FRESH FARMS DELIVERS AN INTERNATIONAL EXPERIENCE

Photos courtesy of Fresh Farms

Fresh Farms founder Dean Svigos initially wasn’t planning on creating a chain of Chicago-area grocery stores. His family, he says, started out as owners of the former Family Drive-In in Humboldt Park. When they sold that location and set out on the arduous course to build a new location for the restaurant, another idea arose: “We thought a fruit market would be good.” For the first few months the produce market was open, Svigos says, “There were lines two blocks long. Food markets were not a thing in Chicago in 1980. It was just the beginning.” Today, Fresh Farms remains in the Svigos family, operated by Dean and his brothers, John and Mike. The grocery chain has four sprawling locations across Chicago, Niles and Wheeling, jam-packed with a vast array of international products. “We’ll bring the tastes of the world to you,” says Dean Svigos. “We have a motto: to challenge our palate. If you only like mac ‘n’ cheese or steak and potatoes, we’re not for you.” Continued on page 2

His employees have international backgrounds, too, he says. Many of them speak languages in addition to or other than English. The chain claims to have the area’s largest selection of international food, including Croatian, Greek, Indian, Korean, Italian, Middle Eastern, Polish, Romanian and Russian. The diversity, Olive oil from Greece, Italy and more at Fresh Farms grocery in Niles. Photo by Carmél Carrillo Svigos says, adds to Fresh Farms’ expertise in meeting customers’ unique cultural needs. Born in Greece in a village of 500 people, Svigos and his family moved to Chicago in 1968. “When I was young, my parents walked far to buy food. They would pass three or four grocery stores to get to the one with the Greek food they wanted. “We try to create that ambience (at Fresh Farms) for first-generation customers, and have you experience what your grandparents” had access to when they first came to this country. “Everything is top quality available.” Indeed, Fresh Farms awarded 2016’s Independent Grocer of the Year. “We do not advertise,” Svigos points out. “We work strictly by word of mouth, and we try to bring all varieties to the customer and the market.” -C.C. a

Federally Funded Food Box Program Extended to April A federal program that has provided boxes of fresh food to charities facing long lines of hungry people during the coronavirus pandemic has been extended through April, offering a lifeline as the economy struggles to recover and unemployment remains high. The U.S. Department of Agriculture announced that it will purchase $1.5 billion of food for the Families to Farmers Food Box Program. The funding was included in the COVID-19 relief package signed into law in December, just as the program was set to end and food banks were raising concerns about food supply amid a growing need. -Source: Chicago Tribune

22K More Starbucks in Next Decade

Starbucks said at a recent investor event that it plans to increase its store count to about 55,000 by 2030, up from roughly 33,000 today. The company is betting that by flooding the market with new types of stores, including smaller locations and ones with drive-thru and curbside pickup, it will be able to steal more customers from the competition. -Source: CNN

CENTRAL CONTINENTAL BAKERY, 101 S. Main St., MT. PROSPECT, Ill.; 847-870-9500. This is a beautiful, full-service bakery that has been around for a very long time. I picked up some doughnuts from here: double chocolate cake, chocolate plain, coconut, powdered and a cream filled. One was not enough so I ate two. Plus, I picked up a blueberry muffin and a cranberry muffin and a couple of Danishes. It’s a good thing I stopped at that point. Their display of cookie and cakes looked amazing, too. CHARCOAL DELIGHT, 3139 W. Foster Ave., CHICAGO, Ill.; 773583-0056. They have been around for a long time, and the food is always good. They have a great cheeseburger. You can get a quarter- or a half- pound burger with choice of cheese: American, Swiss, mozzarella or my choice—cheddar. The bun is soft, the burger is char-grilled, and I get mine with the works. My other favorites here include their gyros sandwich, the Scotty dog and their broasted chicken. HOOTERS, 8225 W. Higgins Rd., CHICAGO, Ill.; 773-714-0193. On the menu you will find salads, burgers, seafood, sandwiches and more. I always order wings, no matter which Hooters location I visit. This time I ordered some of the Original Hooters Style Wings, which are hand-breaded, and I chose two types of sauce; barbecue and hot. Plus, I ordered some of the boneless wings with blue cheese dressing on the side. Their wings are outstanding! JIMENEZ FRESH MARKET, 5330 W. Belmont Ave., CHICAGO, Ill.; 773-283-9402. This is a good-sized grocery store offering a lot of interesting products. They had a good selection of snacks and chips. I picked up a couple bags of Cheetos Torciditos (spicy Cheetos), twisted cheese and chili flavor; so good. I also picked up some cans of Jumex juices along with a Jarritos tamarind drink, along with some Cacique chorizo. They had a good sized meat and produce area along with a taqueria where you could order food to go. LAO SZE CHUAN, 1935 Sheridan Rd., HIGHLAND PARK, Ill.; 847780-3198. They have an extensive menu of Chinese specialties including soups, fresh handmade dim sum, noodles, beef and lamb, seafood, pork and chicken dishes. I tried the spicy fried rice. After you take a bite, the heat kicks in. I also tried the General Tso’s chicken and an order of black pepper beef tenderloin. Portions are plentiful and everything was delicious. Check them out, they have numerous locations. LUKES ON HARLEM, 3130 N. Harlem Ave., CHICAGO, Ill.; 773889-4000. I saw the sign on the top of the building that said South Side Breaded Steak Sandwich, so I tried one. I ordered it with marinara and giardiniera. That sandwich was HUGE! I loved it, and I ordered a pizza puff too. They also have hot dogs, burgers, homemade Italian beef, meatball sandwiches and so much more. Drive-thru service is spot-on and their prices are very reasonable. THAI INBOX, 1417 Waukegan Rd., GLENVIEW, Ill.; 847-904-2755. This is the perfect place for pick-up. They offer lunch specials Monday through Friday from 11 a.m. until 3 p.m. I ordered some egg rolls with chicken and sweet and sour sauce for dipping. I also picked up the No. 504, which was Pad Kee Mao: a stir-fried noodle dish with basil, green pepper, onions, tomatoes, carrots and tomatoes in a spicy, hot sauce and hot chili. It had just the right amount of heat. It was very good!

Chobani is Betting on Probiotics Trend to Revive its Yogurt Sales in U.S. Chobani is jumping on the probiotics trend with three new yogurt-focused product lines that claim to boost gut health and immunity. The privately held company is the No. 1 maker of Greek yogurt, but it’s been expanding its product offerings as yogurt consumption has stagnated, adding oat milk, yogurt and coffee creamers to its lineup last year. In 2019, U.S. yogurt sales had fallen about 1% since 2015, according to Euromonitor International data. Chobani is trying to deepen its connection with probiotics, which are live bacteria and yeasts that can have health benefits when ingested. The new Chobani Probiotic products include blended yogurts and yogurt-based drinks. The company has also created versions geared to children that come in drinks and pouches. At $1.49 per cup for a yogurt, the price points are similar to its Greek yogurt. Chobani has already released fermented plantbased drinks under the probiotic line. -Source: MSNBC

Countertop partitions offer social distancing solution. Many guests enjoy dining at counters, but want to do so safely. Social D Partitions Company has introduced a new countertop social distancing partition designed to create a barrier between patrons sitting at counters or long tables. The partition is made of a steel base that is powder coated with a rich bronze color, using a 3/16-inch thick acrylic. It retails for $199. “We have all seen restaurants using partitions on the back of their booths to create separation between guests, but there hasn’t been many good options for countertop partitions” said Steve Theofanous, CEO of Chicago-based Social D Partitions. As more people get vaccinated and the demand for indoor dining increases, food service industry operators will be looking for effective ways to make their guests feel safe while enjoying indoor dining again. “Partitioned indoor dining” will likely be a phrase that many of us will be hearing more about in 2021, and a trend that guests will be looking for when deciding on a safe place to dine. The partitions can be ordered online at SocialDpartitions.com.

Younger Set Could Revitalize Wine Sales By appealing to y o u n g e r generations' preference for socially responsible businesses, the wine industry could better court millennial and Generation Z interest, with the latter demographic alone comprising about 32% of the global population today, Amber Lucas writes. According to Account Director Marcella Tompkins of McCue PR, whose clients include Ferrari-Carano winery, "Social justice and anti-racism is a huge concern for millennials and Gen Z, so brands that don't use their voice to stand alongside their customers risk losing their customers to brands that do."

Semi-Sparkling Wines Pair Well

Image via Pixabay

Also known as frizzantes, semi-sparkling wines are lightly effervescent vintages—for example, many proseccos, California roses and Lambruscos would qualify—whose relatively mild fizz makes them an excellent choice for food pairings. "Fully sparkling wines tend to mute the varietal characteristics of their component grapes ... frizzantes tend to showcase the actual grapes from which they are made. Because frizzantes put the grapes front and center, they can be a superior pairing with foods. They don’t elbow the food aside to gain the dominant position," said Jim Laughren, the author of "50 Ways to Love Wine More." -Wine Enthusiast Magazine

Beverage flavor trends in 2021 will be driven by consumers seeking the less-sweet profiles of vegetable and botanical infusions, as well as the “next generation” in citrus, such as blood orange, yuzu and pink grapefruit, said Vicki Berry, business development manager at Synergy Flavors. ‘Plating Change’ Program Helps Restaurants and the Food Insecure Chicago chef Giovanni Labbate recently fed 500 frontline workers at Amita Health St. Alexis Hospital with his pizza truck, Billy Bricks on Wheels 2. All of this was made possible by an initiative from Marcus Lemonis. Lemonis has kickstarted the "Plating Change" program through the Lemon-Aid Foundation with a $1 million donation and a newly formed partnership with Grubhub. The Plating Change program works with Grubhub to give back to World Central Kitchen, supporting its Restaurants for the People program. This not only helps independent restaurants by purchasing meals and driving direct revenue, but also aids employees of the business itself and for communities in need. A $500,000 donation through Lemonis' the Lemon-Aid Foundation jumpstarted the program and helped World Central Kitchen and Grubhub take immediate action in New York City, Chicago, Boston, Los Angeles, Miami and Philadelphia, bringing food to those who need it most. Over the next couple months, Marcus will donate the remaining $500,000 to additional charitable organizations that fight food insecurity as well as local restaurants affected by the COVID-19 pandemic.

platform that partners with notable chefs to create deliveryonly virtual restaurant brands, is Anthony Bosko (left) and Fabio Viviani are among now available the chefs on Foodhaul’s roster. to consumers in Chicago, surrounding Chicagoland suburbs and Milwaukee. The unique cloud kitchen concept puts an emphasis on its chef partners to create long lasting brands, with every menu item crafted and tested to be as delicious as if it were ordered inside a restaurant. Foodhaul is creating an opportunity and solution for third-party restaurants and hospitality partners to use their existing, underutilized kitchens and labor to generate new revenues by licensing and executing Foodhaul’s virtual brands. With a selective screening process, Foodhaul vets each kitchen to ensure they are providing the highest level of quality control, service, and hospitality before they sign on to be licensee. Foodhaul then provides a turnkey toolkit with the concept’s recipes designed for systematic production, along with marketing and social media assets to help create awareness of the partnership. This full transparency model allows consumers to know exactly where their meals are coming from—essentially taking the “ghost” out of ghost kitchen. To complete the process, Foodhaul funnels orders to its licensed kitchens through a proprietary customer acquisition model, with a goal to ultimately create a new revenue stream for kitchens and keep staff employed. Foodhaul’s current roster totals seven original concepts, which include Toscana featuring traditional Italian and beloved family recipes and Burgers ’n Wiches, both from chef Fabio Viviani; Smokeheads BBQ from chef Anthony Bosko; Pluck’d, featuring wings from chef Dirk Flanigan; Stock & Leaves for soups and salads, Three Kings for pub-inspired fare, and Kid Oh’s, a collaboration with HandCut Foods. The platform’s unique culinary portfolio is made to order via premier delivery services like DoorDash, Uber Eats, Grubhub, Postmates and more. Now more than ever, Foodhaul is committed to bringing its re-engineered culinary and delivery value chain to more restaurants and markets on a regional and national level. —Christian LesStrang Donte Tatum Photography

First Black-Owned Distillery in State of Kentucky Opens in Louisville

Brough Brothers Distillery, the first and only Black-owned distillery in the state of Kentucky, recently opened in Louisville. The distillery was founded by Victor, Bryson and Christian Yarbrough, three brothers born and raised in Louisville, Ky. They wanted to produce quality bourbon whiskey in an industry that has thus far been inaccessible to some minority entrepreneurs. They are committed to supporting other local businesses in an effort to revitalize the West End neighborhood in which Brough Brothers is based. Their distillery will provide job opportunities and economic growth for the community of Park Hill, a historically underserved area of Louisville's West End. "Brough Brothers has an opportunity to not only provide employment opportunities for our local community, but also design an experience for locals and tourists in the heart of one of Kentucky's cultural hubs," said Brough Brothers CEO Victor Yarbrough. "At a time in history when there is much attention on Louisville, we are excited to represent positive change and hope for and on behalf of our city." Its bourbon shop will be open for business by appointment only in spring 2021. The bourbon is available now on store shelves and online. Brough Brothers has received glowing customer reviews for being one of the smoothest bourbons on the market. With major and independent retailers selling it in Kentucky, national retailers (Kroger, Total Wine and More, Trader Joe’s, Walmart) and distributors alike have taken notice of the brand’s explosive popularity. Brough Brothers has major distribution partnerships in five states: Kentucky, Florida, Tennessee, Indiana and Colorado. The company will expand its distribution to another 20 states in early 2021.

RDA-Compliant Plans at Healthy Kitchen 101 Website For the first time, health-conscious cooks can now find wholesome and balanced meal plans that follow the Recommended Dietary Allowance (RDA) on HealthyKitchen101. com, announced Luna Regina (pictured at left), founder of the leading healthy recipe website. "We've been working very hard over the past several years to develop a collection of delicious recipes that are compliant with the latest health standards," Regina said. The recipes used in the meal plans are created by Regina and refined by a professional chef for taste and presentation. Each one is then audited by a registered dietitian nutritionist for nutritional content. “A random combination of healthy recipes does not guarantee a balanced meal. You have to account for the total calories, protein, fat, carbs and sodium, among other nutrients and ingredients. This can be tedious and time-consuming, so people are sometimes hesitant about making healthy meals at home. Our meal plans take care of everything so you can focus on the cooking,” she said. According to Regina, the nutritional content of every meal plan falls within the daily allowances recommended by the Food and Nutrition Board of the Institute of Medicine, National Academy of Sciences. The meal plans are designed for generally healthy people with no specific health conditions or special nutritional requirements. Each plan is a complete meal with a main dish, plus a side dish, beverage, and/or dessert. The plans are conveniently tagged as breakfast, lunch, or dinner for easy selection and navigation. The meal plans are currently free of charge. -Source: PRNewswire

Mondelez Acquires Healthy Snack, Chocolate Maker Hu Master Holdings Chicago-based Mondelez International Inc. said it has acquired healthy snack and paleo chocolate maker Hu Master Holdings, confirming an earlier report in the Wall Street Journal. Terms of the deal were not disclosed, but Mondelez said the deal comes after a 2019 minority investment granted it a right of first offer to acquire the company. The deal closed in January. Food companies are increasingly focusing on healthier options in response to demand from more health-conscious consumers. Hu, which comes from the phrase “Get Back to Human,” was founded in 2012 as a family business run by Jason H. Karp and siblings Jordan Brown and Jessica (Brown) Karp. The first iteration was Hu Kitchen in New York City, a high-end restaurant with an emphasis on simple ingredients. Mondelez will continue to run the business as an independent one using all existing manufacturing facilities. -Source: MarketWatch

BOOKSHELF ‘Step Into Greatness’ Publisher: HigherLife Publishing Paperback: 110 pages Price: $19.95 ISBN-13 : 978-1951492489

Faith-based leader and motivational youth coach Jay Vinson recently announced the official release of his second book, created to help those struggling during difficult times. Written as a daily devotional, "Stepping Into Greatness: From Pain to Purpose & Promise" blends Vinson's personal and moving life story into a series of profound meditations that help guide readers to discover God's purpose for their lives. Warm, friendly and conversational, Vinson's devotional is intended for a wide audience: teenagers and adults, the faithful, and those who are still questioning. “The most important question anyone can ask themselves is, 'What is my purpose?'" said Vinson. "Because that question can lead us out of suffering and into a lifetime of discovering what God has planned for us. More often than not, that path starts with adversity and pain. This has never been more-clear than right now, with sickness and death all around us. But God always has a purpose for our pain. And life's adversity has a way of leading us toward a higher goal."

Kellogg's Away From Home has opened the doors to its Menuvation Center at The Hatchery, a food and beverage business incubator in the heart of Chicago. The Menuvation Center marks a major investment by Kellogg's Away From Home in culinary innovation and partnership with operators. It's like a science lab, kitchen and think tank all rolled into one. The center will facilitate a close, collaborative partnership with Kellogg's Away From Home's culinary team to help operators create effective solutions that meet today's demand to keep menus fresh and on-trend. While at the Center, operators will have access to the proprietary iCrave Process, providing a fluid combination of data-driven analysis, real-world insights, and imaginative thinking to create the next big thing for their menus. Stephanie Izard, chef and owner of Girl & The Goat, Duck Duck Goat, Cabra, Little Goat Diner, and Sugargoat in Chicago, joined chef Matt Jost of the Kellogg's Away From Home culinary team at the Hatchery to discuss why innovation is essential to chefs and operators. Chef Izard is known for her innovative solutions, especially during the pandemic, such as the “Girl and the Goatceries” meal kits that now ship nationally across the United States. "As a working chef and business owner, I know how hard it can be to balance the daily demands of running a restaurant with the importance of thinking ahead and constantly innovating to keep your menu fresh," said Izard. "I applaud Kellogg's for offering this important resource to operators at such a pivotal time in our industry." "The Menuvation Center offers operators an opportunity to closely partner with Kellogg's Away From Home, with a unique process that's rooted in operator, consumer, and culinary insights," said Shawn Busse, director of research and development at Kellogg Company. "The Hatchery felt like a perfect fit for our Menuvation Center because of its reputation for being at the center of ground-breaking ideas in our industry. An incubator mentality matches the innovative spirit the Menuvation Center is all about." The Menuvation Center and iCrave Process are supported by Kellogg's Away From Home's team of in-house chefs: Oona Settembre, Matt Jost, and Heath Schecter. The team brings a collective 56 years of food industry experience and expertise. The culinary team is dedicated to finding solutions for each operator's menu needs, through data-based insights, close collaboration and the creativity only chefs can provide.

anxiety and depression. It can be caused by a lack of exposure to sunlight. Nutrition and fitness expert Jody Trierweiler has five foods with nutrients that can help fight off SAD. The first thing that Trierweiler says can affect your mental health are low folic acid levels, which are associated with anxiety and depression. Lentils are the number one source of folic acid in food. Low iron levels can also affect depression and anxiety, which Trierweiler says can be helped by eating clams. Iron is absorbed with the help of vitamin C, and clams contain vitamin C and iron, giving you double the benefits from one food. She also says to make sure you’re getting your recommended fiber intake, which helps your body digest food and nutrients. Her favorite source is raspberries, which pack 8 grams of fiber per cup. Keeping up on Omega 3 nutrients can also help combat inflammation that can take place in your brain when you experience depression and anxiety. Fish like salmon are a great source, and flax seeds can help fill in the gaps. Trierweiler’s last suggestion is to eat probiotics to create a healthy gut atmosphere. Fermented foods like sauerkraut can get you these nutrients. -Source: ClickOnDetroit.com

Costco Supports Future of Stores Costco CEO Craig Jelinek said while e-commerce will no doubt play a key role in the wholesaler's future, the company is still committed to its brick-and-mortar stores and the in-person shopping experience that Costco is famous for. "It's still important to get people physically in the stores," Jelinek said. - Source: CNBC

U.K. to restrict junk food promos Britain will ban “buy one get one free” promotions for food high in fat, sugar or salt and free refills of sugary soft drinks in restaurants starting in April 2022, the government said, its latest step in its plan to tackle obesity and improve public health. The measures will also restrict where in a store promotions on such products can be advertised, and unhealthy promotions will not be allowed at checkouts, shop entrances or at the ends of aisles. Britain first proposed restricting “buy one get one free” deals on junk food in July, and also announced measures such as banning TV and online adverts for junk food before 9 p.m. In late 2020, the government went further and proposed a total ban on online advertising of unhealthy food. -Source: Reuters

USDA Conducting Local Food Marketing Practices Survey In January, the U.S. Department of Agriculture’s National Agricultural Statistics Service (NASS) began conducting its Local Food Marketing Practices Survey. First conducted in 2015, this Census of Agriculture special study looks at local and regional food systems and provides new data on how locally grown foods in the United States are marketed and sold. The results will be available in November 2021. “Federal funding and policies for local and regional food systems were greatly expanded by the last three Farm Bills and it is our job as a federal statistical agency to help measure this part of the agriculture sector,” said NASS Administrator Hubert Hamer. “We are excited to provide the first official federal data ... and a fiveyear comparison point to inform policies and business in this area.” The Local Food Marketing Practices Survey is part of the Census of Agriculture Program and as such, federal laws require producers to respond and USDA to keep identities and answers confidential. The deadline for response is Feb. 16.

Survey: U.S. Travelers Say Availability of Great Coffee at Hotel or Rental is Key For most people, coffee is a nonnegotiable ritual, even when on the road. To better understand these preferences when it comes to coffee on the go, Clio CofImage via Pixabay fee, the pod coffee system, released a survey delving into consumer coffee habits when traveling. Nearly 60% of respondents say availability of good cup of coffee at an Airbnb rental or hotel is important to them, as a good cup of Joe can't always be found on the road. It's also apparent from the responses that making a luxurious cup of coffee when staying in a hotel or rental hasn't always been so accessible, as the survey revealed half of respondents either always or sometimes bring their own coffee when traveling. Conducted on behalf of Clio Coffee, the survey of 2,093 Americans revealed additional interesting insights surrounding their traveling caffeine routine: 48.3% of respondents feel that at-home coffee is better quality than café coffee, with the biggest reason being the comfort and love of their morning ritual (41%). -Source: PRNewswire

Food Fests Return to Disney World with COVID-19 Precautions Walt Disney World is ramping up tourism efforts with COVID-19 restrictions in place. The most magical place on Earth is inviting guests back to a series of food events, including the Food and Wine Classic, its annual dining festival. Touchless menus and temperature checks will be the norm at these events. Disney’s Swan and Dolphin Resort is hosting “A Taste of Swan & Dolphin,” an all-inclusive walk-around dining festival with 10 stations and live musical entertainment, Feb. 27. For safety’s sake, the event page says “physically distanced safety protocols’’ will be implemented in addition to temperature checks for all guests upon entry. There will also be plexiglass dividers at food stations to avoid buffet-style serving, and PPE will be required for Disney cast members. Disney is also hosting its Taste of EPCOT International Festival of the Arts through Feb. 22 with edible culinary art. And Disney’s main eating event, the Food & Wine Classic, will return this fall Oct. 29-30, Disney blog “Inside The Magic” reported. -Source: Fox News

Charlottesville’s First Boutique Art Hotel Welcomes New Chef

Quirk Hotel Charlottesville, the first boutique art hotel in the city’s historic downtown, announces the appointment of Hector Pabon to executive chef. Pabon brings an impressive culinary background to the hotel, having worked nearly 20 years in the food-service industry and extensively for Hyatt in Tampa Bay, Clearwater Beach, Fla., Atlanta, and most recently Santa Clara. In his new role, Pabon is responsible for overseeing and directing the hotel’s food service operations. A native to Puerto Rico, Pabon moved to Orlando, Fla., to start his culinary training at the Le Cordon Bleu Academy in 2001. He has since refined his training into “Floribbean” cuisine and leads with the philosophy that bringing the freshest, sustainable and local elements to the table is of the utmost importance. Pabon infuses this concept into the diverse culinary offerings at Quirk Hotel Charlottesville, where he integrates locally sourced ingredients to assemble bold and flavorful dishes. “The bounty of peak season ingredients from Charlottesville’s local farmers is nothing short of inspiring,” said Pabon. “I am elated to join the talented team at Quirk Hotel Charlottesville to deliver guests modern menus that are not only innovative, but celebrate the rich diversity and flavors of the Commonwealth.” Quirk Charlottesville features a variety of dining options, including the hotel’s signature restaurant The Pink Grouse, the innovative Lobby Bar, picturesque Rooftop Bar, whiskey bar Bobboo and the cozy Quirk Café. Inspired by the bounty of its home state, each dining outlet integrates locally sourced ingredients, seasonings and spirits to assemble bold and flavorful dishes, signature drinks and desserts. Since being appointed executive chef, Pabon has set to work elevating the menu offerings at Quirk Café, where breakfast and lunch dishes cater to comfort, sweet and savory-seeking palates. On the Rooftop, Pabon has created dishes inspired by the rustic cooking of Italy and the season’s local produce to enjoy on the all-day indoor/outdoor space with amazing neighborhood and panoramic city views. With Pabon at the helm, Quirk Charlottesville will soon unveil the menu for its soon-to-open barrel-aged spirits bar, Bobboo, a perfect pairing to its signature whiskey flights.

‘Golden’ Beverages Back at Peet’s

Peet's Coffee is delivering a boost of goodness with ginger and turmeric in its Golden beverage lineup, including a new Golden Tonic and a returning favorite, the Golden Latte. Accompanying the handcrafted beverage offerings are two nourishing warm breakfast frittatas as well as the arrival of the annual favorite, Ethiopian Super Natural, that is as fragrantly fruity as it is uniquely rich. “Turmeric and ginger continue to grow in demand, particularly in beverages driven by their reputed functional benefits,” said Patrick Main, senior beverage research and development manager. These drinks are available through March 2.  Golden Tonic (iced or hot): Smooth Mighty Leaf Green Tea Tropical, steamed with a touch of earthy turmeric, joins bright yuzu citrus and warming ginger with a touch of honey for a boost of golden goodness.  Golden Latte (iced or hot): A touch of turmeric, honey, and warming ginger are steamed with milk before meeting freshly hand-pulled Espresso Forte in the Golden Latte. -Source: PRNewswire

Introducing

Kikkoman Katsu Sauce

Food Industry News® February 2021

National News

Boxed Water Is Better, the leading sustainable alternative to plastic bottles, has launched its much anticipated flavor line and will hit markets in the first quarter or 2021. The four flavors are: lemon, blackberry, cucumber and grapefruit.

Introducing Kikkoman Katsu Sauce, a rich, thick all-purpose table sauce and condiment. Its deep, savory flavor, with a hint of tart apple sweetness, goes perfectly with breaded cutlets, steaks, chops, grilled chicken, fried foods and more. Low in calories, fat-free and made without MSG, Kikkoman Katsu Sauce enhances the flavors of whatever it’s paired with because it’s rich in umami, the “fifth taste” that gives foods depth, body and intensity. Easy Menu Ideas

Classic Tonkatsu: Bread pork cutlets with Kikkoman Panko, served over rice or shredded cabbage; top with Kikkoman Katsu Sauce. Katsu Mayo: Mix mayonnaise with Kikkoman Katsu Sauce to taste; use as a sandwich spread or serve with fries or fried appetizers. Fuji Fries: Mound sweet potato fries on a serving plate and drizzle with Kikkoman Katsu Sauce and toasted sesame seeds. Uses Finishing sauce: Drizzle right from the bottle over pork or chicken cutlets breaded with Kikkoman Panko.

Steak sauce: Serve for a delicately Asian-flavored, sweet-savory alternative to ordinary steak sauces. Table sauce: Serve as a condiment for roast pork, chicken or turkey; great on omelets, too. Noodle sauce: Drizzle over pan-fried Asianstyle noodles (such as yakisoba). Braising sauce: Add to stews, soups and braises for depth and fruity complexity. Pan-sauce ingredient: Enhance the flavor of stir-fries and sautés. Asian BBQ: Use as barbecue sauce for ribs, chicken and beef, right from the bottle or mixed with ketchup.

Lettuce Entertain You Adds Tavern Pizza, Variety of Soups to its to-go Lineup

Lettuce Entertain You Enterprises recently announced two openings: Coastal Soups and Bill’s Original Tavern Pizza. New to the kitchen at Summer House Santa Monica in Chicago’s Lincoln Park is carryout and delivery-only soup-centric Coastal Soups photo by Jordan Johnson restaurant, Coastal Soups. Brought to you by Summer House’s chef Ben Goodnick, Coastal Soups offers comfort by the cup or quart with eight homemade creations rotating seasonally. Just in time for soup season, these soups are available for pick-up and delivery at Summer House’s Chicago location only. Bill’s Original Tavern Pizza is dishing out Chicago tavern-style pizza for carryout and delivery in downtown Chicago and now, Rosemont too. The pizza dough is rolled, which creates a crispy, thin Bill’s Original Tavern Pizza photos by Nick Murway crust pie that is then cut into squares. Bill’s menu is complete with appetizers such as Parmesan french fries, fresh salads, a variety of thin crust pizzas, desserts and more. Named for RPM Restaurant’s partner and native Chicagoan Bill Rancic, the inspiration for the pizzeria came from two RPM partners, Bill Rancic and Kelly Clancy, who both grew up on the South Side of Chicago, where classic tavern-style pizza was a big part of both of their childhoods. “My family would order tavern-style pizza every Friday night from iconic South Side pizzerias like Fox’s and Aurelio’s,” says Bill Rancic. “To be able to open up a tavern-style pizza place is exciting because I get to share something that was such a big part of my childhood with everyone.” “My dad has owned a pizzeria for the last 25 years on the South Side of Chicago at 115th and Pulaski,” says Kelly Clancy, partner, RPM Restaurants. “I grew up working there and at the beginning of this project, the first stop for chef Sam Dickstein and me was to my family’s pizzeria.”

Pepsi Releasing a ‘Cocoa’ Cola

Over the years, plenty of cola flavors have been released—cherry, vanilla, coffee, etc.—with varying degrees of success. Pepsi has announced plans to release a new drink that adds a winter-appropriate, hot chocolate spin to the brand’s signature soda, billed as “a delicious blend of cocoa (and hint of marshmallow) mixed with Pepsi cola.” Certainly, chocolate lovers may be sold on this idea regardless of what Pepsi decided to call it, but the name itself is noteworthy, too: Pepsi “Cocoa” Cola. TRAVEL With Valerie Miller DESTINATION: HERSHEY, Penn. Getting there: Fly, cruise Nonstop Flights out of Chicago O’Hare to Harrisburg, Penn., on American and United Airlines

For many Americans, the name “Hershey” means chocolate. The man who started it all, Milton S. Hershey, was a great humanitarian and philanthropist. In 1905, Milton Hershey built his famous chocolate company in the town known today as Hershey, Penn. Hershey envisioned a complete new community around his factory. He built a model town for his employees that included houses, an inexpensive public transportation system, a quality public school system and extensive recreational and cultural opportunities. He was concerned about providing adequate recreation and diversions, so he built a park that opened on May 30, 1906, and expanded rapidly over the next several years. Amusement rides, a swimming pool, and a ballroom were added. Soon, trolley cars and trains were bringing thousands of out-of-town visitors to the park. Looking for a special place to spend Valentine’s Day, or a place for a family break, a girlfriends’ spa getaway? It can all be found here. Pure Michigan Campaign Returns, Showcases Winter Recreation, Travel

The regional and in-state Pure Michigan winter advertising campaign will run in key markets through the end of February and is marking its return with a new ad spot, Still Pure. The ad lets travelers know that through safe travel, Michigan offers a piece of normalcy during uncertain times. “It’s so exciting to see the Pure Michigan ad campaign back on the air in support of the winter travel season and continuing to create an incredible sense of pride all across the state,” said Gov. Gretchen Whitmer. “This year it’s more important than ever for people to travel local with proper precautions and support Michigan’s tourism and hospitality businesses, including restaurants, ski resorts and retailers, while safely enjoying Michigan’s great outdoors and destinations across the state. ... Wear a mask, practice safe social distancing and wash your hands frequently.” “Michigan was made for winter, and this winter presents new opportunities to travel safely while enjoying all the outdoor activities Michigan has to offer,” said Dave Lorenz, vice president of Travel Michigan, part of the Michigan Economic Development Corp. “This campaign is designed to encourage travelers to safely get out and have a snow day, learn a new sport, and support the travel industry.” Planning is also already underway on the Pure Michigan spring/summer campaign, which is slated to launch in March. Travel Michigan is anticipating pent-up demand for leisure travel and outdoor recreation this summer, and will continue to position Michigan strongly for travelers within the region and beyond while also sharing a message of safe travel statewide.
