Foreword

Lewis Thornhill When the opportunity to become head chef at The Devonshire Arms at Beeley arose two years ago, it felt like the right decision. Having worked as a sous chef in several reputable establishments, I felt I was ready for the next step in my career. Despite having only worked in the region for a couple of years now, I was immediately struck by the sense of community – from customers to suppliers, I found that everyone supports each other. It’s a difficult time in the restaurant industry, with many small and established businesses struggling due to high rent and rates, so it’s crucial that restaurants strike the perfect balance with their offering. At The Devonshire Arms at Beeley, we endeavour to offer excellent food in a relaxed setting, whilst offering a place where people in the community can come for a few tipples and unwind with friends. The region’s welcoming gastropubs are always a hit with locals and visitors alike. I consider myself incredibly lucky to work in a region so rich in fantastic producers and growers, and I truly believe that the produce available is some of the best in the country. We enjoy an abundant supply of ingredients from the Chatsworth Estate, and you can find the likes of roe venison and pheasant, straight from the estate on our menus. We use Tomsons in nearby Buxton for our fruit and vegetables, and our beef supplier is a regular in our pub – it’s so important to form strong links with local producers and suppliers, and it’s great to support local businesses wherever possible. Sustainability is of the utmost importance and, as chefs, we have a real responsibility when choosing our produce. It’s clear that more establishments have cottoned on to this in recent years; as consumers it’s important that we challenge venues to be fully transparent about their food miles and environmental impact. No matter what you’re looking for when choosing to dine out in the Peak District and Derbyshire, with so much choice across the region you’re sure to be pleased. The Cavendish Hotel

The Cavendish was formerly owned by the Duke of Rutland but became the property of the Duke of Devonshire in 1830, reputedly won at the card table. Overlooking the Chatsworth Estate, The Cavendish boasts a range of formal and relaxed dining options with abundant charm and opulence. Glorious chandeliers and classical artwork, much of which is sourced from Chatsworth House, create a sumptuous setting. Widely regarded as the go-to destination for a memorable dining experience, the two-AA-rosette-awarded Gallery Restaurant is truly a place for special occasions, while The Garden Room offers a more relaxed dining experience providing stunning views of Chatsworth Estate. Executive head chef Adam Harper was a finalist for the prestigious Roux Scholarship this year and has produced an exciting menu, where fresh high-quality ingredients are spun into imaginative dishes, setting the tone for an unforgettable culinary experience. To start, you can expect delectable dishes such as roast pumpkin panna cotta featuring pumpkin seeds, aged balsamic, goat’s cheese and pumpkin emulsion, and steak tartare dressed with charcoal oil, apple, pickled shallots, nasturtium and a Parmesan crisp. For a delightful main, plump for Chatsworth beef fillet featuring buttered spinach, baby artichoke, pesto, goose liver, cheesy mashed potato and red wine jus. Round off proceedings with an irresistible vanilla yoghurt parfait with thyme-infused peaches, peach and lemonade sorbet, nut tuile and pomegranate. The Gallery’s tasting menu is also a popular choice, while afternoon tea provides luxury indulgence. In The Garden Room, guests can expect the same top-quality cuisine and hospitality but in a more casual setting. Think mouth-watering plates such as hand-rolled tagliatelle with wild mushrooms, spinach, Parmesan and truffle cream sauce, and Chatsworth Gold beer-battered fish with hand-cut chips, pea purée and tartare sauce. The Cavendish is the ideal venue for celebrations, including weddings, while private dining is also available. All the while, exemplary service ensures that this incredible establishment excels in every area. A setting within the historic Chatsworth Estate adds something of an extra-special pedigree to the Peak District village of Beeley. The Devonshire Arms epitomises everything you’d expect from an inn that occupies such a beautiful location. Flanked by traditional stone cottages and with a babbling brook out front, this AA-rosette-awarded venue attracts both locals and tourists.

‘...setting within the historic Chatsworth Estate...’ The bar area has a lovely cosy atmosphere, with open fires in winter and characterful features that reflect its 18th-century origins. Adjacent to the bar is a stylish glass-fronted bistro, so diners can choose where to eat according to their mood. For special occasions, guests can hire the Malt Vault, which seats up to 12 people. Chef Lewis Thornhill uses his flair and expertise to create a delightful choice of seasonal dishes, making full use of local produce such as Chatsworth Estate lamb and venison. He has worked hard to build his talented team and his passion for food and cooking is infectious. As many ingredients as possible are sourced from the estate – including the Chatsworth Farm shop – and the surrounding areas. We kicked off our meal with two tasty starters. The Vale of Belvoir wood pigeon in sherry vinaigrette was incredibly succulent, served with quinoa salad, pomegranate and hazelnuts. The tasty ham hock terrine was cured in maple syrup and came with apricot jam and a crispy egg. For our main course, we selected Chatsworth shoulder of lamb and braised Derbyshire ox cheek – both slow-cooked and beautifully tender. The lamb came with Moroccan-spiced couscous, while the ox cheek was accompanied by creamed potato, wild mushrooms, smoked bone marrow and charred onion. Our side dish of tarragon carrots was also an absolute delight. A dark chocolate mousse and traditional Bakewell tart added a final flourish to our meal, accompanied respectively by clotted cream and banana ice cream. If you’re tempted to stay a while longer in this pretty village, there are 18 bedrooms and two delightful cottages to choose from, all designed by the Duchess of Devonshire. This lovely pub is perfect for any occasion and we’re already planning our return visit.

The Greenman is an exciting pub and restaurant in the heart of the market town of Ashbourne, just on the edge of the Peak District. The historic building is an 18th-century coaching inn that played a pivotal role as a local tourist destination until it sadly fell into disrepair. This intriguing establishment is now under the ownership of acclaimed restaurateur couple Peter and Laura Dale, who gained national recognition for their high-end restaurant The Dining Room.

The Greenman has only been open for a year but is already a highlight of the Derbyshire dining scene. You can stop by for a casual drink and sample the tasty bar snacks, or make an evening of it with a gourmet supper and a tipple from the extensive wine list. The menu changes regularly but the emphasis is always on elegant simplicity and using the best seasonal produce. The kitchen team Open: Mon-Sat noon-11pm; combines refined, unpretentious Sun noon-10pm cooking with the use of wonderfully Food Served: fresh and varied ingredients. What Weds-Sat noon-2pm, sets this establishment apart is 6pm-8.30pm; the professional yet approachable Sun noon-4pm service from people who love eating out as much as you do. The new owners intend to reinstate The Greenman as the hub of the community, and it’s certainly worth a visit to this exciting new public house. British

Proudly positioned in the historic village of Repton, this converted 17th-century coaching inn combines attractive traditional features with elegant country-chic decor. There are also nine luxury bedrooms for those wishing to prolong their stay. The cosy bar is the perfect place to pass a casual evening with friends, enjoying tasty homemade bar snacks and a choice of refreshing drinks. The Boot has its own micro-brewery and the Boot Beer range is highly popular with ale connoisseurs, but there’s also a great selection of cider, spirits and soft drinks.

Weather permitting, the picturesque courtyard is a delightful place to sit, but on cooler days guests may prefer to view the courtyard from the comfort of the enchanting terrace restaurant. Head chef Rob Taylor uses the freshest Food Served: Mon-Fri local ingredients to create dishes bursting with flavour, combining classic 7am-11am, noon-2.30pm, British favourites with influences from around the world. The menu features 6pm-9pm; Sat 8am-11am, delights like Derbyshire lamb rack noon-2.30pm, 6pm-9pm; accompanied by peas, goat’s curd, Sun 8am-10.30am, mint vinegar dressing, marinated noon-6.30pm tomatoes and pommes Anna, and Cornish hake served with courgette and basil purée, summer beans, herb gnocchi and mussel velouté. It’s easy to see why this two-AA-rosette venue is a former AA Pub of the Year winner. Rob and his team also run regular gourmet nights and themed evenings that showcase exquisite dishes from around the world. 6

The Castle Inn team has stumbled upon a winning combination with their motto of good food, good ale and good company. Visitors can gather in the sophisticated bar area and enjoy one of the featured beers; the great selection of ale, stout and bitter means that there’s something to suit all tastes. For those who favour grape over grain, the extensive wine list pays homage to fine Old World vintages. However, the real highlight of The Castle Inn’s bar is the gin menu, where a truly impressive range of gins can be paired with a choice of six Fever-Tree tonic water varieties, ginger beer or ginger ale. For those hoping to sate their hunger as well as their thirst, the elegant restaurant is not to be missed. An Italian wood-fired pizza oven is the basis for the popular chargrilled range, in addition to producing incredibly thin and crispy pizza. Meat-eaters may favour the chorizo, caper, honey and shallot pizza, while vegetarians might prefer butternut squash, goat’s cheese and red onion. There are always vegan and gluten-free alternatives, and any pizza you choose can be turned into a warming calzone. Alongside pizza, the menu boasts juicy steaks, burgers, pasta, salads and mains to suit all tastes. Guests visiting on a Sunday can also take advantage of the exceptional roast, which includes a choice of beef sirloin, roasted pork belly, pan-seared salmon and succulent lamb rump. For an indulgent finish, you’ll find the likes of rich dark chocolate tart, and delicate rose water crème brûlée with crisp pistachio biscotti and juicy glazed figs. The Castle Inn is the perfect place to gather with friends for supper, but for larger private events guests can also hire the Rose Room. With its light and airy interior, painted rafter beams and wooden walls in delicate pastel shades, this is an enchanting place to spend an evening.

Inside, you’ll find a charming interior with roaring fires and an oak-panelled dining room, while outside the beautiful garden £24 to includes an open fire pit. Impeccable service is coupled with head chef Jake £38 Boyce’s (chef profile page 63) award-winning food. His desire to please his diners runs through everything he does, from making his own ice cream to hand-whipping butter – it’s truly the finer details that set this tremendous establishment apart. Expect an ever-changing seasonal menu and imaginative dishes cooked with flair using the finest local produce. My starter of truffled cauliflower soup served with house sourdough was a sheer delight, while my partner’s raw scallop ceviche accompanied by yuzu, black radish, olive crumb and ponzu dressing Food Served: Mon-Thurs was an amazing combination of flavour and texture. To follow, his fish pie noon-2.30pm, 6pm-9pm; with a heavenly soft-boiled egg in Fri & Sat noon-2.30pm, the middle was a wise choice and 6pm-10pm; Sun noon-5pm was declared perfect. I opted for the succulent breast of guinea fowl with king oyster mushroom, leek, and kohlrabi, and couldn’t applaud it enough. Our desserts of sticky toffee pudding and peanut butter parfait ensured we finished on a sweet note. No matter the occasion, at The Duncombe Arms you can be assured of an exceptional meal and attentive service within beautiful surrounds. British

Diners can expect sophisticated but hearty pub classics, and it’s always worth keeping an eye on the specials board. Despite its aristocratic history you’ll find no airs and graces at The Devonshire Arms, just a warm, friendly welcome. With such a relaxed atmosphere it’s little wonder this venue is so popular with families, couples, dog-owners and hikers. A hidden gem in the peaceful village of Pilsley, this cosy inn is the perfect base from which to explore Chatsworth and the surrounding area, with its exceptional natural beauty and attractive array of towns and villages.

If you are passionate about good food and its provenance, you will love the Chatsworth Estate Farm Shop. The team’s philosophy is one of freshness, quality and ethical sourcing, with much of the produce originating from Chatsworth itself as well as from the best local producers. We were greeted by an enticing display of fruit, vegetables, flowers and seasonal promotions. Venturing further in, a wide range of quality store cupboard ingredients awaited us, including jams and marmalades bursting with fruit. You can even squeeze your own fresh orange juice.

‘...passionate about good food and its provenance...’ Discover a wealth of British-caught fish and top-quality Chatsworth and local meat – request particular cuts or choose from the offering in the grab and go cabinet. The bakery offers a variety of appetising freshly baked products, and the deli counter displays over 100 different British cheeses alongside a range of foreign variations. You will also find chilled ready meals, pies, pizza, quiche and cake, in addition to quality dairy products. A local merchant supplies the wine and, for beer aficionados, there is a great selection of local craft ale, including Chatsworth’s own Peak Ales. Much of the shop’s produce can be savoured in the popular Chatsworth Estate Farm Shop Café. I visited with a friend, who relished the fisherman’s platter laden with smoked mackerel, salmon and prawns, colourful salad and freshly baked brown bread. My spinach and feta quiche in light herb pastry was bursting with flavour, served with new potatoes and fresh vegetables. My companion followed on with silky lemon posset, while my melt-in-the-mouth bread and butter pudding was laden with plump fruit, and was easily the best I’ve ever tasted. The Flying Childers restaurant is an oasis of tranquillity, an elegant backdrop for the sumptuous Wedgwood afternoon tea. Select from a huge range of quality artisan tea, a glass of Laurent-Perrier Cuvée Rosé Champagne, or something from the coffee and soft drink selection. Our afternoon of quintessentially British indulgence began with a surprising but delicious beetroot macaroon balanced with tart curd cheese. A platter of delicate finger sandwiches made from oven-fresh bread with a variety of classic fillings followed.

‘...views of the beautiful Chatsworth Estate...’ We cleansed our palates with an ambrosial passion fruit posset before embarking on sweet and savoury scones, a range of delicious cakes and spiced chocolate mousse. This luxurious tea, which can be booked online, is served on an eclectic mix of Wedgwood teaware by polite, unobtrusive staff. It’s an utterly memorable experience that is tasteful in every sense of the word, perfect for a special celebration. The restaurant has also recently launched a new brunch menu, offering favourites such as eggs Benedict and Eton Mess – the perfect excuse to visit twice in one day. The Cavendish restaurant, housed in the 18th-century stable block with Flying Childers, offers an extensive, reasonably priced menu comprising the best of British and Continental fare, and full table service. I chose the freshwater crab and prawn platter with Marie Rose sauce, slow-cooked lamb hash in rich jus topped with a poached egg, and tangy lemon parfait with fresh raspberry coulis. My companion enjoyed mild, creamy goat’s cheese baked with a crispy coating, and delicate halibut fired up with a bed of spicy chickpeas and chorizo, followed by mango cheesecake smothered in dark chilli chocolate sauce. My evening began with succulent scallops with black pudding, pancetta and pea purée, while my dining partner enjoyed homemade terrine with chutney and toasted brioche. The scallops were cooked to perfection and the dish was delightfully balanced. To follow we chose roasted cod loin served with sautéed potatoes, samphire and king prawns, and delicious pea and mint risotto – both dishes were simply outstanding. As well as breathing new life into the pub, Lee and Sian also run Doughology, a successful pizza catering company based in a bespoke trailer. Doughology is available at The Old Eyre Arms every Wednesday and is well worth a visit. Lee was keen for us to try the pizzas and how could we resist? With little room left, we shared the mouth-watering truffle hunter featuring ham hock, Portobello mushrooms, truffle oil and homemade San Marzano tomato sauce – absolute perfection. Sunday lunches are another popular affair, offering the likes of roast beef, lamb and chicken with amazing Yorkshire puddings. For those after a quality tipple, this wonderful establishment has a selection of local real ale and an extensive wine and gin list. We would have happily sampled everything, but in the end we opted to start with mozzarella and tomato bruschetta, and crab tortellini with bon Food Served: bon and crab bisque. Both were consumed with great enthusiasm, and left us Mon 6pm-8.45pm; Tues-Sat eagerly awaiting our mains. My noon-1.45pm, 6pm-8.45pm; companion chose one of the Sun noon-4pm specials, the pork tenderloin, and described it as divine. I plumped for duck with haricot, pea and pepper fricassee, and found it perfectly seasoned and juicy. Sadly we were too full for dessert, but such delights as rhubarb cheesecake with strawberry ice cream, and apple and plum crumble with custard were hard to resist. With so many items on the menu that we’re still longing to try, we’ll certainly be returning soon. £23

We started with crisp ox cheek and Stilton £30 croquettes, and an innovative wild mushroom and squash crumble, both from the specials board. For the main course, I tucked into a succulent pan-seared Scottish salmon fillet, while my companion selected their famous steak and Old Peculiar ale pie served with chunky beef dripping chips. We’ll certainly be back to sample The Old Hall Hotel’s popular Sunday lunch. Whisky connoisseurs will be pleased to hear that alongside six award-winning real ales, there are over 150 single malts on offer. As well as the main dining area, there’s a cosy tearoom serving delicious breakfasts and cream teas. The pleasant terrace is perfect for enjoying the sunshine on lazy summer Open: Mon-Sun 8am-11pm afternoons, but in cooler months you may prefer to settle down by the open fire in the snug. As pups and muddy boots are both very welcome, this is also a perfect spot to break up a dog walk. The delightful setting is just one of the reasons that so many people enjoy visiting. This hidden gem is presided over by Luke Payne and Emma Daniels, who have managed to lend this gastropub a mixture of traditional charm and contemporary style. The spacious interior houses local artwork, inviting Chesterfield sofas, and log burners, creating a relaxed and cosy atmosphere that only enhanced our anticipation of the culinary delights to come.

Landlord and talented chef Luke showcases a real mastery of flavour, bringing together seasonal, sustainable ingredients to create a sumptuous menu. It is hard to believe that Luke is completely self-taught, as the dishes he produces are simply outstanding. Inspired by Hugh Fearnley-Whittingstall’s River Cottage philosophy, he has built a charming gastropub where he can showcase his unique style with no restrictions. A real emphasis is placed on ethical and sustainably sourced produce, and you can expect free-range meat reared to the highest welfare standards, alongside hand-dived scallops and sustainably caught seafood. I began with Isle of Wight tomatoes with burrata, croutons and garlic oil, while my companion tucked into the most perfect scallops. I followed with stone bass fillet accompanied by crispy kale, dill pickle, samphire and tartare sauce – a dish that tasted as delicious as it looked. My companion’s main course was met with equal delight. Native-breed sirloin steak served with beef fat potato, king oyster mushroom, divine buttery spinach and pickled shallots was soon devoured. For a final flourish, we finished with Bruce Farm strawberries with buckwheat bee pollen and Tunworth ice cream, and sea buckthorn posset with meringue, fennel biscotti and elderflower. Local beer and cocktails provide the perfect pairing to complement the impressive bill of fare. Friendly service was coupled with a relaxed atmosphere, which ensured our entire experience was quite simply faultless. We left The Pack Horse singing its praises and determined to return.

The decor in this modern, spacious restaurant is as tasteful as the food it serves. An open kitchen allows diners the chance to watch as Sicilian and Venetian dishes are perfectly recreated. The dining experience at Viva is authentically Italian, £15 to with a vast menu offering a variety of bread, starters, pizza, pasta, risotto, meat £25 and fish dishes, effectively catering for all tastes. At Viva, meals are expertly created from simple, fresh, ingredients. Sipping a glass of house red, we kicked off with seafood tapenade and antipasto misto. The tapenade, featuring a tasty combination of smoked salmon, prawns and anchovies with caramelised onions, olives, capers and mascarpone cheese, topped with a Parmesan crisp, was a perfect start to the meal. My son’s selection of cured Italian meats was garnished with sundried tomatoes, capers and peppery rocket, topped with shaved Parmesan. Food Served: To follow, I tucked into a juicy Mon-Thurs 6pm-10pm; chicken breast with bacon, onion Fri & Sat 6pm-11pm; and dolcelatte cheese smothered in Sun noon-10pm rich white wine sauce, and served on a bed of spinach. My son’s salmon risotto with peppers, mushrooms and asparagus spears in creamy white wine ragu was equally accomplished. From the enticing dessert menu we tried Italian cheesecake brûlée and flaming sambuca pancake (both powerful and boozy), with ice cream and coffee. Next time we want fantastic Italian food, we’ll certainly know where to go. Italian

We dined at Angelo’s Bistro on a warm July evening, greeted by aromas of seafood and garlic, and the sound of happy chatter, as well as by Angelo himself, who ushered us to our table and fetched us drinks. Originally from Salerno, owner Angelo spent 13 years running a successful restaurant in Milford before opening Angelo’s Bistro. Evidently, loyal regulars from his restaurant have followed him to his new venture.

Fine, fresh ingredients are showcased in the range of authentic and innovative Italian dishes that populate the well-loved menu. As we perused the offering, fresh sourdough with balsamic, olive oil and homemade pesto appeared to whet our appetites. We ordered starters from the specials board, plumping for pan-fried scallops and king prawns in a cream, white wine and garlic sauce, and gnochetti in tomato and garlic sauce with spicy Italian sausage for my Food Served: Mon-Thurs companion. Next, I followed with 5pm-9pm; Fri & Sat creamy pork and red onion risotto, 5pm-9.30pm; Sun noon-4pm while my partner plumped for the mouth-watering ricotta- and spinach-filled pancakes baked in tomato sauce and topped with mozzarella. For a final flourish, we indulged in affogato with Frangelico and a divine lemon cheesecake – the perfect end to a wonderful evening. With its friendly atmosphere, excellent service, and authentic Italian cuisine you could easily forget that you are in Duffield and not on the south coast of Italy. 30

New beers are delivered all the time, but the selection is more or less evenly split between British craft beers and non-British brews. For anyone visiting, it won’t be hard to see why this venue was named East Midlands’ Café/Bistro * £10 of the Year in the Food Awards England and was shortlisted for the 2018 to awards. Competitively priced, Cool River Café & Pâtisserie effortlessly fills £13 the gap between café and restaurant. It was recently taken over by head chef Chris and partner Emily, and even incorporates a small bookshop where regular literary events are held. A veranda with outdoor seating provides a pleasantly Mediterranean vibe, while the interior is characterised by cool blue woodwork and quirky, nautical touches. Open: The kitchen is open-plan; upon entering we were greeted by a tempting display Mon-Sat 9am-4pm; of patisserie – everything made fresh on the premises with locally sourced Sun 10am-4pm ingredients. The coffee at Cool River is excellent – I enjoyed a smooth flat (hours vary seasonally, white, while my friend opted for a decadent white hot chocolate. please call for details) We lunched on lemony smoked salmon pâté and a flaky filo pastry pie with goat’s cheese, tomatoes and pesto. Both dishes came with generous sides of salad and we plumped for golden potato wedges to accompany them. The Three Roofs Café is run by Lynn Sykes, who is local to the area and often visited the café as a child. A selection of cakes, traybakes, sausage rolls and homemade hot meals are made on-site throughout the day in the bakery, using as much local produce as possible. For the early-riser, a wide range of breakfast options are available, including the full English made with locally sourced bacon, sausage, and eggs, the smoked salmon breakfast, and baked avocado and egg. Occupying an attractive Georgian building in Ashbourne’s historic marketplace, Bramhalls offers delicious homemade food and boasts a well-stocked deli. Owners Nicola and Dave Riley work hard with their amazing team to provide the perfect £8 to venue, serving quality food and drink. The café and deli are bright and vibrant £16 spaces in which to enjoy quality food and you can expect a warm and friendly welcome when you visit. During dry and sunny days, the outside seating area at the front of the café is the perfect spot in which to enjoy a hearty breakfast, lunch or a delicious homemade cake and coffee whilst watching the world go by. Seasonal produce is at the heart of the impressive menu, which includes burgers, soup, quiche, risotto and terrines. You can also buy frozen meals for dinner, and a very popular hamper service is also available. We visited for a late summer lunch, and our starters were perfect. I plumped for fresh tomatoes with creamy mozzarella, which was delightful, as was my partner’s smoked fish pâté with crunchy toast. Next, I chose an avocado and feta salad with Parmesan crisps and Open: Mon-Sat 8am-5pm; beetroot and yoghurt dressing, while Sun 9am-4pm my companion plumped for salmon and pea shoot risotto. Both dishes were simply outstanding and packed with flavour. Tempted further by desserts, we chose the mouth-watering chocolate and pecan tart, as well as a coffee and walnut cake – the perfect end to a fantastic afternoon. Bramhalls Deli and Café is the ideal destination in which to while away the time. 46

This lovely 18th-century pub is situated on the Bugsworth Basin, on the Peak Forest canal. Lovingly restored by owners Roger and Jan, this warm and friendly venue is understandably popular with locals and holidaymakers. £18 to In balmy weather there are a number of pleasant dog-friendly seating areas, £24 including a large sheltered gazebo. On cooler days, wander inside and enjoy a drink by the open fire – the extensive selection includes guest beers and a great variety of gin. The welcoming bar brings together traditional features like original flagstone floors and wooden beams, with a few quirky touches dating back to its time as a riddle factory. For those wishing to prolong their stay there are also six attractive en-suite bedrooms. We visited one weekend to sample the Sunday carvery, and it certainly didn’t disappoint. We happily tucked into heaped plates of juicy, flavoursome beef and succulent pork, served with fresh vegetables and rich gravy. But the Open: crowning triumph was the addition Mon-Sat 11am-midnight; of homemade Yorkshire puddings Sun 11am-11pm – crispy yet deliciously fluffy, these were served alongside mouth-watering homemade stuffing. After such an excellent lunch we’ll certainly be back to sample the other delights in store. The team is passionate about serving the best food and drink, and committed to using locally sourced ingredients. The homemade beef meatballs are a firm favourite with regulars, and the Navigation Inn has made a speciality of homemade pie. Traditional

Homemade food is the name of the game here and Martin and his team pull this off with ease to create a mouth-watering bill of fare. A spectacular addition to the menu is Martin’s twist on a hanging kebab, made with high-quality local meat or halloumi and drizzled with sauce. There’s also a delicious vegan option, ensuring nobody misses out. The Sunday carvery also comes highly recommended, alongside Martin’s take on tapas served in the bar. To start, my partner enjoyed an extraordinary chicken liver and blackberry Prosecco pâté, while my plate of pan-fried garlic mushrooms served Open: on crispy ciabatta was tremendous. Mon-Thurs 11.30am-3pm, Next, a mixed grill hanging kebab 5pm-11pm; Fri & Sat with chilli sauce and Mexican 11.30am-midnight; fries didn’t disappoint, while I Sun 11.45am-10.30pm sampled the perfectly roasted and tender chicken breast with crushed new potatoes. Following desserts of farmhouse ice cream served in a crispy brandy snap basket and homemade Baileys and vanilla cheesecake, we were on our way. We’ll be sure to return to this charming pub. When we called in, we sampled the melt-in-the-mouth fillet steak and delicious Barbary duck breast gently roasted in orange and ginger sauce. Vegetarians are spoilt for choice at The Ashford Arms with dishes like the three cheese pasta bake served with a rich mushroom sauce, and goat’s cheese and spinach tart accompanied by tomato and basil sauce. We’d recommend working up an appetite before you visit as The Ashford Arms serves satisfyingly hearty portions, and with such tempting options you’ll want to leave room for pudding. To round off our lovely meal, our choice of indulgent chocolate fudge brownie cheesecake scored top points. If that doesn’t tickle your fancy, why not treat yourself to a moreish cherry Bakewell cheesecake, or homemade apple pie with custard? ‘...the four recently refurbished en-suite guest bedrooms are bright and modern...’ We visited on a warm, balmy evening and were promptly shown to a table by an open window where we could enjoy a pleasant breeze. The extensive menu boasts a mixture of pub classics like steak and kidney pie, and imaginative vegetarian and fish dishes. All the meat used is supplied by a local butcher and the quality is evident in everything that comes from the kitchen. Spoilt for choice, we struggled to decide between the tasty options. My husband chose to start with a deliciously creamy mini Camembert served with pear chutney and crusty bread. My chicken parfait came with a redcurrant glaze and brown toast and was exquisitely rich. To follow, my husband tucked into hearty venison and blackberry casserole, while I enjoyed a satisfying butternut squash and spinach lasagne with garlic bread. The dessert menu was tempting and we selected both summer pudding and Maltesers chocolate crunch with ice cream. An enticing selection of Derbyshire cheese was also on offer, showcasing Hartington Stilton and High Peak mild Cheddar. Our meal was delicious from start to finish and the staff were attentive throughout.

Coming from a family that’s passionate about cooking, Dan Smith was aware of the importance of good food from a very early age. From his first cooking apprenticeship to his current position at the three-AA-rosette-awarded Peacock at Rowsley, Dan has always known that good ingredients are the basis for great cooking.

‘...good ingredients are the basis for great cooking...’ He places great emphasis on sourcing seasonal ingredients and favours late summer and early autumn when he takes advantage of the natural abundance of fresh produce. This is especially evident in Dan’s handling of English asparagus, which is only served at The Peacock at Rowsley for the few weeks that it’s in season. He believes that asparagus, both white and green, should be cooked simply when in its prime to allow its natural flavour to shine. By sticking to these principles Dan has been able to achieve his goal of maintaining a busy restaurant with happy customers and staff.

Jake’s earliest memory of food is climbing on his family’s kitchen worktop while everyone was asleep and reaching for the Marmite jar. It was clear from a young age that he was destined to work with food. Since then, Jake has worked for several reputable establishments, ascending smoothly through the culinary ranks.

‘...he creates outstanding seasonal menus...’ Jake is now at the helm of the award-winning Duncombe Arms in Ellastone, where he creates outstanding seasonal menus that never fail to impress. Jake maintains an excellent relationship with local suppliers and believes that the produce available in Staffordshire and Derbyshire is some of the best around. Jake loves the camaraderie found in the professional kitchen and intends to continue making great food for happy diners for years to come. His favourite time of the year to cook is Christmas, when families and friends come together over great food and a few tipples to celebrate and catch up.

When she was younger, Rukiya Dadhiwala was fascinated by watching her mother cook and always wanted to lend a hand. Rukiya has taken this passion for cooking and baking and turned it into a career. Rukiya’s training began at Bradford College and she continued to do patisserie and baking commissions, before landing her first industry role at Millie’s in Hayfield, where she works in the kitchen as a chef, pastry chef and chocolatier.

‘...Rukiya believes you need to be creative in everything you do...’ To succeed in the culinary world, Rukiya believes you need to be creative in everything you do and experiment with different flavours as much as possible. This year, Rukiya hopes to continue working with new flavour combinations and wants to produce more vegan chocolate for Millie’s. As a chocolatier, Rukiya’s favourite time of the year are seasonal events such as Christmas, Halloween and Valentines, when she likes to be as creative as possible with her chocolates.
