Minus Coffee has replicated the coffee fermentation process using low-carbon ingredients such as dates and lentils for its ready-to-drink cold brew to offer consumers a sustainable alternative to traditional bean coffee, said founder Maricel Saenz. HR Matters: Two New Labor Laws for 2023
1. ODRISA Act - In May of 2022, Governor Pritzker signed Senate Bill 3146 into law, amending the “One Day Rest In Seven Act” (ODRISA). ODRISA was enacted to provide employees with a day of rest in each workweek and meal/rest breaks during work shifts. Currently, the act “provides for employees a minimum of twenty-four hours of rest in each calendar week and a meal period of 20 minutes for every 7.5-hour shift beginning no later than 5 hours after the start of the shift.” Starting January 1, 2023, the amendments to ODRISA redefine the period in which an employee is entitled to “twenty-four consecutive hours of rest” and will include new meal break and employer notice obligations. The law also increases penalties on employers that violate the meal and rest break requirements.
• New Definition of ‘Work Period’ - The amendment now requires “at least twenty-four consecutive hours of rest in every consecutive seven-day period.” Therefore, ODRISA now applies to any employee who works six consecutive days, regardless of whether the employee’s schedule aligns with a Sunday to Saturday calendar workweek.
• Additional Meal Period Requirement - The amendment now requires employers to provide “An employee who works in excess of 7.5 continuous hours shall be entitled to an additional 20-minute meal period for every additional 4.5 continuous hours worked. For purposes of this Section, a meal period does not include reasonable time spent using the restroom facilities.” Therefore, an employee who works a 12-hour shift will be entitled to two unpaid meal periods.
• New Notice Requirements – The amendments further require employers to post, and keep posted, a notice “summarizing the requirements of this act and information pertaining to the filing of a complaint.” And, for employees who work remotely or do not regularly report to a physical workplace, the employer “shall also provide the notice by email to its employees or on a website, regularly used by the employer to communicate work-related information.” The Illinois Department of Labor (IDOL) should presumably have this notice available to employers on its website before the January 1, 2023, effective date.
• Increased Penalties for Noncompliance - Employers will also face higher civil penalties depending on their size. Penalties will range from $250-$500 per offense, “determined on an individual basis,” and will be payable to both the Department of Labor and to the employee affected. Employers should note that fines can add up quickly under the new amendments. The statute continues to apply to employers with one or more employees in Illinois, and Section 2 of the statute continues to exclude enumerated categories of employees from coverage. The amendments also add one new category of employees excluded from Section 2 coverage: “Employees for whom work hours, days of work, and rest periods are established through the collective bargaining process.”
2. Family Bereavement Act - In June of 2022, Governor Pritzker signed Senate Bill 3120, also known as the Family Bereavement Leave Act, into law. The act is an amendment to the Child Bereavement Leave Act, which covers public and private employers with at least 50 employees and employees who have worked 1,250 hours for the employer during the prior 12-month period.
Starting January 1, 2023, employers must provide up to 10 workdays of unpaid leave to employees who miss work due to any of the following events: “a miscarriage, an unsuccessful round of intrauterine insemination or an assisted reproductive technology procedure, a failed adoption match or an adoption that is not finalized because it is contested by another party, failed surrogacy agreement, a diagnosis that negatively impacts pregnancy or fertility, a stillbirth.”
The act also requires employers to provide 10 workdays of unpaid leave for employees who miss work for various situations that involve a covered family member. It expands upon the definition of “covered family member” as well.
What should Illinois employers do?
• Review and potentially revise employee work schedules to ensure compliance with ODRISA.
• Make plans to comply with the new meal period requirements for shifts of 12 or more hours.
• Consult the IDOL website, which will likely be updated to provide guidance and the required notice to employees, and to review the full text of each act and corresponding amendments.
• Review and potentially revise company leave policies to ensure they are compliant with the updated requirements under the Family Bereavement Leave Act.

I went on the weekend and the place was super busy. They had a great staff working the counter. I picked up a few things there—an apricot coffee cake that we devoured with our coffee for breakfast, some donuts, along with some pastries and a brownie. These types of bakeries are priceless.
JAMESON’S CHARHOUSE • 9525 Skokie Blvd. SKOKIE, IL 847-673-9700. This fine restaurant is located in the Doubletree hotel. They have a full bar area and a nice dining room. They also have an extensive selection of whiskeys including rare and aged single malt scotches including many with special cask finishes. When I’m in the mood for a scotch and some meat, this is the place to go. Their filet mignon parmesan crusted sliders with caramelized onions are amazing! Another favorite of mine is their burger. KWIK TRIP • 12224 74th St. KENOSHA, WI 262-857-4035. Gas/ Grocery/Convenience Store. They are open 24 hours. We stopped there to gas up and get a few snacks. This place has everything. They have groceries, produce, freshly made sandwiches, prepared foods along with a big selection of beverages and coffee choices. They have bakery selections; boxed up and in the front of the store and a case in the back where you can make your own selection. I also picked up some Old Dutch spicy cheddar & sour cream potato chips and Urges BBQ chips.
PASSERO • 3 S. Evergreen Ave. ARLINGTON HEIGHTS, IL 224-857-8900. This is an Italian inspired restaurant with a seasonal menu. They have a bar and open kitchen. The service was spot on. I ordered the Brick oven pizza margherita which was delicious. For my main course they have handcrafted pasta dishes.
I tried the Fusilli Alla Vodka. The pasta was so fresh and the whipped ricotta added a nice touch to the dish. Believe me, this was so good there was no problem finishing the entire meal. For dessert the Florida Key Lime was refreshing.

My favorite is the “Build Your Own Meal.” I get the spicy chicken sandwich with cheddar cheese and bacon on a buttermilk biscuit. You will love that biscuit! For my two sides, my choices were the creamy mac-and-cheese and the cucumber cole slaw. They also have another location at 455 N. Milwaukee Ave. in Chicago.

The produce section was very impressive. The meat department looked amazing. They have an olive bar plus a hot food bar. The bakery was loaded with yummy cakes and treats and their cheese section was over the top. You will find all your regular grocery staples here too. The prices are great! The liquor department is extensive and the high-end spirits are in their own display cases. It’s definitely worth a shopping trip.

Favorite Food: I think my favorite meal is one that I get once a year. A traditional thanksgiving dinner is the best because you get to share it with family and friends. I just always make sure to make enough so I can eat leftovers the next day too.
Memorable Customers: I have cooked for a number of famous athletes, celebrities and politicians including former U.S. presidents Bill Clinton and George Bush. But I think the customers I’ll remember the most is when I was in China in 2008 cooking for the US Olympic team, celebrities, and dignitaries. I got to meet so many Olympic medalists while working my action station in the dining room.
Worst Part of Job: The easy answer here is to say that the work life balance is very difficult to manage with a wife and kids but I knew that about this industry when I decided to make this my career. I can’t say there’s much more I would consider a “worst part” because I love what I do. I love the heat and fast stressful pace of a busy night.
Most Humorous Kitchen Mishap: Oh to pick only one… this is one mishap that never was. I was working as a sous chef in a busy Chicago steakhouse and I was tasked with putting on the stock overnight. I had it perfect, roasted the bones - check, tied the sachet d’epices - check, brought the stock to a boilcheck. That night I woke up in a panic at 2:00 in the morning thinking I forgot to lower the flame to a simmer and jumped in my car and drove the 45 minutes to work fully expecting it to be dry with a ruined pot. But to my surprise, I opened the door to the kitchen to find it set up perfectly and oh so aromatic. I still think about this every time I make stock and make sure to triple check it before leaving at night.
Favorite Food to Prepare: I think the best foods are the ones prepared simply. So, a well seasoned and grilled steak will make me weak in the knees everytime.
What part of the job gives the most pleasure: A chef is much more than someone who can really cook their tail off. A chef is a leader of men and women and I believe a true judge of someone’s leadership is their ability to develop others into being leaders themselves. I love watching the people around me grow professionally and personally. There is no greater pleasure then promoting my dishwashers, cooks and chefs because they earned it.
If you couldn’t be a chef, what would you be and why: If I wasn’t a chef I probably would have been a math teacher or an accountant. I love numbers.
Best advice you ever got was...It’s important to remember that the best moments in life won’t last forever so enjoy them while you can. The same can be said for the tough times, they never last forever so keep your head up and know the good times will be here again.
Where do you like to vacation? Vacationed with the family in Tennessee last year and I knew immediately that this isn’t only where I want to vacation often but also where I would want to retire when I’m good and old.
Who was your greatest culinary influence? Steve Coppolillo, not only is he my mentor but more importantly he is my friend. He is a chef and one of the owners of the restaurant group I work for. I have known him for almost 20 years. Don’t tell him this part but I basically owe my career to him. I enjoy seeing spotlights of the local industry and keeping up with trends.

Illinois amended the Child Bereavement Leave Act, expanding the law’s scope and renaming it the Family Bereavement Leave Act (“FBLA”). The amendments affect employers with more than 50 employees, effective January 1, 2023. The two major changes expand the definition of family members covered by the FBLA, and include fertility-related losses in the acceptable reasons an employee may use leave under the FBLA.
Under the FBLA, certain employees can take 10 workdays maximum of unpaid leave to grieve the death of any “covered family member.” The law expands the definition of “covered family member” to include an employee’s “child, stepchild, spouse, domestic partner, sibling, parent, mother-in-law, father-in-law, grandchild, grandparent or stepparent.” These family members do not have to reside in the same household as the employee. The law defines “domestic partners” broadly to include adults who are in a committed relationship, and they are not limited to legally recognized partnerships.
The FBLA requires employers to offer the annual unpaid bereavement leave to grieve failed pregnancies and adoptions, including: (i) miscarriages; (ii) unsuccessful rounds of intrauterine insemination or of assisted reproductive technology procedures; (iii) failed adoption matches; (iv) adoptions not finalized due to being contested by another party; (iv) failed surrogacy agreements; (v) diagnoses that negatively impact pregnancy or fertility; and (vi) stillbirths.
If employers choose to require employees seeking a pregnancy- or adoption-related bereavement leave to provide reasonable documentation, they must adhere to the following guidelines when doing so:
1. The documentation requested must be a particular form published by the Illinois Department of Labor to be filled out by the medical professional treating the afflicted family member or the agency coordinating the surrogacy or adoption.
2. The documentation must certify that the employee experienced an event covered by the law relating to a failed pregnancy, assistive reproduction procedure, adoption or surrogacy.
3. The employer must refrain from requiring as part of requesting reasonable documentation that the employee identify the specific event category for which the employee is seeking leave.

PepsiCo’s Frito-Lay unit is rolling out dips under its Doritos brand, the company said. The dips will be available at retailers and on PepsiCo’s Snacks.com website.

The cozy and stylish 80-seat bistro welcomes diners with its chic contemporary black and gold décor, featuring a full bar, comfortable seating, and a private dining room. Tables are adorned in black tablecloths, elegant and sophisticated.
“I want people to relax and enjoy our friendly and down-to-earth hospitality while enjoying food and drink in a beautiful space that has a stimulating hip vibe,” said Rollins. “If they say, ‘it feels like home,’ I am very happy. We focus first on preparing a creative, high-quality menu that food lovers will truly appreciate, and everything happens to be gluten-free.”
The menu presents CheSa’s creative take on New Orleans and Louisiana cuisine blended with contemporary American flavors. Rollins has spent considerable time in New Orleans, and the region’s food is her favorite cuisine because it is comforting, earthy, and offers a wide palette of flavors from which to work. She diligently adapts her recipes to use only delicious gluten free ingredients.
“Although we are focused on Creole and Cajun right now, we combine spices and flavors from other cuisines as well,” she said. Our menu will evolve with specials and as we get requests from our guests.”
A journey toward healthfulness and personal expression
Rollins first learned she had Celiac Disease—a debilitating sensitivity to gluten—during her pregnancy with daughter Chloe, who is now 8 years old. “I had a very rough pregnancy requiring a lot of bed rest. I was very unwell but thankfully I was able to find a physician who discovered my gluten intolerance. I learned to eat gluten-free food and it changed my life.” During her extended periovd of recovery, she also decided to follow her true passion and change course in her life—she left her career in finance to pursue a culinary career.
CheSa’s efforts to educate the public about gluten free eating have earned praise from The American Heart Association, which has recognized her for her efforts to elevate gluten free cooking while promoting its health benefits.
Her mission is very well served because she serves surprisingly good food that impresses even the most skeptical people who wrongly assume that gluten free cooking is healthy—but not tasty.
“It’s important for people to realize that everyone can benefit from gluten free eating,” said Rollins. “My mission also is to change the dynamic and the perception of what gluten free is. Most people’s experience of gluten free food is that it is processed food because that is what they find in the grocery store. But when people eat my food, they are more likely to say they had no clue gluten free could be this good. That is the reaction I want people to have.”
Now, with CheSa’s Bistro & Bar to complement her two successful trucks and a catering business, Rollins’s momentum as a restaurateur is building. Her commi tment to elevating gluten-free cuisine is stronger than ever.
CheSa’s Bistro & Bar is located at 3235 W. Addison in Chicago. Dinner is served from 5 to 10 p.m. Tuesday through Thursday, and from 5 to 11 p.m. Friday and Saturday. The origin of “Pocono” Pocono is a Native American word meaning, “stream between two mountains.” The Delaware Water Gap is the true namesake for the area where the Delaware River cut a gap between two mountains and formed what is now known as the “Gateway to the Pocono Mountains.
The Poconos is a year-round destination for millions with 2,400 square miles of mountains, forest, lakes and rivers with historic downtowns and iconic family resorts. There are nine state parks covering a total of 35,537 acres. The parks are Beltzville, Big Pocono, Gouldsboro, Hickory Run, Lehigh Gorge, Promised Land, Prompton, Tobyhanna and Varden Conservation Area. Two National Parks: The Delaware Water Gap National Recreation Area covers 40 miles of the Delaware River from north of Milford, PA to south of Delaware Water Gap, PA. Total acres are 70,000. The Upper Delaware Scenic and Recreational River stretches 73.4 miles along the Pennsylvania and New York border.

Pack the right clothing for your ski trip. Bring a waterproof ski jacket and a pair of ski pants. Dress in layers. You will need a pair of ski gloves or mittens. I prefer mittens because I feel it keeps my hands warmer. Wear a hat or a helmet. You could use a pair of goggles or sunglasses, sunscreen and lip moisturizer. Get yourself a good pair of ski socks to keep your feet warm. Another good tip is to keep yourself hydrated and not to ski alone. Be safe and have fun!
