Though the bean itself matters, one of the biggest factors affecting the taste of your coffee is the roasting process. The degree to which coffee beans are roasted determines coffee’s taste and aroma.
Coffee roasting is the process of transforming a raw, green coffee bean into a dark brown bean, ready to be used as coffee.
Green beans have a humidity of around 8-12% and need to be dried before the actual roasting process. It takes around 4 to 8 minutes to complete the drying process. Temperature controlling is extremely important at this point so as not to burn the beans in the drying process. The temperature of the beans will be around 160 °C. at the end of the process.
The browning stage is where the aromas of the beans start to develop. The natural sugars and amino acids within the coffee beans start to react and create a distinctive colour and flavour characteristic to the coffee bean. During the browning, you can see what roasters refer to as the first crack. This means the beans are expanding which brings us to the next stage.
This is the stage where the taste profile becomes fully shaped. 800 to 1000 different aroma compounds are developed curing the roasting process. These compounds make the flavour of the coffee..The expanded beans now start to release all the heat that was built up during the previous stages, which is called exothermic heating. The roasting stage leads up to the wanted aroma compounds that you want. In this blog we explain the differences between light, medium and dark roasts.

Light brown in colour, mild roasts provide a smooth taste, light flavour, and peak aroma. There will be no oil on the surface of these beans because they are not roasted long enough for the oils to break through to the surface. Origin flavours of the bean are more recognizable in light roasts since the flavours that come from the roasting process often aren’t prominent.
This roast is medium brown in colour, and offers a robust taste and full flavour, with a non-oily surface. It’s often referred to as the American roast because it is generally preferred in the United States.
Rich, dark colour, with a rich taste and full body. This roast has some oil on the surface and with a slight bittersweet aftertaste.
This roast produces shiny black beans with an oily surface. Dark roasts are noted for their bold, smoky, bittersweet taste. The darker the roast, the less acidity will be found in the coffee beverage.

Cold brew coffee is one of the latest beverage trends making the rounds. And according to data fro the national Coffee Association, consumption of cold brew coffees is on the rise.
Cold brew coffee is not just another term for iced coffee. It’s coffee that’s actually brewed without heat. The trick to making the beverage properly is time — 10-12 hours, or longer. And to many, it’s time well spent. Using time — rather than heat to extract the coffee’s oils, sugars, and caffeine — produces a very smooth and sweeter, low-acidic beverage with a higher caffeine content.
Here’s how to try it for yourself.
INGREDIENTS:
1 Cup 1850 Coffee Grounds
5 Cups Distilled or Filtered Water
2 pitchers
Strainer
Cheesecloth
Brew Time: 12+ Hours
1. Mix 1 cup of 1850® coffee grounds with 5 cups of water in a large pitcher.
2. Refrigerate the mixture for at least 12 hours. Remove it from the fridge and stir.
3. Line a strainer with cheesecloth. Pour the coffee mixture through the cheesecloth and strainer into a separate pitcher.
4. Cold brew coffee is more concentrated than other coffee. For the recommended strength, stir in another 1½ cups of water. Serve and enjoy.

There’s no doubt that we all love our cup of coffee, with it’s distinctive, comforting aroma and taste. But it doesn’t have to be just for drinking.
Coffee is a versatile ingredient that can be used in many recipes to add depth, richness and boost flavour.
Add it to breakfast recipes, marinades and rubs for grilling meat, dressings for salad, bake it into cakes or other types of dessert.
It’s one of the few ingredients out there that can be used in many different ways, each time bringing a unique taste and texture to the dish.

INGREDIENTS
2 cups (500 mL) whipping cream
1 can (300 mL) Eagle Brand® Sweetened
Condensed Milk
½ cup (125 mL) brewed Folgers® Classic Roast® or Black Silk® Coffee
½ cup (125 mL) sliced almonds, toasted
DIRECTIONS
Beat cream in large bowl until soft peaks form.
Add sweetened condensed milk and coffee and continue beating 2-3 minutes. Fold in almonds.
Pour into 8” (2 L) square pan. Cover with plastic wrap and freeze until solid, about 6 hours.

Condensed Milk, divided
1/3 cup + 1 tbsp (75 mL + 15 mL) brewed
Folgers® Black Silk® Coffee
1 tsp (5 mL) vanilla extract
1 egg
1 baguette, sliced
Ground cinnamon for garnish
2 tbsp (30 mL) butter
DIRECTIONS
Combine 2/3 cup (150 mL) sweetened condensed milk, 1/3 cup (75 mL) coffee and vanilla in medium bowl. Whisk egg in a separate bowl.
Melt butter in large skillet over medium heat.
Dip bread slices in condensed milk mixture, then in beaten egg.
Cook in butter until golden brown, flip and cook on remaining side.
Combine remaining sweetened condensed milk and 1 tbsp (15 mL) coffee. Drizzle over bread and garnish with cinnamon.

2 tbsp (30 mL) each: rice wine vinegar, brown sugar, hoisin sauce, ketchup

2 tsp (10 mL) Asian chili garlic sauce
1 tsp (5 mL) fresh grated ginger
1 ¼ pounds (675 g) boneless skinless chicken thighs
DIRECTIONS
Combine all ingredients. Marinate at least 2 hours in refrigerator or overnight. Discard marinade and grill over medium heat, 5 minutes per side, or until thermometer reads 165°F (75°C).
Serve with Fried Rice or Noodles.

2 tsp (10 mL) Folgers® Black Silk® ground coffee
2 tsp (10 mL) garlic powder
1 tsp (5 mL) each: dry mustard, paprika and brown sugar
¾ tsp (4 mL) salt
½ tsp (2 mL) black pepper
4 bone in center cut pork chops (3/4 -1” thick /2-2.5 cm each)
DIRECTIONS
Combine coffee, garlic powder, mustard, paprika, brown sugar, salt and pepper in small bowl.
Coat pork chops with spice mixture. Let rest 5 minutes.
Grill over high heat for 3-4 minutes on each side until internal temperature reads 145°F (65°C). Remove from grill, cover and let rest 5 minutes.
Serve with roasted potatoes and salad.
Canadians love their coffee. In fact, Canadian coffee drinkers consume an average of 2.7 cups per day, according to the latest data from the Coffee Association of Canada. Their data also shows that coffee remains the most-consumed beverage in Canada, with 71% of Canadians enjoying it daily.
Foodservice operators looking to gain a bigger market share of the coffee business in 2023 will need to be innovative and creative with the drinks they serve.
Being a coffee drinker is already trendy, as more of the younger generations are grabbing cups of java.
Gen Zs have a love for coffee, but not the traditional black or double-double. They’re looking for the health infused, feel good cup (oat milk, soy milk, double the caffeine to get your morning started cup).
Brewing methods such as nitro brewing and cold brewing are playing a big part in trends.
Sustainable and fair trade are terms that are pushing their way to the forefront. Coffee brands indicating they are fair trade certified are not only on-trend, but many people feel it has become a sociological necessity.

Contrary to the name, a coffee bean isn’t actually a bean. Rather, it’s the pit (or seed) that’s found inside the coffee cherry, which grows on a bush. The bean is removed from the fruit as part of the harvest process.

In 1932, Brazil couldn’t afford to send its athletes to Olympic Games being held in Los Angeles. Not wanting to let its athletes down, the government devised a plan to load a ship with 50,000 pounds of coffee and have the 69-member Olympic team serve as crew and sell the cargo at ports between Rio and L.A. to finance their trip. Coffee sales were so poor, they only made enough money for 24 athletes to be able to participate in the Games.
‘Cappuccino’ takes its name from the Capuchin friars: the colour of the espresso mixed with frothed milk was similar to the colour of the Capuchin robe. The Capuchin friars are members of the larger Franciscan orders of monks, and their order was founded in the 16th century in Italy.
The word espresso comes from Italian and means “expressed” or “forced out”. Espresso is made by forcing very hot water under high pressure through finely ground, compacted coffee.
It’s said that coffee was discovered by Kaldi, a goat herder, in Ethiopia in the 1500s. Kaldi saw his goats eating coffee cherries. He later observed a change in their behavior, acting as though they were dancing. They had a high amount of energy and didn’t sleep at night. The herder shared his findings with local monks who then realized the coffee cherries could help them to stay up all night and pray. They spread the word to other Ethiopian monks and soon it reached across the civilized world.
Kopi Luwak (also known as civet coffee), is one of the world’s most expensive luxury coffees. It’s made from partially digested coffee cherries, which have been eaten and defecated by the Asian palm civet. The cherries are fermented as they pass through a civet’s intestines, and after being defecated with other fecal matter, they are collected.
Kopi luwak is produced mainly on the Indonesian islands of Sumatra, Java, Bali, Sulawesi, and in East Timor.
Black ivory coffee from Thailand is another of the world’s most expensive coffees. It’s a type of arabica coffee that comes from the dung of elephants. Handpicked coffee cherries are fed to the elephants, mixed with other foods such as bananas and rice. 33 kg of raw coffee cherries results in only 1 kilogram of the finished product. Most of the beans are not recoverable as they are chewed by the elephants, become fragmented, or are lost in the bush after being excreted. Only 215kg of black ivory coffee was produced in 2021.
