Seven New Bib Gourmand.

• Kasama (Bucktown; Filipino Cuisine). Chefs Tim Flores and Genie Kwon, both former members of the Oriole kitchen, have branched out on their own with this restaurant, which opened at the height of the pandemic in 2020.

• Galit (Lincoln Park; Middle Eastern Cuisine). Chef Zach Engel brings his experience to bear on this personal brand of modern Middle Eastern cuisine.

The Michelin Guide has added four One Michelin Star restaurants to Chicago’s roster of Starred eateries, and seven new Bib Gourmand, highlighted for their particularly interesting value for money. Altogether, 23 restaurants made the list, including a Three Michelin Stars one, Alinea, led by chefs Grant Achatz and Douglas Alley, which still maintains its exceptional level of quality, since the first edition of the Michelin Guide Chicago in 2011.

• Esme (Lincoln Park; Contemporary Cuisine). Together with his wife and co-owner, Katrina Bravo, Chef Jenner Tomaska lays bare lofty ambitions at this airy atelier.

This year, Michelin Guide’s inspectors have discovered seven new spots offering a particularly interesting value-for-money: Apolonia, Bloom Plant Based Kitchen, Dear Margaret, Lardon, Sochi, Superkhana International, Tortello Pastificio.

Chicago’s New Michelin Stars for 2022

“Michelin Guide inspectors found that Chicago chefs and restaurant teams still maintain a high level of quality and creativity in fine dining experiences, even as pursuing their activity has been an unprecedented challenge during the past year”, said Gwendal Poullennec, International Director of the Michelin Guides. “We are pleased to welcome four new One Michelin Star restaurants and seven new Bib Gourmand in this 2022 selection and celebrate all 23 Michelin Starred establishments.”

• Claudia (Bucktown/Wicker Park; Contemporary Cuisine). After years of searching for a brickand-mortar home, Chef Trevor Teich landed upon this welcoming Bucktown location.

SUBMARINE TENDER • 200 Des Plaines Ave., FOREST PARK, Ill; 708-366-4690. This is such a busy place. When you walk inside, the pictures of Greece on the wall totally get your attention. I picked up two of their sandwiches—the Depth Charger, which had ham, roast beef, turkey, lettuce, tomato, special sauce, onions and cheese. It was so fresh and the bread it was served it on was delicious (I’m glad I ordered the king size portion). The second was the ham & cheese on a pita which was really good as well. To go with both of them, I ordered some of their garlic fries, which were topped with a special seasoning.

TWISTED COOKIE • 7401 Madison Ave., FOREST PARK, ILL; 708-689-8029. It’s a café where you can get coffee, drinks and dessert to go with them. The selection is outstanding! They have cupcake cook ies in different flavors which consists of two cookies with frosting. Their birthday cake cupcake was adorable. It had sprinkles and the frosting on top was out of this world. I also tried one of their dipped brownies, which was drenched in chocolate. Oh my gosh, it was so good! Also, a butter cookie with lemon glaze and a chocolate chip cookie. Yum!

NORDSTROM CAFÉ • 4937 Old Orchard Center SKOKIE, Ill; 847-677-2121. I stopped in here for coffee and lunch after shopping in the store. The staff here is so nice. They hand you a menu when you walk in and they take your order at the counter. A server brings it to the table. It’s a very comfortable place. On the menu they have soups, salads, pasta dishes, sandwiches and so much more. I ordered a Roast Turkey and Avocado club sandwich and some coffee. They also have some dessert selections at the counter.

MORELIA SUPERMARKET • 7300 N. Western Ave. CHICAGO, Ill; 773-761-3291. I stopped in here to pick up some ingredients to make some tacos. They have a nice-sized produce department and a big meat department. Next to the meat counter they have a prepared food counter. The line was really long. They have a nice selection of Mexican food products—salsas, cheeses, canned goods and seasonings along with packaged tortillas and bags of tortilla chips. In the bakery section they have a silver tray that you use to put your selections on. They have all your everyday staples too.

BACCI PIZZERIA • 2101 W. Touhy Ave. CHICAGO, Ill; 773-857-2202. Family owned and operated since 1996, they are known for their Chicago’s Original Jumbo Slice Pizza. Believe me, it’s huge! I picked up two slices of their pizza; the cheese and sausage and “The Supreme” that had green pepper, mushrooms, onions, sau sage and pepperoni. I loved it. The crust was cooked perfectly and it was topped with plenty of ingredients. They have so much more to offer; pan pizza, stuffed pizza, jumbo pizza, salads, pasta, sandwiches and wings. I ordered the Fruity Blast dipped cone, which was purple and refreshing along with the Very Cherry Blizzard. The blizzard was cherry with chocolate chunks and soft serve. It was very good! One of my favorite things to pick up is a box of Buster Bars for the freezer. Sometimes I order the Peanut Buster Parfait when I’m dining in; you get plenty of rich, hot fudge on it.

PATEL BROTHERS • 2610 W. Devon Ave. CHICAGO, Ill; 773-262-7777. This is a chain grocery store specializing in Indian products. If you’re looking for any kind of Indian spice, sauce, condi ment, dry goods, dairy, frozen Indian food, etc., you’ll find it here. The selection is unbelievable. In one aisle they had 20 pound bags of bas mati rice and whole grain flour. In the front of the store they have fresh baked breads, so I picked up some of their homemade Methi Thepla bread. Also, I just had to pick up some Indian tea, Swad brand Tikki Masala cashews, Lays India Masala chips and Kurkure Masala munch.

The newest member of HOF has been serving famous Chicago Style Hot Dogs for a quarter of a century.

Consistent portion control is essential for maintaining a consistent food cost percentage. Standardize recipes and streamline BOH training to make sure everyone on the line is aware of the proper size of each menu item. The added benefit is that guests appreciate the consistency and knowing what to expect from each visit to your restaurant.

Guests are becoming increasingly accustomed to convenience, and they’re willing to pay for it. Especially when it comes to takeout and delivery, it is appropriate to include fees that cover your additional costs to offer these services. You can work them into your menu or list them as separate costs but be sure to do one or the other because these costs add up quickly and eat away at your bottom line.

Your menu should be engineered to present the highest profit, most popular items right up front. While you can certainly do this with paper menus, using thoughtful upper-middle placement for these items, it becomes even easier to do so when you use QR menus and online ordering because you have the ability to highlight those items specifi cally. Be sure to take advantage of those tools, as well as options that allow you to suggest upgrades to existing menu items that will drive up ticket averages. In-house, it’s important to train your staff around these items so that when guests ask for recommendations, they are providing these options, rather than just an off-the-cuff response.

Before you can adapt to the changes, it’s essential to understand the basic elements of menu pricing. No single factor is more important than your food cost percentage. This is the cost of ingredients used to make each dish (or cost of goods sold) divided by the price of the dish. The standard rule of thumb is that this figure should hover around 30%, meaning you should charge about 3x more than what the dish costs to produce.

Food waste isn’t just an ecological issue, it’s a huge economic issue as well. Look for ways to eliminate waste on your menu, either through cross-utilizing ingredients, better inventory and ordering systems, or by eliminating ingredients that are highly perishable and under-utilized. Staff meal can be a good way to use up items that may not make it to another service.

Your menu pricing must be relative to your competition. This includes the restaurants on your block as well as the other restaurants within your delivery window. Look at similar menu items and analyze how your restaurant’s pricing compares. If there is a lot of competition in your area, it may be smart to compete on value, but be careful to avoid a race to the bottom. Remember, value is not just how much something costs, but an overall feeling that includes elements like service, decor, and quality.

One recent trend is for restaurants to limit the size of their menus. This is useful for a few reasons: Smaller menus can make it easier to keep pricing on target, and it can help alleviate sourcing stress. Take a look at your existing menu and identify (and remove) the high cost/low selling items to improve the overall profitability of your menu.

Restaurant menu pricing hasn’t changed that much. Operators still must calculate their food cost percent, ingredient yield, and menu spread, just as they did pre-pandemic. But our current reality has changed the expectations of diners and presented new challenges for restaurants, and it’s important to know what to do and what not to do now, based on industry feedback.

Americans now working remotely at least part of the time, travel plans are also shift ing with workers’ newfound flexibility.
