Aldo Zilli Manchester is very close to my heart; over the years, through my work with the San Carlo restaurants I have seen how the city’s food scene has flourished. It’s a city that does its own thing and does it very well. It’s no wonder that businesses have seen the potential and invested here; we’ve seen new bar and restaurant openings almost on a weekly basis, many of which are independent. Diners are very food-aware here and their keenness to try new things pleases me as a chef. Back in 2010 when San Carlo introduced its first Cicchetti restaurant, the style of service and small plate dishes was seen as a new dining concept in the region. We watched Cicchetti flourish – it formed the blueprint for San Carlo’s global expansion – and at the same time, Manchester went on to become one of the nation’s foodie capitals, with a huge range of dining options available. With the city’s tourism industry valued at more than £7bn a year, Manchester is a vibrant and culturerich city. Visitors flock all year round to its sporting grounds, theatres, festivals, Christmas markets, museums, bars and restaurants Manchester has become a must-visit city for food-lovers, something that can only be good news for its chefs. It’s not just about people and the restaurateurs; there’s a wealth of great produce across the region too. Cheshire and Lancashire are right on the doorstep and both excel when it comes to great local ingredients, from rare-breed beef to potatoes and speciality cheeses. There’s also a really healthy legion of artisan producers offering superb seasonal ingredients. With every taste and style of dining covered, you’re sure to find what you’re looking for in Manchester.

Christie’s Bistro

 Location The Old Quadrangle, University of Manchester, Oxford Road, Manchester, M13 9PL t: 0844 502 6328 w: www.christiesbistro.co.uk e: christies.bistro@manchester.ac.uk Christie’s Bistro counts itself among the exquisite historic venues of the University of Manchester’s Chancellors Collection. Located on the main Oxford Road campus, the bistro was built in 1890 and served as the principal science library before it was converted a hundred years later into a lounge and restaurant. My partner and I dined in the restaurant, overlooking the less formal, though no less elegant lounge, which serves sandwiches, daily specials and cakes, as well as coffee and a wide variety of loose-leaf teas. Once seated and relaxed, we began to admire the beautiful Victorian Gothic architecture of Christie’s – ornate windows and columns, high ceilings, bookshelves and busts. The grand bistro is a favourite amongst students and staff, though thankfully it is also open to the public. From the à la carte menu I ordered baked ricotta with roasted tomato, pea purée and truffle oil to start. My partner opted for Ardennes pâté served with caramelised red onion chutney and toasted Chorlton sourdough. We were pleased to discover that ingredients are sourced locally whenever possible, and as we began eating we joked that it was likely to be a silent lunch, as our attention was immediately captured by the sensational and varied flavours of our starters. For my main course I chose pan-seared salmon, vermicelli, cucumber and watercress salad with lemon and dill pesto dressing. My partner plumped for the 8oz braised rump steak with roasted red pepper, herb and tomato sauce, served with Parmentier potatoes. The salmon was cooked to perfection and its accompaniments were refreshing and unusual. The braised steak, meanwhile, melted in the mouth, the sauce rich and plentiful and the portion generous. Fully satisfied, my partner decided against a dessert and opted instead for coffee, while I eagerly ordered the peanut butter cheesecake. Beautifully presented with strawberries and raspberries, and charmingly adorned with edible flowers, the deep peanut flavour was complemented by rich chocolate sauce. Christie’s Bistro, which is also available for private hire and events, comes highly recommended as both a Manchester tourist attraction as well as an exceptional and versatile place to dine.

It therefore comes as no surprise that it was named the most family-friendly restaurant at the Manchester Food and Drink Festival for three years in a row. Spread over four floors, this smart, well-appointed establishment boasts contemporary decor with clean lines and modern furnishings. Light and airy, visitors feel like they’re dining al fresco no matter where they sit and no matter when they visit. The atmosphere at Croma shifts throughout the week. Plenty of business lunches take place on weekdays thanks to the outstanding pizza menu, served Sunday to Friday between noon and 3pm. In the evening you’ll see pre-theatre diners aplenty, and weekend visits promise a vibrant buzz thanks to flowing Prosecco and lots of cocktails being mixed. The menu reflects classic Italian cuisine with pizza and pasta dishes featuring prominently, but with many options given an inspired contemporary twist. Rolling custom means that the local produce Croma uses is kept fresh, with deliveries often arriving twice daily. Why not start with bresaola and artichoke salad, or perhaps stave off hunger by sharing freshly baked dough balls while you wait for your mains to be served? Pizzas are cooked fresh to order and the choice is varied and creative. Among the many customer favourites is Croma’s Greek pizza – a crème fraîche base topped with feta cheese, green olives, green peppers, green chillies and fresh oregano. If you’re not in the mood for pizza, plenty of alternatives are available, such as linguine tossed with fresh brown and white crabmeat, tiger prawns, sun-blushed tomatoes and chilli flakes. Those with a sweet-tooth will be delighted to hear that Croma fires up its pizza ovens first thing in the morning to bake a plethora of tempting homemade desserts like brownies and chocolate fudge cake. Croma boasts a great value, expertly put together wine list with some options produced especially for the restaurant by Sicilian winery Cantine Settesoli. The bar also stocks local beer produced by Brightside Brewery along with plenty of bottled beers and ciders. When you visit, be sure to ask about Croma’s offers and tailored menus, such as the early-bird menu that’s served Sunday to Friday between 3pm and 7pm.

Zouk Tea Bar & Grill

Modern Indian

 Location The Quadrangle, Chester Street, Manchester, M1 5QS t: 0844 502 4496 w: www.zoukteabar.co.uk Manchester is renowned for its vast range of Indian restaurants, but Zouk Tea Bar & Grill manages to stand out from the crowd. Zouk’s team puts a contemporary twist on a much-loved cuisine, modernising classic dishes to offer an extensive menu that goes well beyond a simple curry-and-rice combo.

Mc £15 to

£20

‘...contemporary twist on a much-loved cuisine...’ Choose to dine in the restaurant, enjoy cocktails at the bar, or catch up with friends over shisha in the all-weather outdoor terrace. The large dining area has a combination of cosy booths and long tables suitable for parties and banquets, while quiet people-watchers will take pleasure in the enchanting production of the open kitchen. Zouk is exactly the kind of venue that, thanks to its diverse appeal, can suit every occasion.

‘...chilli masala, Punjabi masala and garlic poppadoms awaken the tastebuds...’ It feels that every effort has been made here to ensure that all aspects of the dining experience are extraordinary, right down to the flavours of the poppadoms and pickle tray served as you browse the menu. Chilli masala, Punjabi masala and garlic poppadoms awaken the tastebuds and give this once tired appetiser a new lease of life. The attentive waiters, too, have impressive knowledge of the cuisine, and are more than happy to answer any questions you may have.

‘...mouth-watering range of meat, fish and vegetarian options...’ From the recently launched brand-new menu that features a mouth-watering range of meat, fish and vegetarian options, an early star of the show appeared to us in the form of the tava lamb. This platter includes smoky, crispy chunks of lamb shoulder served with aromatic chutney, pickles, red onions and hot-from-the-oven wraps. Meanwhile, starters such as spicy prawn cakes served up with saffron mayo showcased the versatility of Asian cooking.

14

Manchester Guide 2016-2017

The majority of Zouk’s guests will no doubt come for the delicious choice of curries – the slow-cooked on-the-bone lamb railway curry that we tried demonstrated the expertise of the chefs and offered fiery flavours that carefully balanced the heat. The selection of side dishes is generous too (the exciting selection of vegetarian dishes can also be ordered as side portions), and allows for plenty of meal variety. We opted for traditional naan and rice, but livened things up with the superbly seasoned gunpowder chips. The chefs aren’t afraid to be authentic; those looking to try specialities such as sheep’s brain and trotters will find ample opportunity to experiment.

‘...slow-cooked on-the-bone lamb railway curry...’ Indeed, what enhances the attraction of this Indian restaurant is its choice of tasty alternatives to curry. The Zouk ocean platter is a perfect example of how Asian flavours can be applied to more diverse dishes, and this selection of tandoori salmon, spicy king prawns and tender scallops was a show-stopper. While Zouk’s primary focus may be delicious Indian food, in the event that some guests just aren’t in the mood, there’s a pleasantly surprising selection of steaks, burgers and roasts available to order too.

‘...tandoori salmon, spicy king prawns, and tender scallops was a show-stopper...’ Zouk’s talented team of mixologists has created a truly dazzling cocktail menu, spanning luxuriously fizzy Champagne cocktails, cooling long drinks, definitive short drinks, Martinis and mocktails. Enjoy an expertly prepared classic Moscow Mule or a sumptuously sparkling Red Velvet Champagne cocktail while you wait for your first course to be served, or complement the aromatic spices of your chosen dish with a refreshingly tall glass of Blackberry Fruit Cup. An extensive wine menu, Indian and European beers and soft drinks are also available. Over the past few years, Zouk Tea Bar & Grill has established itself as one of the best Indian restaurants – and bars – in the city centre. An award-winning eatery that’s constantly exploring innovative ways to entice and surprise its customers, it’s no wonder Zouk is a favourite among locals. Whether you’re searching for a casual spot for a meal with friends or you’re organising a special occasion, Zouk has all the ingredients for a memorable Indian dining experience.

The food offering here is inspired and exciting. I began with crunchy avocado bruschetta while my partner opted for patatas bravas with caramelised balsamic vinegar and muscovado sugar dressing. Tacos are a particularly popular option at El Capo. These come with a choice of fillings, such as slow-roasted pork shoulder in an orange and smoky paprika sauce; rubbed beef brisket with honey and spices; and panga, a light, spicy, shallow-fried fish. My vegetarian chilli conveyed just the right level of heat – the addition of Nicaraguan chocolate could be subtly detected, working in perfect harmony with the tang of tomatoes.

Manager Eddy believes tequila is misunderstood. We loved listening as he presented us with the facts; for instance, pure tequila is made from blue agave, equating to more body, a purer and stronger flavour, and less hangover. Eddy claims he can change anyone’s mind about tequila; even if, like most of us at one point or another, you’ve been traumatised by an encounter with the infamous spirit. All in all, we fell in love with the ridiculously good soul food and eye-opening tequila experience that we enjoyed at El Capo – we are certain you will, too. 18
