There are six major culinary trends that foodservice providers must incorporated into their business to keep customers satisfied. How many of these practices do you employ in your businesses?

As manufacturers and distributors of bakery products, Weston has set an annual waste reduction target of 2% across the business in the areas of water use, solid waste, landfill electricity consumption and natural gas.

continue to develop and introduce products to meet the needs of consumers.

Safety in the Workplace

As manufacturers and distributors of bakery products, we have implemented robust health and safety programs to ensure that everyone goes home safe and sound each day.

Community Stewardship Weston Foods is committed to sustainability and social responsibility. For more than 130 years Weston Foods has donated a percentage of its profits to communities across North America where its employees and customers live and work.

Additionally, Weston Foods has created the Weston Cares - Seeding Stronger Communities campaign which focuses on donating funds to charities that support children specifically. Through this campaign, all charitable funds raised by employees of Weston are matched dollar for dollar by Weston. Since this campaign was implemented in 2010, Weston and its employees have helped raised more than $2.3 million to local charities impacting children all over North America.

Focus on Simplicity: Consumers want products with fewer ingredients and less processing, drawing to more quality and natural foods. Chefs and operators are opting for full fat butter and buttermilk, simple toast toppings like avocado and hummus, more “food in the raw”. Time is the New Luxury: Consumers are choosing options that allow for fresh, high quality food that is easily accessible and chefs are capitalizing with meal kits, delivery services and skip the line programs.

Being your Best Self: As consumers shift to avoid “bad” foods, they are choosing options that offer tangible and functional benefits, with chefs and operators capitalizing with unique offerings (Kupfert & Kim; Charcoal Coffee; Kombucha Tea).

Plants Firmly Rooted in the Spotlight: From 10% to 35% of consumption in some B&I outlets, and still growing in day parts and areas where fruits traditionally were dominant (breakfast bowls with beans, hummus instead of cream cheese, etc.).

Embracing the Experimental: Consumers seek products that provide an experience beyond the food itself. Often times manifesting itself with “larger than life” and “share-worthy”

foods like Sweet Jesus ice cream, Peace Treats milkshakes, Fresh City Salads in a Jar, Landing Group’s The Cure Caesar, Bug Bistro at the CNE 2017, and more. 

Back to Comfort: Nostalgia and comfort food bring an emotional element to foods that evoke memories with consumers. Operators are capitalizing with classic milkshakes, mac and cheese, grilled cheese, tuna melts and more.

Creative Ways to Use Bread We often get asked questions by operators of what to do with bread as it ages – particularly as some of our products have a short and clean ingredient list and therefore don’t have long shelf lives. Here are some “bread hacks & tips so you use every last piece”.  Typically best ways to use are in crumbs, croutons, stuffing, crostini’s, toast 

Gremolata (bread and herb and lemon topping for beef usually)

Pasta dish topping in lieu of parmesan: bread crumbs, EVOO, garlic

Bread Pudding- sweet or savoury

Papa al Pomodoro soup or Panzanella salad

Though not recommended, product can be refrigerated. If using tortillas that have been refrigerated, bring the tortillas to room temperature by removing from the case and letting them stand in the bag for 4-6 hours prior to using. Tortillas give the best results when warmed prior to use: Flat top grill – warm for 5-10 seconds per side at 350°F Steamer – 3-7 seconds in a table top steamer Microwave – 10-20 seconds depending on microwave Storing Flour Tortillas Store in a cool dry place. Avoid storing near any source of heat. Keep the product in the original box. The dividers in the box are designed to keep the product from sticking together due to the weight and pressure. If bags are removed from original box, do not stack higher than 4 bags high. Over stacking will cause the tortillas to stick together.

Storage and Handling To ensure that our operator customers get the best results when using Mission tortillas, several basic handling procedures are

recommended. When handled in this manner, results will always be outstanding: Handling Flour Tortillas Mission Foods stores and ships all of our flour tortillas/flavored wraps at ambient/ shelf stable temperature. Before opening bag, gently twist the stack of tortillas back and forth 3-4 times to loosen and separate the individual tortillas. Once bag is opened, make sure to cover/seal the remaining tortillas to keep the tortillas from getting dry and cracking.

Mission Flour Tortillas can be stored refrigerated, in their original sealed bags between 35°F - 40°F. This will not affect product quality.
