CERMAK FRESH MARKET OPENS ITS NEWEST STORE
Even before Cermak Fresh Market owner Mike Bousis opened his newest location at 5129 W. Belmont Ave. in Chicago, he had an impressive career. He started working in his father’s and uncle’s store when he was 12 years old, sweeping floors and loading and unloading trucks, among other jobs there. Along the way, he learned the business, and at 21, he became the produce buyer for six or seven stores, he says. Bousis opened his first store in Naperville at the age of 27, sold it five or six years later, opened his Aurora store, then two locations in Wisconsin, followed by two more sites on Chicago’s Northwest Side. It all started in 1986 with what was then called Central Park Produce, at the intersection of Central Park and Grand avenues and Division Street, by his father, Dimitrious “Jimmy” Bousis, and his father’s partner, Pantelis “Pandelo” Tzotzolis. The two founders, who were were Greek immigrants, eventually opened Cermak Produce on Cermak Road and Cicero Avenue in Cicero. “We first started out just as a fruit stand, then Continued on page 31

Lou Malnati’s Sells Part of Company Rumors that Chicago’s famous Lou Malnati’s Pizza chain was sold to the Meritage Group private investment firm are being denounced by the Malnati family. A report from Bloomberg News surfaced recently, claiming the iconic pizzerias were sold to the private investment firm Meritage Group, but the family has since clarified what exactly was sold. Marc and Rick Malnati told ABC7 Friday that they still retain ownership of the business known for its deep dish pizzas. “Nothing is going to change, its business as usual. My brother Rick and I are still the largest individual shareholders in the company,” Marc Malnati said in a statement. What has changed is the partial ownership that BDT Capital acquired a few years ago when the family-run business wanted to expand, according to the Malnatis. BDT Capital, a Chicagobased firm, sold their inter~I P!Zll!R!A. ests to the Meritage Group, the family said. Marc Malnati reassured that there are no personnel changes, no staffing changes and no changes with their famous pizza. The company has also been looking into moving their headquarters from Northbrook to Buffalo Grove for years as their shipping business “The Tastes of Chicago” expands, the Malnatis said. They said the move would allow them to expand from 35,000 to 110,000 square feet, with a USDA kitchen and many other opportunities. The Malnati family opened its first restaurant in Lincolnwood 50 years ago. There are now more than 70 locations, mostly in the Chicago area, with restaurants also in Indiana, Wisconsin and Arizona - Source: ABC7 News.

BRANDY’S HOME OF THE GYROS, 140 E. Golf Rd., SCHAUMBURG, Ill.; 847278-1585. They have a pretty big menu which includes: hot dogs, burgers, chicken, beef, salads, subs, pasta and barbecued ribs. For the Hungry Man Meals, they offer a football gyro and a “heart attack burger” that comes with large fries and a large drink. My two favorite things to order here are the gyros sandwich, which is very flavorful, and the chicken kebab sandwich that is always cooked to perfection with a nice char on the meat. Instead of fries, I get the Greek potatoes. I’ve eaten at their other locations, too, and the food is consistent throughout. Nice job! CANTON TEA GARDEN, 805 Devon Ave., PARK RIDGE, Ill.; 847-8232818. This is a small Chinese restaurant offering traditional fare that’s inexpensive and great for pick-up. They have a lunch special Tuesday through Saturday from 11:30 a.m. until 3 p.m. Choose your entrée (they are listed by letters), and it comes with pork fried rice and an egg roll. The shrimp egg foo young stayed firm in the rich gravy, and the servings are so big you are sure to have leftovers. The receipt came in two languages. CORA LEE CANDIES, 1844 W. Waukegan Rd., GLENVIEW, Ill.; 847772-2754. This is an adorable candy shop. They are known for their world -famous English toffee. It’s spectacular! The texture is not too hard, and it melts in your mouth. It’s hard to eat only one piece. They also have loose candy in the case that you can buy by the pound, packaged candy around the shop and a big selection of nostalgic candy. I also picked up a bag of dark chocolate nonpareils that were decorated with fall colors. Put them on your list if you need to bring a holiday treat. THE DOG STOP, 6100 W. Belmont Ave., CHICAGO, Ill.; 773-283-8722. This is a good neighborhood fast-food favorite where you can dine in or place you order in the drive-thru. They have a big selection of hot dogs that include a cheese dog, double dog and a chili dog plus they have a hot dog of the month on the menu. I tried a Hog Dog that had barbecue sauce, bacon, pickles and fried onion strips. That was very filling. I also ordered one of their Super Tacos on pita. It was huge, loaded with ground meat, lettuce and tomato; so good. In 2019 they were inducted into the Vienna Beef Hot Dog Hall of Fame. GARIBALDI’S, 2346 W. Higgins Rd., HOFFMAN ESTATES, Ill.; 847884-8663. This is an Italian eatery with dine-in, carry-out and catering. They offer a bevy of appetizers, salads, pizza, homemade Italian dishes, submarine sandwiches and Rhonda’s Favorite, which is steak, onion and mozzarella cheese, Philadelphia style. I chose the Steak Supreme, which is Rhonda’s Favorite with the addition of mushrooms and peppers. The decor inside could be considered “modern-retro” with new versions of 1950s tables, chairs and cool decor on the walls. It’s a feast for the eyes as well as your appetite. PALERMO BAKERY, 7312 W. Irving Park Rd., NORRIDGE, Ill.; 708695-5998. The aroma of baked goods hits your senses when you walk in the door — the smell is divine. This is a full-service bakery where I picked up an assortment of their Italian cookies, which were absolutely delicious; I loved the filling inside and sprinkles on top. I also tried their raspberry coffee cake and some of the cheese bread. The bread came in a pan and it was fluffy, light and moist in the middle with a nice crust. They have cakes, breads, pastries and so much more. RIDGEVIEW GRILL, 872 Ridge Rd., WILMETTE, Ill.; 847-251-2770. These family-owned neighborhood restaurants are always a great find. This is a place where you can enjoy a meal with family or friends in a comfortable and inviting space. They have an extensive menu offering breakfast, lunch and dinner. I’ve been here a few times and really enjoy their breakfast. My favorite dish is the Mile High Denver omelet with ham off the bone, green and red peppers and onions. Food and service was spot on, and my coffee cup was always full.

Favorite Food: Filipino Awards/Honors: Manager of the Year, 2014 Memorable Customers: This would have to be a young man named Aaron. Aaron, his little brother, and their grandparents would visit the hotel buffet where I worked as a supervisor. They were regulars every Sunday throughout the summer. After getting to know them, I found out 10-year-old Aaron had a passion for cooking. One weekend I gave him and his younger brother some paper chef hats and gave them a tour of the kitchen (with permission). The following weekend, they brought me a model of the buffet setup with stations and myself made out of cardboard. It was super cool to have created the memorable experience with them. Ten years later I found out from a friend that Aaron was attending culinary school and working in the same hotel kitchen he toured, starting his culinary journey. Worst Part of Job: When guests proclaim themselves to be foodies and think just because they don’t cook and eat out a lot then they know all the details about food service to give advice. Most Humorous Kitchen Mishap: A big VIP was coming to our restaurant and we were all on edge. Right before the lunch, our head chef had a meeting to go over the details and importance of perfection. He stated that if anyone could not deliver perfection to this VIP, then we would be out of the kitchen. The lunch was going flawlessly, when all of a sudden, our head chef burned a dozen pizzas intended for the VIP. It was so hard to keep ourselves from laughing! Favorite Food to Prepare: Barbecue What part of the job gives the most pleasure: Being able to work side by side with a team that come from different backgrounds, experiences and talents while continuing to learn and grow with one another! In addition, being able to be a part of guests’ memorable experiences. Whether it be a social event or a corporate meeting, I enjoy being a part of the experience offered through food. If you couldn’t be a chef, what would you be and why: A teacher. The thought of being a part in others’ learning and development has always been a passion of mine. Best advice you ever got was: A mistake is only a mistake if you don’t learn from it. If you learn from a mistake, then that becomes an opportunity that you grew from. Where do you like to vacation: No particular place as long as I can be with my family! No matter where we are able to journey to, I focus on the joy that comes with my wife and kids. Other than family, who was your greatest culinary influence?: The first executive chef I worked for was my greatest influence. His name was Michael Stocker and he taught me how to remain calm and find the joy even during the peak business levels of the day!

When using a placement company to find and employ long-term food-service workers, take a tip from the experts: Know your staffing agency. Stephanie Tempo, president of All About Personnel in Hanover Park, Ill., has more than 20 years of human resources experience and offers the following advice for business owners and managers seeking skilled labor. 1. Ask about the organization’s vetting process. process. The company hiring workers pays a fee for this service at All About Personnel. Not all companies vet candidates, and if All About Personnel they do, the process may not be as thorough as All About "Staffing With Integrity" Personnel: Tempo said that candidates provide a thorough work history, are interviewed one-on-one and subject to certain kinds of background checks. “It’s more like a case by case basis. We will do drug testing when needed, physicals when needed. We’ll do reference checks, we’ll do skip traces and national background checks.” Many companies, she said, limit background checks to the state or a three-county search. “We’re not day labor, so it takes us a little bit longer to fill the positions because of the fact that we are vetting them properly. … We’re not trying to cut any corners” to ensure that the right people are being matched to the right jobs. 2. Provide a clear job description. “Even if it’s general even if its entry level you still want that job description,” Tempo said. “We want to make sure that they’ve got some sort of experience in the industry.” Because All About Personnel vets candidates, the workers have training and already know how to handle food and food manufacturing practices. All these efficiencies can help protect the food manufacturer and may increase productivity. Plus, recruiters do walk-throughs of the job site to see what the position entails. “We’re taking it from more of a headhunting perspective than a staffing perspective,” Tempo said. 3. Consider a candidate’s soft skills. Tempo said employers often overlook skills such as problem-solving, communication, flexibility and ability to be a part of a team. “I don’t think companies emphasize” that enough, she said. “How was the candidate’s ability to communicate effectively with their peers, co-workers and managers, and what is their overall personality and work ethic?” A lot of time, she said, employers are not looking at people, they’re reading what they see on a resume or application. “If you have somebody coming into your office, and there’s no direct eye contact or they’re rolling your eyes, or you’re like looking out into space or they’re not paying attention, I tell my team, ‘Don’t send them out to work.’” Ask them, “’What is their why — Why do they want to learn, what do they want to accomplish and what are their next steps?” 4. Inquire what incentives the staffing agency provides. “We have sign-on bonuses, referral bonuses, we offer medical, dental and vision insurance,” Tempo said. “For some of our workers, there’s holiday and vacation play after a certain amount of hours worked. So there’s a lot of things that we put into play so we can find and keep the right workers.” The one thing All About Personnel doesn’t do is transport workers to the job site. For some clients, All About Personnel is the only provider they have, essentially becoming the outsource solution for the human resources department. “I’ve got some companies where they’ve taken their internal staff and put them through our payroll,” reducing costs for those businesses. … We help with that HR role. … We become the employer record if there’s any issue, they come to us. If we have to facilitate anything on their behalf, we do it. “We have people at our fingertips that we can actually bring in to help consult and go over something if we don’t know, we can bring in consultants. … So, we have all the resources.” See All About Personnel’s ad on page 8. -C.C.

AROUND CHICAGO With Valerie Miller SAVORY CRUST What started out as a way to pass time during chemotherapy sessions, conversations about food led two sisters on an unexpected journey. When Geri Guidote Hernandez developed breast cancer in 2015, it was a signal for the mother of three to slow down, but the opposite happened. After recovery from a mastectomy, Guidote Hernandez was thrown into chemotherapy right before Thanksgiving. During that time she and her sister, Jennifer, began baking up the ideas of empanadas. From the word “empar” meaning to “enbread” or wrap in bread, empanadas are a type of baked or fried pastry filled with savory or sweet fillings popular in Latin American and Filipino cultures. The two Filipino sisters turned the chemotherapy room into a makeshift office. Two months after chemo ended, they signed their lease. Having childhood roots in Morton Grove, Ill., these Niles West alums thought their former hometown could use an empanada restaurant. The gutted out a former yogurt shop to call their own. By January 2017 Savory Crust opened its doors, serving 10 to 12 different varieties of empanadas and rotating specials. With lines out the door, they ran out of empanadas week after week before day’s end. Chicago magazine listed Savory Crust on its Hot List and was also featured on “Chicago’s Best” street food episode, during which the quick-casual restaurant was deemed to have the “best Argentinian empanada.” The VIA Times, a Filipino publication, recognized and awarded them “Entrepreneur of the Year.” Headed into their fifth year, this one-site location has served over 400,000 empanadas. In May 2018, they expanded their menu to offer 10 Filipino rice bowls, which proved to be another popular concept. By late 2019, they decided to focus on being a takeout-only restaurant. In mid-2020, they opened their second location in Carol Stream, which serves as their current production facility and also allows for take-out. This year they licensed out their product to be able to reach customers in Elgin and West Dundee and purchased a food truck to stretch their capabilities. They are expanding their brand and marketing to investors looking into licensing food products. “I have a great team,” says Guidote Hernandez. “We have been fortunate enough to be able to fund the business, survive without any outside funding, not even seed money from family or friends, and then to open our doors debt free. But we have sacrificed a lot more than people realize. We still have a lot to learn, but it’s truly is a labor of love.” Savory Crust, a certified woman- and minority-owned company, continues to operate out of Morton Grove, Carol Stream, Elgin and West Dundee and is looking to add more licensees in the next 12 months. What Keeps Groups Out Of Your Restaurant? A Decisive Answer to a Question of Indecisiveness “Where do you want to eat?” is a question that has been the subject of many jokes, memes, Youtube videos and TikToks. Stephen Foster, founder and CEO of SocialEats, decided to do a study to determine how much of an impact this question has on how often we go out. The answer was an overwhelming “Yes!” The respondents said they were about 60% more likely to eat and drink out with their friends if planning a group gettogether wasn’t such a pain. What 2020 Burger Trends Tell Us

Compared to other categories, the burger category faired relatively well in 2020. Technomic’s 2021 Burger Consumer Trend Report explores the impact of the pandemic on the category, as well as anticipated future shifts at food service. The burger category’s growth is fueled by classic burger varieties and unique specialty offerings. In this climate, operators are sticking to core, signature burgers while also aiming to satisfy demand for something new. This balance calls for thoughtful, creative and cost-effective twists on traditional burgers. This section highlights a few ways operators are approaching this goal. Premium components in LTOs What makes a limited-time burger truly appealing? For some consumers, it’s the special price point and how that connects to the value equation. But for many others, it’s the differentiation of ingredients and flavors. The differentiation is being underscored via top-notch proteins, cheeses, sauces and higher-quality carriers for burgers. For several years, the burger category has seen highly indulgent specialty burgers appear on menus—from towering toppings to meat-on-meat preparations. Burger LTOs featuring prime rib, pulled pork, thick-cut bacon and gourmet cheeses are the next extension of the premiumization trend. As operators look to enhance quality, balancing options with affordability will remain crucial. Examples include: ● Houlihans offers a low-and-slow short-rib Burger. Introduced in Q2 2021, the burger LTO features 72-hour braised short rib. ● Shake Shack’s black truffle stack features Gruyerestyle cheese and black truffle sauce. Flexitarian Burgers Beyond strictly plant-based components, menu creativity is extending to innovative patty blends that meet the needs of the flexitarian consumer, who eats both plant-based and meat-centric foods. Now, more chains are specifically calling out “flexitarian” for burgers as a descriptor on the menu to signal these offerings to consumers. This trend reflects the need to create burger offerings that fit into how health definitions keep shifting. With flexitarian diets moving into the forefront, “flex” burgers are set to proliferate on menus, especially in the emerging chain subsegment. For example, B.Good recently debuted four new flexitarian burgers on its permanent menu. Options are falafel, made with a chickpea patty; jalapeno and cheddar, made with a poblano-quinoa patty; Sweet Heat, made with a beet-pineapple patty; and turkey medley, made with a turkey-mushroom blend patty. Takeaway Technomic research finds that younger consumers are typically more likely than older consumers to follow restrictive diets, and that flexitarian diets are on the rise. Because of these trends, plant-based burgers are becoming more important for minimizing veto votes. Additionally, about a third of consumers ages 18-34 who eat burgers would like restaurants to offer a wider variety of veggie or plant-based burger patties. -Source: Technomic 2021 Burger Consumer Trend Report. Held at the Harris Theater rooftop and emceed by celebrity chef Stephanie Izard, the show-stopping evening was filled with mouth-watering burgers, cold brews, Josh Wines, 1,800 Cristalino cocktails, festive music and stunning skyline views. Fifteen leading chefs went grill-to-grill for champion status. After careful deliberation by an impressive panel of celebrity judges, Chef David Wang of Slightly Toasted/Lightly Toasted/Asadito/ Wok n’ Bao was named the Buckhead Meat Hamburger Hop Award winner. His creation, Yo Quiero Pambazo, featured a mouthwatering, 1946 craft burger laden with queso fundido con chorizo, escabeche relish, shoestring potatoes and a Turano Baking Co. potato bun. Burgers were judged on flavor, creativity and presentation. A clear standout, Chef Wang’s burger also won over the crowd, leading to double victory in the People’s Choice Award category. Attendees cast votes for their favorites at chef stations throughout the evening.

School Programs Running Out of Food, Workers
With the school year in full swing, product shortfalls, delivery delays and labor shortages have pushed the nation’s public school meal programs to a crisis point. It’s the same economic forces plaguing other industries, but the stakes are higher: Many low-income American children get the majority of their nutrition from school meals. The crisis has drawn the attention of the U.S. Agriculture Department, with Agriculture Secretary Tom Vilsack announcing $1.5 billion in funding to help beleaguered school meal programs cope with labor and food shortages. However, experts are unsure whether this is sufficient to resolve the problems. “USDA is taking an allhands-on-deck approach to supporting the school meal programs, taking action to help schools get out in front of possible challenges and addressing other issues that arise from all angles and with all available resources,” Vilsack said. “We are committed to the program’s success, and confident in its ability to serve children well.” The USDA has yet to detail how or when exactly the $1.5 billion will be doled out. Advocates said the money could fall short when it comes to resolving supply-chain snarls, depending on how long those persist. If contracts have already been canceled and foods diverted elsewhere, there still may be holes. -Source:

we slowly added some groceries, and as our stores got bigger and bigger, we started to add different categories,” such as fresh meat and poultry, frozen foods, a deli and full-service bakery, says Mike Bousis. “Our store started out being a full-line Hispanic-only grocery store chain, and now I like to consider us a market for everybody to be able to shop at. We’ve never forgotten our roots ... and we continue to expand on that.” For example, the hot bar of prepared foods. “As everybody knows, that’s a category that’s grown tremendously. ... It’s become one of the focal-point departments in our stores.” He says the COVID-19 pandemic initially affected the hot bar business, but not for long. “The beauty of COVID — if there’s anything beautiful about COVID, I think — it made people learn how to cook again. ... In return, we generated more business” because some restaurants were not operating at capacity. Plus, Bousis has a 150,000-square-foot warehouse on the South Side to keep a lot of inventory on hand. Each Cermak Fresh Market location caters to the demographic of its residents, he says:.“Every store we open has its own little flair to it and we cater to the neighborhood that we’re in.” In a family of four siblings, Mike Bousis, 47, was the only one to follow in his father’s footsteps. “The one thing I learned from my father and my uncle that passed away that started the company is just do right by the customer and the customer will do right by you. Don’t ever cheat the customer.” The grocery store business, Bousis says, is “something that I always enjoyed. I always had a passion for it. I enjoy to build and create, and I look at the stores as a form of art. “When I look at a box (empty store), I look at it like a blank canvas as an artist does. From the point where I design a store or lay the store out with my architects, I already know how the store is going to look (when it’s) finished because in my mind I’ve already walked that floor a million times before it’s been constructed,” says Bousis. “For me it’s just a thing of beauty when you see it all done.” Besides expanding his business, he says his goal is for his sons, Dimitri and Michael Jr., to join him. “Hopefully they can be the next generation that comes in and continues to grow.” -C.C. a

Thonton Distillery Continues to Innovate with Dead Drop Spirits The colorful history of Thornton Distilling Company, located in one of the oldest standing breweries in Illinois, can be traced back to 1857. That’s when immigrant brewer John Bielfeldt erected a brewery on the west bank of Thorn Creek in the small limestone-mining village of Thornton, Ill., atop land with its own 1,500-foot-deep artesian well. Dating back to 1833 the property was home to many brewing companies, distilleries and saloons that all utilized water from their limestone-filtered artesian aquifer in the basement of their building. The same artesian well is used today for all of the firm’s distillations. Thornton Distilling Co. produces Dead Drop Spirits. Next up for the firm is a peated single malt whiskey. In a hyper-local take on a signature single malt whiskey, Head Distiller Ari Klafter and Founder Andrew Howell visited a private family-owned bog along the banks of the Mississippi River in Western Illinois, where they hand-cut blocks of peat. They then dried the peat at the distillery for five months before handing it off to their good friends at Sugar Creek Malt Co., a thirdgeneration family farm. True to the mission of using local ingredients as much as possible, they partnered with Sugar Creek, a family-run craft malt house that sources grain from other local family farms and does everything by hand. For the base grain, they chose a Pilsner malt for its soft, round character. They then went to work making whiskey using traditional single malt techniques, mashing by hand, fermenting off-grain and double pot-distilling in copper stills. Studying whisky-making in Scotland, Klafter has a passion for peat and considers it among the truest expressions of terroir in whiskey. Peat is partially decomposed plant matter found in bogs that often takes thousands of years to accumulate. Historically used as a fuel source, peat has been used in Scotch whisky production for hundreds of years to smoke malted barley and contribute to the signature smoky, phenolic flavors associated with many scotches. Requiring very specific anaerobic conditions, peat bogs can be few and far between, and the flavors from peat can vary wildly, mimicking the environment in which they developed. Two Roots Brewing Co. was awarded a gold medal at the 2021 Great American Beer Festival, North America's largest beer competition. The GABF, presented by the Brewers Association, recognizes the most outstanding beers produced in the United States. In the 35th edition, medals were awarded Sept. 10 at the Bellco Theatre in Denver: 170 judges evaluated 9,680 entries from 2,192 breweries. Two Roots Brewing Co., which is based in San Diego, was recognized in the non-alcoholic beer-style category for its “Enough Said” Helles, a crisp pale lager-styler beer, perfect for any occasion. This year's medal marks the second gold medal win for “Enough Said,” and the third consecutive year Two Roots has taken home the GABF medal. Two Roots is the only non-alcoholic craft beer brewery to secure a hat-trick win at GABF.

Coralville Hotel & Conference Center in Iowa Now Under Hyatt Regency Brand Hyatt Hotels Corp. and Marcus Hotels & Resorts, a nationally recognized owner and management company and division of the Marcus Corp., announced the opening of the newly flagged Hyatt Regency Coralville Hotel & Conference Center. The property is the first Hyatt Regency hotel in the state of Iowa. To offer guests the elevated experience and amenities for which the Hyatt Regency brand is known, the hotel, which is owned by the city of Coralville, will undergo a phased renovation to include refreshed guest rooms and a new restaurant and bar concept to appeal to both travelers and local guests. Kind Founder Launches Somos, a Mexican Food Brand
Kind founder Daniel Lubetzky is joining forces with two former executives from the snack brand to launch a Mexican food company based on the food they ate growing up. Somos, which means “we are” in Spanish, is accepting wholesale orders from grocery stores and retailers now, with the expectation that its range of rice, beans, salsas, chips and plant-based entrees will reach shelves by January. The company’s e-commerce site is already selling its chips and salsas. Lubetzky joined forces with Kind’s former chief marketing officer, Miguel Leal, and former head of product innovation, Rodrigo Zuloaga, to create Somos. Leal serves as the CEO of Somos. All three men were born and raised in Mexico. Somos’ lineup doesn’t include meat, gluten or genetically modified ingredients. Lubetzky founded the snack company in 2004. Last year, Snickers maker Mars bought Kind North America in a deal that reportedly valued it at roughly $5 billion. Lubetzky retained a stake in the company and remains as its executive chairman. “We’re always surprised at the lack of authenticity in Mexican food,” Leal said. “Most of the food that exists in [consumer packaged goods] is Cal-Mex or Tex-Mex, not the food that we grew up with. We just thought that there was a big opportunity to bring ingredients, techniques, real Mexican food made in Mexico, cooked the Mexican, way into the market.” Somos is positioning itself as a brand that doesn’t sell Americanized Mexican food but instead uses traditional cooking techniques to draw in consumers and create better-tasting options. -Source: CNBC
