Sat Bains The food and drink scene in and around Nottingham has exploded in recent years and the city now offers an incredible breadth of restaurants and bars, perfectly blending old and new. Among my favourites are the tapas at Bar Iberico in Hockley, the authentic Thai street food at Zaap, cocktails at Tilt and the fabulous craft beers at Junkyard. I also love Boilermaker, a secretive speakeasy, and Botanist, which is a bit further afield in West Bridgford. Meanwhile, you can get wicked chips at John Molnar’s The Cod’s Scallops, and great ale and traditional pub fare at both Ye Olde Trip To Jerusalem and The Hand & Heart. Outpost has become my coffee shop of choice, thanks to its exceptional coffee and personal touch. It’s also brilliant to see one of our old chefs, Alex Bond, thriving on Nottingham’s gastronomic scene with his imaginative restaurant Alchemilla. I’m proud to say that Restaurant Sat Bains has gone from strength to strength in recent years, and we are delighted to have become the first restaurant from the Midlands to be inducted into Les Grandes Tables du Monde, a prestigious international guide featuring the finest restaurants in the world. Our team has continued to grow and we were joined by restaurant manager Jordi Albacar from the legendary three-Michelin-starred Waterside Inn in Bray, Berkshire. We also introduced a four-day working week; the team has seen the benefit of reducing their hours so there is even more energy and creativity about the place. We fully appreciate that we couldn’t achieve this creativity without the support of our patrons and our fantastic suppliers. I know that the county and the East Midlands will continue to be recognised for producing some of the greatest food in the world. Professionally, I couldn’t ask for a better larder. Not only do local suppliers produce the best meat, dairy, poultry and game, but we also benefit from a wealth of wild food just steps from our front door. There is much to enjoy in the great region of Nottinghamshire. My work takes me to every corner of the world, but my wife Amanda and I are at our happiest when at home. We have everything on our doorstep here in Nottingham, from breathtaking scenery to a city steeped in history. It has been thrilling to see the city develop into the thriving place that it is today. MemSaab has been established now for 17 years and has gathered an impressive amount of press attention, being the first restaurant in the East Midlands to have been awarded two AA rosettes for culinary experience. AA Gill wrote that ‘MemSaab Nottingham is amongst the top three best Indian restaurants in the country’, the restaurant features in The Michelin Guide, and was also awarded Runner-Up Best Restaurant in The Observer’s Food Monthly Awards for four years. Nationally, it was crowned The British Curry Awards’ Best Indian Restaurant in the Midlands 2014 and was named Best Indian Restaurant by the Nottingham Post for 2016. MemSaab also picked up an award at the Nottingham Restaurant & Bar Awards 2018. Comfortably accommodating up to 180 diners, MemSaab is the perfect setting for all occasions, and set menus are available for parties of eight or more. The interior, with its combination of traditional Indian craftsmanship and modern Indian art, captures the essence of India while placing MemSaab firmly in the 21st century. MemSaab also embraces modern Indian cooking; the likes of John Dory with peas, soft-shell crab, and makrani monkfish lababdar can also be found on the menu. With prices from £5.25 to £21.95, there’s something for every preference and budget. On our visit, the gorgeous presentation of the starters matched the exquisitely balanced flavours, and our mains were no less spectacular. Amita Sawhney, owner of MemSaab, is always on-hand to recommend dishes. Dining here really is an occasion – a rich and sensory experience – with a buzzing atmosphere and seamless service. Amita continues to focus on improving the experience of Indian fine dining while ensuring it remains accessible, affordable and, most importantly, enjoyable.

Restaurant Sat Bains with Rooms firmly places Nottinghamshire on the gastronomic map. Just a few miles from the city centre, this enchanting farm conversion, on a tranquil stretch of the River Trent, has received international * acclaim for its innovative and modern approach to cooking. It boasts two Michelin £105 stars, five AA rosettes, is rated nine out of ten in the Waitrose Good Food Guide, and it was recently inducted into Les Grandes Tables du Monde, a prestigious guide featuring the finest restaurants in the world. With one of the UK’s most creative chefs at the helm, together with his wife Amanda, Restaurant Sat Bains continues to be at the vanguard of the British food scene and astounds customers with its cuisine. The seven- and ten-course tasting Open: menus have been created to maximise the flavour of each ingredient, so that each Weds & Thurs 6pm-9pm; dish progresses naturally to the next, using the three key components of taste, Fri & Sat 6pm-9.45pm texture and temperature. Private dining facilities are provided at the Kitchen Bench (up to four guests), and at the Chef’s Table (from four to eight guests) where dishes are served by the chefs themselves. Technical skill abounds throughout the restaurant, but nowhere is this more on display than in Nucleus, a bijou six-seat restaurant within the development kitchen. The Martin’s Arms has been central to village life since the 1690s and has weathered the years well, staying true to its roots and maintaining a unique atmosphere. The beautiful gardens and elegant decor afford it a timeless £25 to quality, making the bustle of modern life feel a million miles away. Period £40 furnishings and ancient Jacobean fireplaces add to the pervading sense of cosiness and act as a comforting reminder that sometimes things never change, especially in the country. The food served does provide a slight twist on the traditional, with quality, wholesome dishes combining well-loved ingredients with a modern touch. Tempting the palates of discerning diners who appreciate fine cuisine are delightful dishes that rely upon the produce of the parish and local estates, as well as artisan producers. The innovative menu is created on the premises by a talented Food Served: team of chefs. Throughout the game Mon-Sat noon-2pm, season diners might savour local 6pm-9pm; venison loin – served with braised Sun noon-2pm suet pudding, pomme purée and blackberry jus – while sitting beside one of three open fires. During summer, relax in the gardens with a glass of Champagne and a perfectly cooked fillet steak, perhaps followed by a coconut panna cotta. With an ever-expanding range of home-grown produce, The Martin’s Arms takes locally sourced food seriously. When the first plate of your Weds & Thurs noon-1.30pm, five-, seven-, or ten-course tasting menu reaches the table you’ll know you’ve come 7pm-9.30pm; to the right place for creative gastronomy. Dining at Alchemilla is an experience Fri & Sat noon-1.30pm, to be savoured, with flavour 6.30pm-9.30pm combinations such as hay-smoked potato, herring roe and Parmesan, and pork collar, turnip, and apple. Initially, it can be hard to imagine how these elements will come together on the plate, but that’s all part of the magic. There is a wide range of vegetarian dishes on offer – the starters we enjoyed of sundried tomato and olive bruschetta and artichoke hearts sautéed with tomato and garlic are two tasty examples. The chefs are delightfully flexible when it comes to the menu; my companion, who is dairy intolerant, was assured she could choose any dish and it would be altered especially for her. She was subsequently enthusing over her sumptuous dish of steak with red wine and mushroom sauce long after it had been cleared away. My monkfish with prawns, tomatoes and white wine sauce was bursting with flavour and, like the steak, was accompanied by well-seasoned rosemary potatoes and vegetables.

For dessert, I was treated to a trio of the house specials; the tiramisu in particular was deliciously light and melted on the tongue. All this, along with a bottle of delectable red wine, resulted in a very reasonable bill. La Capanna’s authenticity and distinct character makes it a wonderful little rustic Italian hideaway. 12

As we entered the centrally located Chino Latino, we were impressed with the stylish interior, which combined with the aroma of freshly cooked delicacies for a stellar first impression. Anticipating the difficult choice ahead, we got stuck straight into the extensive menu and began to whittle the list down to a few irresistible treasures. The kitchen team’s fusion of pan Asian flavours and ingredients with Latin American flair makes for a perfect dining experience, whether it’s for a special dinner à deux or a group celebration, for which we recommend the chef’s table experience.

Sushi and sashimi are among Chino Latino’s specialities, and are perfect as starters or mains. The variety of sushi on offer appeals to a wide range of tastes; it’s expertly prepared and artfully presented. Surf and turf rolls with shrimp and sirloin, and the tiger maki comprising prawns and crabmeat were particular highlights during our visit. The blow-torched salmon roll with avocado and cucumber is enhanced by jalapeño mayonnaise, bringing an unexpected dash of Latin American flavour to the subtle umami of Japanese cuisine. Following my sushi starter, I sampled the sirloin steak, which comes on a hot rock and continues to cook at your table for an added layer of theatre and anticipation. The steak cooks slowly, evenly and exactly to your liking, and comes with a soy marinade that you can subtly drizzle or douse your steak in – it’s the perfect meal for those who like their steak just so. A variety of alternatives – from duck breast and Korean pork belly to black cod and seared salmon – had us planning a return visit before our starters had even arrived.

Attentive and informative staff are always on-hand to answer your queries and talk diners through the menu. We were particularly keen to get their opinion on a wine pairing, as we never know what tipple to enjoy with Japanese cuisine. In our instance, our server’s recommendation was a light and subtle French red, which naturally complemented the soy-glazed sirloin and brought out the smoky flavours of the salmon. The meal ended with fragrant lemongrass panna cotta finished with strawberry gel, finely sliced dried strawberry petals and strawberry sorbet. What a perfect way to round off such a feast.
