certain times of the day. The fish and chips are exceptional, so whether you take a seat or grab a takeaway, you’ll enjoy freshly made, delicious, value-for-money meals – it’s easy to see why they’ve gained so many mentions in the likes of The Telegraph and The Guardian and have been voted the best independent fish restaurant in the South West by independent reviewers and Daily Mirror readers. For 2019, Papa’s has retained a TripAdvisor Certificate of Excellence and a five-star hygiene rating.

We also sampled the classic bruschetta pomodoro: toasted homemade bread topped with freshly chopped tomatoes marinated in olive oil, garlic and basil. To follow, I was recommended the delicious seafood special – buttery fillets of monkfish cooked in white wine and garlic, with sweet cherry tomatoes and courgettes. My companion ordered the pollo principessa from the extensive à la carte menu – pan-fried breast of chicken cooked in creamy Open: Mon-Thurs sauce and topped with fresh asparagus. All of this was perfectly complemented noon-2.30pm, 5.30pm-11pm; by crisp house white wine. When Fri & Sat noon-11pm (open offered dessert, we were excited to on Sunday for private parties) try the homemade tiramisu, which was beautifully presented and tasted divine; in one word, bellissimo. Pizzarova
Pizzeria
w: www.pizzarova.com e: info@pizzarova.com Holding residence in three of Bristol’s bustling foodie havens – Gloucester Road, Park Street and Wapping Wharf – you’ll find Pizzarova. It’s safe to say Pizzarova holds a sterling reputation as one of Bristol’s best pizza restaurants. You can enjoy your pizza of choice in the comfort of the restaurant or take it away to devour, perhaps in the sunshine accompanied by one of their delightful craft beers. While all three restaurants boast a similar laid-back vibe, each restaurant maintains its own distinct identity. You’ll find a sleek, modern and minimal theme with a few pops of colour, neon signs and a plant or two – the simple interior lets the food speak for itself. All the homemade pizzas have a sourdough base, which is made from a 72-year-old sourdough starter and is thin, beautifully crisp and perfectly cooked. The approach at Pizzarova is simple: guests can plump for The Lady – Pizzarova’s delicious take on the Margherita – the Ours pizza, which sees a different seasonal special available each month, or choose their own toppings from a wide selection of ingredients. Whatever toppings you choose, you’re sure to be impressed by the mouth-watering pizza whipped up by the talented team. We’d also highly recommend ordering a few pots of the delicious homemade dips. The garlic mayo packs a serious punch, while the chilli jam is equally delicious – perfect for dipping your crusts in. Successfully catering to all tastes and dietary requirements, Pizzarova serves some of the finest vegan and gluten-free pizzas Bristol has to offer. If you’ve got the little ones in tow, there’s no need to worry – Pizzarova is extremely family-friendly and offers child-sized pizzas and plenty to keep little ones entertained. No matter which site you find yourself in, Pizzarova will satisfy your craving. In November 2019, the Pizzarova team will take their winning formula to the new Whistle Punks urban axe throwing venue in central Bristol. The residency will allow pizza-lovers to enjoy a post-axe-throwing bite at this exciting new venture. *Price range represents the cost of a pizza, side and a drink.

Three Brothers Burgers Location Aboard Spyglass, Welsh Back, Bristol, BS1 4SB t: 0844 502 2360 w: www.threebrothersburgers.co.uk e: info@threebrothersburgers.co.uk Located on Welsh Back, overlooking the pretty cobbled street and the Floating Harbour, Three Brothers Burgers is the perfect spot in which to enjoy a quality burger in the heart of central Bristol. Sat in the outside terrace, which is adorned with colourful festoon lights, my companion and I soaked up the atmosphere of this popular and thriving restaurant. For my main course, I chose the Smokey Bro burger, a hearty beefburger topped with smoked Applewood cheese, bacon and crispy onions. The burger was loaded with toppings and oozed flavour, and the patty itself was cooked to perfection. My companion enjoyed the vegetarian version of the Le Frenchie burger, which saw a flavoursome vegetarian patty topped with wedges of Brie, sweet caramelised onions and rich garlic mayonnaise. This was a delicious meat-free alternative – just one example of the many ways in which Three Brothers accommodates dietary requirements. To accompany the delectable burgers, we opted for crisp fries doused in lashings of thick gravy and topped with cheese; we were impressed by the range of sides on offer.

There’s something refreshingly honest about the offering at Hawkes House. From arriving at the beautiful stone facade to taking our seats at a cosy table by the window indoors, we were captivated by the effortless simplicity £15 to with which everything hangs together. The decor is classic with rustic charm, £25 the staff are friendly and the locals have made the venue their well-loved meeting place. The menu boasts something for everyone without being over-complicated or pretentious. From Mediterranean-inspired small plates to American-style chilli dogs and perfectly grilled steaks, we were impressed by the variety on offer. We decided to start with a beautifully presented tapas dish each. My beer-battered cod strips with homemade tartare sauce, lettuce and crispy capers was exquisite, while my dining partner relished the trio of tiger prawns cooked with chilli and garlic butter. We then chose to build our own burgers Open: and were delighted to choose from Mon-Sun 8.30am-11pm a selection of patties and sauces as well as picking three tasty toppings each. I settled on a classic beefburger loaded with streaky bacon, fried egg and smashed avocado complemented by sweet potato fries, while my companion tucked into the vegan falafel option. The team at Hawkes House ably caters for dietary requirements, as was exemplified by the rich and moreish vegan salted chocolate ganache with honeycomb and coconut sorbet. From the specials board, the Eton Mess was the perfect summer treat. 40

On a quiet corner in Redland, that was once home to celebrity chef Keith Floyd’s bistro, you’ll find Snobby’s – a lively wine bar that’s the newly opened passion project of owner Nick Bethell. We visited on a Wednesday evening and received £26 to a warm welcome into the cosy community restaurant that serves sharing platters, £36 Roman-style pizzas and unpretentious Italian small plates. We were immediately treated to a specially mixed Negroni featuring watercress gin and an outstanding vermouth – a favourite that we were assured should never be shaken. From the menu, we ordered the mixed meat and cheese sharing platter to start. It was beautifully presented and paired with an Italian Dolcetto d’Alba red wine that was expertly recommended by Nick. Then came the small plates; we opted for the creamy burrata salad, smoky taleggio and sundried tomato arancini, garlic butter king prawns and the ‘nduja Scotch egg, which has become Open: Tues 4pm-11pm; something of a local legend and didn’t disappoint. We finished by sharing caramel Weds 11am-11pm; panna cotta with gingerbread, and Thurs-Sat 11am-midnight chocolate gratin served with berries and honeycomb ice cream. We sipped a Pinkster Royale: gin-based raspberry liqueur topped with Champagne – the perfect celebratory conclusion to our delectable meal. This intimate venue also caters for large parties, and guests benefit from the owner’s excellent hospitality, good humour and extensive knowledge of the 60-strong collection of bottles they have on offer. A newcomer on Chandos Road’s famous dining scene, we’ve no doubt that Snobby’s will be a lasting favourite. 42

CC Living in Bristol, we of course know Mud Dock as the place to go for an after-work drink in the sunshine – there’s arguably no finer spot in the city than the Mud Dock terrace on a sunny day. But who knew we were living so close to one of the best cosy £15 dinner spots in the city? to £30 From our seat overlooking the water we admired the charming setting of Mud Dock, which features fairy lights, vast windows and tables effortlessly catering for cosy tables of two as well as large groups – this is a great place for a celebration. The staff could not be more friendly, guiding us through the tantalising array of specials and helping us choose the perfect glass of wine to accompany our meals. After some serious deliberation, I opted to start with flatbread served with beetroot hummus and a deliciously creamy roasted corn and jalapeño dip. My husband couldn’t resist the Open: Mon-Fri 10am-10pm; tempura king prawns. He chose his main course from the specials board, plumping Sat 9am-10pm; for the perfectly cooked pavé of salmon with spicy tomato tagliatelle. From the main Sun 10am-10pm (hours vary menu, I chose warm new potatoes seasonally, please see website with asparagus spears and halloumi, for details) served with harissa tahini and pine nuts. Though we clearly didn’t need dessert, the superb quality of the first two courses made it impossible to turn down. I devoured my oatmeal and white chocolate cookie and ice cream sandwich, while my husband raved about his baked apple, salted caramel and Greek yoghurt pot. For superlative food, top service and an unbeatable location, you can’t do better than Mud Dock Café. We can’t wait to return. Bristol Guide 2019

‘...a delightful surprise...’
£16
A simple food offering of burgers and loaded fries befits the relaxed and unpretentious setting, but the breadth of options available was a delightful surprise. The star of the show at The Hobgoblin is the famous and aptly named plate of Dirty Dirty Fries, which has become quite the Bristol legend – in part due to its enormity. This messy and epically proportioned dish comprises seasoned French fries topped with deliciously sweet pulled pork, sticky barbecue sauce, secret spices, melted Cheddar, blue cheese and coriander mayo. What we wouldn’t recommend is ordering a plate of the Dirty Dirty Fries alongside a burger. My partner and I made this mistake upon our visit and we found ourselves unwittingly taking on a food challenge, though you’ll hear no complaints from me. The list of burgers was extensive, with plenty of sides and extras to choose from. I plumped for The Buffalo Blue: a crisp buttermilk-fried chicken breast coated with Buffalo hot sauce with blue cheese mayonnaise and Cos lettuce. My partner, who is something of a burger aficionado, chose The Rodeo. The juicy beefburger from Buxton Butchers was topped with Cheddar, bacon, crispy onions, barbecue sauce and onion rings. The classic combination of flavours allowed the locally sourced meat to shine and proved satisfying. Each burger comes with a choice of fries or apple and coriander slaw – we went for the slaw and found it to be the perfect complement to the rich flavours. Our visit to The Hobgoblin left a lasting impression. For lovers of fast food and bold American-style flavours, there’s a wealth of options to enjoy. With sunset and a flurry of chatter, a crowd started to gather by the bar for relaxed evening drinks. After a last sip of local ale, we decided to give up our table to friendly revellers and left satisfied and glowingly full. *Price range represents the cost of a burger and a drink.

It’s no surprise that Nutmeg won Best Indian in Bristol at The Bristol Good Food Awards last year, as well as featuring in The Michelin Guide for two consecutive years. Despite this, Nutmeg offers a relaxed dining experience, from the authentic decor to the welcoming staff. We arrived on a pleasant Wednesday evening and immediately felt at home as we were ushered to our seat. Once seated, our friendly waiter explained the concept of the impressive menu – an extensive offering which celebrates the 29 states of India. Nutmeg also presents a new tasting menu every two months which focuses on a different region of India, striking the perfect balance of traditional and modern Indian cuisine. The current tasting menu showcases dishes from the region of Andhra Pradesh, and after much deliberation, we decided to share the tasting menu, as well as a sampling a few other dishes. We started with an amuse-bouche of golgappa puri – crisp and delicate pastry shells filled with chilli, chaat masala chickpeas and tamarind water – before tucking in to sirloin steak marinated in hot dried chillies and cumin, and tandoori chicken thigh with garlic and turmeric. Both dishes were simply outstanding and left us eager for more. Next came a selection of four large dishes including a delicious Hyderabadi lamb biryani and a fresh green curry made with chicken, herbs and cashews. This came served with basmati rice and a tasty beetroot paratha. For a final flourish, my partner enjoyed a moreish chai crème brûlée, while my banana-based mauz ka meetha was a total triumph. It’s not just the kitchen team that excels; the knowledgeable bar staff will help you find the perfect drink to suit your tastes. Tom Brownell – The Duck & Willow – Pg 11
Chef Profile
While living in Canada, Tom had the opportunity to work at the Fairmont Jasper Park Lodge. The huge kitchen catered for several outlets and ran like clockwork, and it was this experience that inspired him to pursue a culinary career upon his return to the UK.
‘...good food is created when fine produce is used creatively, with care and attention...’ Tom honed his craft working under esteemed chefs Sam Moody and Michael Caines at The Bath Priory, where he dedicated a full year to the pastry section. During this time he baked three different breads every day as well as prepping all desserts and sweets. He describes this time as the hardest he’s ever worked, and he relished the challenge. According to Tom, good food is created when fine produce is used creatively, with care and attention to detail. It’s this diligence that has led Tom to open his own restaurant, The Duck & Willow, where he continues to challenge himself.
