LET IT SLOE, LET IT SLOE, LET IT SLOE Foraging expert and River Cottage regular John Wright treats us to a fabulous festive cocktail creation that your party guests will be talking about for months to come. Creating your own smoked sloe gin might seem a touch excessive, but it’s a fun (and slightly scary) thing to do, and so very Christmassy. Smoked drinks take a bit of preparation and some homemade kit, but it’s worth the effort for the spectacle alone. The flavour? Well some love it, some are not so keen, but it is still fun, especially at parties. Several drinks can be smoked but they need to be heavy: sherry and barley wines are thick, sweet and sticky enough to carry it off. this is what you do:

Find a camping kettle. Punch a small (2.5mm) hole in the side near the top. If it has a whistle/lid, break it off ruthlessly. Take a demijohn cork (which will have a hole in it) and insert a short length of plastic or metal tube. Attach a metre length of flexible plastic tubing. Insert the cork into the spout of the kettle. It should fit, but you can pack it with paper if not.

You will also need a gas stove (camping or kitchen), and one of those little puffer-bulbs used for cleaning computer keyboards. Slide a handful of oak or applewood chips into the kettle using a folded sheet of thin card or paper. Add some Christmassy spices such as juniper, clove, mace, cinnamon and star anise. If you’re a forager, I highly recommend including the lichen known as oak moss (evernia prunastri). Shake the contents to mix them. Pour two shots of sloe gin into tall wine glasses. Gently heat the kettle full of woodchips and spices over your gas stove. When things start looking a little dangerous, insert the nozzle of the puffer into the hole in the side of the kettle and puff furiously. When smoke starts to appear from the end of the plastic tube, bubble it through the sloe gin for a few seconds, then fill the airspace above the drink with smoke for dramatic effect. Mad but good.

the Christmas season in Britain is a merry affair, filled with carol singing, present giving and a sprig or two of mistletoe. But how does the rest of the world celebrate, and more importantly, are there any unmissable traditions worth adopting?

AuStRIA AnD GERMAnY On 6th December, children in Austria and Germany eagerly await the arrival of Nikolaus. In many regions, children leave a pair of boots out so they can be filled with treats like clementines, nuts and chocolate – if they’ve been good throughout the year. Naughty children are instead gifted with sticks, stones and coal by Nikolaus’ companion, Knecht Ruprecht. Happily, nowadays the threat of his visit is enough to guarantee good behavior, so his role is more symbolic.

SPAIn Where we have a jolly St Nicholas to dole out gifts, Catalonians have Tió de Nadal. This charming festive log is festooned with a cheery face and tucked in a blanket. In the run-up to Christmas, he’s ‘fed’ nuts and sweets, before spending Christmas Day being beaten to encourage him to shoot out the treats. Poor little fella.

Festive Traditions JAPAN While turkeys are not widely reared in Japan, chickens are. Enter KFC, for a Christmas coup that changed the face of the festive season forever. KFC ran a hugely successful marketing campaign in the 70s, and since then the Japanese have associated buckets of fried chicken with Christmas – so much so that it’s necessary to pre-order your bucket weeks in advance.

MEXICO In Mexico, the Night of the Radishes attracts an enormous number of visitors and tourists. Artists carve ornate and intricate scenes and models out of radishes and display them prominently in the central plaza in Oaxaca. Generally held on 23rd December, the festival showcases a lot of nativity scene carvings.

HOLLAND Gifts are opened in the Netherlands on Sinterklaas Day, which falls on 6th December. On St Nicholas Eve the family gathers to tuck into a letterbanket – a sweet pastry shaped into the first letter of the family’s surname. Afterwards, the family searches for the hidden sack of gifts, the location of which may be gleaned from a riddle or poem.

LEBANON The nativity scene is the most popular way to embellish the home in Lebanon. It is made to resemble a cave rather than a stable, and is often decorated with sprouted seeds including chickpeas, lentils, broad beans and wheat, which are grown on damp cotton before the nativity is constructed.

from desk ‘til dawn How do you make it from office professional to festive party-goer on time, glammed up and in the mood? Here are a few suggestions to take you from desk ’til dawn.

The first thing to think about is food (obviously). The festive season is all about overindulging and eating too many mince pies, and it’s always a good idea to line your stomach ahead of a big night out. To avoid fuss and faff, order some lunchtime snacks to the office. M&S (www.lunch-to-you.com) offers a great selection of platters delivered to your door and packed with sandwiches and treats, allowing you and your team to nibble and socialise before slipping into party dresses or slick shirts. (Never drink and apply!) Designate an office angel – the one who always looks good – to be in charge of hair and makeup. Browse Pinterest for quick and creative up-dos in advance. A quick dunk of the fringe in the sink and a blast of dry shampoo can really refresh dull hair. This too goes for the gents with limp locks in need of a quick fix; follow with a dash of hairspray for any flyaways. Clear a second desk to set up a make-shift cocktail bar. Just three ingredients can make a surprising number of cocktails – add sugar or honey from the office kitchen supplies to rum and lime for a delicious DIY Daiquiri. Now you’re looking great, it’s time to get the team feeling festive. Drinking games have a reputation for quickly leaving everyone in a state of disrepair, so perhaps opt for some seasonal silliness with a game of gift-wrap relay. Gather boxes, scissors, wrapping paper and sticky tape, divide into teams and race to fill Santa’s sack. Having dressed up and livened up, start the dancing early in the office. Once Rockin’ Robin starts playing, ties will be loosened and high heels kicked off. The office carpet won’t be ideal for dodgy dancing but may prove perfect for anyone keen to crack out The Worm.

We caught up with Jim Charlton, owner of the Bath Brew House, and Bristol’s Prince Street Social and king Street Brew House to find out what’s in store for his venues this festive season, as well as what could make or break your work Christmas bash this year.

All the venues will have a mix of traditional and modern Christmas food offerings, complemented by an array of festive drinks. When it comes to atmosphere, The Prince Street Social will be a bit more formal than the Brew Houses. If you’re looking for an exclusive venue booking, get in touch early to discuss exclusive hire of The Prince Street Social. If it’s something a little smaller in scale that you’re after, private area hire of the tank rooms at either of the Brew Houses can be organised by prior arrangement.

Given that we’re in the West Country, we’ll definitely have mulled cider and wine at all the venues. The Prince Street Social will have some winter cocktails to add to a great experience. We’ll also have some festive ales, with plans already in motion to create a Christmas pudding ale.

I would certainly start the party with a festive ale, followed by a good bottle of wine and then after dessert it would have to be an Espresso Martini – The Prince Street Social’s Espresso Martinis are amazing! HoW ABout A toP tIP FoR PlAnnInG A CHRIStMAS PARtY? Get organised early. Everyone wants the same few dates, so make sure you have a plan B and C for both date and venue. WHAt’S tHE BESt oR WoRSt CHRIStMAS PARtY You’VE EVER BEEn to? In this industry our Christmas parties tend to take place in January and February… A few years ago I attended one at The Cork in Bath which took place in May! I think the best party was at The Elbow Room, back in the day. All the sites joined together for one big bash at the Sosho Match Bar in central London. Each branch had nominated an employee to enter a DJ competition. Naturally, I was on the ones and twos – it got very messy. I can’t remember having a bad Christmas party though, they’re always great fun.

I’ve rarely got fresh meat, veg or anything I can make a meal out of, but I have a tonne of ways to season them when I finally do.

REBECCA nIMMo – MARkEtInG ASSIStAnt In 2017 my mission is to create the garlic, Camembert, prosciutto, rocket and jalapeño pizza I’ve been dreaming of. It’s a more cost-effective way to support my pizza habit and it will work towards my life-long aim – to master dough tossing.

SAMuEl GREEn – SEnIoR GRAPHIC DESIGnER 2017 will be the year of film and pie nights for me. Pie Fidelity, The Hills Have Pies & Pie Hard, Pie Harder are already cooking up in my brain!
