Market and Commodity News Top 5 Food Trends of 2018: Is Your Business Aligned with What Customers Want? The foodservice industry has seen a number of recurring trends gaining popularity as we head into 2018. Are you capitalizing on these trends in your business and giving your customers what they want? Take a look and adjust your menus accordingly. 1. Plant-Based Diets Continue to Gain Popularity: Plant-based diets continue to be a popular option for many Canadians. Health Canada is anticipating there will be more of a focus on plant-based proteins like beans, lentils, nuts and tofu in 2018. Are you offering plant-based options to your customers? 2. Focus on Eliminating Food Waste Remains Strong: Foodservice operators are placing a continued focus on eliminating food waste in order to make their businesses more cost efficient and sustainable. Waste production practices are rampant and will continue to be a main topic in the industry for the next year. 3. Scratch-made vs. Mechanically Processed Food: More than 2/5 of full-service restaurant consumers replied in a 2017 Technomic’s survey that the availability of scratch-made or in-house items was important to them when dining out at restaurants. As a result, many Canadian chefs are trying new techniques like in-house fermenting, curing, preserving and pickling. 4. Convenience is Key and is Behind the Ever Growing Popularity of the “Grocerant”: The “Grocerant” is a new term that has evolved from businesses offering a one-stop-shopping solution that allows customers to buy food and/or eat on the spot - whatever their preference. As Canadians become more and more concerned with convenience when shopping or dining out, “Grocerant’s” are becoming increasingly popular. 5. Blurring the Lines Between Structure and Time of Day: More and more consumers are wanting the option to eat whatever they are in the mood for, no matter what time of day it is. This has led to restaurants and foodservice operations to begin playing with their menus to offer all meals at every time of day. All day breakfast menus continue to be popular, and lunch and dinner items are served morning, day and night in some places.
