Foreword

Matt Whitfield It’s a fantastic time to eat out in Hampshire. With such a variety of establishments to choose from, there’s truly something for everyone. I was born in the New Forest and raised in Southampton, and I recently moved back to Hampshire having worked at the prestigious three-Michelin-star Eleven Madison Park in New York. It was an unbelievable experience but when the opportunity arose to return to The Montagu Arms Hotel – where I started my career – it just felt like the right decision. It’s an exciting time to work in Hampshire as more and more venues push for sustainable processes and place greater importance on local produce. It’s also clear that today’s diners expect more from their local pubs and restaurants, which creates an exciting challenge for many businesses. I consider myself extremely lucky to work in a region so rich in remarkable producers and growers. There’s such a vast array of exciting ingredients on our doorstep; it really is a food-lover’s dream. My team and I collect produce from the kitchen garden every day and ingredients often find themselves on the plate within an hour of being picked. We bake warm sourdough infused with hand-picked rosemary, as well as serving salad featuring vegetables and herbs taken from the garden. Having a real respect and connection to our produce allows us to showcase dishes with provenance to be proud of and a story to tell. Some of my favourite chefs in the area follow a similar line of thinking and it’s something I try to encourage young chefs to get excited about. No matter what you’re looking for when choosing somewhere to dine out in Hampshire, with so much choice across the region you’re sure to eat well. Brockenhurst favourite Cambium, headed by Alistair Craig, never fails to impress, and the region’s welcoming gastropubs and sunny beer gardens are a consistent hotspot for locals and an attractive prospect for visitors from near and far. I hope you’ll use this guide to discover what this beautiful county has to offer and would love to welcome you to The Montagu Arms Hotel soon.

If you’re looking to indulge in the heart of the New Forest, look no further than Cambium. Utilising the region’s best produce, including ingredients from the restaurant’s kitchen garden, head chef Alistair Craig’s (chef profile page 87) dishes are elegantly presented with exquisite flavours.

Daubing deliciously sweet-roasted red pepper purée onto thick slices of crusty homemade bread was just the start of our gastronomic journey at Cambium. Taking a seat at the intimate side-by-side banquette seating, we enjoyed a chilled glass of sauvignon from the list, which celebrates British wine as well as both Old and New World specials. While soaking up the comfortable atmosphere, we admired interior designers Sue and Bonnie Stowell’s serene palette of mossy greens and gold alongside a canvas of hand-painted trees on white walls, gold oak-leaf partitions and bird prints. This light and bright restaurant is the perfect backdrop for Alistair’s fresh approach to cooking. Our starters were a classic example of the scope of his style. My plate of delicate pheasant egg with leek, brown shrimp and seaweed mayo boasted clean, distinct flavours. My partner’s smoked terrine was the opposite – confident and robust, with spicy chunks of chorizo, chargrilled sweetcorn and punchy spring onion. The surprises kept coming. My partner’s lamb arrived beautifully blushing and stole the limelight. My brill had light, crispy skin spiced with cumin and chilli, and was paired with a cool yoghurt dip, cucumber pappardelle and the lightest bhajis I’ve ever tasted. The best was saved until last. My orange parfait, milk chocolate mousse and ginger cake was warming, spicy, rich and decadent. My partner’s slab of chocolate crémeux with caramel crisps and ice cream was equally indulgent. Our lovely waitress, Anna, has worked at Careys Manor Hotel for over 47 years and she has a plethora of knowledge. Cambium is a refreshing choice for foodies looking for something magical. Visit for fantastic flavours, flawless service and relaxing surrounds. Our only mistake was not booking a room so we could roll into bed afterwards.

The Montagu Arms’ flagship restaurant The Terrace showcases head chef Matthew Whitfield’s extraordinary talent for creating innovative modern British dishes. Since taking up the post in January, Whitfield has reinvented the à la carte and tasting menus. Whitfield brings an exemplary record to the restaurant, having previously worked for New York’s three-Michelin-starred Eleven Madison Park. From the moment we were ushered into the restaurant, we knew we were in for a treat. The intimate dining room overlooks manicured lawns and pristine hedges, while inside mellow lighting and forest hues of green and auburn soften the edges of the oak wood panelling. The atmosphere is warm, with friendly and attentive staff setting the tone for an unforgettable culinary experience. We sampled the seven-course tasting menu, which is prepared with the utmost consideration to texture and aroma as well as flavour – there’s a stroke of genius in every creation. Each dish showcases an element of local produce – be it picked straight from the restaurant’s organic kitchen garden, from across the New Forest, or from neighbouring coastal counties Hampshire and Dorset. We started with the Jerusalem artichoke salad with garden-grown herbs, pickled mushroom and orange yolk from a freshly laid hen’s egg, followed by sublime slow-cooked squid served with delicate shiitake mushroom consommé. Next, we sampled the roasted fillet gurnard accompanied by Bolognese and fennel purée, and the exquisite Szechuan pepper duck with sensational bursts of ginger, orange and roasted cumin. Both dishes were executed to perfection and presented superbly. Charismatic sommelier Sergio was on-hand to pair dishes with iconic world wines from an extensive list. For a final flourish, a heavenly cheese trolley was served, alongside a lime and lemongrass sorbet served with spiced pineapple and coriander, and a mouth-watering chocolate bar with milk sorbet and coffee. With three AA rosettes to its name, it’s only a matter of time before The Michelin Guide graces The Terrace with a star. We’ll certainly revisit soon, but next time we’ll stay so we can savour the delicious breakfast too. *Price represents the cost of a three-course meal from the set menu and a glass of wine.

Widely regarded as the go-to destination for a memorable dining experience, this little piece of paradise forms a perfect escape. The two-AA-rosette-awarded Oak Room Restaurant is truly a place for special occasions. Oak-panelled walls, long silk curtains with tasselled swags and spectacular chandeliers create a sumptuous setting, while guests can enjoy beautiful views of the garden and lawns. Executive chef Michael Lloyd joined in 2016 and has since worked his magic, presenting refreshing and innovative menus with a distinctly British twist. Incorporating the freshest ingredients possible, Lloyd wowed with a tasty amuse-bouche of honeyed carrot with star anise, followed by homemade bread – which I always appreciate. Starters comprise seven delectable dishes; my honey-whipped goat’s cheese served with paper-thin onion wafers and soaked prunes managed to both whet my appetite and delight my palate, while my partner’s creamy cauliflower soup had the added interest and flavour of artichoke. After some deliberation choosing my main course, I settled for the pea and truffle risotto. The dish had the perfect balance of seasoning, the fresh spring pea flavour bursting to the surface, with just a touch of Parmesan and truffle. My partner plumped for the duo of Cornish seafood, comprising stone bass and salmon served with lobster bisque. A keen seafood-lover, he was extremely impressed with the freshness and flavour of the dish. I was by now replete, but my partner indulged in dessert, opting for homemade ice cream. With a crumb base and served with fresh strawberries, he declared it a total triumph. Excellent coffee and petits fours rounded off an exceptional meal. To complement the food is an award-winning wine list, with an excellent selection of home-grown options as well as some carefully selected worldwide favourites. The attentive and knowledgeable team is always on-hand for recommendations. The elegant yet warm surroundings, attention to detail and exemplary service make any visit an unforgettable experience. It’s no surprise that this is such a popular destination.

As well as the luxurious Dining Room restaurant, the hotel is home to The Kitchen – a more casual eatery that has been developed in collaboration with noted TV chef James Martin. Inside, the open-plan layout and large windows afford the space a light and airy feel while also allowing guests to watch the chefs at work. The à la carte menu is available throughout the week and head chef Adam Hart delights in using produce grown in the restaurant’s own beds and greenhouses, ensuring maximum flavour and freshness in his dishes. The selection of starters includes a number of appetising plates: try the mouth-watering salt and vinegar pork scratchings or the grilled tiger prawns with roast lemon – these are perfectly juicy and packed with flavour. Moving on, the list of mains encompasses superfood salads and sumptuous burgers, as well as homemade pizzas and grilled dishes such as beer-brined chicken supreme and salt-aged rib-eye steak. Famous for his sweet-tooth, James Martin has also developed an irresistible list of desserts for The Kitchen. Who can resist a warm chocolate and raspberry mousse, or cinnamon churros with Bailey’s dipping sauce? Attached to The Kitchen you’ll also find the cookery school, where members of the public can learn from experienced chefs. Classes can focus on anything from summer salads to spicy curries, beautiful breads to bespoke gin. There are even courses for kids – these are a great way to get them interested in food.

This magnificent Grade I listed building was designed by celebrated architect, Edward Lutyens and features landscaped gardens by Thomas Mawson, with input from Gertrude Jekyll. As soon as you walk through the wrought-iron gates of the New Place Hotel, you’re immersed in the picturesque 32-acre surroundings it’s renowned for. Executive head chef Mark Grieveson has produced an impressive menu that makes use of fresh, locally sourced produce and changes throughout the seasons. High-quality ingredients are spun into imaginative dishes that boast the type of flavoursome flourishes that make every mouthful memorable.

From the first sip of the Italian house wine to the last bite of our desserts, the entire dining experience was exceptional. My partner chose to start with braised beef arancini enhanced by crispy onions and horseradish crème fraîche, while I opted for the smoked mackerel pâté and onion salad. My main was a pretty and delectable pearl barley risotto with roasted squash, pumpkin, sage and goat’s curd; it was a warming and tasty choice for a cold night. My partner chose the chargrilled pork rib-eye steak with unique beer mustard, beans, courgettes, Parmentier potatoes and spiced butter. With such an intriguing menu, it was hard to decide what to sample. It was the same with the puddings – all the classics but with a delicious twist. My decadent sticky toffee pudding was spiced with rum and accompanied by banana mousse and clotted cream. My partner was delighted with his cheeseboard, and tucked into creamy Stoney Cross, Isle of Wight Soft, and Brighton Blue, alongside plenty of crackers and a bunch of sweet grapes. With the option to enjoy its on-site gym, pool, croquet lawn and cricket pitch, the New Place Hotel is a glorious Hampshire haven for those looking for a glamorous getaway. A special afternoon tea is served from 3pm every day and you can also host events at the venue. Owner Patrick Vaughan-Fowler and his dedicated team ensured that the pub was sensitively restored and decorated to retain its original character and preserve its historic features. The aim was to elevate the pub beyond its former charm with the addition of comfortable guest bedrooms with modern amenities, a relaxed and inviting interior and a stunning food offering to match. Focused on local, seasonal ingredients, head chef Sam and the dedicated team at the George & Dragon cook up a storm, creating new dishes every week that demonstrate a clear love of the craft. For Sam it’s all about making the best use of the highest quality ingredients and produce when it’s at its freshest. An ever-growing pantry of menu staples is made fresh in-house, including bread, sauces and condiments – the team has even created a fermentation chamber so that fresh produce can be pickled and preserved to maximise the use of each ingredient and reduce food waste. Alongside a dazzling menu of modern British delicacies, George & Dragon prides itself on its tapas lunch menu. The menu offers plenty of choice, and dishes may include the likes of Marmite potatoes with truffle cream, and pheasant and chorizo skewers. A superb Sunday roast is served alongside the main menu, making the George & Dragon a perfect spot for an end-of-week treat. The daily shipping of fresh fish from Cornwall allows the team to create innovative seafood specials on a daily basis. Equally seasonal, local and carefully selected are the drinks on offer at George & Dragon. From the constantly rotating range of craft spirits from exciting British distillers and unique cocktails to the extensive wine list, there’s something for every palate and pocket. Owner Patrick’s background in the industry is evident from the impressive array of lesser-known European varietals. Village inns don’t come much better than this. There’s a reason why locals rave about this country pub; top-quality drinks, impressive food and a community atmosphere are what the George & Dragon is all about. Recently refurbished, The Jack Russell has been transformed into an outstanding countryside retreat that produces excellent British dishes made using exclusively seasonal produce, often caught in Faccombe Estate. You can even host your own shooting party here, where the chefs will butcher your game on-site for you. The Jack Russell is keen to maintain its ethos of using only the freshest local produce possible. On the main menu you can expect to find starters like black pudding and venison Scotch egg, and Faccombe rabbit spring roll with julienne vegetables dressed with soy and sesame. After much deliberation, I plumped for the surf and turf: wholetail scampi and chargrilled rump steak. Cooked rare, my steak was perfectly tender and complemented the deliciously crispy scampi. My wife’s pea and asparagus risotto with Parmesan crisp was equally impressive.

My friend’s homemade wagyu beefburger was packed with flavour, while my moules marinières was equally gratifying and came with gorgeous homemade sourdough. All of the devilish desserts are impossible to resist. With such a great selection on offer it was difficult to choose. I pondered over peanut parfait with shards of meringue, as well as Eton Mess, but my love of chocolate won out and I plumped for a brownie paired with intense coffee ice cream. Every effort has been made to source produce as locally as possible, and the kitchen team uses these ingredients with skill and precision. To start, we chose the Hampshire venison salami with beetroot sorbet, and the beautiful twice-baked cave-aged Cheddar cheese soufflé. To follow, I plumped for the aged Hampshire rib-eye steak cooked rare and accompanied by smoked paprika chips, vine tomatoes, and parsley butter, while my wife tucked into the succulent panko chicken Supreme served with Jersey Royals, asparagus, baby carrots and orange dressing. Both Open: Mon-Sun 11am-11pm dishes comprised a medley of colours and textures and were a total delight. Our enjoyable evening ended with a mouth-watering sticky toffee pudding with toffee sauce and stem ginger ice cream, and an excellent selection of sorbets. Planning a stay in the region? Each dish was superb, and with attentive service from the waiting team the evening was a real joy. ‘...charming interior...’ We chose a medley of tapas from an extensive selection – it was almost too hard to choose, but the friendly and attentive staff were on-hand with recommendations, and to explain the more unusual menu items. Next, we selected from the specials board, plumping for the pollo chiclana, a chicken dish with king prawns and chorizo in tomato and chilli sauce, plus the fresh sea bass – a whole fish served with garlic butter and herb sauce. Both dishes were excellent. Other main course dishes that are sure to delight the palate include the vegetarian paella, and the Iberico lamb in a red wine and apple jus served with crispy capers and potatoes. We couldn’t resist rounding off our delicious feast with dessert and plumped for the mouth-watering churros served with warm chocolate, followed by a selection of Spanish cheeses served with membrillo and toast, both of which were exceptionally tasty. The kitchen team has a well-honed range of skills – evidenced through high-quality flavour and presentation. Portions are plentiful – you won’t go hungry here.

The menu is reworked every season to make the most of the finest local produce available, with many ingredients coming from the New Forest. Starters come in the form of 16 delectable modern tapas dishes. We plumped for the crispy squid and burnt chili mayo, lamb kibbeh, cucumber and tangy yoghurt alongside beer- and treacle-cured beef and wild mushroom arancini – all of which were a total triumph. Fresh bread is offered along with two tasty dipping sauces. The knowledgeable sommelier was more than happy to recommend the perfect wine pairing for our meal. With over 25 rotating wines available by the glass, there’s truly something for everyone. As you might expect, choosing your main course is a difficult task with so many tempting dishes on offer. For me it was the pasta of the day, a light concoction of tomatoes, feta and linguine. My partner couldn’t resist the pan-fried hake with a generous helping of baked clams, Iberico ham and hazelnut. The side dishes are another joy, with interesting salads and a delightful selection of seasonal vegetables. The mouth-watering dessert menu makes life extremely complicated for the sweet-toothed. The saffron and honey cake with honeycomb and clotted cream was enticing, as was the Alexander chocolate mint fondant with white chocolate ice cream, but in the end it was raspberry soufflé with Alexander rose chocolate and sorbet for myself, while my partner was delighted with his crema Catalana with almond polvorones. Attentive service coupled with stylish yet secluded surrounds ensure that your visit is as memorable as can be.

My marvellous starter of cod and crab fishcakes was perfected with a hit of chilli heat from the accompanying dipping sauce, while my partner’s cauliflower soup was equally pleasing. I followed with a mouth-watering braised featherblade steak accompanied by a medley of roasted vegetables and potato gratin. My partner’s butternut squash risotto with Parmesan shavings was delectably fresh and perfectly seasoned to highlight the delicate flavours. To finish I couldn’t resist the exquisite crème brûlée, while my companion’s pineapple, passion fruit and raspberry vacherin was both a delight to observe and a dream to eat.

Expect to see Mr Whitehead’s cider and apple juice, real ale from many superb local microbreweries, wine from Priors Dean Vineyard, cheese from Lyburn Farmhouse, meat from local farms and much more. Considering the level of care taken over provenance, it’s no surprise that The Selborne Arms has won so many awards over the years.

In fine weather head outside to the large terrace, which can to £28 seat 60 sun-seeking patrons. Brunch is available until 4pm and proves popular with locals – think full English, French toast, and smashed avocado with cherry tomatoes atop toasted focaccia. We visited in the evening and perused the extensive offering. The menu features a selection of favourites and there’s a specials board listing an array of tempting dishes that make deciding what to choose a difficult task. I opted for the satisfyingly retro prawn and avocado cocktail with a delicately spiced Marie Rose sauce, while my partner plumped for the tasty lamb kofte. To follow, I Open: Mon-Sun 10am-11pm sampled a delicious chargrilled Food Served: chicken Caesar burger, stacked with Mon-Sat 10am-9pm; streaky bacon and melted Monterey Sun noon-8pm Jack. My husband’s main of lamb medallions with creamy Dauphinoise potatoes and seasonal greens was also a hit. For pudding we shared a hearty portion of apple and sultana crumble with lashings of custard. Smooth, aromatic coffee rounded off our evening, which was enhanced throughout by the friendly, attentive staff. A visit to this charming spot comes highly recommended. We started with a seafood plate and polished off every crumb of the delicious whitebait, lightly dusted calamari, prawn and avocado cocktail and crab mayonnaise. I was in the mood for real comfort food and chose a hearty vegan Open: falafel burger in toasted focaccia to follow. My partner opted for the smoked Mon-Sun 8am-10.30pm haddock fishcakes accompanied by flavoursome Provençale sauce, which was Food Served: Mon-Sun equally delicious. We rounded things off with chocolate brownie, the perfect 8am-11.30am, noon-9pm treat for those with a sweet-tooth. Heavenly chocolate sauce was served over a warm, fudgey brownie, while a scoop of Devonshire cream ice cream cut through the rich chocolate perfectly. Steeped in history, this is the perfect spot for a tasty meal and refreshing drinks, followed by a sunny stroll on the seafront. With a sunroom and sea-facing terrace also on offer, I can’t wait to return for a summertime lunch to admire the sea views reaching as far as the Isle of Wight. The Beach House also offers accommodation for those looking for an idyllic weekend away.

This country pub is full of charm, and is named after the famous £28 literary pig created by comic author P.G. Wodehouse – which explains the vast array of porcine figurines that line the shelves of the venue. These unusual ornaments have been donated by customers and staff members from as far as America and Bulgaria. After perusing the menu and blackboard specials, my partner and I opted to treat ourselves to a whole baked Camembert spiked with garlic and thyme, served with bread, celery and carrot sticks for dipping. I then selected a Open: Mon-Sat 11am-11pm; Picpoul de Pinet from the well-compiled wine list to accompany my main Sun noon-10.30pm course: the kitchen’s take on the classic chicken Caesar salad, which was Food Served: satisfying in every sense. I also Mon-Sat noon-9pm; sampled a little of my companion’s Sun noon-8.30pm West Country sirloin steak. Cooked rare, it looked delicious and was so tender that the knife glided through it effortlessly. After deliberation I chose a dessert of coffee panna cotta covered with sweet, sticky caramelised walnuts. Indulgent, rich and delicious, this dessert is a coffee-lover’s dream. Following a creamy coffee from the Colourful Coffee range, I was on my way, leaving behind a charming pub I will be returning to.

Dining beneath a plethora of assorted birdcages suspended from a sky-high vaulted ceiling – some containing enormous glittering chandeliers – I enjoyed a generous serving of potato skins with Open: Mon-Sat 11am-11pm; a cheese rarebit topping and crisp smoked bacon, followed by honey-roasted ham Sun 11.30am-10.30pm accompanied by a brace of eggs, Food Served: triple-cooked chips and picalilli Mon-Sun noon-9pm – nostalgic perfection. Unable to manage a full-sized pud, I elected to try one of the mini puds on offer – a chilled, seasonal fruit crumble – just enough of a sweetener to finish the meal, but no deterrent to enjoying the fudge that accompanied my coffee. With a charming outside dining area as well as a cosy snug complete with a log burner and well-stocked bookshelves, you’re sure to want to return to The House Martin time and again. The traditional menu features a range of choice to suit all tastes. Inside, the farming-inspired decor enhances the £16 to pub’s countryside theme – think agricultural tools adorning the walls, colourful £28 trinkets on the windowsills, and two log-burning fires to keep diners warm and cosy. There’s also a gorgeous beer garden that’s perfect for warmer weather. The varied menu features a range of well-loved classics. To start, my partner and I shared the veggie board, which provided the opportunity to sample an array of tasty nibbles. The four-part platter consisted of hummus and baba ganoush with croutes; mixed olives and feta; warm falafel with tzatziki; and smoked paprika- and maple-marinated tempeh skewers. For my main course, I opted for sumptuous cod au vin – a generous cut of flaky fish in red wine and Open: Mon-Sat 11am-11pm; bacon sauce. Every mouthful was a symphony of moreish flavours. My partner Sun 11am-10pm was thrilled with the dish she chose: Food Served: RSPCA-assured British rose veal. Mon-Thurs noon-9pm; The tender meat was bursting with Fri & Sat noon-9.30pm; flavour and cooked to perfection. We finished on a sweet note with Sun noon-8pm a rich chocolate and coconut torte served with almond cream, a delightful dessert that just so happened to be vegan. You’ll find traditional pub classics like burgers, steaks and pies, alongside more adventurous dishes such as cod au vin, Moroccan lamb tagine and vegan mac and cheese. From the wonderful selection available, we chose to start with a Butcher’s Plate to share, comprising succulent pork belly bites, lamb kofte, glazed sausages and Buffalo hot wings. Each element was as delicious as the last, and provided a tasty opening to the meal. To Open: follow, I indulged in a chicken Kiev with smooth mash, green beans and roasted Mon-Thurs 11am-11.30pm; tomato sauce. Beautifully presented and with succulent and tender meat, this Fri & Sat 11am-midnight; main course was a delight. My wife chose the pan-fried salmon pavé served Sun noon-11.30pm atop potato hash with braised Food Served: leeks, cabbage and peas – a fish Sun-Thurs noon-9pm; dish that impressed even this Fri & Sat noon-10pm seafood sceptic. To round things off in style, we opted for the sticky toffee and rum sponge and the apple and sultana crumble – pure comfort food. The attentiveness, conviviality and overall ambience of The Portsmouth Arms make it a wonderful place to dine, drink and relax. I should know – I return as often as possible. His tales of the ghost who frequently leaves five pence pieces around the place had us both hooked; it is after all rumoured to be the most-haunted pub in Britain.

As the rain poured outside, we happily warmed ourselves by the roaring fire while perusing the extensive menu. The menu showcases the best of Britain, and every effort has been made to source produce as locally as possible. To start, we enjoyed breaded Brie wedges with cranberry sauce, and salt and pepper chicken enhanced by barbecue sauce and salad. Next, I was tempted by the homemade cottage pie, but instead opted for the mouth-watering double beefburger, while my partner’s liver and bacon served with mash and peas was a welcome Open: throwback to traditional pub grub. Sun-Thurs 11am-11pm; The evening ended on a high note Fri & Sat 11am-1am thanks to my chocolate and vanilla panna cotta and a moreish crème brûlée for my companion – both equally delicious and presented immaculately. With a well-kept beer garden, a delicious bill of fare and live music and quiz nights throughout the week, we’ll undoubtedly be returning soon. This pub is a local hub at the heart of the community, serving quality food, tasty Badger ales and a varied selection of wine. When we visited, the menu offered choices to delight my vegan friend as well as an array of meat and fish dishes. My starter of baked goat’s cheese was enhanced by the sweet flavours of honey and orange, a combination that delighted the palate. My main course of 8oz flat-iron steak was beautifully Open: cooked with deliciously smoky flavour and a superb accompaniment of Mon-Sat 11.30am-11pm; crab butter. My companion opted to start with Buffalo tempeh accompanied by vegan garlic mayo and proclaimed Sun noon-10pm that the tempeh was the best Food Served: she’d ever tasted. On arrival we admired the attractive architecture that linked the original building to the barn and modern £16 to dining area. We were welcomed into the warmth of the large bar, which is £28 stocked with Badger beer, wine and flavoursome Rocket Espresso to please even the most discerning coffee drinkers. We relaxed in the beautiful dining room and sipped chilled sauvignon blanc as we marvelled at the menu, which has an array of options for vegetarians, vegans, meat-lovers and gluten-free diets, as well as smaller portions for those with less of an appetite. To start, I couldn’t resist a steaming bowl of soup with a warm crusty baton, while my partner opted for rabbit and cured pork terrine with Melba toast and pickled blackberries. We followed with rich, Open: Mon-Sat 11am-11pm; creamy homity pie encased in buttery pastry with a herb crumb top, and a Sun 11.30am-10.30pm trio of flavoursome game sausages Food Served: Mon-Sat with creamy mash and Badger noon-9pm; Sun noon-8pm ale gravy. For dessert, I enjoyed a rich chocolate and coconut torte – a delicious addition to the pub’s vegan offering – while my partner savoured glorious coffee and walnut panna cotta topped with caramelised walnuts. We’ll definitely be returning to enjoy a lazy summer lunch on the flower-bedecked patio, or perhaps sample a Sunday roast complete with unlimited Yorkshire puddings and rich gravy. 82

Alistair’s career began at Cambium’s sister establishment, The Terrace Restaurant at The Montagu Arms in Beaulieu. He left in 2013 for the two-AA-rosette-awarded Horseshoe Inn in Scotland. His position as head chef there gave him full responsibility for running the kitchen and creating a delicious menu of traditional Scottish dishes.

Dean’s career in hospitality began at the age of 14 when he worked as a pot washer in his local pub. He continued his catering education at Highbury College in Portsmouth, and it wasn’t long before he began moving up the ranks. He was thrown in at the deep end as head chef of a busy pub at the tender age of 18. Dean is currently at the helm of The Old Mill in Botley, where he focuses on serving crowd-pleasing British dishes made using the finest local produce. He describes his cooking style as fresh and unfussy, and prides himself on allowing the ingredients to speak for themselves.
