Foreword

Andrew Cole I was born and bred in Surrey so, for me, being able to work in the area where I was raised and help the local restaurant scene thrive is important. Surrey is a fantastic county with a lot to offer, and the array of first-rate eateries we have reflects that. There are so many things that make Surrey special. We’re lucky to have some incredible local producers who work hard to provide us with outstanding ingredients and perhaps don’t get the recognition they deserve. At Bingham Riverhouse we rely on the likes of Reeves Butchers who supply us with meat of the finest quality – all sustainably sourced and organic or grass-fed. One of my favourite local producers is Fiona Dickson, who has been making natural honey in Richmond Park for over 20 years; the flavour is amazing. There’s also a lot of opportunity to forage locally – just down the road from the restaurant we’ve got various wild nettles which I’ll incorporate into my menu design. I take part in a lot of local food festivals; it’s a great way to meet other people in the industry and really get involved in the food scene. The Surrey Food Festival in Old Deer Park is great and very well established, and there are so many other festivals across the region to discover. The Ham Parade Market in Richmond is also worth a visit. I could spend hours making my way through the various stalls offering homemade charcuterie, jam, cheese and more. Events like these really open your eyes – and tastebuds – to how food should be. You’d be surprised at the difference in flavour between a carrot grown locally and the mass-produced ones you’ll find at the supermarket. People have this perception that it’s much more expensive to buy quality local produce, but if it’s in season that’s not the case. As Surrey is so close to central London, there’s a tendency for diners to overlook local restaurants and head to the city instead. It’s a trend that’s changing as people are becoming more aware of what’s on offer right on their doorstep and Londoners are branching out to discover what we’ve got to offer. Our restaurant scene is up there with the best. Places like The Glasshouse in New Malden and Petersham Nurseries in Richmond consistently hit the mark, and we at Bingham Riverhouse are proud to have earned three AA rosettes. There’s never been a better time to eat out in Surrey, so get out there and start discovering for yourself.

Menus present British cuisine at its finest, offering both classic and modern fare for diners to delight in. The menu changes regularly due to seasonality, making masterful use of the seasonal, local produce that’s abundant in Surrey. As we perused the impressive menu, we enjoyed a selection of appetisers, and a virgin passion fruit Mojito which tasted as good as it looked – the talented bar manager clearly takes pride in spectacular presentation. To start, my partner plumped for the delicious chicken liver pâté with fruit chutney and toasted brioche, while I devoured harissa-spiced couscous with prawns and pineapple – the perfect start to our evening of culinary delights. Next, the decadent and generously proportioned truffle oil gnocchi with Parmesan and cream sauce did not disappoint as my partner declared it a total triumph. Ordering from the selection of British classics, I enjoyed slow-braised beef with heritage carrots, mashed potato and braising juices – a perfectly seasoned interpretation of indulgent comfort food. An evening at The Mulberry wouldn’t be complete without dessert and we opted to share the raspberry sorbet and fresh fruits, as well as the blackberry crumble with vanilla ice cream. This impressive setting now plays host to a hugely popular Sunday carvery with a live jazz band, although due to its popularity booking in advance is essential. Fine Dining

 Location High Street, Ripley, GU23 6AQ t: 0844 502 9659 w: www.theclockhouserestaurant.co.uk e: info@theclockhouserestaurant.co.uk Formerly known as Drake’s, The Clock House in Ripley is privately owned by Serina Drake. Head chef Fred Clapperton has received critical acclaim since taking over at the stove last autumn - within two months its three AA rosettes were swiftly reinstated. The gorgeous Georgian building in the centre of the High Street has been sympathetically restored over the years, and a stylish blend of contemporary touches complement original oak beams and other Georgian features. A great-value set meal is available from Wednesday to Saturday, priced from £26 at lunchtime and £45 for dinner. Saturday evening offers tasting menus only; the likes of seared and cured scallops with apple and ginger, and brill with smoked garlic, sea kale and shrimp prove too tempting to miss. What’s more, there is a fabulous vegetarian menu boasting young summer vegetables with ewe’s curd, nasturtium and Jersey Royals, as well as other mouth-watering options. On paper, Fred’s food may seem simple, but behind the scenes, hours of preparation go into each dish. A course might include beef, brassica, wild mushroom and mustard, or perhaps blackberry, hibiscus, apples and shortbread, but menus change seasonally so you can expect a diverse dining experience whenever you visit. The restaurant’s kitchen garden produces some of its own herbs and vegetables, so fresh ingredients regularly go from garden fork to dining fork. For those wanting to linger longer over their lunch or dinner, Fred has devised a tasting menu that offers a more ambitious Clock House gourmet experience. Hand-picked wine accompaniments are also available to complement and harmonise the exquisite flavours. The eclectic wine list offers yet another voyage of discovery. The selection embraces small-scale producers (including many local English vineyards) and there is something to suit all tastes and budgets, in addition to a wide selection of wines by the glass. Drinks can be enjoyed in the oak-panelled cocktail bar – which has recently been extended – or in the pretty walled garden, weather permitting. Whether you call in for lunch or dinner, or a full gastronomic experience, you’ll find that service at The Clock House is relaxed yet highly professional, and far from stuffy. *Price range represents the cost of two or three courses from the à la carte menu.

We began our visit by perusing the lengthy à la carte menu, which changes regularly in line with the produce available. From seasonal options to classics like beer-battered cod, plaice, haddock, skate and halibut, we made our decisions. Although tempted by the seared tuna Carpaccio and diver-caught scallops, we couldn’t resist the Cornish dressed crab on toast, and hot smoked salmon croquettes. Both proved excellent choices. I then opted for grilled gurnard fillets, fresh from the counter in Jarvis next door. The fish arrived alongside scallion mash, brown butter and capers, and was very flavoursome. From the grill menu, my partner chose swordfish accompanied by salsa verde and a side of buttery new potatoes. While the first two courses were substantial, we couldn’t resist sampling from the mouth-watering range of desserts, and opted for a couple of scoops of palate-cleansing ice cream, which is locally made. Our meal was completed by a bottle of delicious dry house white, which we chose from the excellent wine list. Beer and soft drinks are also available. If you’d prefer to enjoy fish! The Fox and Hounds has been a central community hub in South Godstone since 1601. Now family-run, this traditional countryside pub is steeped in history. Classic pub food is always on the menu here, however, owner Ellie Conway also makes a weekly trip to the south coast to personally select a range of seafood and fish to add to the traditional pub menu.

£18 to

£24

Think seafood dishes like fresh pan-fried king scallops and black pudding served in lemon, basil and garlic oil to start, or the fish pie filled with cod, smoked haddock and salmon, topped with creamy mash and melted cheese, and served with homemade tartare sauce. If you’re not craving seafood, the classics include chicken, ham hock and leek puff pastry pie and vegan butternut squash, sweet potato and paprika sausages with mash and vegan gravy. The Fox and Hounds is also Cask Marque-accredited and features in The Good Pub Guide. Dogs are welcome Open: Mon-Fri noon-3pm, in the enclosed beer garden and 5pm-11pm; Sat noon-11pm; kids can enjoy the pirate ship Sun noon-8pm outside. The separate children’s menu has a variety of delicious homemade meals, making The Fox and Hounds an extremely family-friendly venue. This 17th-century pub has stood the test of time, presumably due to its charming position, friendly service and delicious food.

It’s the perfect spot in which to gather with friends £31 for a game of darts and a refreshing pint of Fuller’s cask ale or Cornish Orchards cider. The menu is packed with tasty pub classics, but for group gatherings we’d have to recommend the sharing platters. Choose a charcuterie board, or opt for the Greek-style vegetarian platter with feta, olives, sunblushed tomatoes, hummus, tzatziki, baba ganoush, olive tapenade and flatbread. A range of social plates is also available – spicy Vietnamese chicken wings, truffled mac and cheese croquettes, and popcorn chicken with tarragon mayonnaise are among the treats on offer. If you’re not keen to share, start with avocado and pesto bruschetta Open: with roasted tomato salsa and Mon-Weds 11am-11pm; follow with the pork and chorizo Thurs 11am-11.30pm; burger with gem lettuce, tomato, Fri & Sat 11am-midnight; Sun noon-10.30pm red onion, gherkins and fries. The King’s Head also serves a scrumptious Sunday roast, but we’d recommend working up an appetite first, perhaps with a walk in the Ornamental Gardens in nearby Stoke Park. Visitors with pups are welcome to dine inside the pub, but on sunny days guests can also take advantage of the picturesque courtyard garden. Surrey Guide 2019

The White Hart – Chipstead

We were greeted by friendly staff and shown into the lofty panelled dining room, which welcomes visitors with a large open fire. A starter of tempura sesame tofu with chilli dressing, pak choi, pickled ginger and watermelon salad was fresh and delicate with just the right hint of spice, and the whitebait served with tartare sauce was deliciously wholesome. Tempting main courses included lots of classic seasonal English dishes and plenty of vegetarian options. From the confit belly of pork with sherry-braised pig cheek, fondant potatoes and butternut squash purée to the smoked haddock and salmon Open: fishcakes with tomato and spring onion salad, there’s something for everyone. Mon-Sat 11.30am-11pm; The kitchen team focuses on Sun noon-10.30pm consistency and delivers each dish to the highest standard; you won’t be disappointed. A custardy crème brûlée with buttery shortbread biscuit, and a lip-smacking dark chocolate and cherry tart with sour cherry sorbet was the perfect end to a stunning meal. The White Hart has a welcoming bar with a vast selection of wine, gin and whisky if you just fancy a drink, but I urge you to visit for a meal – the food is simply wonderful. 76

The Star Inn is a classic country pub that’s well worth a visit. As soon as we stepped foot inside, we were greeted with a smile and made to feel welcome, which for me is the hallmark of a good pub. Inside, an open fireplace, exposed brick walls, low beams, vintage leather sofas and armchairs make you feel right at home, instantly relaxed and ready for a delicious meal. ‘...excellent range of dishes...’ The menu offers traditional pub classics alongside daily specials and all the food is freshly prepared to ensure your meal is of the highest quality. There’s also a fine selection of wine, beer and soft drinks to accompany your meal. Once seated in the dining room we were presented with a plate of bread and olives, which most certainly whet our appetite for the next few courses. We settled for two starters and both chose from the specials board. The menu has an excellent range of dishes from sharing platters, burgers, steaks, pizza and sandwiches, so there’s always something for everyone. My starter was delicious Cornish mackerel pâté, served with crunchy ciabatta. My dining partner opted for the smoked salmon and crayfish salad; both were beautifully presented, light and fresh.

‘...top-notch service...’

For the main course we both opted for fish dishes, but there are meat, vegetarian and vegan dishes also available. I opted for the seared salmon, which was cooked to perfection and accompanied by an unctuous Béarnaise sauce. My partner’s lemon sole was served whole; it looked stunning and was absolutely delicious. Mango crème brûlée and white chocolate cheesecake rounded off our meal perfectly. For top-notch service and quality food, look no further than The Star Inn. Whether you’re visiting for a relaxed lunch, a delicious meal to celebrate a special occasion, or a few drinks with friends, you’re sure to find something to satisfy.

This characterful historic venue has occupied its current spot over the River Wey since 1648.
