Foreword
Paul Foster Born and raised in the Midlands, it was always my dream to open my own restaurant in the area so I was ecstatic to launch Salt in the heart of Stratford-upon-Avon, a typically beautiful Warwickshire town. I feel so fortunate to be based in the centre of this county, surrounded by a wide variety of amazing produce; it’s a chef’s dream. I’m proud to celebrate Warwickshire produce on Salt’s menus; without dedicated local producers supplying us with their incredible wares, we wouldn’t be able to do what we do – food grown and produced in this area practically writes the menus for us. We use everything from Berkswell cheese and Kineton asparagus, to Cotswold lamb and kid goat. It’s not just food that this area excels at – Warwickshire is home to some fantastic drinks producers too. On our drinks menu at Salt we have some amazing beers from Purity Brewing Co and regularly feature Stratford Gin from the Shakespeare Distillery in our cocktails. Not only does this region produce a plethora of first-class goods, we’re also excellent at celebrating that fact. During the spring and summer months there are food festivals and food markets all around the county that give locals a platform to showcase their wares. It’s a great way to meet passionate small producers, find new and exciting ingredients to incorporate into our dishes, and celebrate what’s so fantastic about this region we call home. It’s a great time to eat out in Warwickshire and Birmingham, as the culinary scene is thriving. In recent years I’ve noticed that attitudes towards dining have shifted hugely. Customers are looking for high-end establishments that are relaxed and approachable, rather than the more traditional, formal ambience that fine dining venues are usually associated with. The public has become much more knowledgeable about food, and people want to be able to enjoy amazing cuisine and service without being told what to wear and how to sit. We’re spoilt for choice in this region, with a wide range of diverse eateries from top-notch cafés and traditional country pubs to restaurants showcasing the finest Japanese cuisine. The county now boasts two Michelin-starred restaurants. I hope reading this guide makes you as excited about the Warwickshire and Birmingham dining scene as I am. No matter what you’re looking for, this dynamic foodie region is sure to have several outstanding establishments that take your fancy. This guide is the best place to start your culinary journey and discover some real local gems.

After a lot of hard work and the help of a Kickstarter campaign, head chef Paul Foster and his wife Rhiain opened Salt. This impressive eatery offers a fine dining experience within a relaxed setting, allowing the magnificent food to speak for itself. The quality of the food is the kitchen’s priority and it shows, with exceptional dishes being produced all year round. Before the end of its first year, Salt had been praised in The Good Food Guide’s Editor’s Awards and was also named best new entry for 2017. The restaurant was also the first in Stratford-upon-Avon to win a Michelin star.

The dining areas are separated into two rooms: a quaint and intimate space that’s ideal for smaller bookings, and a larger room with an open kitchen that allows diners to watch their food being carefully prepared by the experts themselves. Head chef Paul changes the menus regularly, taking fresh seasonal produce and creating spectacular dishes, both in flavour and presentation. The tasting menus come highly recommended, for lunch and dinner. The evening tasting menu comprises eight innovative dishes. Sample salt-baked beetroot with horseradish and baked apple purée, followed by cured halibut, brown shrimp, seaweed and miso. The third course of carrot cooked in chicken fat is enhanced by crispy chicken skin and pickled carrot, and the Cotswold kid taco with bhuna style onions and spicy green herb ketchup demonstrates unrivalled skill and passion. The fifth plate is tartare of red deer, accompanied by artichoke, mushrooms and chocolate. It’s presented immaculately, but it’s the flavours that really make this dish a triumph. The menu concludes with three courses including cheese and two sweets: lemon parfait with buttermilk and pistachios and finally, the luxurious Papouasie chocolate, raspberries, meadowsweet, and salted caramel. There’s an option to pair each course of the tasting menu with an expertly selected tipple. Plenty of attention to detail has been put into creating these phenomenal menus. Salt is clearly focused on the height of success and is wholly deserving of it. The small and dedicated team completes the experience with effortless efficiency.

This outstanding establishment has received a multitude of accolades including two AA rosettes, and a feature in The Michelin Guide and The Good Food Guide for the past six years. Using locally sourced and foraged ingredients, Tailors serves exciting evening taster menus and good value lunches. Chefs Dan Cavell and Mark Fry pride themselves on crafting exciting dishes using traditional and modern cooking methods – dishes include ‘faux-lafel’ – a take on the classic falafel using local beetroot, venison and suet dumpling – and you’ll find tempting desserts such as a take on the classic black forest gateaux, and one inspired by the classic Marathon bar. A carefully compiled wine list ensures there is an offering to complement each dish, and knowledgeable staff are on-hand with the perfect recommendation.

Thoughtfully chosen suppliers deliver produce of the highest quality, which is then turned into an outstanding set of dishes. The flamed mackerel with fennel choucroute, smoked almonds, grapes, buttermilk and dill are an inspired beginning, equally matched by a main of Cotswold venison, salt-baked celeriac, wild mushrooms, sticky chestnuts, prunes and truffle emulsion. A delicate dessert of rum baba with pineapple, mint, passion fruit and a Piña Colada snowball provides a fitting end to such an accomplished meal. The pre-theatre offering (served from 5pm until 6.30pm) and lunch menu boast similarly excellent dishes, priced at £15 for two courses, or £19.50 for three. Five- and nine-course tasting menus and private-dining facilities are further alluring factors in the already sensational experience that is a visit to No 9.

Henley’s mile-long High Street is steeped in history and charm, with Cheal’s of Henley sitting centrally amidst picturesque buildings, beautiful private homes, shops and public houses. The food on the menu at Cheal’s is seasonally sourced from Warwickshire suppliers that specialise in rare breeds of meat and game. The team also uses local ingredients, some of which are grown in their own local allotment – picked and served the same day. Chef-director Matt Cheal (chef profile page 54) has his own modern British style of cooking, working with fine quality ingredients to produce interesting menus that change frequently and continually interest diners, whether new or regulars. A charming, timber-framed building, this stunning eatery was founded in 1513 and boasts a pretty garden, cosy interior £21 to and an exquisite menu of modern British fare. The Bluebell’s restaurant £41 has even been awarded two AA rosettes and is currently listed in The Michelin Guide. Owner Joe Adams places great importance on using local produce in his dishes and even visits the local market himself to purchase fresh vegetables. For Joe, this is all part of crafting a memorable dining experience. Begin with a delicious starter of venison and smoked bacon terrine or opt for the luxurious Cornish scallops with sweet potato, pickled walnut and crisp garden apple. The selection of mains at The Bluebell offers exciting modern twists on well-loved classics. Expect tempting and hearty dishes such as succulent duck breast with a chorizo croquette, Open: Tues-Sat 11am-11pm; and roasted partridge with truffle, Sun noon-9pm red kale and blackberry sauce. The Orangery Restaurant (chef profile page 54) at Park Hall Hotel & Spa is a haven of indulgent cooking. Decorated in delicate shades of cream with £15 floor-to-ceiling French windows affording plenty of natural light, the restaurant to £35 looks out over beautiful landscaped gardens. With starters such as gurnard, monkfish and prawn bouillabaisse, and smoked chicken and rabbit terrine with parsnip and carrot salad, roasted apple and pickled walnuts, it’s easy to see where classical influences meet modern techniques. For the main event, take beetroot Bourguignon and suet pudding accompanied by lentils, kale, and roasted mushroom jus, or perhaps slow-roasted belly of lamb with yeasted pearl barley, salt-crusted celeriac, sweetbreads and carrot purée – both dishes are superb takes on perennially popular British ingredients. Provenance and quality are the foremost concerns for the kitchen team, who source as much produce as they can from local suppliers that they’ve come to know and trust. Served from noon until 6pm daily, the kitchen’s bistro-style menu features light bites and sandwiches alongside the superb dishes also found on the evening menu. Sandwiches such as Parma ham, Brie and grape are sure to impress, while classic dishes like Caesar salad enhanced with smoked salmon provide a beautifully fresh and light option for a leisurely meal. Offering truly personal service, she will take your order and cook your meal herself. With only one sitting, we could relax and take our time sampling the inventive, vegetarian-friendly menu knowing that the table would be ours for the entire evening. Beginning with starters of pea, spinach and Parmesan pâté, and lentil and sunblushed tomato fritters, our tastebuds were awoken. It was breast of partridge with perry sauce and pear compote for me next, and sea bass with garlic and onion dressing in coriander and chilli oil for my companion. To finish, our apple, cinnamon and ginger crunch, and lemon and gin choices from Laura’s 17 unique homemade ice cream flavours were served up with a freshly baked cookie. Dishes here are doubtless one of a kind, so, whatever the occasion, Queans is the place to go.

The magnificent Lutyens-style Mallory Court hotel and spa sits proudly amongst ten acres of formal lawns and vegetable gardens. After taking a walk around the stunning grounds, we settled down in the drawing room next to a roaring £50 to fire, and warmed up with a glass of fine Champagne. The Dining Room is an £75 extremely elegant setting for even more impressive cuisine, and features a wall of ornate oak panelling, tables laid with crisp white linen and fresh flowers. Head chef Paul Evans (chef profile page 54) and his team create bold, seasonal dishes using produce from the estate’s own vegetable garden, and cater for all palates and dietary requirements. It’s no wonder The Dining Room has been showered with accolades including three AA rosettes. We opted for the highly recommended tasting menu, and were delighted by the likes of cured Food Served: Loch Duart salmon with avocado, garden radish and cucumber essence, and Mon-Sat 6.30pm-9pm; salt chamber-aged venison with salsify, parsnip and preserved blackberry Sun noon-2.30pm, jus. If you fancy an exciting evening at the races combined with a truly memorable dining experience, why not try the three-tiered Horizons Restaurant? This stunning contemporary British restaurant is open on race days and can be found on the third floor of the racecourse, located directly opposite the finishing post and providing panoramic views of the track. This unbeatable setting is the perfect spot for a romantic dinner for two but also offers a warm welcome to families, friends and the solo punter. The congenial restaurant manager introduced us to all aspects of the restaurant, including how to lay bets, and as the sun set and the pens opened a charming member of staff came round to each table to take cash wagers. The menu at Horizons Restaurant offers three choices for each of the courses, including tempting vegetarian options. Diners can stagger courses throughout the races and this facilitates a particularly relaxing evening, allowing plenty of time to take in the atmosphere, study form and place bets. To start, I enjoyed a delightfully light cheese soufflé, which was delivered piping hot with pickle and a salad garnish on the side. My friend opted for a colourful ham terrine full of succulent pieces of ham accompanied by a flavoursome sauce. For the main course I had pan-roasted chicken breast which was juicy and succulent, served with smooth creamed potato, honey-roasted salsify, emerald green kale, and charred spring onion with a red wine jus. My companion had the pan-fried sea bass with chorizo and bean cassoulet and tenderstem broccoli drizzled in herb oil. We both chose different wines from the extensive selection to accompany our respective dishes but the bar also offers a fantastic range of beer, spirits and soft drinks. Elated by our winnings, I began the fifth race with a huge portion of indulgent sticky toffee pudding, accompanied by salted caramel sauce and custard. My companion enjoyed a French-style crisp lemon tart with Chantilly cream and sweet poached raspberries. Each course was politely delivered by our server, and we even had time to stroll around the racecourse to areas including the Parade Ring and the Winners Enclosure, and enjoyed the final race trackside. After we had soaked up the atmosphere from outside, we made our way back up to the Horizons Restaurant to enjoy our tea and coffee, a lovely way to end our raceday experience. *Price range represents the cost of the Horizons Restaurant package.

The menu itself was a fiesta of large plates and tempting tapas dishes, and it was mainly the latter selection that attracted our attention. We couldn’t resist the allure of perfectly seasoned prawns pil-pil with garlic and chilli, delicious halloumi fritters with a quince dip, patatas bravas with spicy tomato sauce and alioli, lamb kofta with cool tzatziki, and mini lamb and beef burgers in little brioche buns with all the trimmings. These perfectly portioned small plates are deliciously moreish and Open: Sun-Thurs just the thing for sharing with a group of friends. It’s impossible to walk past Basement Browns without the delicious smell of freshly baked pizza enticing you inside. While travelling through Italy and the USA, the owners noticed that local pizzerias weren’t simply restaurants but social hubs, the place you’d head to after work to unwind or just pop into during the day for a quick snack. Seeing this inspired the brothers to bring a slice back to their hometown of Leamington Spa, and so Basement Browns was launched. They subsequently opened a site in Coventry, where it has also had a fantastic reception.

The team is truly passionate about pizza, priding itself on producing authentic food that is both delicious and healthy. Ingredients are sourced primarily from Italy, and everything is cooked in the traditional stone oven. Try the scrumptious pepperoni pizza made with authentic salsiccia Napoli piccante, or the delectable pulled roast chicken breast pizza. The dough has been artfully mastered over years of practice and experimentation, and the hard work has certainly paid off. It’s lovingly made on-site every day and slowly fermented over 72 hours – which, according to Basement Browns, makes it easier to digest. The results are superb. Even the chips are stone-baked; they’re cooked at a blistering 350 degrees, resulting in crisp on the outside, fluffy in the middle perfection. Time spent in Italy didn’t just inspire these guys to make mouth-watering pizza, they also honed their coffee knowledge too, making Basement Browns the ideal place for your morning pick-me-up. Combine your cappuccino with Sicilian cannoli or a mozzarella and sundried tomato toastie and you’re in for a treat. The Waterside Brasserie offers diners award-winning food in a relaxed and comfortable setting. The talented chefs frequently update the menus to reflect £25 to the season’s harvest – though diners can always expect imaginative and £40 flavoursome fare that delights the palate. When we visited, the restaurant was bustling, filled with theatre-lovers, couples and large groups. From the à la carte menu I began with the Cotswold venison Carpaccio, which was beautifully presented with sweet pickled girolles, carrot ribbons, blackberries and hazelnuts. My appetite whet, I moved on to the main course. From the tempting selection I chose the Herefordshire beef served two ways – melt-in-the-mouth sirloin steak and flavoursome braised blade of beef in a rich jus. The meat was accompanied by buttery mashed potato, wilted Open: Mon-Sat noon-3pm, spinach, glazed carrots and a floret of broccoli. From the extensive range of 5pm-9.30pm; wine, Champagne and craft beer Sun noon-3pm, 6pm-9.30pm I chose a lovely red. The meal concluded with steamed orange pudding with slices of tart orange, drizzled in a complementary Grand Marnier and clotted cream sauce. The restaurant’s two-AA-rosette-awarded fare can be enjoyed in the main dining room or on the all-weather terrace, which boasts lovely views of River Avon. The Arden Hotel also offers afternoon tea in The Lounge, and a range of tipples in the Champagne Bar.

The main menu provides plenty of choice alongside the specials. We began our lunchtime meal by tucking into scallops St Jacques and chicken goujons with a spicy dip. These were followed by a hearty steak and ale pie for me, and delicate parcels of salmon in filo pastry for my companion. Other delights include fresh beer-battered haddock with crushed minted peas and chips, and an impressive mixed grill comprising Lashford sausages, gammon, sirloin steak, black pudding, grilled tomato and red wine jus. Deciding that we’d make a relaxing afternoon of it, dessert was definitely on the cards. We decided to sample a delicious lemon tart with clotted cream ice cream, but the signature sticky toffee pudding with vanilla ice cream looked great and was a very tempting option. Colin sources ingredients as locally as possible, supporting local businesses and farms. Should you wish to know where your meal has come from, you’ll find a list of suppliers on the menu. If you’re visiting on a Sunday, a fantastic roast is served all day and comes with fresh seasonal vegetables and all the trimmings. The Bell Inn celebrates many occasions such as Burns Night, complete with bagpipes and poetry readings. Seafood-lovers will savour the salmon and herb fishcake with pea purée, poached egg and Hollandaise sauce, and bacon-crusted cod with rosemary and garlic potatoes, wilted spinach and white butter sauce. The roasted shallot and Brie tarte Tatin with rocket, pear, and walnut salad and horseradish dressing is packed with flavour and suitable for vegetarians. For dessert, it doesn’t get much better than The George Townhouse’s warm treacle tart with Cornish clotted cream, and the wonderful local farmhouse cheese plate. To accompany your meal, a wide variety of drinks include Brakspear Bitter, Brakspear Oxford Gold and the local favourite, Cotswold Distillery gin, which is served with Double Dutch tonic and a slice of grapefruit over plenty of ice.
