Tips for re-opening your summer camp

Preparations for summer camp 2023 are underway and to help you get started, we’ve created an essential guide and checklist to get you on your way to preparing your summer camp for a fantastic season.

Review camp policies/procedures

Before campers arrive, review and update your camp’s policies and procedures. This includes safety guidelines, emergency response plans, and any changes to the camp’s rules or activities. Make sure all staff are trained on and are familiar with these updates and are prepared to enforce them throughout the season.

Train and prepare your staff

Having well-trained staff is critical to ensuring a safe and enjoyable experience for campers. Hold training sessions to go over important skills, like first aid and CPR, how to manage conflict and work with children of different ages and abilities. Make sure your staff understands their roles and responsibilities. Encourage open lines of communication throughout the season.

Inspect facilities and equipment

Before campers arrive, inspect your facilities and equipment to ensure they’re in good working order. This includes checking for any damage or wear and tear, cleaning and sanitizing surfaces. Make sure all equipment, from the pool and sports gear to the kitchen appliances and arts and crafts supplies, are properly stocked, stored and easily accessible.

Plan activities and schedules

A well-planned schedule is key to keeping campers engaged and entertained all season long. Start by mapping out daily, weekly, and specialevent schedules, and make sure activities are appropriate for the age and skill level of the campers. Provide a variety of activities that cater to different interests.

Plan your camp menus

Providing healthy, delicious, and accommodating meals for all campers is a crucial success factor for camp participants. Several factors must be considered during the menu planning to ensure a positive dining experience for everyone involved including; nutrition, allergies, taste, variety, labour and budget.

Communicate with parents/ guardians.

Keeping parents and guardians informed is an essential part of running a successful summer camp. Send out welcome packets with detailed information about your camp’s policies, activities, schedules and menus. Encourage parents to reach out with any questions or concerns and provide regular updates throughout the season. Maintaining open communication will help to build trust and ensure a smooth experience for both campers and their families.

Stock up on supplies

Conduct a thorough inventory of all the supplies you’ll need this season, from first aid kits and sunscreen to craft materials, sports equipment and pantry items. Be sure to place orders well in advance to ensure your camp is fully stocked and ready to go on opening day.

Create a welcoming atmosphere

Welcome campers with open arms. Set up an inviting check-in area, post clear signage to help campers navigate the campgrounds, and create cozy, comfortable spaces for campers to unwind and relax during their downtime.

Crafting the perfect summer camp menu

A crucial aspect of ensuring a successful camp experience is providing healthy, delicious, and accommodating meals for all campers. When creating a summer camp menu, several factors must be considered to ensure a positive dining experience for everyone involved.

Allergies

According to Food Allergy Canada, approximately 2.6 million Canadians, including 500,000 children, have at least one food allergy. With these numbers, it’s crucial to be aware of food allergies and how they can impact your summer camp menu. Consider common allergens like peanuts, tree nuts, milk, eggs, soy, wheat, and shellfish, and make sure to clearly identify allergens on your menu. Your camp may want to avoid high-risk allergens such as peanuts altogether to reduce your risks.

Nutrition

Proper nutrition should be a cornerstone of any camp menu. Each meal should have a balance of proteins, carbohydrates, and healthy fats to provide the energy needed for the campers to stay active and engaged in their daily activities. Integration of whole grains, fresh fruits, vegetables, and lean protein sources into the menu will contribute to balanced, nutrient-rich meals. Be mindful of portion sizes and age-appropriate servings for younger children.

Food preferences and inclusivity

Ensure there are meal options that accommodate a variety of dietary restrictions and preferences, including vegetarian and vegan diets. Providing alternative protein sources, like beans, lentils, and tofu, can help meet these needs.

Labour available for food prep

Realistically assess the culinary resources available at your camp. This includes the kitchen facilities, equipment, and available staff to prepare and serve meals. Simple dishes that are still nutritious and diverse will be easier to produce

consistently and ensure quality control. Consider simplifying recipes, prepping ingredients ahead of time, or purchasing pre-prepped ingredients and fully prepared meals and snacks if accessing sufficient labour is an issue at your camp.

Sustainable choices

In today’s environmentally conscious world, it is becoming increasingly important to consider the environmental impact of the food we consume. When planning your menu, focus on incorporating locally sourced, seasonal ingredients that will help promote sustainable agriculture and reduce carbon emissions related to transportation. Minimize your food waste by being conscious of portion sizes and using ingredients in multiple dishes. Additionally, offering plant-based meal options can further lower your camp’s carbon footprint and food budget.

The great comeback

Camp operators prepare to bounce back this season. But are they ready?

As summer camp season approaches, Foodbuy had the opportunity to speak with Sharon Fraess, National Director for Christian Camping International (CCI), about what lies ahead for camp operators this season. CCI connects over 200 camps from coast to coast across Canada.

Many camp operators are hoping to bounce back this season after the COVID-19 shut down. Fraess indicated that registration is healthy, and the industry at large is excited to finally open their doors for another season. Fraess feels that her camps should be running at close to full capacity once again, but the aftereffects of COVID-19 are still lingering.

While operators are eager to reopen, several challenges lay ahead that will need to be skillfully managed to ensure a safe and financially rewarding season.

“The entire purpose of the camp experience is to bring people together and to break down barriers. What did the COVID-19 restrictions do? They created barriers and that hit us hard. The very thing we do, is the thing that wasn’t being allowed. Now camps are looking to get back to operating fully and that has been a very wonderful feeling for all of us.”

The first key issue that Fraess identified were labour shortages. Labour shortages are dramatically impacting the foodservice and hospitality sectors. Camps understand the market is tight in terms of finding workers, especially for workers who have the ability to stay for the entire summer.

Fraess highlighted why COVID-19 has added additional complications to the staffing issue for camps.

“What happens is, a child comes in as a camper, then they can progress up through our training programs and eventually become a staff member in their final years. As a result of the closures, we didn’t get the chance to do that. That continuous circle of new staff coming on has been

broken. Our feeder system skipped a year. Many have moved on and found jobs elsewhere and are not coming back. This means for 2023 many people will be literally learning on the job. It is a significant issue for us.”

The second key issue is all camps had to make adjustments within the COVID-19 restrictions to figure out how they could still operate. Fraess feels many of the temporary changes are now being incorporated to make the experience better and safer for all.

“Camps have made substantial changes in how and what programs are offered. Now, we are identifying the positive changes that we plan to keep. That usually involves capital expenditures and that is an issue at a time when cash flow is tight.”

We asked Fraess about her optimistic forecast with a tightening economy and did that equal less people attending camps?

“From my perspective, entertainment for children is sometimes one of the last things that parents cut out of their budget. They’ll likely eat out less often before they cut out camp. I’m not saying they won’t ever cut out camp, but we need to be mindful that there could come a point where camp gets cut out of the budget.”

We also talked about food costs and if that means camps

will be raising their fees. Fraess doesn’t believe you will see a spike in rates this season as all camps set their budgets the year before. Food costs have only spiked recently, and she feels that will have an impact on the bottom line this year, but she expects possible price hikes to follow in 2024.

“In my view, camps will have to subsidize the cost more this year. We also feel this is where we need to lean on Foodbuy. I think the idea of pooling resources and having a company that is looking after our best interest as that will be essential to keep costs down. We won’t have the staff to check pricing all over town. Also, the sentiment I see among our young staffers is that the idea of working with a procurement company sits well with them. They’re used to buying online. You type it in, you order, you get it. So, comparing all these prices seems ridiculous to them.”

We asked what success looks like for the 2023 season?

Fraess summarized by saying;

“We want to be able to run with our key programs functioning at their very best, with the goal of providing a safe environment for as many campers as possible and financially making ends meet, so that they can walk into the next year healthy.”

INGREDIENTS

1 2/3 cup Egg Creations Whole Eggs

Original, well shaken

1 tsp/5 ml oil

1/2 cup/125 ml chopped red onions

1 cup/250 ml each chopped green and red peppers

1 can refrigerated crescent dinner rolls (235 g)

8 processed mozzarella cheese slices, divided

1 ham steak, chopped (175 g)

2 cup/500 g Egg Creations Whole Eggs

Original, well shaken

METHOD

Heat oven to 375ºF (190°C)

Heat oil in medium nonstick skillet on medium heat. Add onions; cook and stir 3 min. Add peppers; cook and stir 3 min. or until crisp-tender. Remove from heat.

Unroll crescent dough onto bottom of 13x9-inch pan; press dough to cover bottom of pan while firmly pressing perforations together to seal. Prick with fork at 1-inch intervals.

Bake 8 min. or until lightly browned. Meanwhile, coarsely chop 2 cheese slices.

Top crust with remaining (whole) cheese slices, ham and vegetables. Shake egg carton well. (Or, lightly whisk eggs in bowl.) Pour eggs over vegetables; top with chopped cheese slices.

Bake 30 min. or until centre is set. Cool 5 min. before cutting into bars.

EASY HUEVOS RANCHEROS

Cook time: 3 min

INGREDIENTS

2 tsp / 10 ml non-hydrogenated margarine

1 cup / 250 g Egg Creations Whole Eggs

Original, well shaken

4 corn tortillas (6 inch/15 cm), warmed

4 processed cheese slices

1/2 cup / 125 ml chopped tomatoes

1 avocado, chopped

1 tbsp / 15 ml hot pepper sauce

1/4 cup / 50 ml chopped fresh cilantro

1 lime, cut into 8 wedges

METHOD

1. Melt margarine in small nonstick skillet on medium-low heat.

2. Whisk eggs until blended.

3. Add to skillet; cook for 3 minutes or until set, stirring occasionally.

4. Top tortillas with cheese slices, eggs, tomatoes, avocados, hot pepper sauce and cilantro; fold in half.

5. Serve with lime wedges.

YIELDS: 24 PORTIONS

INGREDIENTS

30 ml Olive oil

2 Onions, finely diced

8 Garlic cloves, fresh, finely chopped

2 kg OLYMEL lean ground pork #97262

4 Eggs, fresh

150 g Breadcrumbs, dried

30 ml Parsley, dried

15 ml Oregano, dried

5 ml Thyme, dried

To taste Salt & pepper

24 Hamburger slider buns, fresh, halved

500 ml BBQ Sauce, smoky, prepared

1 head Leafy lettuce, large, washed, patted dry

24 slices Cheddar cheese

24 slices Bacon, cooked, cut in halves (48 total)

3 Large tomatoes, fresh, washed, sliced

72 slices Dill pickles

PREPARATION

1. Add olive oil to a large pan set over high heat. Add onions. Cook until lightly caramelized.

2. Add garlic. Cook for 2-4 minutes. Cool and set aside.

3. Transfer onions and garlic to a large bowl. Add ground pork, eggs, breadcrumbs, and seasonings. Combine well and form into 24 mini burgers.

4. Preheat grill to medium high. Cook burgers for 5 minutes on each side or until an internal temperature of 80°C (175°F) is reached.

5. While burgers are cooking, toast buns.

6. Brush bottom half of each bun with BBQ sauce. Add lettuce, cooked pork patty, cheese, bacon (2 halves), tomato, and pickle.

7. Serve immediately.

Strawberry Ice Cream

Softened (I cup)

Heavy Cream (1 cup)

Vanilla Extract (1 tbsp.)

1 Maraschino Cherry for Garnish

DIRECTIONS

DIRECTIONS

Pre-heat oven to 3500F.

Spray or butter muffin pan. Take two chocolate chip cookie dough nuggets & form them into one large ball. Press cookie dough into the bottom of the greased muffin pan & begin forming the dough up the sides of the muffin cup. Make sure the base is nice and level and the bottom & sides are pressed down firmly. Use your fingers or a spoon to spread dough evenly into muffin cup to form the bowl shape. Work fast to not warm the dough too much.

Bake cookie cups for 10-15 minutes or until they are light brown.

Remove the pan from the oven & while the cookies are still hot, press a narrow glass (a shot glass will work) into the cookies to reform the bowl shape in each muffin cup. Return to oven & bake for another 5-10 minutes or until the cookie cups are golden brown.

Remove from oven & allow to cool completely.

Prepare chocolate sauce in a saucepan over medium heat. Heat the cream & butter until combined. Add the chocolate. Stir until chocolate is melted & smooth. Remove from heat & allow to cool completely.

When cookie bowls are cooled place a scoop of ice cream inside & top with desired amount of homemade chocolate sauce. Sprinkles are optional, but fun!

Soften ice cream so that it can be spread over cookies. Arrange cookies on a dish. Layer banana ice cream over cookie, making sure sides are rounded and smooth. Top with another cookie. Layer strawberry ice cream smoothly over cookie. Top with another cookie. For final layer spread whipped cream over top.

You can also spread the ice cream out into a 1/2 layer on a sheet pan, refreeze and then cut out exact cookie size with a cookie cutter and assemble over cookies.

Allow to freeze overnight, then serve.

Ingredients

50 grams bacon bits

128 grams Pearl Milling Co. complete pancake mix

96 grams milk

1 egg

Pearl Milling Co. Syrup

Canola oil

Directions

Preheat oven to 350F

Grease a 24 mini muffin pan with canola oil. Mix together pancake mix, milk and egg, until there are no lumps. Fold in the bacon bits and Cheetos Crunchy snacks. Scoop 1 tbsp of the batter into each mini muffin cup

Bake until cooked through, about 5-10 minutes

Remove from pan and allow to cool.

Serve with syrup.

Classic Sandwich with Ruffles

Ingredients

15 grams Ruffles regular of All Dressed chips

2 slices bread

5 grams butter

Tuna salad (OR chicken salad or egg salad)

Directions

Toast bread.

Spread toast evenly with butter.

Place tuna salad on buttered side of toast

Top with Ruffles chips.

Top with second slice of toast.

Cut diagonally and enjoy!
