When he arrived, he worked hard, saving every nickel until in 1975 his dream became a reality when he opened Carnitas Uruapan in the Pilsen (Mexican) community of Chicago. The rest as they say, is history. Pilsen is legendary desti nation for those whose palates crave authentic Michoacan, Mexican cuisine, including the town’s most famous dish, Carnitas. His restaurant was small and efficient, and before too long, locals and people from across town were lining up for his tender, fresh and flavorful car nitas. It’s no secret that Inocencio’s hard work, passion for Mexican flavors, and courage have made him a local celebrity in Chicago’s Pilsen neighborhood. Today, the

It was recommended to me that I order a Sunrise Skillet where you build the skillet “your way.” So, I got three basted eggs with green peppers, onions, mushrooms, cheddar cheese and bacon, all topped onto crispy hash browns. It also came with toast and jelly. The skillet was huge! The eggs were cooked perfectly and all the toppings were fresh and delicious.

LITTLE GREEK FRESH GRILL • 130 East Golf Rd. SCHAUMBURG, IL; 224-6653-9729. This is a fast food place offering salads, pita & wraps along with a big selection of skewers. The souvlaki choices included; chicken, lamb, steak, salmon and shrimp. I ordered one of their Avgolemono soups which is chicken, lemon and rice. It was delicious. I also ordered a village salad which had cucumbers, tomatoes, green peppers, onion, olives, pepperoncini, feta cheese, beets and it came topped with two scoops of potato salad. That was a different combination of ingredients and it was so fresh. For my side, I tried their Greek potatoes.
I thought this place was lovely and there was a great vibe in the dining room. On the menu they have a big selection of appetizers, burgers, salads, prime rib, steaks and seafood. They start you off with cornbread and pretzel rolls. Our server explained the menu to us and suggested we try the Farm Flight; it came with ribeye, rack of lamb, rack of pork, and filet. Plus, we ordered the New York Strip which was cooked to perfection. Definitely a great way to sample a few meats. Entrees came with salad and a choice of side. They do a nice job!

Water heaters are the secret lifeline of the food industry. Sales pitches and industry jargon aside, let’s talk dollars and sense (pun intended!): the aver age commercial water heater costs anywhere from $10,000-30,000 (excluding materials and instal lation). One of the most commonly noted issues during PMs is the overuse of the water heater coupled with unexpected and costly premature failure. Preventative maintenance, however, is an average annual investment of $1,000 (quantity and use case dependent). Why not maintain the equipment you already have on site?

Restaurants, Vendors Get Local at Second Annual Galewoodstock
Chicago is made up of more than 200 neighborhoods, many of which hold family friendly events featuring local restaurants and other businesses. On Saturday August 27, 2022 the Galewood Neighbors, Inc. hosted its 2nd Annual Galewoodstock Music Festival at the Sayre Language Academy. Many of the neighboorhood’s leading businesses sponsored this event, including Serelli’s Finer Foods who has been in the community since 1934. Serrelli’s is famous for their house roasted Italian Beef which drew long lines of Italian Beef lovers eager to enjoy the high quality, lean Italian favorite. Other famous neighborhood restaurants participating in the event included Maria’s Mexican Restaurant, Des Plaines Theater, Fatso Hard Kitchen and The Original Amato’s Pizza This year’s event drew more than 300 attendees, who came for the great food and eclectic array of music, with everything from blues to swing to rap.
Devanco Foods had a fantastic time sponsoring the 31st Annual Taste of Greektown this year. Devanco was honored to again host the 6th annual Gyro eating contest. Nine men and one woman competed to be this year’s “Gyros King”. Most Humorous Kitchen Mishap: Not a mishap, but a funny story. Years ago, I worked with a chef named Junior, a trusted colleague and friend. We would always fight over who would have to clean the flat top. It got to a point where we started creating an imaginary service called Junior’s Flat Top service. The workers were all under paid and had to work ridiculous hours and were never allowed to call off. The phone number was 1-800-Flattop. We put in on Facebook and Instagram and started making fake commercials in the kitchen. It got to a point where chefs from around the city would DM me and ask if they could hire this service and how do we get ahold of them. To this day, if I call Chef Junior he will answer 1-800-Flattop. How can I help you?

Tiki bars began in the 1930s with the first-ever Tiki bar in California, which featured the classic bamboo interior, palm trees and string lights that transported visitors into a quiet oasis away from the concrete jungle outside. The concept took off thanks to innovators who added multilayered, complex cocktails in festive glassware, themed entertainment and delicious, island-themed bites. By the end of the 1960s there were hundreds of Tiki-themed bars and restau rants dotting the American landscape.
Pete’s thoughtfully handcrafted cocktails are punctuated by fresh tropical fruits, and served in glasses paying homage to the hand-carved totems of the South Seas. Their take on the classic “Mai Tai,” includes Appleton Signature Blend rum, Santa Teresa Solera rum, Senor Orange Curaçao, Fee Brothers Almond Cordial and fresh lime juice. The Datassential survey asked operators to rank the immediate and pressing challenges of the past six months. Recruiting and hiring staff and increased wages needed to hire and retain staff where nearly equal in their worries and were second only to rising foodPrepcosts.and short-order cooks are the biggest challenge says the Datassential survey with 67% of operators saying that they are either significantly or slightly understaffed. “Operators are turning toward a new pantry as a solution to short-staffed kitchens,” says Halt. “Versatile ingredients that are self-stable and convenient to use and source are replacing recipe starter products as part of the answer to their lack of labor.” Survey responses back Halt’s claim. The survey found that 43% of operators now view shelf-stable products as more appealing. Fully prepared products saw greater interest by 32% of operators. Meanwhile, there was a 17% drop in interest in fresh or scratch ingredients.
“Versatility and packaging are so important today in saving money,” Halt says. “Our fully prepared sauces can be used on everything from sandwiches to center of the plate items to dips for appetizers. To cover his bottom line, Omar has raised menu prices but has also found ways to innovate the menu to focus on less-expensive items. “We introduced a bigger, juicier and crispier thigh wing this year, which provides customers with a dark meat option while also offsetting some of the high costs that are associated with traditional wings,” he said. “The launch of this product has gone incredibly well.”

There are many companies out there that have forgotten the people in key roles producing the product, which is the reason everyone brings home a paycheck.
The working world we live in today has changed and not for the better. Work ethic has changed from what it was. Wages have gone up, employers have tried to flex their plans to make it suitable for the worker, but in making the changes for the employee, what is the employee giving in return? Yes, they want a more flexible schedule, more pay, more opportunity, more vacation time and the list keeps going on. What happened to learning the trade and earn ing the extras? Have we moved away from such a motto to handing it out to someone with little to no experience? Have businesses lowered their standard of quality so that they can produce at status quo? Why would you ever have to do that? Society today tells us not to “rock the boat,” so we accept mediocrity. The reality is, we have failed to create a struc ture for an employee that makes them feel they are part of something. Right now, they feel they are just another number and just there to go through the motions of the day. They treat what they do as a job and not a career. Why? It is because during that initial interview, they were told of the duties, a small mention of the history of the company, and little else. We have fallen short as a society to educate the workers of who a business is, the industry they work in, and the commitment they have in contributing to society by the foods they manufac ture for the everyday consumer.
Opportunities need to be disclosed, discussed, and present ed to employees in a manner that is going to interest them. If we can create a way to get the attention of candidates that would be open to working in manufacturing and educate them better, perhaps we would all be in a better position. Above all, provide leadership. Inspire employees, recognize excellence and the positive reputation will spread.

After a twoyear hiatus, Ice! will once again bring to life its mammoth holiday-themed, immersive ice displays at Gaylord Opryland in Tennessee, Gaylord Texan in Texas, Gaylord Palms in Florida, Gaylord Rockies in Colorado, and Gaylord National in Maryland. As part of the brand’s beloved Christmas at Gaylord Hotels celebration, this signature experience will also be joined by an exciting and original live entertainment experience, Cirque: Spirit of Christmas, at select resorts, as well as the brand’s abundance of festive holiday programming.
