Bottleworks District in Indianapolis kicked off the new year in a big way with the opening of The Garage Food Hall. The city’s first food hall and community-focused marketplace offers Indianapolisarea residents and travelers the opportunity to sample the food and wares from local chefs and artisans in a lively, welcoming atmosphere. The Garage Food Hall occupies two of the historic CocaCola bottling plant’s original garage buildings, just steps from the Bottleworks Hotel. The Garage sports masterfully restored art deco terracotta facades and design features that pay homage to the district’s rich history. More than 20 independently owned local and regional food vendors are set to take up residence in the 38,000-squarefoot marketplace. Continued on page 26

National Restaurant Association Show Cancelled Second Year in a Row Event organizers of the National Restaurant Association Show have announced the cancellation of ATIONA~ the National Restaurant As- RESTAURANT ASSOCIATION . sociation Show, which was scheduled to take place May 22-25 at McCormick Place in Chicago. Due to the COVID-19 pandemic, the state of Illinois has placed an order in effect until early June limiting gatherings to no more than 50 people. While this order could be modified prior to expiration, McCormick Place has indicated their ability to re-open for large events is currently prohibited by the state regulation. Event organizers of the National Restaurant Association Show have developed an extensive collection of resources—including live Q&As with leading experts, panel discussions, and webinars—all available to the food-service community free of charge. Organizers have also made it easier to connect with suppliers, with The Show To Go, a free digital marketplace created to unite the operators and suppliers. Foxtrot Market Gets $42M Investment, Aims to Double Its Footprint This Year

Foxtrot Market, the corner store and café, has received a $42 million Series B growth investment. The round was led by David Barber's Almanac Insights and Monogram Capital Partners. Backers also include food and hospitality industry heavy hitters David Chang, founder of Momofuku; Nicolas Jammet, co-founder and chief concept officer of Sweetgreen; and Walter Robb, former CEO of Whole Foods. With this investment, Foxtrot expects to double its store count by the end of 2021. This growth will include adding as many as nine stores in Chicago and Dallas, where they presently have a footprint, and expansion into new markets including Washington, D.C. Funds will also be used to expand its line of private label packaged goods and gift offerings, and to continue the investment into nationwide shipping which launched in January. By accelerating its ecommerce capabilities and offering nationwide shipping on items like chef-driven packaged products, private label and exclusiveto-Foxtrot goods, and wine, Foxtrot will further itself as the nation’s premier corner store. “We have built a business that marries the local approach of a corner store with the convenience of e-commerce,” said CEO and Co-founder Mike LaVitola. “We know how our stores operate best and in which markets, which is where we’ll be going deep with our expansion efforts next.” Launched in 2014, Foxtrot combines an upscale corner store and café with app-based purchasing that makes its entire inventory available for delivery in under an hour. -Source: PRNewswire

LendingTree analyzed U.S. Census Bureau data from April 2020 to January 2021 to see how Americans’ food spending changed over the course of the coronavirus pandemic. Some of their findings revealed: ■ Spending on restaurants and takeout increased by 23.1% between April 2020 and January 2021. ■ The average household spent $292 on food away from home when COVID-19 first hit, now households are spending $359 on restaurants and takeout. ■ Spending on food at home, including groceries, increased at a lower rate. Video gambling license and terminal fees located in unincorporated areas of Cook County have been temporarily cut in half as part of a coronavirus relief package for businesses the Cook County Board approved. For the rest of the year, applications for video gambling licenses will cost $250 instead of $500, while the per terminal fee that operators pay will drop from $1,000 each to $500. The fee reductions would cost the county about $74,500, officials said. This action was among other pandemic relief efforts commissioners approved, including a drop in liquor license fees and vehicle wheel taxes. -Source: Chicago Tribune

Start with your frosting. I ordered my cinnamon roll with cake batter frosting and bananas; plus I ordered the s’mores cinnamon roll that had marshmallow and chocolate. They also have brownies and cookies up front on the counter, and they sell raw cookie dough that’s edible. I wasn’t counting my calories here. CHICAGO TACO AUTHORITY, 4219 W. Cleverly decorated with vintage Chicago Transportation Authority signage, photos and even faux “L” train siding and windows along one wall, this taco restaurant should not be missed. The menu boasts classics and contemporary takes from carnitas and chile relleno to barbecue bacon-wrapped shrimp. My favorite is chicken tinga tacos topped with house-made crunchy corn strips. I have been here numerous times and usually order one of their butter burgers; either with Wisconsin cheddar or mushroom and swiss cheese. This time I wanted to try the cod filet sandwich: crispy, moist, flaky fish served on a hoagie roll with tartar sauce, cheese and lettuce. Yum! Plus, I ordered some fries and cheese curds. We started with some dim sum dumplings, pork and shrimp and scallops, kung pao shrimp and orange chicken, plus, some shrimp fried rice and an order of string beans. The food was amazing. It comes with choice of rice or potato, tzatziki sauce and pita bread. Plus, they don’t skimp on their garnish of onions and tomatoes. All of those beautifully displayed cupcakes caught my attention, and I picked up a few. My selections included strawberry Champagne; vanilla and pink frosting; cake batter, which had blue frosting; and a vanilla raspberry with pink frosting and sprinkles. They were absolutely delicious! I went through the drive-thru for my order. I ordered one of the Italian beef sandwiches with hot peppers, which was so juicy and delicious, plus some gravy bread. I also ordered some onion rings and fries to go with it. They have a big menu offering all the fast food staples, including pizza, which I plan to order next time.

Irving Park’s Big League Burgers Serves Up Hit

South Siders, beware: This burger joint is all Cubs all the time, done up in the North Side baseball team's colors with plenty of Wrigley-related souvenirs. Nevertheless, Big League's burgers hits it out of the park. Try The Natural, a single patty smothered in grilled onions, American cheese, mayo and on the side, cross-cut pickles and fries. The Northsider, a double burger with American cheese, dijonaisse and perfectly cooked crispy bacon on a fluffy sesame bun, is almost too big to hold. Wash it down with a thick vanilla milkshake dribbled with caramel syrup. The extensive menu also boasts salads, sandwiches and larger entree platters. For the competitive eaters, there’s the Big League Challenge: Finish an impossible amount of beef, bacon, eggs and buns in 25 minutes or less, and the meal is free. Big League Burgers is at 3734 W. Your Insurance Company May Owe You Money for Roof Damage

This extreme winter unleashed devastation to roofs and properties throughout the Chicagoland area. Building owners should be aware that insurance companies, in most cases, may owe for the damage to interior and for roof replacement, due to the damage to roof systems if water infiltrated the roof system and trapped moisture in the roof and/or roof insulation. The amount of snow and ice wreaked havoc on buildings from a variety of causes, including frozen roof drains, sewers and gutter/downspouts, ice and water backup underneath roof penetrations, melting ice through walls, icicle damage, ice damming in valleys and gutter edges, roof collapse and many more unusual freak-of-nature water infiltration occurrences. The amount of damage this weather caused is unlike anything we’ve seen in long time. Many buildings and homes were not prepared for this. The amount of ice and snow build-up reached a point, where, in many instances, could not be removed without causing even more damage to the property. Hot pressure steaming with a hybrid pressure steam machine seemed to be the best defense to the ice problems. Care Roofing was very successful this year in providing many of its customers this steam service, which immediately stopped the leakage and helped prevent roof collapse. It is important that people know, however, that conventional pressure washers should NOT be used, because they can cause more damage to roofs and buildings. In addition, heavy duty heat cables should be an option explored by building owners looking for preventive measures. These cables must be installed and operating prior to any ice/snow events. Trying to install these after snow and ice is present may cause more harm because this could create even more ice from surface-only melting. See page 27 of this issue for the Care Roofing ad.

Big Drop Brewing Co., the world’s first craft brewery dedicated to non-alcoholic beer, makes its U.S. debut, brewing its most-popular NA beers in Chicago. New NA beers are available nationally online now and soon at retailers in Illinois, Michigan and Minnesota. Congratulations to Chicagobased Market Produce owner Jim Nix, who is celebrating his 30th year of selling premium products to downtown area chefs, Chicagoland restaurants and food businesses. Henry J Meat Specialties, 4460 W. Armitage in Chicago, is celebrating its 66th year of business. They are known for their meat specialties and famous corned beef hash. Human+Nature, opening April 9 at the Morton Arboretum, will be an outdoor art exhibition that will inspire awe and wonder as it connects people and trees. Internationally renowned artist Daniel Popper created five 15-to-26foot-tall sculptures exclusively for the Arboretum. One Off Hospitality recently announced the opening of the second location of Avec Restaurant, 141 W. Erie in Chicago. It took over the space that was formerly Pacific Standard Time restaurant. Avec’s other location is 615 W. Randolph St. in Chicago. North Chicago City Council approved a deal for a new grocery store. George’s Fresh Market will be the city’s first full-service grocer in over 20 years. George’s Fresh Market will open as part of the Paris Banquet Facility at 14th Street and Lewis Avenue. George’s Fresh Market is planning an opening this spring.

PharmaCann Inc., one of the nation’s largest privately held cannabis companies, recently opened its newest Verilife retail location in Rosemont’s Parkway Bank Park Entertainment District. The Rosemont location marks the fifth Verilife dispensary in the state of Illinois, and PharmaCann plans to open additional locations in Galena, Chicago’s River North neighborhood and Schaumburg. The Big Mini Putt Club, 1302 N. Milwaukee Ave., is among Chicago’s first, dedicated indoor mini golf courses. The course and bar design recalls back to simpler times when you could spend your summer nights challenging your family, friends, and/or foes to a couple rounds of mini golf. Opening soon! The Graceful Ordinary restaurant, at 1 E. Main St. in St. Charles, Ill., plans to open along the scenic Fox River this spring in the former BMO Harris Bank Building. Golden Corral is venturing far beyond buffets in its quest to sustain business through the pandemic and beyond, with tests already underway of such draws as drive-thrus, frozen margaritas, a la carte menus, a virtual concept specializing in comfort foods and even a more sanitary riff on the brand’s signature chocolate fountain. “We will forever have to operate differently from how we did before the pandemic,” CEO Lance Trenary explained during the Deeper Dive, a restaurant business podcast. “We had to completely change our business model and innovate with new ideas— different types of access points for our guests.”

Done right, the fried goods are delicious, served quickly and deliver a perfect crunch. However, frying oil degrades if it’s used repeatedly. During the deep frying process, heat, air and moisture are brought into the oil, which causes it to break down. Conversely, the lower oil quality also influences the quality of the fried food. It affects the color, taste and texture of the dishes. How exactly do we know when it’s time to change the frying oil? Guessing the quality It is still common for many chefs to use the sensorial determination method by comparing oil samples or deciding if they can still see the frying basket through the oil. Oil turning darker during its lifetime is mostly caused by caramelization of sugar brought into the oil, which is not harmful nor does it influence the oil quality. Changing the oil by schedule is also widely practiced but since the amount of food prepared, the temperature of the oil, microparticles and water added to the oil,

Having joined the Nonnina team in October, he spent the monthslong closure revamping Nonnina’s menu to debut this winter.

Boudouvas brings an extensive, seasoned background to Nonnina, having worked in numerous Italian and Greek restaurants in Chicago including Francesca Restaurant Group, Mia Figlia, Lettuce Entertain You Group and more. Most recently, he served as the executive chef at Avli River North. Boudouvas received his culinary degree from Kendall College and is a Chicago native. Chef Boudouvas aims to redefine Italian cuisine and ensure Nonnina stands out among others in the area. Additionally, Nonnina has brought on Joe Bazzi as general manager. Bazzi joined the team last summer and brings years of experience to Nonnina. Previously, Bazzi was the manager at True Food Kitchen and Quartino, where he oversaw the bar and wine programs as well. He was with Quartino for seven years and started his career as a server before working his way up to manager. Combining his classical training with a unique flair, Boudouvas takes classic dishes a step further by infusing different flavors and acids to reinvent them. Boudouvas is passionate about including different textures and flavors within his dishes. This is showcased on new items, such as a twist on the classic Caesar salad, by adding homemade focaccia croutons, crispy pancetta and shaved brussels sprouts. Five Warning Signs of a Bad Supplier

Every supplier and marketer across the globe can tell a good story and lure in buyers. It’s up to each of us to look deeper into doing business with them and form our own opinions. Here are a few thoughts on how to identify suppliers that may fall short into delivering on their promises: 1. Full Voice Mail. How good can a company be if the voice mail box is constantly full? Occasionally this may happen, but if it is consistently full, they may be avoiding calls from unhappy customers. 2. Unreturned Calls or Emails. Every so often a message may slip through the cracks or get lost, but if this is consistent, beware. They may be avoiding you for fear of correcting problems that they cannot afford to fix. 3. They Have a Reputation of Not Paying Bills. This may be tricky and may not matter to you, but the companies who can’t pay their bills are always at the bottom of the barrel when it comes to them getting product from their suppliers. If they say that their supplier is “out of stock” is it out of stock because they don’t pay their bills and their supplier will not sell to them? If you are buying food from a supplier that does not pay their bills expect inferior quality. 4. High Turnover. The best companies always attract the best employees and retain them. If employees come and go often, you know what that means. 5. Do They Advertise? The best companies publicly advertise and never hide. Good suppliers are not afraid of having more visibility. Warning: If a supplier tells you they like to keep a “low profile,” it may be because they are hiding something. And if they rely on word of mouth to get new business, it may be because they know that increased visibility for a bad company drives negative publicity, which is why they want a stay under the radar.

Hershey is seeing strong demand for its chocolates and seasonal candies as people are cooped up inside their homes, searching for every small occasion to celebrate. “Throughout the entire year, seasons was one of the key drivers as consumers really wanted the comfort and the normalcy associated with seasonal traditions and rituals at a time when COVID-19 uprooted their lives,” said Hershey CEO Michele Buck in an interview with CNBC’s Sara Eisen on “Closing Bell.” One notable example was a trend Hershey spotted that as coronavirus cases spiked around the country, demand for s’mores ingredients rose. No doubt, families were seeking pleasure by setting up barbecues in their backyards and roasting s’mores by the fire. Hershey said its chocolate sales were 40% to 50% higher in areas with an increased number of COVID-19 cases than areas that were lower. “This past year, we noticed that wherever COVID case counts were elevated, we were seeing increased sales of s’mores ingredients and then we were able to use the case count trajectory as a foreshadow of where we should focus some of those efforts and build displays and put media in those markets,” said Buck. In early March, the city of Chicago and Cook County announced that indoor capacity at restaurants, bars and events can increase to 50% or 50 people within one room or space (whichever is less) and establishments can remain open for on-site liquor service until 1 a.m. Additionally, larger establishments that can fit more than 50 people within a room at 50% capacity can now use impermeable barriers such as plexiglass in order to divide rooms into multiple spaces. “Chicago restaurants are ready and eager to serve more diners safely,” said Sam Toia, president & CEO of the IRA. “These updated regulations are another step in the right direction that will give needed flexibility to operators across our 77 neighborhoods, protect hospitality jobs and allow businesses to welcome more customers back with extensive public health measures in place." Additionally, the IRA continues to call on the state to advance restaurant and hospitality workers into the Phase 1B of vaccine distribution, which will provide enhanced protection to essential workers. Looking ahead, the IRA is also lobbying to secure passage of a dedicated restaurant relief fund at the federal level, and is urging the state of Illinois to work with stakeholders on innovative solutions to allow larger gatherings, which will bolster our struggling tourism, events, and conventions industries.

Clemens Food Group, a vertically integrated pork processor, has announced plans to invest $228 million to expand its operations in Hatfield, Penn., to include a new facility to support increased smoked meats and cooked sausage production. Up to $150K for Restaurateurs Who Are Expanding Into Wheeling The Village of Wheeling has encompassed diverse culinary establishments for generations, and Wheeling continues to offer an attractive backdrop for entrepreneurs looking to make their culinary mark. Ill. Restaurant Association Installs Officers, Board of Directors and Announces Award Recipients Recently, the Illinois Restaurant Association hosted its annual meeting. Held in virtual form, the event was open to all members of the hospitality industry and included the installation of new members of the IRA’s board of directors and advisory council and the organization’s annual awards presentation. The meeting also announced Sam Sanchez as the newly elected chairman of the board. Stepping into the role held for the past two years by Gregory Schulson, CEO of Burrito Beach and Lunan Corp., Sanchez most recently served as the IRA’s first vice chairman and is the founder and CEO of Third Coast Hospitality Group. “We are thankful for Gregory’s contributions over the past two years,” said IRA President and CEO Sam Toia. “His efforts during the COVID-19 crisis leave us in a hopeful place. “As we look to the future, we are honored to work alongside Sam Sanchez,” Toia added. “As the first Mexican-American to step into this role, his story is one of resilience, hard work and passion. He is the principal partner overseeing operations and business development for Moe’s Cantina, Old Crow Smokehouse, and Tree House. In addition to his restaurants, Sanchez owns EMC Construction, a full-service construction company that handles renovations of existing properties and new construction. In June 2020, he founded SDS Blocker Manufacturing, a company producing high quality disposable face masks. Highly involved in civic, charitable, and mentorship activities, he is highly regarded as community leader and was named Restaurateur of the Year from the Illinois Restaurant Association in 2015. “I’ve been involved with the association in many ways over the years, but it is a proud moment to be the first Mexican-American operator to serve in this role,” said Sanchez. The IRA also announced its annual award recipients in four categories: restaurateur of the year to Schulson; vendor of the year to Gordon Food Service, Performance Foodservice, US Foods and Sysco; the Sara Rowe ProStart company of the year to Mariano’s; and a special lifetime achievement award to Phil Vettel of the Chicago Tribune. Southwest Airlines Launches One Million Acts Of Kindness Challenge

Unsurprisingly, Americans Spent More on Groceries in ‘20 A new data study found that Americans are spending more on groceries than ever before. TOP Data analyzed spending at grocery stores across the U.S. and found that the average annual grocery bill rose by 9.4% in 2020, with the average person spending $4,442. The study also revealed that the biggest increase in spending has been on spirits, which was 33% higher in 2020 than in 2019. Spend on meat jumped by 16%, with the meat alternatives subcategory seeing a huge 34% spike. The biggest subcategory increase was storage, which saw a huge 605% increase. After COVID-19 caused delays in rolling out Flashfood to all its stores across the Midwest in 2020, Meijer is on track to complete implementation of the food waste reduction program this year. While also cutting down on instore food waste, the initiative allows customers to purchase food nearing its sell-by date—like meat, produce, seafood, deli and bakery products—at up to 50 percent off on the Flashfood app, and then pick them up at Meijer stores. "We're pleased to expand our relationship with Flashfood throughout our footprint and offer this opportunity to all our customers," said Don Sanderson, group vice president of foods for Meijer. The retailer launched the app-based pilot program in November 2019 at a handful of Meijer supercenters in metro Detroit. After reducing in-store food waste by 10 percent, Meijer opted to expand the offering to all its stores across the Midwest. To date, an estimated 240 Meijer supercenters have Flashfood. Rocky Mountaineer plans to bring its luxury train journeys to a new route in the Southwest United States in 2021. The Rockies to the Red Rocks route will be a two-day rail journey between Denver and Moab, Utah, with an overnight stay in Glenwood Springs, Colo. Rocky Mountaineer operates multi-day, daytime train journeys that feature incredible scenery, regional cuisine and attentive service in its spacious, glass-domed train coaches. The company has long had the goal of expanding its routes to bring its train travel experience to showcase new destinations. This new route will be in addition to the three rail routes that run in Western Canada, between Vancouver and the Canadian Rockies towns of Banff, Lake Louise and Jasper. “Rocky Mountaineer will bring a new luxury train tour to explore the historic rail route between Denver and Moab. Over the past 30 years, Rocky Mountaineer has become renowned for our world-class train travel experiences, and now we are opening our newest train experience in the region where train travel history began,” said Peter Armstrong, founder of Rocky Mountaineer. “This region, with its magnificent scenery, national parks, vast opportunities to explore, will delight millions.” Rocky Mountaineer will launch the route with a preview season of 40 departures across 10 weeks from Aug. 15 to Oct. 23.
