Foreword

Shaun Hill The food and drink scene in South Wales is getting better year on year, giving diners a wealth of exceptional venues to choose from. Over the past year, Wales has become home to many new ventures that are contributing fresh ideas to the foodie scene, while other establishments are enjoying on-going success. Excitingly, two previous chefs from my perch, The Walnut Tree in Abergavenny, have successfully set up in Monmouthshire. This inspiring news shows what a vibrant food culture we have, and that we chefs are meeting the demand for eating well. Diners are, of course, the essential factor in our success, as no restaurant can trade for long without custom. It’s imperative that we chefs adapt and take into consideration the trends and concerns of the industry, whether that’s looking at environmental factors or ensuring that we’re introducing young talent to the kitchen. South Wales has plenty of dining spots, with each establishment taking a slightly different approach to what makes a fine meal out. I’m thrilled to see so many independent restaurants, and am confident that the skill and care that goes into running these will continue to make South Wales a real foodie favourite. Cardiff is much the same, with an array of different cuisine types and culinary styles being served across the capital. While each chef has their own style, one thing that connects us across the industry is the access we share to great produce here in South Wales. You can expect the lamb and seafood to be top-notch, but that isn’t all we have to offer, as we also have our pick of pork from rare-breed pigs, vegetables from small-scale organic growers, quality game and some of the most flavoursome cheese in Britain. At The Walnut Tree we focus on fresh fish, typically offering six different kinds on the menu, alongside vegetable and meat dishes. Choice is the key to a great dining experience, and the chef’s eye for quality and their passion for food should be apparent in every dish they serve. I hope you’ll continue to sample the delicious food we have in and around Cardiff, using this year’s Cardiff Food & Drink Guide to plan your next culinary adventures.

The Walnut Tree can be found on the Old Ross Road, just a few miles east of Abergavenny. It has an impressive pedigree, having been a famous inn and restaurant for over 40 years.

The inn became a beacon of gastronomic excellence in South Wales under the talented Franco and Ann Taruschio, who served up an idiosyncratic and much-loved mix of Italian and international dishes. Now the restaurant is run by Shaun Hill, who made his name at Gidleigh Park in Devon and then at The Merchant House restaurant in Ludlow. The dishes have changed but the original informal atmosphere and unpretentious approach to cooking remain the same. The menu, comprising around ten dishes at each stage, boasts an eclectic mix based on personal taste and sound cooking techniques, rather than Open: Tues-Sat noon-2.30pm, any particular country’s cuisine. 6.30pm-10pm Perhaps choose monkfish with cucumber and mustard sauce, or scallops with lentils and coriander to start, with saddle of venison and goat’s cheese gnocchi, or Welsh lamb with a choice of gratin potatoes or cheese soufflé to follow. It isn’t a cheap place to eat – three courses and wine will set you back around £50 per person – but The Walnut Tree does offer great value for the outlay. This is a dining experience you won’t forget in a hurry.

If you’re looking for a vegan option, the pea and asparagus pearl barley risotto is a delicious alternative. Finish your meal with the elegant and fresh pink grapefruit and ginger tart, served with a refreshing lemon sorbet. A delightful afternoon tea is also available, which is perfect for an indulgent special occasion. This afternoon tea includes a selection of fresh sandwiches, miniature desserts, freshly baked cakes and fruit scones, with jam and a dollop of clotted cream. Why not add a glass of bubbly?

Park House Restaurant was established 13 years ago, but its home is over 100 years old. Housed in a Grade I listed, Gothic-style mansion, this restaurant is situated in Cardiff city centre and is steeped in character. The chefs combine the building’s Welsh heritage with their love of fine dining, taking inspiration from French cuisine and pairing the finest Welsh produce with speciality ingredients sourced from the Rungis International Market in central Paris. Alongside the food, Park House also takes great pride in the drinks it serves, and the menu recommends a wine to go with each meal. The exceptional wine list has won several awards in recent years, including the AA Wine List of the Year and Best Wine by the Glass at the Champagne Taittinger UK Wine List Awards 2018.

Having recently undergone refurbishment, Park House boasts an incredibly luxurious feel, with wood panelling adorning the walls and large windows overlooking Gorsedd Gardens. The first floor has also been renovated and is home to a plush new wine bar which offers a fantastic selection of wine by the glass, as well as cocktails. If you’re feeling peckish, order one of the scrumptious snacks from the bar menu – perhaps a French cheese plate – and relax in this beautiful setting. Downstairs, the à la carte menu changes seasonally, ensuring that only the freshest and tastiest ingredients are used. Examples of some of the starters on offer include mouth-watering roasted scallop served with chickpea, cucumber and a deliciously spiced yoghurt. To follow, mains include the likes of Cornish halibut with saffron potatoes, fresh courgette and a lobster bisque. The spiced polenta with butternut squash, coriander crème fraîche and roasted seeds is a delightful vegetarian alternative. Finally, don’t leave without sampling one of the exemplary desserts on offer. Sweet treats include the peach dessert with peach purée and rich white chocolate sorbet, while those preferring to end on a savoury note can order one of the restaurant’s delicious cheeseboards. Another speciality of Park House is the range of tasting menus, which are available at lunchtime and dinner. Perfect for a special occasion, these menus showcase the chef’s very best dishes. The team is committed to making fine dining accessible to all, so vegetarian and vegan tasting menus are also available.

Occupying a former railway station and train carriage, this charming restaurant is adored by locals and visitors alike. The unique setting is by no means the only draw of this popular establishment. Junction 28 presents an attractive modern British menu with an array of options, including a dedicated vegan menu and fantastic Sunday lunch offering. Start with pan-fried scallops served with wild mushrooms, spinach, sweet potato purée and Hollandaise. For your main course, tuck into the mustard- and herb-crusted rack of lamb served with a lamb shoulder croquette, crushed peas and rosemary red wine jus, or perhaps opt for escalope of salmon served with a smoked salmon, prawn and sweetcorn fishcake accompanied by avocado, tomato and coriander salsa. The decor adds to the calm ambience, with warm wood and contemporary art reinforcing the welcoming feel of the venue. The food itself is wonderful, with a menu that combines traditional fare and exciting modern dishes, including a revolving specials menu to cater for everyone. Of particular note were the scallops, which were remarkably fresh and beautifully presented with black pudding, pancetta and truffle jus; and the rich, tender roast duck with innovative vanilla mash, blueberry jus and parsnip crisps. Sitting just 15 minutes from Cardiff in the foothills of the Brecon Beacons, this is a city-centre venue surrounded by countryside. Keep your eyes peeled for its sister site, Bradleys Coffee – a fully licensed coffee shop that boasts the same high standards as Peppers.

Surrounded by the rolling hills of the Black Mountains, you’ll find Gliffaes Country House Hotel. Providing a fine dining experience with a contemporary interpretation, Gliffaes is a hugely popular spot for visitors exploring the Brecon Beacons; it’s the perfect escape from the hustle and bustle of everyday life. Set in 33 acres of beautiful grounds and woodlands, the country house is steeped in history and you can expect to find welcoming log fires and cosy armchairs.

The menu changes regularly and reflects the best produce found within the local area. For starters, we plumped for duck confit atop exceptionally light leek and potato blini with maple and mustard dressing, and a delightfully moreish crab and Welsh ale tartlet. I then enjoyed the assiette of lamb – crispy lamb heart, meltingly soft confit and perfectly pink cutlet, with crushed peas and rich rosemary jus. My partner opted for the delicate fillet of sea trout presented Food Served: beautifully with a fluffy smoked fish croquette, Wye Valley asparagus Mon-Sun noon-2.30pm, and a soft-poached egg bathed in 4pm-5.30pm, buttery chive sauce. We couldn’t 7.15pm-9.15pm resist rounding things off with dessert, and the pears poached in spiced Port on a bed of creamy rice pudding, as well as the gooey chocolate fondant with homemade ice cream and boozy cherries, were utterly scrumptious. With its charming location and delicious food, we left feeling thoroughly spoiled and were already planning our next visit.

Fondly referred to as The Bunch by locals and regulars, this award-winning gastropub has been a firm favourite in South Wales for many years. Tucked away in the town of Pontypridd, the pub continues to foster relationships with local and independent food, cider and ale suppliers. With a legacy of over 20 years supporting independent breweries, The Bunch is the ideal destination for those who enjoy an unpretentious pub atmosphere with an excellent range of beer, cider and ale, alongside delicious homemade food. Guests can enjoy excellent fare in the bright and open dining room; every dish served is created with locally sourced, sustainable and seasonal ingredients. Exciting plans are underway for 2020, as their refurbishment includes a brand-new open kitchen. This modern, stylish refurbishment will offer a spacious dining area to complement the beautiful Grade II listed main structure. Vibrant, edgy, cool yet comfortable – these are just a few of the words that Twenty Nine Park Place brings to mind. The townhouse pub in Cardiff is the latest addition to Knife & Fork Food’s already successful collection. The interior is painted an £25 to arresting shade of teal, with contemporary artwork on the walls and comfy £35 armchairs strewn throughout. With an extensive beer, wine and spirit offering and two-for-one cocktails every Thursday, this is the perfect spot for city centre drinking and once there, who could resist staying on for a sophisticated supper? Twenty Nine Park Place offers a tempting and very reasonable lunch menu as well as a heavenly Sunday brunch menu that hits the spot – why not stop by for eggs Florentine with an indulgent Hazelnut Espresso Martini? In the evenings the inviting à la carte boasts the likes of juicy scallops in butternut squash velouté with almond crumb, and delectable pâté of Caerphilly, celeriac and hazelnut with pear purée and delicate puff pastry shards. For those preferring Open: more traditional fare, choose from Mon-Sat noon-1am; popular pub classics like burgers, Sun 10am-7pm fish and chips, and a grill board. There are also vegetarian and vegan dishes creative enough to tempt any palate – think rich celeriac and mushroom strudel with charred goat’s cheese, kale and mulled wine caramel. Upon arrival at The Clink, you’ll be greeted by a stylish restaurant: large windows and high ceilings create a sense of spaciousness and comfy leather seating provides a luxurious feel. The menus at The Clink are a celebration of modern British cuisine and food is served throughout the day. Stop by for a plate of smoked salmon and scrambled eggs for breakfast, enjoy a mouth-watering lunch of succulent charred pork chop with courgette, sage and ricotta agnolotti, or smooth vegan tarragon polenta gnocchi. You might even treat yourself to a sophisticated afternoon tea.

In the evening, the selection is equally impressive. Begin with a tender confit duck starter with rhubarb gel, before moving on to a main of blackened darne of salmon with samphire. Other tempting mains include the spicy chickpea ragu, while mouth-watering desserts such as creamy lemon verbena crème brûlée are sure to impress. 10

Alongside the award-winning grounds and a beautiful patio garden perfect for al fresco dining, the hotel boasts a luxurious private leisure club and spa. For those planning large events there are also several excellent event spaces. A fantastic setting for special occasions, the hotel is equally well suited to a pleasant evening out and it was the two-AA-rosette-awarded restaurant we came to visit. The classical dining space was bright and airy, with simple, elegant table settings and modern crockery. There was a choice of an à la carte or a three-course set menu – both creative, varied and seasonal. While we perused the menu we enjoyed complimentary homemade bread, including gluten-free bread for my friend, with delicious curried butter. My companion chose a starter of juicy roast scallops, perfectly complemented by pickled cucumber, tarragon emulsion and piquant tomato and caper vinaigrette. The dish was perfectly seasoned and bursting with fresh, vibrant flavours. My choice of crab arancini served with brown crab meat, mayonnaise with truffles and aged Parmesan was rich and tasty, offering complex layers of flavour that blended together perfectly. The presentation of every dish was exceptionally elegant. For mains I selected the lamb rump which was perfectly executed and extremely succulent, served with sweet potato gnocchi, chive emulsion, peas and Parmesan. My companion’s pork belly was declared utterly delicious, as was its accompaniment of flavoursome carrot and ginger purée, perfectly seasoned potato terrine and almonds. It was clear from every dish that the kitchen team places great emphasis on fresh produce and bold flavours, but even the subtlest flavours shone effortlessly through. For pudding, I indulged in moreish chocolate crémeux with salted caramel, hazelnut sable and praline – a pudding wonderfully reminiscent of Ferrero Rocher. My guest chose a creamy and perfectly set vanilla panna cotta with raspberry jelly and a white chocolate cookie sandwich. The pudding portions were generous and we left feeling extremely content. Throughout our visit we were impressed by the discrete yet attentive manner of the staff. After such an excellent experience we’re already planning our return visit.

Open since May 2019, The Gaff offers a welcoming convivial environment, where social dining is encouraged – the fantastic selection of small plates is perfect for sharing with friends and loved ones. Applying the experience * £22 they gained working with Shaun Hill at The Walnut Tree, owners Daniel and Danielle have placed a fine dining ethos at the heart of their first solo venture. Tucked away in a tranquil courtyard, The Gaff exudes a peaceful and relaxed atmosphere, which serves to complement the top-notch cuisine. Although the set and taster menus were enticing, we decided to opt for a leisurely lunch from the à la carte offering. Stand-out dishes included deep-fried Porthilly oysters wrapped in serrano ham and served with Sriracha mayonnaise. The monkfish was equally delicious, paired with creamy baba ganoush and dressed with fresh lime and coriander. The quail served with silky Madeira sauce Open: Mon & Thurs-Sat and slices of red grape was an absolute highlight. Each dish exemplified the noon-2pm, 6.30pm-9pm; chefs’ skills, combining culinary Sun noon-3pm experiences gained from world travels to create an outstanding daily changing menu. To finish, my dining partner and I devoured the inventive take on strawberries and cream, comprising strawberry sorbet and syrup, Chantilly cream, crème pâtissière and white chocolate crumbs. The four star Copthorne Hotel is a lovely venue in which to relax and dine. It’s conveniently situated on the route to the city’s airport, with plenty of parking. You can dine in style in the elegant Raglans Restaurant or chill with a beer, loaded burger or succulent steak in the cosy Burges Bar, overlooking a pretty lake. My companion began her meal with a prawn cocktail. This dish consisted of juicy prawns in a piquant sauce, with thinly sliced toasted ciabatta and fresh salad. My summery tart, comprising goat’s cheese, butternut squash, red onion, asparagus and a light flaky pastry base was a lovely light appetiser.

‘...a lively yet relaxing atmosphere...’ I followed with the hake fillet, which was beautifully flaky – a very pleasing dish overall. My friend’s seafood medley was generous, featuring all manner of fish, including crispy skinned sea bass, garlic mussels and tiger prawns, finished with vegetable fricassee and white wine cream sauce. We ended our meal on both a sweet and savoury note with a classic sticky toffee pudding and cheeseboard – the perfect end to the evening. To drink, we enjoyed an elderflower and pomegranate soft drink, which was delightfully refreshing and cleansed the palate. There’s also a fine range of wine, beer and spirits for those looking to enjoy a glass of your favourite tipple alongside your meal. The kitchen staff are also happy to cater for those with dietary requirements, including vegan, vegetarian and gluten-free diets. This restaurant also offers traditional, hearty Sunday roasts, which are perfect to enjoy at a family gathering. The restaurant boasted a lively yet relaxing atmosphere, as the dining room was full of visitors and hotel guests alike enjoying friendly chat whilst tucking into their dishes of choice. The waiting staff were an utter delight, attentive and kind, with smiles for everyone. Restaurant manager Alan Li was a friendly face, giving each and every guest a warm welcome. It was clear that many diners were loyal customers. Spacious, modern and well-designed, the hotel has ideal areas for event packages, meetings and corporate events. There is also a fully equipped gym, spa and swimming pool at the hotel, to enhance your spectacular hotel experience.

This spacious restaurant boasts an open kitchen, contributing to the vibrant atmosphere. Sitting on the mezzanine overlooking both the restaurant and the bustling Hayes shopping area, my companion and I soaked up the ambience while we perused the tempting menu.

We shared a platter of crispy homemade onion rings to start, presented beautifully with a fresh side salad and balsamic dressing. We also sampled a flavoursome, hearty portion of garlic ciabatta topped with melted cheese. For mains, I chose a succulent sirloin steak, which was presented on a sizzling griddle-style plate. Creamy pepper sauce complemented the steak perfectly. My companion enjoyed a mouth-watering rib-eye steak cooked perfectly to his liking, paired with Charlestons’ special sauce – a delightfully unique blend of mushroom, garlic, wine and cream. Our steaks were accompanied by a large side of chips, buttery garden peas and moreish battered cauliflower. Open: Mon-Sun 7.30pm-late To accompany the food there are plenty of tipples available, including an impressive selection of red wine to enhance the flavours of the steak. The staff were impeccably friendly and attentive throughout, ensuring we enjoyed every moment of our evening. Charlestons has been serving exceptional food for three decades, and it’s clear to see why diners return time and again.

We instantly received a warm welcome at Keyif, which is a firm-favourite for many in Penarth. In Keyif, it’s easy to forget that you’re in the heart of Wales as you indulge in delicious authentic Turkish cuisine. Owner Mehmet is an experienced, knowledgeable restaurant and bar manager who made us feel at home throughout our visit. The chefs cook skilfully over charcoal, which imparts a smoky, authentic flavour into a selection of dishes including chicken and lamb koftes, lamb ribs, shish kebabs and marinated chicken thighs.

From the many delights among the hot mezze selection, I chose to start with tempting filo pastry parcels packed with warm feta, which was incredibly light and moreish. The cold mezze was equally good, including roasted beetroot served with garlic and herb yoghurt dip. My companion opted for the Russian salad, which she adored. My hake fillet main was flavoured with an Asian-spiced crust, onion broth and came accompanied by samphire, spring onion curls and saffron-infused potato cubes. To finish, my partner enjoyed an ample cheeseboard. I opted for a unique Parma Violet panna cotta topped with blueberry jam and white chocolate granita. Since opening in 2015, the venue has gone from strength to strength and has gained quite a following. With wooden tables, gorgeous wall art and a serene ambience, it’s a relaxing place to be. My companion loved her generous starter of olives and tasty bread, followed by Krishna’s Mighty Bowl, comprising sweet marinated tofu, layered veg, rice and edible pansies. My Anna Loka Rodeo burger was a deeply flavoursome favourite, with delicious homemade tomato ketchup to boot. By night, the café is transformed into a delightful restaurant. When we visited, the restaurant was pleasantly full with varied clientele, some even collecting takeaways. I scoffed coffee and walnut cake for afters, while my companion rhapsodised over her chocolate and salted caramel cake. The team makes the vast majority of the food in-house, sourcing clever alternatives to animal derivatives and changing the menu biannually with consideration and creativity.

On the day of our visit, I opted to start with the chilli squid, which delivered a fiery kick – while my partner opted for the stuffed Portobello mushroom drizzled with balsamic vinegar. The lamb steak was the perfect shade of pink and nicely seasoned, and came accompanied by a thick mushroom sauce and peppered Dauphinoise potatoes. Meanwhile, the duck breast was lightly smoked and came atop a bed of crunchy charred pak choi. For dessert, my partner’s gooey chocolate fondant was paired with a refreshing orange sorbet, while my peach panna cotta was beautifully creamy – the perfect conclusion to a truly satisfying meal. I chose a delectable starter of crispy golden Sun & Mon noon-10pm; tempura prawns, while my companion selected tender crabcakes, both of Tues-Sat noon-11pm which were accompanied by piquant sweet chilli sauce. To follow, my friend opted for deliciously flaky sea bass fillet with a jacket potato. The meal was brought to a perfect finish with rich and boozy eggnog ice cream and delicately flavoured rhubarb crumble cake. My companion and I loved the comforting chicken curry flavoured with coconut milk and Kashmiri chilli. We also sampled deep-fried tiger prawns with curry leaves, lime, ginger and garlic, as well as a delicious Malabar beef curry. Moving on to the main course, my companion enjoyed delicious lamb biryani served on a decorative golden tray, which was a treat for the eyes and tastebuds. The lamb was tender and cooked to perfection, and was accompanied by a selection of dips and sweet vegetable curry. I plumped for a mouth-watering chicken balti, which the chef happily adapted to my preferred spice level. Sides Open: Mon-Sun came in the form of pilau rice 5.30pm-11.30pm and a sweet, rich peshwari naan, both of which were a cut above. To finish, we indulged in a sublime palate-cleansing pistachio ice cream. The perfect place in which to relax with family and friends, this superb restaurant is well worth a visit. After 32 years at The Star of Wales, Diloar Miah and his team’s knowledge of Indian cuisine continues to shine through. Diloar describes his restaurant as traditional, with comfortable seating, soft lighting and Indian music creating a relaxing, homely atmosphere. The restaurant has several modern touches, which pay homage to both India and Wales, with murals of Cardiff City Hall and the Taj Mahal adorning the walls. The menu boasts a wide range of dishes, most of which can easily be adapted for vegetarians. We received a warm welcome from Diloar and his front-of-house team, who attended to regular diners and the constant stream of takeaway customers, some from as far away as Bridgend and Ystrad Mynach. In addition to poppadoms, my partner and I shared starters of aloo chat – potato cubes in spicy sauce – and aloo dilpasand, which was a plate of succulent mince and potato cakes in crispy breadcrumbs.

For the main event, my partner opted for paneer makani: flavoursome cubes of Indian cheese cooked with tandoori spices in a rich, creamy sauce. I opted for one of my favourites, a chicken tikka biryani, which was beautifully balanced, and enhanced by moreish masala sauce. Accompanied by a light, fluffy naan and a Bangla beer, our meals were delicious. We will be sure to return to the Star of Wales.

You’ll find Salkaara just a short walk from Llandaff train station and a stone’s throw from the district’s famous cathedral. Founded by Santhosh Nair (chef profile page 47), this restaurant recently opened with the aim of offering diners high-quality Indian cuisine at an affordable price, and has already gained a glowing reputation for its outstanding service.

Salkaara’s tasting menus afford diners the chance to sample a variety of Indian dishes and get to know the cuisine. These selections list all the chef’s favourites, with one menu including Kashmiri chicken tikka, pan-seared sea bass served on a bed of curry leaf, and Nadan chicken curry. It’ll be a difficult choice however, as the second tasting menu includes a mouth-watering spice-crusted lamb tikka and an aromatic lamb rogan josh. The main menu lists all the classic dishes you would expect from an Open: authentic Indian restaurant, Mon-Sun noon-2.30pm, including chicken tikka masala, 5pm-11pm tandoori salmon and tandoori king prawn. However, guests also have the chance to try some more unusual dishes, such as konju manga curry – tiger prawns simmered in a spicy coconut and mango gravy – or the Indian cheese-based five spice paneer. While Salkaara is a comfortable and modern restaurant, those wishing for a relaxed night in can also purchase their meals to take away. Your first visit to Salkaara is guaranteed to be one of many. Vasanthan’s family hails from a tropical region of India that’s known for cultivating sugar, rice, lentils, chillies and mango – this made him fall in love with nature and food. Vasanthan studied at Bharathidasan University before working as a trainee kitchen manager. He now heads up the kitchen at Copthorne Hotel, and enjoys visiting the local markets and heritage farms in the local area as he loves to support local family suppliers who produce authentic ingredients.

His favourite time of year is summer, when there is an abundance of fresh food and opportunities to travel and sample different cuisines. Vasanthan loves to cook seafood with fresh chillies and fragrant herbs. In order to expand your culinary skills he suggests visiting your local market to find new and exciting ingredients to practise cooking with at home. To be a good chef, he believes you need to be a true explorer of a variety of cultures and cuisines.

Oliver learnt how to cook and appreciate good food from his parents’ home cooking. Oliver’s first professional experience of cooking was in his commis-chef position at Jury’s Hotel, where Fitzroy Davies helped him refine his skills. Training in classical French cuisine, Oliver is inspired by his travels around Europe. His favourite section of the kitchen is the sauce section where he enjoys the lively atmosphere.

Growing up in Kerala, Santhosh was first introduced to cooking by his grandmother and uses influences from his upbringing to create unique dishes that can’t be found in typical Indian restaurants. Santhosh has worked in restaurants around the world for the past 22 years, from Kerala to Dubai. Now, Santhosh brings his experience and extraordinary talent to the kitchen at the recently opened Salkaara.
