Foreword

Rob Harrison Growing up in Hull, I always loved the food produced and reared in the beautiful countryside of Yorkshire, especially the game. Yorkshire’s renowned for its farmed produce, with succulent lamb and rich Wensleydale cheese offering a first taste to many across the country. As a county, we continue to show an interest in the provenance of our food. This is evident on the menus of our thriving pubs and restaurants, as well as in farm shops and pantries across the region. It’s important to make the most of local suppliers and put money back into the local area. As head chef of The Devonshire Fell, I source cheese from The Courtyard Dairy and meat from R&J Butchers. At The Devonshire Fell, we also love to forage wild garlic, which is abundant here. If you’re unsure about what’s safe to eat, there are several companies that can forage for you, using their expertise to serve you a range of local delights. The food industry in Yorkshire is faced with its own challenges, including environmental factors such as flooding, while restaurants are tasked with staffing issues due to the long, unsociable hours, among other factors. Despite this, we benefit from a wealth of wonderful produce and some truly exceptional eateries, a number of which are now offering shorter working hours in response. There are several thriving restaurants in this area, including the likes of The Burlington at The Devonshire Arms on the Bolton Abbey Estate and The Angel at Hetton. Neil Bentink of Skosh is a notable chef who continues to wow his guests in York. It’s undoubtedly an exciting time to be eating out in Yorkshire and I recommend that you take the time to sample all it has to offer. From traditional eateries to Michelin-accredited establishments, there’s something for everyone. I’d go as far as to say that Yorkshire’s dining scene is on par with London’s – it’s just a little more spread out. And on that note, I hope you enjoy reading this year’s Yorkshire Food & Drink Guide and make the most of the dining scene on your doorstep.

A picturesque five-mile jaunt north of Bolton Abbey, The Devonshire Fell sits overlooking the village of Burnsall. With views of the fells and the River Wharfe, a table in the light and airy conservatory is the perfect spot to enjoy the scenery during the summer months. On arrival, we received a warm and friendly welcome from the staff. To start, the succulent salted cod fritter and venison sausage roll appetisers set the standard for the top-quality food and attentive service we received throughout.

‘...a beautiful backdrop for wedding celebrations...’

The Devonshire Fell boasts a varied and sophisticated menu, which places an emphasis on game and highlights fresh seasonal produce. To start, I chose the heritage beetroot salad with roasted beetroot, purée and crisps. This was accompanied by an olive tuile filled with goat’s cheese. It was refreshing to see everyday ingredients transformed into something so deliciously innovative. My partner chose potted rabbit, which was tender, wholesome and beautifully seasoned. This was paired with a choice of sea salt white bread and wholemeal walnut loaf, both of which were fresh and flavoursome. A delicious wild mushroom butter, whipped to a light and delicate consistency, was the perfect accompaniment. The chef prepares a different flavour of butter every day, including the likes of smoked bacon, tomato and beetroot, which proves to be a current favourite. For mains, we chose venison loin with braised haunch and partridge, which was offered on or off the bone. Both were rich, tender and cooked to our liking. The smooth dark merlot we opted for complemented our meals perfectly and enhanced our dining experience. The dessert menu showcases a delectable range of sweet treats; from traditional classics to modern inventions, there’s something for everyone. We chose the pear and frangipane tart and the salted caramel parfait, which were both of equal standard and the perfect end to an exceptional meal. The Devonshire Fell can also be hired for corporate events and makes a beautiful backdrop for wedding celebrations. *Price represents the cost of a two-course evening meal.

As the name suggests, this venue enjoys a beautiful waterside location next to the canal and has relaxing views across the water. Consistent food and excellent service is high on the agenda here, as the dedicated staff aim to make guests’ £23 to visits memorable for all the right reasons. It’s no surprise that the Waterside £30 recently won Best Restaurant in Bradford at the British Restaurant Awards, as well as being a Good Food award winner in 2019 and 2020. Innovative, high-quality dishes arrive from the kitchen, where head chef and co-owner Paul (chef profile page 86) brings his experience of working in Michelin-starred kitchens to Shipley. It therefore comes as no surprise that the menus keep up with the seasons and feature tip-top produce. Keen to cater for everyone, the chef provides vegan and vegetarian options too. See Open: Tues-Sat 11.30am-3pm, his talent demonstrated in starters such as whipped Yorkshire goat’s curd, 5pm-9pm (last sitting) beetroot purée and walnut dressing, and the comforting Yorkshire Brie and chive hash brown with homemade baked beans. The high standard continues in the main dishes – take the roasted halibut accompanied by celeriac purée, sautéed potatoes, crab lollipop and fish velouté, or choose the renowned Yorkshire 72-day-aged steak in Himalayan salt. A delicious dark chocolate and raspberry tart paired with raspberry sorbet provides a spectacular finish to a meal, as does the cheeseboard. To drink, why not opt for a Yorkshire white wine from Laurel Vines? The dining room can be hired for private functions and there’s a self-contained, covered courtyard that’s ideal for al fresco dining. Modern British

The two-AA-rosette-awarded Ruddy Duck offers a traditional dining experience set within the stunning Wortley Hall. With seating for 30 people and an open kitchen, the restaurant has a charming and cosy atmosphere. It’s located in the stunning main hall but is open to non-residents and has its own entrance. Only the best local ingredients are used, including produce from the hall’s own kitchen garden – the home-grown rhubarb in particular is superb. The menu aims to showcase the best Yorkshire ingredients, cooked using modern techniques. From the menu you might like to start with the plaice fillet roasted in butter with mussels, verjus sauce, parsley root and kale. Follow with roast lamb loin and lamb shoulder slow cooked in rosemary and smoked garlic, served with Jerusalem artichoke and cavolo nero, before finishing with a 70-per-cent dark chocolate fondant, served with white chocolate Aero, Pedro Ximinez ice cream and yuzu gel.

Originally owned by the Earl of Wharncliffe, Wortley Hall itself is Open: Tues-Sat 6pm-9pm a Grade II listed ex-stately home that’s now operated uniquely as a non-profit co-operative. All the proceeds from its endeavours go directly back into the house and gardens. It’s set within 26 acres of stunning grounds, which are open for a leisurely stroll, and has a beautiful outdoor terrace. It also has 55 bedrooms, private dining rooms, a bar and function rooms. 4

With over two decades of experience, Chris’ dishes showcase ingredients from local farms, so you can enjoy the finest seasonal, sustainable produce. Many dishes feature ingredients from the newly constructed glasshouse in the kitchen garden at Goldsborough Hall. As you might expect, choosing from the innovative à la carte menu is a tricky task with so many tempting dishes on offer. You might start with duck leg terrine paired with beetroot and fresh blackberries, or perhaps wonderfully light goat’s cheese mousse with artichoke and pear. For a delightful main, plump for venison loin with parsnip, hazelnut and black garlic. To finish, the lemon tart with elderberry and ice cream is a popular choice, while the cheeseboard features a delicious range of British cheese. Goldsborough Hall is the ideal venue for celebrations, including weddings. Open to non-residents for lunch, afternoon tea and evening dining, the elegant yet homely surroundings, attention to detail and high standard of personal service make any visit a special occasion.

Set in the heart of High Grantley, The Grantley Arms is a traditional, friendly inn that dates back to the 17th century. Owners Valerie and Eric have created a warm and relaxing atmosphere by combining traditional features with modern luxuries. All food is freshly prepared using locally sourced produce, with even bread, chutney and delicious soup made on-site. This cosy pub serves a wonderful array of dishes for breakfast, lunch and dinner, so there’s plenty to choose from whenever you visit. We ordered from the à la carte menu, from which I chose the beautifully presented Whitby crab fritter with shellfish bisque, sharp lemon mayonnaise and crispy capers. This was followed by the chef’s daily special of beef Wellington with gratin Dauphinoise potatoes and rich red wine sauce. For dessert, I couldn’t resist the warm treacle tart topped with lashings of clotted cream and fresh berries – the perfect way to conclude a truly delightful meal. Everything we sampled was superb and immaculately presented – the care and attention to detail was evident in every mouthful. To drink, you can choose from one of the carefully selected cask ales on offer, including ale from award-winning local brewery Small World Beers. The Woodman also offers a hearty three-course Sunday lunch for £22, which includes roasted Yorkshire sirloin. Those visiting in the daytime can choose from the enticing lunchtime menu, or for a real treat plump for afternoon tea with friends.

The Art Deco styling provides the perfect backdrop to a memorable meal, with luxurious touches featuring throughout, making the dining experience a sheer delight. The new menu features a range of delectable main courses, and after careful consideration, we plumped for the flavoursome Cajun blackened salmon and the pan-fried thyme chicken. The moreish desserts were a feast for the eyes and tastebuds – we sampled the freshly baked bramble crumble with luscious custard and strawberry cheesecake with Chantilly cream and fresh berries. A fine selection of drinks complements the cuisine perfectly. You can also stay overnight in one of 78 uniquely designed rooms, as well as booking the venue for any event.

Pre-dinner drinks were offered in a choice of lounges, where a charming yet relaxed sommelier was on-hand to offer his expert knowledge on the impressive wine list, which includes vintages dating back to 1928. We chose an unusual Mourvedre that had good length and just enough tannins to balance the fruit. An eight-course tasting menu or three-course à la carte is available; we chose the latter – a tasting menu in itself. Beforehand, we enjoyed a wonderful selection of appetisers including a wafer-thin cracker topped with textures of swede, Japanese seaweed wrap and feather-light dumplings filled with Gruyère and topped with sesame. Next, we opted for an amuse-bouche of roe deer with Alsace rose jelly that was tender and sweet, with a touch of spice. We sampled a starter of poached rabbit, chorizo, Jerusalem artichoke and girolles. Every ingredient experimented with texture, including purée, crisp, jelly and foam, and the dishes were a testament to the talent of the head chef and his team.

The presentation was skilful and every mouthful was delicious. My main course showcased meaty John Dory with soft Cornish mussels and seaweed sweetened by caramelised onion. My partner chose an imaginative suckling pig dish. Next, the pre-dessert of pineapple and coconut ice cream with burnt sugar and a hint of coriander was wonderfully refreshing and cleansed the palate perfectly. Desserts were equally pleasing – the deconstructed Double Decker was irresistible, while the spiced quince dish with chocolate, walnut and whiskey tart featured flavour combinations that worked perfectly. Located in a beautiful rural location, the Coore Arms is a delightful find. Owner Mark took over the free house two years ago and has since created a pub with a difference. Exposed beams, stove fires and rustic furniture provide a charming olde-worlde feel. In contrast, the menu choices are diverse, ranging from modern vegetarian and gluten-free dishes to Eastern European and Moroccan, with staple British classics in between. The wine list follows suit – a balance of New and Old World, with every wine available by the glass, and you can also enjoy a glass of gin from an extensive and varied list or a CAMRA real ale in the beer garden. On the evening of our visit, every table was occupied with customers of all ages from near and far, providing a cheerful and friendly atmosphere.

I began with grilled halloumi, pesto and roasted tomatoes, while my partner enjoyed smooth and creamy chicken liver pâté served with sweet marmalade and fresh bread. Both dishes were beautifully presented. For mains, we decided to take advantage of the more unusual offerings: chef Pali’s Slovakian-style pork goulash, and a sweet potato and black bean burger – one of several vegetarian dishes that have warranted the Coore Arms’ entry into the HappyCow directory of vegan-friendly restaurants. To finish, we opted to share a luxurious white chocolate roulade with fruit compote for dessert. Drake’s is a firm favourite that’s loved by locals and visitors alike. Situated in Low Petergate in central York, this restaurant offers ample seating and is fully licensed. We paid a visit on Monday evening and the restaurant was buzzing with an eclectic mix of locals and tourists. The decor is deliberately traditional, reinforcing the historical significance of a fish and chip restaurant sited on the same spot for over 100 years. However, there’s much more on offer than just fish and chips at this wonderful institution. There’s a surprisingly versatile menu that features an extensive selection of starters, mains and desserts. To start, I was torn between the calamari rings and the pumpkin and orange zest soup, but I finally plumped for the chicken bites with garlic mayonnaise. My dining partner chose the delicious prawn cocktail. Despite the temptation of the famous Shambles butcher’s sausage, I felt it only right to follow with traditional haddock and chips. I must confess, this isn’t my first tasting of this dish as I’ve had many Drake’s takeaway dinners over the years and I’ve never been disappointed. The fish is tender and flavoursome, while the batter is crispy, complemented by chunky chips made from local Yorkshire potatoes. My wife chose the scampi with a salad garnish and judging by the audible sighs of satisfaction, she clearly enjoyed it. Desserts included a delicious banana fritter and syrup sponge but we decided to share a moreish warm chocolate brownie served with a scoop of ice cream. A specials board and a dedicated menu for children and senior citizens complete the food offering. The even better news is that you can find branches of Drake’s in Harrogate, Knaresbourgh and Ripon, alongside takeaway services in Bradford, Shipley and Leeds. The pie was a castle-shaped delight; crisp pastry packed with chunks of steak and kidney in a rich ale gravy. The accompanying vegetables were fresh and brought a burst of colour to the table. We couldn’t resist rounding things off with dessert, and the sticky toffee pudding and chocolate mousse were divine. With quality food, a stunning location and top-notch service, Mother Shipton Inn ticks every box. I predict its future will be a great success.

On our visit, we dined in the Brasserie. Modern furnishings contrast with natural stonework and wooden beams, creating a charming and stylish environment in which to dine. Our welcome was warm the service faultless, and the Brasserie’s owners and staff Open: were sincere and efficient throughout. Weds-Sat 5.30pm-9.30pm; To start, I chose deliciously fresh garlic prawns sautéed in chilli and white wine sauce. Sun noon-5pm My partner chose breaded Brie with spicy orange and winter berry compote, which she declared excellent. Next, we sampled delicate roasted cod served with creamy lobster and saffron velouté. My partner plumped for stracotto – tender braised beef with balsamic onions and a red wine and mushroom reduction. We couldn’t leave without sampling the festive trifle made with berries, pandoro and limoncello cream – a great Italian twist on a traditionally English dessert. In true Italian style, we enjoyed coffee with amaretto biscuits to finish. Complimentary truffles followed – a sign of this couple’s genuine hospitality. With delicious food and excellent service, we thoroughly enjoyed our visit.

With its Latin vibes and award-winning food, it has all the ingredients for a great night out.

On the ground floor is the spacious lounge bar with plenty of comfortable sofas and chairs, which create a relaxing space in which to unwind and enjoy a tipple or two with friends. There’s the option to plunge into the world of exotic cocktails and whet your appetite with a Brazilian Mojito, Cuban Mule or another from the fabulous selection – all especially tempting during happy hour, which lasts until 6pm from Sunday to Friday. The upstairs area offers a real Havana haven thanks to Latin murals, artefacts and rustic fans, while a dedicated tapas menu sets out more than 40 mouth-watering meat, fish and vegetarian options.

‘...Latin vibes and award-winning food...’

We were peckish when we arrived and so took advice from our friendly waiter and chose a combination of seven tapas to share. Decisions can be somewhat tricky with so many tempting dishes on offer, but set menus come to the rescue and feature enough dishes to provide a banquet for two or more diners. Cubana is renowned for its regular rotation of live musicians, who fill the place with Latin rhythms. As we tucked into our food, the restaurant came alive to the mellow sound of a jazz quartet that transported us to Cuba on a wave of foot-tapping tempos. All of our dishes were delicious, but our favourites included tiger prawns in garlic and olive oil, tender pieces of chicken and chorizo in a creamy sauce, Cubana’s famous meatballs served in a tomato and red wine sauce, and beautiful grilled asparagus with Manchego cheese and spinach. The fabulous music means that visitors like to linger, so whether you indulge in a Mojito sundae or one of over 200 speciality rums from their unrivalled rum menu (voted the best rum menu in the UK at the Golden Rum Barrel awards) after your meal, you’ll find yourself simply sitting back and soaking up the atmosphere.

Starting off as a pub, this restaurant has been at the heart of Ryther for centuries. Although it still has a dedicated drinking space, for the past 35 years the Rythre Arms has dedicated its offering to beef. Every steak is matured and butchered on-site, and the menu offers an exceptional range of cuts, the largest of which is the Rythre Monster, which weighs just under five pounds. A stone fireplace, subdued lighting and dark oak beams create an intimate atmosphere in this cosy, welcoming restaurant. Knowing our main courses were seriously meat-heavy, we opted for a lighter starter of sweet French onion soup, topped with a cheesy crouton. We also shared a dish of perfectly sautéed scallops, dashed with herbs on a bed of fresh salad leaves.

My partner opted for one of the more conventionally proportioned steaks, Open: an 8oz slab of rump, which was nicely seared on the outside yet perfectly Mon-Fri 6pm-11.30pm; pink and juicy in the middle. My Sat 6pm-midnight; steak and ale pie was deliciously Sun 2pm-11pm hearty and came served in a deep earthenware bowl. The pie was composed of lean steak, mushroom and rich gravy enhanced by Theakston XB, and topped with a crusty pastry top. We shared a hearty bowl of chunky chips, al dente green beans, carrots, broccoli and juicy mushrooms. To drink, the Argentinian malbec was a rich, full-bodied accompaniment that complemented our meals perfectly.

The menu evokes a Mediterranean feel, drawing on the owners’ time spent in Turkey, but there are some old favourites for the more traditional palate. Any beer that isn’t sourced from the brewery which was previously on-site but is now based in Kirkby Moorside comes from within a 35-mile radius, with the exception of just one well-known lager. There’s always a great event happening in The Cockpit, showcasing fantastic local artists and acclaimed performers from further afield who entertain guests with acoustic melodies, jazz ditties and traditional vintage crooning. It’s well worth making a trip to Pickering to experience this excellent establishment for yourself.

If you’re looking for quality food, professional service and a relaxed informal atmosphere, the Retreat strikes the perfect balance. New owners Rick and Adele have extended the opening hours, and now on Friday and Saturday evenings from March to November the tearoom is transformed into an inviting bistro. We visited early one Saturday evening and all tables were booked – testament to the bistro’s success. We were greeted with a friendly welcome by a team whose enthusiasm and pride is evident in the food and service offered. The menu is wide ranging, with several vegan, vegetarian, gluten-free and dairy-free choices. My partner opted for juicy fresh prawns cooked with the perfect amount of chilli and garlic to start. I enjoyed smoked chicken and black pudding salad, lovingly presented with an array of colourful fruits.

Next came a comforting smoked bean shepherdess pie topped with celeriac and Cheddar mash and served with red cabbage enhanced by sweet apple and sultanas. My partner chose sea bass that was perfectly cooked with crispy skin served with a beautifully presented rainbow salad. To follow, we plumped for creamy orange liqueur crème brûlée accompanied by mini shortbread, and spiced mulled apple and pecan bake. Specially selected wines enhance the offering; we enjoyed a delicious South African Pinotage with notes of dark fruit and a smoky finish. To follow, I sampled locally sourced sausages and delicious buttery mash, seasonal vegetables and gravy, all enclosed in a giant Yorkshire pudding. My partner had the steak sandwich, featuring succulent and tender meat with sautéed onion enclosed in warm crusty ciabatta. We shared moist carrot cake, proudly baked by the cafe’s manager, whose welcome was warm and friendly – an ambience that was reminiscent throughout our visit. It was thriving for a Thursday lunchtime, with locals and visitors passing through for a bite to eat. The menu varies from baked potatoes and sandwiches to homemade pie and tempting specials. I picked one of the seasonal specials: pan-roasted duck breast on a bed of braised red cabbage with rhubarb sauce, accompanied by turmeric potatoes, green beans and roasted cherry tomatoes. It was fresh, tasty and wholesome. There were lots of other interesting specials on the board, such as pan-fried sea bass and tomahawk steak.

The homemade pie was bathed in thick gravy and accompanied by crispy chips and a range of seasonal vegetables, and my wife’s sublimely tender gammon, topped with fried eggs, chips and peas, was just as accomplished and hearty.
