Aaron Patterson Growing up in Leicestershire with parents in the hospitality industry, I’ve always been aware of what this region has to offer in terms of its gastronomy, and it’s great to see others starting to notice. As a chef, there’s nowhere else I’d rather be based. There’s such a vast array of exciting ingredients available to us locally, which makes for a fantastic foodie scene. Our local game is renowned, and what could be better than having woodcock and partridge brought straight from the shoot to my kitchen? I can also get local crayfish and pike freshly fished from Rutland Water, and there’s plenty of opportunity for foraging too. Hedgerows are great for things like berries, horseradish, and flavoursome weeds such as hogweed and chickweed, which I like to incorporate into springtime menus at Hambleton. The recent mild weather caused by climate change has meant that I’ve had phone calls from neighbours who have discovered truffles growing in their back gardens, which you never would’ve found ten years ago. It’s important to me to support local producers, but at the same time I am not willing to compromise on quality. We are fortunate enough in this area that we have the best of both worlds, with some of the most dedicated producers who work tirelessly to ensure that the finest ingredients are available right here on our doorstep. Places like the Rutland County Show and Melton Mowbray Farmers’ Market are fantastic for celebrating the region’s excellent produce. From unique local cheese to the finest wild rabbit, there are some real gems to be discovered. What’s great about these sorts of places is that you can engage with the producers and learn the story behind their wares. This wealth of quality ingredients is hugely inspiring for us chefs, and I think that’s why the local dining scene has more top-quality establishments than ever. The most important thing is for restaurants to keep changing menus and evolving their offering, both for diners’ sake and to keep chefs on their toes. For me the best part of being a chef is the creativity involved, and the reactions we get from diners is so rewarding. I’m really excited to see what the year ahead holds for the foodie scene in Leicestershire and Rutland, and I hope that this guide gets you excited too. There aren’t many regions that can boast such a great selection of eateries in such a small area – there’s never been a better time to get out and explore what we’ve got to offer.

Hambleton runs with a smoothness that comes from long practice and unremitting attention to detail, and continually provides a warm welcome, seamless service, exceptional food and delicious wine. The interior is stylish and comfortable, with spectacular views over the glorious gardens and Rutland Water. There are also 17 individually and lavishly decorated bedrooms. Whether it’s a lunch party for two, a wedding breakfast for 60 or a reception for 64, the dining room, private dining room, study or croquet pavilion can be configured to create the right setting. The hotel can also be hired for exclusive use. In the elegant restaurant, sommelier Dominique Baduel presides over the award-winning wine list and is on-hand to suggest the perfect wine to complement your meal. The menu of the day offers a wide range of Hambleton’s favourite dishes. You might begin with terrine of beetroot and smoked eel with wasabi ice cream. The mushroom raviolo with wild mushrooms and truffle butter sauce is an equally accomplished starter. Follow with slow-cooked beef short rib accompanied by smoked potato purée, or perhaps the pan-fried fillet of sea bass. To finish, plump for the mouth-watering quince and honey soufflé paired with almond ice cream. The lunch-for-less menu offers further value and quality, and for the true connoisseur, the six-course tasting menu – priced at £95 – will leave you in no doubt as to the absolute quality of Hambleton Hall. *Price represents the cost of three courses from the menu of the day.

Leicestershire’s only Michelin-starred restaurant is guaranteed to impress with its outstanding food, first-class service and atmosphere that oozes laid-back decadence. It’s an intoxicating combination that had me planning my next visit £28 to before I’d even finished my starter. £110 John’s House is the creation of head chef John Duffin, (chef profile page 38) who, after years spent honing his craft at various highly acclaimed eateries, returned to his family farm in Mountsorrel to showcase his skills at his own fine dining restaurant. His menu focuses on the quality and provenance of ingredients, with all of the meat and most other produce grown on the farm itself. I began with ratte potato, egg yolk, truffle and Comté cheese ravioli. It was rich and delicious as well as comforting and complex. This was followed by roast loin of fallow deer with salsify, red cabbage purée, chocolate and tardivo. Open: Tues-Sat noon-1.30pm, The quality of the ingredients, 6.30pm-9pm attention to detail and excellent craftsmanship was evident in every mouthful. My dessert of Yorkshire rhubarb, marshmallow, rhubarb sorbet and honeycomb was an outstanding combination of intense flavours. With its carefully chosen selection of wine from around the world, indulgent tasting menu and exclusive atmosphere, John’s House is a truly exceptional restaurant that deserves to be top of every discerning diner’s must-visit list.

We were treated like royalty from the moment we stepped through the heavy front door of this grand and undeniably English country house hotel. Our evening began in a beautifully comfortable Georgian saloon with drinks and tempting canapés, which gave us a taste of the treats to come.

Our attentive waiter led us to the Grinling Gibbons dining room where we were seated beside ornate 17th-century wooden carvings by the room’s namesake, lit by antique chandeliers. Gibbons often carved a whimsical little joke into his work, which we spotted high above the mantelpiece in this foodie haven – a ludicrous bunch of wooden carrots.

Feather-light amuse-bouches cleaned our palates ready for the excellent meal to follow. My husband chose an Alaskan king crab starter, which was delicious and exquisitely presented with touches of watercress, dill, squid ink, vanilla, pear and a sauce of scallop roe and chilli. My goat’s cheese with truffle panna cotta, like everything on the menu, was created with love and imagination by Stapleford’s chefs using top-quality ingredients. Then came a flavoursome four-bird roast for him, and wild turbot for me. To finish, we couldn’t resist a rich chocolate tart and – a recent Stapleford invention that you simply have to try – tea and biscuit pudding. The moment we stepped inside family-run Sysonby Knoll, we felt at home. From the front, the building looks unassuming, yet it boasts surprisingly wonderful views to the rear of the property.

We enjoyed a pre-dinner drink in the comfy coffee lounge overlooking the superb gardens and fields in the valley below. The restaurant is light and airy, and offers spectacular vistas. I decided to order from the à la carte menu while my companion chose from the reasonably priced specials. To start, I chose scallops accompanied by delicious crispy Parma ham and pea purée while my partner revelled in a more local dish of warm Stilton cheesecake with tomato chutney. My main course of balsamic-glazed sirloin with crumbled Stilton was utterly Food Served: delectable. My companion settled on teriyaki chicken teamed with creamy Mon-Fri noon-1.45pm, coleslaw, homemade salsa and crispy sweet potato chips. The homemade fruity 7pm-9pm; Sat 7pm-9pm; meringue roulade proved to be the Sun noon-1.45pm perfect ending to my meal, while my partner went for the locally produced cheeseboard.

We retired to the coffee lounge to relax before a quick tour of the private dining rooms, which can seat up to 48 people. Guests can opt to stay overnight in one of the 30 individually decorated bedrooms. We thoroughly enjoyed our meal here and can see why it’s a firm favourite among locals and visitors alike.

Barnsdale Hall Hotel is the ideal place for those wishing to host a special occasion. Private dining facilities are available and the team delights in tailoring menus, allowing you to be as lavish or as refined as you choose. The stunning Falcon Hotel has overlooked the town’s Market Place for five centuries. Inside though, time has not stood still. Over the last seven years, the hotel has been lovingly refurbished and updated. Plump sofas surround the large open fire in the £19 to main lounge, which combines modern style and comfort with The Falcon’s traditional £30 heritage. The restaurant is gorgeous – think crisp linen, fresh flowers and candles. Service is friendly and the staff can offer recommendations if you’re struggling to choose what to order. The regularly changing, mouth-watering menu showcases seasonal ingredients Food Served: and local produce, wherever possible. We chose starters of Brixham scallops with Mon-Fri 7am-2.30pm, smoked pancetta and a tangy salad, and a light caramelised fig and onion tart with 6pm-9.30pm; Sat 8am-2.30pm, melting Tunworth cheese and spiced apple purée. For the mains, the roast rump of local 6pm-9.30pm; lamb was exceptional, while my partner’s roasted Skrei cod was cooked superbly, with Sun 8am-3pm, 6pm-9.30pm crispy skin and tender flakes of sweet fish. The accompanying corn fritter, sweetcorn Afternoon Tea Served: broth and purple sprouting broccoli Mon-Sun 2.30pm-6pm were superb. Our desserts provided a wonderful conclusion to a fantastic dining experience. I opted for the smooth clementine posset with chamomile-poached pear and cinnamon ice cream, while my companion’s coconut crème brûlée accompanied by cashew brittle, spiced pineapple and lime sorbet was exceptional. The Falcon is also the perfect wedding venue, creating a bespoke experience in luxurious surroundings to guarantee you the perfect day. Look out for regular live events throughout the year. The standard of cooking at The White Swan is truly exceptional. Head chef Chris Leaper (chef profile page 38) and his incredibly talented team craft outstanding dishes that have earned The White Swan a place in The Michelin Guide for 2019. £28 to Combining fine cuisine with a warm country pub ambience, it’s the ideal setting £40 for anyone who appreciates great food without the stuffiness usually associated with such a fine establishment. We savoured an amuse-bouche of deep-fried haggis with olive bread and sundried tomato butter before moving on to starters. The seasonal menu boasts an inviting selection of flavoursome dishes, and I opted to start with barbecued sardines accompanied by heirloom tomatoes, sourdough and burrata, while my companion plumped for crispy pig’s head with Oxford Blue and a Waldorf salad. Open: Mon-Sat 11am-11pm; To follow, my pheasant breast with pancetta, Bramley apple and celeriac was Sun noon-5pm beautifully tender and flavoursome. My companion was equally thrilled with his Food Served: Mon-Sat venison Wellington accompanied noon-2pm, 6pm-9pm; by woodland mushrooms, parsnips Sun noon-3pm and Madeira jus. Sweet and buttery tarte Tatin and a refreshingly light lemon parfait completed this superb meal. Each dish was as exceptional as the last – the talented kitchen brigade creates a harmony of delicious flavours on every plate. The team also hosts wine tasting evenings, and for true epicureans, the Friday and Saturday night Chef’s Table is not to be missed. 6

Local produce and the seasons dictate the menu, and field-to-fork produce, foraged ingredients and nose-to-tail dining is what the King’s Arms is renowned for. Charcuterie and smoked specialities are all produced on-site in the multiaward-winning Jimmy’s Rutland Smokehouse. The bar offers the best local beverages, including a range of homemade spirits made from foraged hedgerow ingredients and produce grown in the pub’s orchard. The eight four-star en-suite letting rooms mean you can make the most of the area for longer. It’s no wonder that the King’s Arms has boasted two AA rosettes and an AA Breakfast Award since 2009. It’s also been named the Luxury Travel Guide’s 2018 Luxury Inn & Restaurant of the Year, as well as being finalists in the Countryside Alliance Awards, and short-listed for the Eat Game Awards 2018. Step inside this 18th-century, Grade II listed building and receive top service and beautifully presented cuisine. Softleys supports local farmers and suppliers, so you’ll find plenty of fresh, seasonal produce from the surrounding area making an appearance on the à la carte and superb set menu. Freshly prepared starters include smoked trout salad and scallops wrapped in bacon with black pudding and balsamic reduction. Tuna steak, pheasant breast and potato, sage and sundried tomato gnocchi are just some of the lip-smacking main-course options. Perhaps finish with Champagne and fresh strawberries or vanilla panna cotta. Softleys hosts regular gourmet evenings that are worth checking out – perhaps book into the cosy, well-kept accommodation and simply fall into bed after a night of fine food and drink.

Everything that leaves the kitchen is made from scratch and is crafted with great care and attention. Start your day right with a hearty Catthorpe breakfast comprising Sercombe’s dry-cured bacon, British Lop pork sausage, free-range eggs, mushrooms and a slice of toast, with either baked beans or grilled tomato. Nestled amongst the thatched cottages of the beautiful village of Newtown Linford, The Bradgate can be found adjacent to the picturesque Bradgate Park. Its location makes this pub a popular spot with visitors, many of whom come to explore the ruins of the 16th-century Bradgate House, just a 10-minute walk away. The vibrant Mediterranean menu is as diverse as the surrounding neighbourhood, and attracts foodies from as far as Dorset to this very special family-run restaurant. Choosing which dishes to try was almost impossible as the menu was full of tempting treats. I started my meal with a selection of delicious morsels from the mezze menu. The attention to detail that Thyme is known for was immediately obvious. The herby falafel was a delight, especially when dipped in citrusy homemade hummus. Another highlight was the sambousek – a fried Lebanese pastry parcel filled with feta, herbs and spices. A minced lamb version is also available. Each appetiser is handmade fresh to order, and the accompanying sauces are bursting with flavour. Next, I had one of the restaurant’s signature dishes – chicken shawarma. Thin slices of marinated chicken are seasoned, spiced and served with a delicious garlic sauce. This sauce, made of pure garlic, is one of Thyme’s best-kept secrets and takes hours to make using a traditional technique. My dining companion had the vegetable moussaka featuring seasonal vegetables sliced and braised with garlic and olive oil to make a warming, velvety stew. The drinks menu includes non-alcoholic beers, chai lattes, mocktails, fruit smoothies and milkshakes. I treated myself to a Passion Killer mocktail. Made with passion fruit, strawberry soda water, crushed ice and frozen fruit, it was refreshing and tasty. The mocktails are freshly made to order, like everything on Thyme’s menu, including the desserts. The rich, smooth and gloriously indulgent chocolate brownie comes highly recommended. In the cooler months, Thyme is a welcoming oasis of warmth and tranquillity, offering respite from the hustle and bustle of the city. Meanwhile, in the warmer months, the pretty outdoor terrace comes into its own. With its views across the picturesque park, it’s the perfect place to enjoy Thyme’s gourmet afternoon tea. This twist on a traditional afternoon tea showcases Thyme’s authentic Mediterranean flavours. It’s another reason why I’m already looking forward to my next visit to this spectacular Spinney Hill hideaway.

One of Shepshed’s oldest venues, The Horse is a long-standing £25 fixture in the local community, and the building’s long history lends it added charm. The relaxed bar area, with its wood-burning stove, was the perfect setting for my aperitif. Food Served: Moving through to the cosy restaurant, I enjoyed a sensational starter of Thai Mon-Thurs noon-2.30pm, green mussels with crusty bread and wasabi butter. My main course of braised 5.30pm-9pm; Fri & Sat lamb shoulder with sticky red cabbage, honey and sesame carrots, creamed 8.30am-10.30am, potatoes, celeriac purée and redcurrant jus was equally sophisticated and delicious. noon-2.30pm, 5.30pm-9pm; Other offerings such as the delectable Sunday lunch prove very popular, and in 2016 Sun 8.30am-10.30am, the team introduced The Stables, a noon-4pm delightful al fresco eatery serving mouth-watering signature pizzas that are stone-baked in a traditional pizza oven. If you fancy extending your stay, book a room in The Barn Courtyard, The Horse’s delightful accommodation featuring six luxurious en-suite bedrooms. For dessert, we delved into Sat 9am-11.30am, a decadent Grand Marnier-laced crème brûlée and a deliciously rich white chocolate noon-9.30pm; Sun 9am-11.30am, and pistachio cheesecake. Top-brass rugby, cricket and football noon-4pm, 6pm-9.30pm memorabilia gives the place an air of sporting triumph: a shirt signed by the 2007 England Rugby World Cup team hung beside our table, and the restaurant’s support of local sports players is a warming touch in an eatery that clearly takes pride in its small but mighty county. There’s always an event happening at Don Paddy’s, including live music. My partner’s main course did not disappoint. The pan-seared Open: Mon-Thurs 11am-11pm; pork fillet was sumptuously tender and was accompanied by sautéed potatoes and Fri-Sun 10.30am-11pm a creamy leek, wild mushroom and mustard sauce. I opted for the locally sourced Food Served: 8oz rump steak, which was cooked on the grill, resulting in perfectly succulent Tues-Thurs 11am-2.30pm, meat that went well with the generous selection of sides, including chunky chips, 5.30pm-9pm; crispy onion rings and juicy grilled Fri & Sat 10.30am-2.30pm, tomatoes. THE DOVECOTE A beautiful pub-restaurant with plenty of parking, conveniently situated near Narborough
The Dovecote was built in the 1990s using reclaimed timber, giving it tremendous characterand atmosphere. We carried out a full refurbishment in February 2018 so if you haven’t been for a while, come on over and see what we’ve done with the place.
