Foreword

Dan Smith There has never been a more exciting time to dine out in Kent. With such a wide variety of establishments to choose from, and an increasing number of innovative new chefs settling here, there are restaurants, pubs and cafés to suit all tastes. The county’s dining scene has undergone a dramatic change in the last few years, and the increasing popularity of casual dining, food markets and street food has made the industry increasingly accessible. Widely considered the Garden of England, the stunning county of Kent is a chef’s paradise. The mixture of sweeping countryside, urban utopias, coastal towns and villages mean that we get an incredible variety of fresh, local produce. With this natural abundance and a growing pool of talented chefs, I really believe Kent is on its way to becoming the country’s culinary capital. In the current political climate and with such uncertain times ahead, it’s more important than ever to form strong links with local producers, suppliers and businesses. Provenance has become a major part of most restaurants’ menus, and there is a conscious move towards understanding where produce comes from. Sustainability is of the utmost importance, and businesses are increasingly taking responsibility for it. Dining trends are constantly changing and in recent years we’ve seen a shift in favour of a more relaxed dining experience. At Fordwich Arms we endeavour to offer top-quality restaurant-style food in a comfortable setting, to ensure that every visit is memorable for all the right reasons. Our menus are ever-changing to make use of the freshest seasonal produce, but we couldn’t achieve this without the incredible support of local farmers and suppliers. Kent generates some of the finest produce in the country, which provides its chefs with incredible scope for creativity. Despite having only lived in Kent for a short time, I was immediately struck by the passion displayed by so many people here – from suppliers and chefs to winemakers – to produce the very best. This guide really showcases the calibre of the creative, ambitious people across this beautiful county; no matter what you’re looking for there’s something to suit everyone.

For my main course I savoured pan-seared duck breast with baby beetroot, earthy Romanesco broccoli and burnt cauliflower purée. My husband opted for succulent pork fillet wrapped in bacon with perfectly crisp crackling, confit potatoes and celeriac purée. Every dish had clearly been meticulously thought out to achieve the perfect balance of complementing flavours and beautiful presentation, making each course a multi-sensory delight. The building still boasts many of its original features, with the giant inglenook log fire, beams and brickwork complemented by the £20 to welcoming atmosphere. £30 The restaurant is spacious, thanks to a sympathetic extension. Our table was on one of the cosy upper levels, in a quiet nook. We perused the weekly changing menu and decided we were too peckish for light bites. After studying the specials board – which offers delicious dishes made to order using locally sourced ingredients – we plumped for homemade pâté with toast and the Sussex smokie to begin. They proved excellent choices and we couldn’t wait to sample more. For the main course I had fisherman’s pie – prawns, salmon and haddock in a creamy white wine sauce topped with cheesy mash. The seafood was wonderfully flavoursome and the cheesy mash complemented it perfectly. Open: Mon-Sat 11am-11pm; My partner was torn between the Sun noon-10.30pm roast duck and lamb shank, but Food Served: Mon-Sat eventually decided upon the latter noon-2.30pm, 6pm-9pm; thanks to the accompanying garlic Sun noon-4pm and root vegetables. He seemed very happy with the choice and showered praise on the tender meat. A cheeseboard rounded off our meal. With its convivial ambience, friendly service and top-notch food and drink, The Cock Inn is an unmissable destination. Modern British

The menu is far from the usual pub fare – locally sourced fresh fish and game are complemented by a wide selection of accompaniments. Starters included pressed chicken and chorizo terrine with paprika crackling; braised ox cheek with cauliflower purée; and smoked haddock velouté with a poached egg, which was as light as air, deeply savoury and as satisfying an introduction to a meal as you could dream of. My personal favourite starter of carrots served five ways, which comprised honey-roasted carrots enhanced by purée, oil, crisps and carrot tops, demonstrates the imagination of the chefs and a sustainable ethos. Main courses such as sous-vide pork fillet with crispy pig’s cheek, venison loin with braised shoulder and roasted rack of lamb are made using meat from Kent farms. The game is sourced from barely five miles away and this really does have an impact on the flavour. Pan-seared chalk stream trout served atop soft herb risotto with smoked mussels and pancetta was irresistible. Vegetarians are treated to caramelised onion and blue cheese suet pudding accompanied by roasted red cabbage, a dish that would entice even the most ardent of meat-eaters. A fellow diner remarked that they didn’t want the meal to end – a testament to the quality of the food and presentation. Puddings are a harmony of delicious flavours – the treacle tart paired with blood orange sorbet was an impressive balance of sweet and tart. A fine selection of dessert wine and Port is available to conclude your meal with options served by the glass or bottle. The staff are warm, friendly and knowledgeable, the service is excellent and the atmosphere relaxed. Large parties and special events can be hosted in the spacious conservatory area and paved, walled garden. The Dog also offers overnight accommodation; what better way to end a wonderful meal than to sink into a comfy, freshly made bed?

The Plough has a well-deserved reputation both as an events venue and as an exceptional restaurant. Decorated with impeccable taste in warm blue and slate grey, with vibrant modern artworks dotted about, the interior is simultaneously comfortable, elegant and understated. We visited with high expectations and this award-winning spot exceeded them. The menu offers an excellent selection, with something to suit all palates, and the locally sourced produce all comes with traceable provenance. The restaurant also incorporates a large viewing window so guests can watch the chef and kitchen staff at work.

I chose to start with haddock and tarragon croquettes – succulent bites of white fish encased in a deliciously crisp coating and complemented by pea purée and charred baby gem. My wife opted for smoked salmon and nori terrine with baby beets and salad – a delectable dish, both beautifully presented and bursting with flavour. We were hard-pressed to choose between main courses, especially as we’d heard The Plough’s reputation for exceptional steak and lobster, but we were tempted by other options on this occasion. I selected the perfectly cooked roast duck breast, with a rich confit duck leg pastilla, and found it pink and succulent. The duck was served with fondant potatoes, celeriac purée and pickled mushrooms, providing an excellent balance of texture and flavour. My companion opted for melt-in-the-mouth pork tenderloin saltimbocca, which was a triumph. The meat was perfectly cooked and the accompaniments of crispy pulled pork cheek, creamy mash, wilted spinach and cauliflower purée made it a feast for the eyes as well as the palate. The dessert menu presented an array of tempting options, and we sampled an indulgent passion fruit crème brûlée with almond biscotti and tangy passion fruit jelly, and a Black Forest brownie – a chocoholic’s dream enhanced with clotted cream and homemade nut cracknel. We finished our evening in the bar area, and as we visited on a Friday – the regular live music night – were entertained by a live band as we sipped our drinks. Having thoroughly enjoyed our evening, we will certainly be planning a return visit soon.

My wife’s tastebuds were delighted by 12-hour-braised shoulder of lamb, with tortellini, spinach and wild garlic pesto and carrot purée. To accompany our meal we selected a bottle of elegant, fruity Clos de Gat syrah. We were very impressed by the attention to detail, with every beautifully presented dish as appealing to the eye as it was to the palate. Named for the iconic Little Ships that set sail for Dunkirk in 1940, this delightful venue is idyllically situated overlooking Ramsgate harbour and the sea beyond. The interior is airy and pleasantly atmospheric, painted a deep blue with wooden floors and pretty retro pendant lights. We were welcomed by the friendly staff and shown to a cosy table to peruse the menu. Though the à la carte was brimming with delectable options, we couldn’t resist the daily specials. After much discussion I chose sweet potato, butternut squash and rosemary soup and on such a cold, blustery day it was just the thing to warm me up. Thick and rich, the delightful soup came with crisp croutons and Parmesan cheese. My husband opted for sensational pâté en croute with pistachios, quince chutney and toasted local sourdough.

I selected a delectably rich bouillabaisse of monkfish, clams, prawns and mussels, served with new potatoes and warm local sourdough. If you’ve never tried bouillabaisse before, I’d recommend visiting Little Ships for your first experience – you’ll struggle to find better. Before enjoying our puddings we took the opportunity to look at the Little Ships memorabilia displayed throughout the restaurant. Standing out against the blue-green of the walls are black and white photographs, maps and even an old Dunkirk sign to bring the historical event to life. Above our table was the original front page of a newspaper from May 1940, which was a great talking point. We finished our meal with two fabulous puddings and two cups of tea. My husband selected a scrumptious Bramley apple, blackberry and almond crumble with vanilla ice cream. I couldn’t resist the warm banana cake with indulgent caramel sauce. Both were so good they would have justified a visit in their own right.

In the centre of Canterbury, overlooking the magnificent cathedral, you’ll find The Marlowe, where theatre fans flock to enjoy some of the best touring shows and performances in the country. It isn’t only the fantastic shows that keep people * returning to this unique venue time and again, though, but the whole experience: £20 from the superb service to the delectable food served in its laid-back café, bar and restaurant, The Green Room. Here, fresh ingredients, many of which are sourced from local suppliers, are used to create superb British dishes with a contemporary twist. We dined from the pre-show menu, which offers two courses for £16.50 and three for £19.50. The atmosphere was relaxed yet lively, and there was a buzz of excitement in the air in anticipation of both the delicious dishes to come and the show we were to see afterwards. The wine list is diverse, interesting and well priced. I chose a glass of Chapel Down Flint Dry, which paired beautifully with my starter of perfectly pink smoked duck with celeriac remoulade and spiced plum syrup. Next, I Food Served: pre-show tucked into a main course of succulent meals served two hours pan-fried chicken breast with crisp, before each performance buttery purple-sprouting broccoli, creamy mustard sauce, rosti potato and crispy bacon. I couldn’t resist finishing with dark chocolate tart with zingy orange jelly, crème fraîche and rich chocolate sauce, as well as sampling some Canterbury cheese with a lovely glass of pinot noir. I started with skewers of roasted tempeh, cherry tomatoes Open: and red peppers flavoured with smoked paprika and maple syrup. A Mon-Sat 11.30am-11pm; wonderful flavour combination, the subtle notes of maple and paprika worked Sun noon-10pm perfectly with the juicy veg. My husband enjoyed a classic starter of whitebait Food Served: with tartare sauce, which provided Mon-Thurs noon-9pm; a delicious opening to the meal. For Fri & Sat noon-10pm; the main course we found a range Sun noon-8pm of tempting options including West Country sirloin steak, beer-battered fish and chips and a selection of tasty burgers. After much deliberation, I plumped for the moreish homity pie served with carrot mash, Savoy cabbage and roasted tomato sauce. My companion’s braised chicken leg in a tomato, red pepper, courgette and smoky chorizo stew was both comforting and mouth-watering.

We visited the branch on St Dunstans Street, and were thoroughly impressed with our dining experience. Upon entry we were greeted by rustic decor, with brightly coloured rugs adorning brick walls, and a warm glow coming from the log-burning stove. A smiling waitress showed us to our table before presenting us with the comprehensive menu. After settling on a Turkish white wine that received a gold award at the 2016 Sommelier Wine Awards, we perused the varied menu. From the selection we nibbled roasted aubergine in creamy yoghurt, fresh squid that was fried and served with tartare sauce, falafel with hummus, and huge aubergines stuffed with roasted vegetables. Everything was delicious, with colours, flavours and textures combining to delight our tastebuds. To follow I plumped for the chicken shish from the list of house specials, which comprised succulent pieces of spiced chicken drizzled in yoghurt. It was incredible, and despite our generous first course, I ate every bite. Meanwhile, my husband devoured the vegetarian kebab – a medley of grilled vegetables paired with a moreish chef’s special sauce and served atop a bed of rice. We couldn’t leave without trying dessert, and so shared an apple pie, which was partnered with creamy Italian gelato. After our exemplary evening, I would recommend you visit one of the branches and sample A La Turka’s offering for yourself soon.  Location 15 St Dunstans Street, Canterbury, CT2 8AF t: 0844 502 8832 e: westgate@ala-turka.co.uk  Location 111 Northgate, Canterbury, CT1 1BH t: 0844 502 8839 e: northgate@ala-turka.co.uk  Location 61 Central Parade, Herne Bay, CT6 5JG t: 0844 502 8836 e: hernebay@ala-turka.co.uk  Location 110-114 Harbour Parade, Ramsgate, CT11 8LP t: 0844 625 7293 e: ramsgate@ala-turka.co.uk

Maharani

Indian

 Location 24 West Street, Sittingbourne, ME10 1AP t: 0844 502 2965 e: maharani24@btinternet.com

Sw

For those looking for a leisurely bite to eat in Sittingbourne, Maharani is waiting to envelop you in a world of tradition, flavour and spice. This well-established venue has been under the same ownership since it opened in 1983, which is testament to the exceedingly high quality of the food here. Flavour is all-important and chef Kabul (chef profile page 63), who has been making curries since he was 16, has undeniable brilliance. The team at Maharani believes that every visit should be perfect, and with this in mind are always happy to adapt the menu for their guests. Dishes can be personalised based on spice thresholds, and if you can’t decide what to have, owner Shabul will be happy to advise you.

£20 to

£30

From the diverse options available you might plump for mixed grill, or succulent karahi chicken with mushroom rice and garlic and cheese naan. Why not accompany your choice with saag paneer and crisp onion bhajis? The well-stocked bar boasts a variety of options, but you can’t go far wrong with a chilled beer – perhaps a Mongoose, or a limited edition King Cobra. Many of the dishes you’ll encounter on the menu are made with traditional Bangladeshi recipes, and some of them are 80 or 90 years old, having been passed down through the chef’s family. Though the cooking is steeped in tradition, Maharani is by no means behind the times. While guests will find all their favourite classic dishes, you’ll also see a wealth of vegan and vegetarian dishes made with produce sourced fresh from local markets and suppliers. Maharani’s dedication to tradition extends to its decor, and the classic style combined with a blue and white colour scheme gives it a distinctly retro appearance. This unchanging style is very popular with guests and everyone who visits is made to feel welcome. With friendly staff, excellent cooking and more than generous portion sizes, it’s not hard to see why so many visitors soon become regulars. These qualities make this a go-to destination for group get-togethers, and it’s not uncommon to see family groups, work outings and celebratory gatherings making the most of this exceptional venue.

Open: Sat-Thurs 12.30pm-2.30pm, 6pm-11.30pm; Fri 6pm-11.30pm

Many of the items on the menu are gluten-free, vegetarian and vegan, and the separate children’s menu is great for younger diners who still want to sample authentic and flavoursome food. To start, the chaat selection offers dishes like chandi chowk ke samosa – crisp Punjabi vegetable samosas served with spiced chickpeas and drizzled with chutney and sweet yoghurt – or the paneer mirch – diced paneer tossed in garlic chilli sauce with fresh spring onions and peppers. For mains you can opt for one of the many kebabs on offer or plump for a delicious curry. If you choose a kebab, the tandoori sea bass marinated in yoghurt and tandoori spices and served with mint chutney and pickled red onions comes highly recommended. This is Indian street food with a twist. You may want to accompany your food with one of the many naan breads on the menu. If you’ve still got room, you must look at the dessert menu. ‘...immersed in the world of professional cooking...’

For Carl the pillars of being a good chef are hard work, dedication, creativity, thoughtfulness and fun, and this is clearly reflected in his cooking style. Now head chef at The King’s Head in Wye, he can exercise his considerable creativity while overseeing his own kitchen. He especially enjoys working in the hot section of the kitchen, taking the policy that with cooking you should keep it simple and season well. However Carl also finds satisfaction in doing his own fish preparation and butchery, enjoying working with the freshest seasonal produce – particularly spring lamb. Chef Profile

Samuel McClurkin – The Dog at Wingham – Pg 15 For Samuel McClurkin, the best chefs must have artistic flair, courage, a sense of adventure and, most of all, a passion for the industry. He is driven to experiment with new produce and spices, always searching for the best new flavour combinations. His dishes are delicate and beautifully presented, but they pack huge flavour in every bite.

‘...inspired by the fresh produce of spring...’ Samuel is very conscious of the boundless variety of local produce available in Kent and relishes having such easy access to fresh ingredients. He sources eggs from a farm nearby, his seasonal game supplier is just one mile away and even the butcher is only in the next village. Samuel is especially inspired by the fresh produce of spring, when he begins to have access to rhubarb, and knows that blood oranges and English asparagus are on the horizon. 62
