Ian Carr Having lived in Cheshire all my life, my roots are here. I’ve stayed in the area because I’ve always believed that there would be a thriving food scene here, and of course, now there is. The restaurant scene in Cheshire has changed and become much more vibrant since I began cooking. When I started out, everything revolved around London but I really wanted to be part of what was emerging here in Cheshire. Well-regarded restaurants, such as The White House in Prestbury, The Belle Epoque in Knutsford and La Boheme in Lymm, were just beginning then – it was an exciting time. The eclectic mix of city and country dwellers colliding sees a savvy mix of diners looking for well-prepared food, with provenance of the upmost importance. Take Altrincham for example; in recent years it has become a foodie mecca, with fantastic new restaurants and coffee shops opening all the time. Locally – and nationally – we’re seeing a huge interest in provenance and ethics when it comes to food. It’s brilliant to see that guests are more willing to try new ingredients; people are more concerned about what they’re eating rather than where they’re dining. Chez Nous Bistro is all about good, honest food that’s cooked with care using locally sourced produce. We source our meat from some of the best suppliers in Cheshire, and get our delicious potatoes locally. You can’t beat the artisan bread from The Bread Factory in Openshaw. Fresh produce from dedicated suppliers shines through in the quality food found in restaurants dotted around the county. It’s great to get to know the faces behind the ingredients, rather than deal with nameless delivery drivers. There is competition from small, independent venues so international chains need to be innovative to keep up with the consumer. I regularly dine at my favourite Cheshire haunts; I love how varied our foodie scene is. Whether you’re enjoying matcha tea and a brownie at a little café, an authentic stone-baked pizza or a seven-course tasting menu, Cheshire’s eating-out scene is definitely dynamic. Moving forward, I hope to see more women in the industry because I believe there needs to be a balance; encouraging young female chefs into the kitchen will mean changing perceptions, which I very much encourage.

Chez Nous Bistro

Chez Nous Bistro is a hidden gem, tucked away on Marsland Road in Sale. It’s a suburban bistro with urban attitude, and a passion for great food. Whenever you visit, you can expect dishes prepared using top-quality locally sourced ingredients, and friendly but professional service.

The atmosphere is intimate for lunch and dinner, but the restaurant can also be booked for private hire and for large dinner parties, drinks receptions and buffets. They’ll even be offering a party service in the near future, making Chez Nous the perfect spot for special occasions. The food menu is modern, with influences from classic French bistros. Start with Scottish scallops with chilli and coriander butter, or perhaps seared wood pigeon with Puy lentils. For the main course, try the pan-roasted breast of Cheshire pheasant accompanied by sweet potato and creamed Savoy cabbage, or the chargrilled rump of lamb with ratatouille and Dauphinoise Food Served: potatoes. Fresh fish and grilled Mon-Fri 5pm-9.30pm; steaks are always available, and Sat noon-9.30pm; you’ll also find a fine selection of Sun noon-5pm homemade desserts and artisan cheese to round off your feast. With top-notch food, excellent service and a charming bistro-style ambience, Chez Nous is sure to delight.

Tucked away in the suburban village of Woodford, you’ll find the delightful Olivers. A family-run restaurant, Olivers has flourished for the last 14 years under the management of James O’Neil. Its cheerful ambience makes it the perfect spot for Sunday lunch. Additionally, Olivers boasts a private conference room available to corporate groups. Despite offering predominantly British food, the undertones of French cuisine give a heightened sophistication to the menus. This is likely the influence of James’ heritage: the family’s first restaurant, run by James’ uncle, was a French bistro. New menus are revealed every day, providing a unique dining experience rarely found in high-street eateries. With a range of tantalising dishes such as the spinach and ricotta crêpe with walnut gratin, and the sea trout fillet with rosti potatoes and a pea, chorizo and baby onion fricassee, Olivers has something for everyone.

His dishes focus on simple flavour pairings that let the ingredients speak for themselves. The offering changes regularly – a sample menu might include starters of seared scallops served with pea purée, samphire, runner beans and sundried tomato pesto; mains of pan-fried chicken breast served with Dauphinoise Open: please call or see potatoes, baby leeks, summer website for details greens and morel sauce; and afters of mango and bitter chocolate pavé with mango and lime salsa, and mango sorbet. In addition to a full à la carte menu, Pier Eight boasts a stellar lunch and early-dinner menu, and a bar menu boasting equally delectable fare. The French is an effortlessly elegant restaurant found in the inimitable Midland Hotel, which first opened its doors in 1903. Head chef Simon Rogan has successfully re-established The French’s opulence through carefully cultivated menus, the use of only the finest ingredients and smooth service.

Modern British cuisine is offered on six- and nine-course tasting menus that perfectly blend traditional flavours with Simon’s innovative approach. Simon’s success on Great British Menu showed his culinary prowess; diners at The French can expect to be wowed by the likes of pollock cured in peppers and barbecued asparagus with soft cheese and truffle. Seafood courses might include a plump scallop with chives Food Served: and caviar, and Cornish mackerel pickled with preserved rhubarb celeriac, apple Tues 6.30pm-9pm; and nasturtiums. Meat-lovers will delight in heartier flavours such as ox in coal oil, Weds-Sat noon-1.30pm, and Cumbrian suckling lamb with grilled courgette, peas, beans and mint. To round 6.30pm-9pm things off, indulge in poached cherries with sweet cheese and a hazelnut biscuit, before a refreshing final taste of macerated strawberries with toasted oats, buttermilk and currant blossom. The menu changes to reflect the seasons and the availability of produce; Simon is only interested in using the absolute best, so sources ingredients with great care. Christie’s Bistro

 Location The Old Quadrangle, University of Manchester, Oxford Road, Manchester, M13 9PL t: 0844 502 6328 w: www.christiesbistro.co.uk e: christies.bistro@manchester.ac.uk Christie’s Bistro counts itself among the exquisite historic venues of the University of Manchester’s Chancellors Collection. Located on the main Oxford Road campus, the bistro was built in 1890 and served as the principal science library, before it was converted a hundred years later into a lounge and restaurant. My partner and I dined in the restaurant, overlooking the less formal, though no less elegant lounge, which serves sandwiches, daily specials and cakes, as well as coffee and a wide variety of loose-leaf teas. Once seated and relaxed, we began to admire the beautiful Victorian Gothic architecture of Christie’s – ornate windows and columns, high ceilings, bookshelves and busts. The grand bistro is a favourite amongst students and staff, though thankfully it is also open to the public. From the à la carte menu I ordered baked ricotta with roasted tomato, pea purée and truffle oil to start. My partner opted for Ardennes pâté served with caramelised red onion chutney and toasted Chorlton sourdough. We were pleased to discover that ingredients are sourced locally whenever possible, and as we began eating we joked that it was likely to be a silent lunch, as our attention was immediately captured by the sensational and varied flavours of our starters. For my main course I chose pan-seared salmon, vermicelli, cucumber and watercress salad with lemon and dill pesto dressing. My partner plumped for 8oz braised rump steak with roast red pepper, herb and tomato sauce, served with Parmentier potatoes. The salmon was cooked to perfection and its accompaniments were refreshing and unusual. The braised steak, meanwhile, melted in the mouth, the sauce rich and plentiful and the portion generous. Fully satisfied, my partner decided against a dessert and opted instead for coffee, while I eagerly ordered the peanut butter cheesecake. Beautifully presented with strawberries and raspberries, and charmingly adorned with edible flowers, the deep peanut flavour was complemented by rich chocolate sauce. Christie’s Bistro, which is also available for private hire and events, comes highly recommended as both a Manchester tourist attraction as well as an exceptional and versatile place to dine.

With charming traditional decor and a convenient location just outside Shaw’s town centre, The Morning Star is a real destination pub. The venue is divided into a smart dining area and a more relaxed pub area, so you can enjoy the excellent fare in a setting that matches your mood. Exposed brick walls, wooden beams and a cast iron wood burner all contribute to the cosy atmosphere, but it’s the efficient, friendly service that makes it a treat to dine here.

My companion was pleased with the sizeable chicken pâté starter, served with lots of toast and excellent onion chutney. His main, perfectly cooked honey-glazed salmon on a bed of couscous, was followed by a gift to the sweet-tooth – syrup sponge in a delicious lake of custard. While my partner ordered from the set menu, I explored the main menu. My seared scallops came with a delicious tower of black pudding and mashed potato. To follow, I chose Open: Sun-Thurs noon-11pm; the beautifully delicate sea bass, Fri & Sat noon-midnight which was served with chunky Food Served: sweet potato wedges, chorizo and Mon-Sat noon-9pm; a large Greek salad. For dessert, I Sun noon-8pm tried the cheesecake of the day – a scrumptious toffee cheesecake coupled with amaretto biscuits. At The Morning Star we had a thoroughly enjoyable meal; we would certainly recommend a visit, especially for the daytime specials menu, which offers great value for money. British

Head chef Mike Malecki and his team prepare hearty dishes to suit all tastes using fresh, locally sourced produce, overseen by award-winning executive chef Mark Summers. My companion and I thoroughly recommend both the salt and pepper chicken wings with their tasty sweet chilli dip, and the delicious daily special of chilli prawns. For our main course we both had the beer-battered fish and chips with Open: mushy peas and tartare sauce. The batter was perfectly crisp and the fish was tender. Sun-Thurs noon-midnight; The fixed-price menu of the day always includes a roast dinner, and it’s not hard Fri & Sat noon-1am to see why they attract such crowds on Sundays. This picturesque establishment Food Served: can be hired for a wide range of Mon & Tues noon-9pm; private functions, and they also put Weds 1pm-9pm; on regular open-house events to Thurs-Sat noon-9pm; entertain locals and visitors alike. Sun & Bank Holidays noon-8pm There’s a pub quiz on Monday, live entertainment on Saturday and jazz nights on the second Wednesday of every month. The interior is attractive and welcoming, but we’d have to recommend the beer garden when the weather is fine, as you can enjoy stunning views of Oldham, Royton and Shaw. 6

The Woodhouse Gardens

The Woodhouse Gardens blends modern comfort with traditional country chic style. You might want to work up an appetite at the nearby Daisy Nook Country Park before heading to The Woodhouse to enjoy satisfyingly hearty fare and refreshing tipples. If you’ve been out walking your pup, a warm welcome awaits you both in the dog-friendly bar area, and in the summer you can also take a seat in the attractive garden. This garden is also great for visitors with children, as it has a sophisticated wooden jungle gym. Lorna, who ensures that every visitor is well taken care of, manages the talented team behind this destination pub. Head chef Mark has mastered the art of great food and ample portions. We thoroughly enjoyed our salt and pepper squid and king prawns served with a chilli dip that excited the palate. We followed this with a divine braised beef dish paired with creamy mash and seasonal vegetables before ending with desserts of warm salted caramel brownie and white chocolate torte.

During our visit, the service was attentive and timely, the servers friendly and knowledgeable. Every table was adorned with fresh flowers, making the occasion all the more special. With such top-notch service and ample parking available, it’s no wonder that this popular venue attracts regulars from miles around.

Tom at 101

Wa Retaining loyal, regular custom is one of the many challenges that faces small, family-run restaurants like Tom at 101. Thankfully, Tom at 101 excels at this, owing to consistently outstanding fare and genuinely warm, welcoming service (manager £22 to profile page 31). Located in the charming Warrington suburb of Stockton Heath, £33 this light and airy first-floor restaurant boasts smart, contemporary decor with lofty ceilings, handsome wooden wall panelling and an open bar. Classic bottle green, studded banquette seating stretches across one aspect, with the restaurant’s impressive wine collection dominating another. The varied evening menu features grills and seafood predominantly, but also lists nibbles, oysters, sharing boards, small plates, classic comforters such as the steak, mushroom and Guinness pie, and a selection of vegetarian dishes. Amongst the Food Served: grill selection, Tom’s 28-day-aged steaks – locally reared and served with hand-cut Mon-Thurs 4pm-10pm; triple-cooked beef dripping chips and watercress – come highly recommended. For Fri & Sat noon-10.30pm; the truly carnivorous members of Sun noon-9.30pm your party, Tom’s 560g tomahawk, an amplified take on the classic French côte de boeuf, will come as a welcome challenge. In addition to the evening à la carte, a reasonably priced two-course menu is served from 4pm until 7pm Monday to Thursday and noon until 6pm on Friday and Saturday, while a roast lunch is available on Sunday. Whether you’re popping by for a hearty meal, afternoon tea or cocktails and a catch-up with friends, Tom at 101 has the perfect offering. Cheshire Guide 2018

Steeped in history, the Victorian decor and steady buzz of custom and music at Mr Thomas’s Chop House – or Tom’s as it’s known locally – create a natural ambience that’s truly one-of-a-kind. Why not relax in a booth and unwind on a wintery evening, £20 to or sit in the suntrap outdoor seating area and while away a summery afternoon? £30 Food at Tom’s is wholesome and satisfying, and generous portions make any menu selection a winner. We were tempted to share the Great British charcuterie board, but I spied the corned beef hash cake being delivered to a nearby table, and couldn’t resist ordering it for myself. It was delicious and proved a great start to a wonderfully British meal. We moved on to classics, selecting crispy battered fish and chips with homemade mushy peas, and locally sourced bangers paired with creamy mash and rich gravy. Sweets are equally timeless, with Eton Mess and a stellar cheeseboard proving Food Served: Mon-Thurs to be the perfect way to round off a meal while soaking up the atmosphere and what 10am-9.30pm; Fri & Sat remained of our bottle of wine. noon-10pm; Sun noon-8.30pm The bar at Tom’s is an attraction in itself, drawing in pint-seekers to sample an outstanding range of beer and ale that pits guest beers alongside a host of usual suspects. Handily, the wine list features a pairing guide, so you’ll easily be able to complement your dish with your libation of choice. Whether it is a locally sourced, well-crafted meal you’re after, or a showcase of modern British cuisine to impress visitors to Manchester, Mr Thomas’s has something for everyone.

Sam’s Chop House

The building dates back to 1872 when the restaurant was first established and the decor reflects this sense of timelessness. This grand £20 old haunt really is a living and breathing piece of Manchester’s history. to £30 The menu is equally traditional, with plenty of hearty, comforting dishes and a clear Lancashire influence. The fisherman’s pie, prepared with cod, salmon, smoked haddock, prawns, vermouth cream sauce and Cheddar mash comes heartily recommended, as does the famous steak and kidney pudding. For the ardent carnivores in your dining party, the Barnsley chop and the immaculate rose veal chop, served with Chop House chips, roast tomato and mushroom are stellar options. Among the starters, the Altrincham blue cheese salad is an utter delight, as is the Food Served: Mon-Thurs devilled Cornish mackerel. For those with a sweet-tooth, the Eton Mess is about noon-9.30pm; the best I have ever tasted and Mr Fri & Sat 10am-10pm; Lowry’s rice pudding simply has Sun noon-8.30pm to be tried – the restaurant has a strong connection with L.S. Lowry and there is a statue of the local artist in the bar. The service is top notch – my compliments go to the head sommelier, who was efficient, knowledgeable and above all a true gentleman. If you visit one restaurant in the north of England then make it this one. GM

For a time, Albert Square was home to the city’s Memorial Hall and the history of this listed building alone makes it worthy of a visit. The Albert Square Chop £20 to House is one of three famous sister eateries located in Manchester. I have been a £30 regular diner at the other two – Sam’s and Mr Thomas’s – for over two decades, and so it was with eager anticipation that I visited Albert’s to see what the latest addition to the Victorian Chop House family could offer. On arrival, visitors are immediately greeted by a pleasant atmosphere and the welcoming warmth of low lighting, creating the perfect setting in which to enjoy good food and drink. The menu offers diners the opportunity to embark on a splendid food journey, taking them to the heart of homely British comfort food, Food Served: Mon-Thurs with the added reassurance of style, quality and taste. My main course of whole 8.30am-3pm, 5pm-9.30pm; West Coast lemon sole on the bone, pan-fried with nutty brown butter, lemon Fri 8.30am-10pm; pickle and capers, was washed Sat 10am-10pm; down wonderfully with a glass of Sun 10am-8.30pm Rioja. My partner’s double lamb loin chop, served with French-style petit pois and herb butter, was paired well with a glass of Montepulciano red. Dessert arrived in the form of zesty lemon curd tart glazed with Italian meringue and drizzled with tangy raspberry coulis. We rounded off the evening with a glass of dark cherry dessert wine and left feeling satisfied and content.

‘...savour authentic Greek cuisine with your loved ones...’ Inspired by regular trips to Greece, the chefs have created a menu that’s bursting with tempting dishes, which we perused with a Greek beer in hand. I chose to start with creamy spanakopita, which came perfectly paired with tzatziki, while my partner sampled the dolmades – both were masterful takes on classic dishes. Our main courses were equally impressive. Despite being drawn to the vegan options, I eventually plumped for the pan-fried sea bass – a wise decision. The fish was delicate in both texture and flavour, and combined beautifully with rich potato cakes, crisp kolokithakia fries and a piquant parsnip skordalia. Inspired by fond memories of meals in Greece, my partner opted for an old favourite: shoulder of lamb on the bone. The lamb was exquisitely tender and paired well with Greek-style roast potatoes and rosemary. The menu reads like a love letter to fresh ingredients and Greek flavours, all with a unique, contemporary twist. Thankfully, we had worked up an appetite walking around historic Chester’s Roman walls before our meal, and we happily tucked into desserts. While my partner indulged in the decadent tahini brownie, I couldn’t resist the honey-sweet baklava with pistachio ice cream. Our meal came to a relaxed end as we sipped rich Greek coffee and soaked up the buzzing atmosphere. The service was attentive from start to finish with every dish beautifully and carefully presented. The whole experience was a delight and we left with smiles on our faces, savouring the taste of the Mediterranean.

Neil’s expertise won Sarafina the OpenTable Diners’ Choice Award for 2017 and 2018. March 2018 sees another exciting development, as Sarafina launches a new brunch menu.

Sarafina is very accessible and the staff are courteous. The low lighting, green leather seats and exposed brick walls make for a relaxing dining experience. My companion and I sampled the winter menu and found the arancini utterly delicious – with a new flavour of arancini every week there’s lots Open: of variety. Their exceptional wild boar ragu comprises high-quality meat marinated for 24 hours in oranges, herbs and red wine, before being cooked for six hours in tomato sauce and served with delectable homemade gnocchi. The result is rich, succulent meat with beautifully balanced flavours. Located near Junction 21 of the M62, the Bulls Head is surrounded by the unspoiled, beautiful countryside of Ogden and welcomes one and all into its cosy interior. The comprehensive menu ranges from snacks and traditional bar meals to delicious homemade pies and classic specials from the board. Peter Shawcross has been cooking at the Bulls Head since 1991, has been head chef since 2000, and he and his wife Marie have owned the pub since 2008. Peter delivers a diverse traditional menu, including children’s options, and we were fortunate enough to try some of his creations for ourselves.

Behind the bar you can find a wealth of local microbrewery beers on tap. The Bulls Head is truly a classic pub and is well worth a visit.

My companion and I ordered the Spicy Clucker and Deva burgers and we were very pleased with our choices; both burgers were well seasoned and full of flavour. On Sunday, call in from 2pm-7pm for a delectable roast; it’s the perfect way to round off the week. The venue itself is attractive, with exposed ceiling beams and flagstone flooring. The walls are decorated with prints of Deva Craft Beer’s signature quirky artwork, smaller copies of which can be found on the labels of the Deva beers. On the way in we also noticed a lovely outdoor seating area, with strings of fairy lights and heaters for chilly evenings. The charming staff were efficient and helpful, the background music was pleasant without interfering with conversation; all in all, we had a lovely evening. There’s also a spacious beer garden for al fresco drinking and dining in the summer, complete with a play area for the kids to explore while you relax. Younger diners even have their own menu to choose from. Grown-ups, meanwhile, will appreciate the selection of Robinsons Brewery ales and quality wines available from the bar, and can tuck into favourites such as homemade steak burgers and hearty pasta dishes. Nikolas Waterman’s philosophy is that every person who visits your restaurant should have an enjoyable and memorable experience. He first learned about brands, products and techniques aged 19, bartending in a cocktail bar. But Tom Rogers, owner of Tom at 101, taught Nikolas that the real make or break quality in the restaurant industry is attention to detail. Tom built his restaurant up from nothing 14 years ago, and is proud to be part of the North West’s burgeoning restaurant scene.
