A Chicago chef and restaurant owner is working tirelessly to unite food industry volunteers and food lovers for a critical cause: to aid women and girls whose lives have been devastated by military conflict in Tigray, Ethiopia. That chef/owner, Tigist Reda of Demera Ethiopian Restaurant in Uptown, recently launched the nonprofit Hope 4 Tigray Women, and on Aug. 23, will hold a gala at the Lakewood (1758 W. Lake St., Chicago) to raise money. Now, Reda says, she wants to “do something that helps people, something that moves things forward.” “It breaks my heart that Tigrayan women are experiencing gender-based violence,” says Reda. “It is not safe for them to go to school, to work, or to take care of their families. As someone born and raised in Tigray, I decided to use my lifelong passion for food to contribute to and spark change in our beloved country. Food and culture bring everyone together, and the program is about hope.” One of 11 children in her family, Reda was born and raised in Northern Ethiopia, and most of her relatives remain there. She immigrated to the U.S. in 1997 and 10 years later opened the acclaimed Demera, which is known for varied options for ominivores, vegetarians and vegans alike. According to the New York Times, the current conflict in Ethiopia “has led to thousands of deaths, displaced 1.7 million people and led to charges of atrocities” since late last year. The article also stated that “a senior U.N. official declared that parts of Tigray were in the throes of a famine.” Reda believes this is a global issue, not a regional one, and she is appalled and saddened by the conflict and violence in Ethiopia. The restaurant has a bar, outdoor dining and inside seating. They are known for their famous cheeseburger, which they pronounce “cheese-borger.” It’s a very popular menu item, and it’s very good. Get it with an order of fries or a bag of chips. They even serve breakfast there. BLENDED HEALTH & SMOOTHIE BAR, 950 Harlem Ave., GLENVIEW, Ill.; 847-834-0266. This is a cute place that just celebrated their one-year anniversary. They have some indoor seating, otherwise you can carry out. Their menu offers acai and power bowls along with waffle bowls and smoothies. There are a few smoothies for kids on the menu along with some “boozie blends.” I tried the Cherry Berry Smoothie; it was tart and refreshing. COLETTI’S, 5707 N. Central Ave., CHICAGO; 773-773-5144. This place is a neighborhood favorite. It’s a beautiful and spacious restaurant with a big bar area. They offer Italian specialties, burgers, steaks and chops, fresh seafood, pasta, pizza, sandwiches, salads and so much more. They are also known for their awardwinning ribs, which are very good! Portions are plentiful. I dined on the patio, which was lovely. They have parking, catering, host private events and parties, and sometimes have live music. GARDEN FRESH MARKET, 400 Townline Road, MUNDELEIN, Ill.; 847-949-9210. When you walk in, you enter the produce department, which is huge and the variety is amazing. Prices are very reasonable. What caught my attention was all the displays of product throughout the store. There was so much to choose from. They have a big selection of international foods, a spice bar and a big meat and seafood department. The deli counter was very busy, and next to them they had a taqueria. They have an extensive liquor department. You can spend a lot of time in here. MISERICORDIA SWEET SHOPPE, 989 Waukegan Road, GLENVIEW, Ill.; 847-730-3125. This is gift shop and bakery. They also have coffee and a few tables. I ordered a few of their baked Teas, Lemonades, Sodas, goods: the Irish soda bread, a pecan bar• and an iced brownie with Juices, CBDs & Chips nuts. Misericordia Home has been serving people in need for 100 • Over 100 Flavors & Brands years. There was a flyer on the counter promoting their 100th Anniversary Gift Box — Misericordia Hearts & Flour Bakery. The gift box will be offered throughout their anniversary year of 2021. SHAKE SHACK, 864 E. Townline Road, VERNON HILLS, Ill.; 224-294-2010. You can order from the kiosk and pay with your credit card or order at the counter. I ordered the avocado bacon chicken sandwich, which came with lettuce, pickles and herb mayo; the chicken was tender and the breading was nice and crispy. They also have an avocado bacon burger on the menu. I also tried an order of the Chick’n Bites, which I really enjoyed with barbecue sauce, along with an order of their crinkle cut fries and a strawberry shake. Everything is made fresh to order. TACOMA TACO & ENCHILADA GRILL, 105 Stark Ave., CAROL STREAM, Ill.; 630-480-2140. This place serves traditional Mexican dishes with plenty of lunch and dinner combo options. Choose your meat for your meal or combo — you can combine different meats and tortilla dishes, such as tacos, burritos, enchiladas, tamales, etc. I ordered the burrito and taco combo with Mexican rice and refried beans. The burrito had delicious grilled steak and the taco was al pastor (marinated pork) with plenty of meat, topped with onions and cilantro. There are so many combos to choose from that I’ll be back to try more of them.

George Lemperis of Palace Grill can usually be spotted in the dining room of his restaurant, seating, chatting and taking care of his guests. He knows everyone! Palace Grill is a classic American diner, and they serve a great breakfast. The restaurant is at 1408 W. Madison St. in Chicago close to the United Center. The dining room is decked out with Blackhawks memorabilia and the sign on the wall says, “Welcome to the Madhouse on Madison.” The restaurant has indoor and outdoor seating and parking.

After a two-year hiatus, the world’s largest gathering of small, independent and artisan brands will again converge in Chicago. The Chicago Independent Spirits Expo is scheduled for, Nov. 1 at the Chicago Hilton Hotel. Blues Brews & BBQ is McHenry Area Rotary’s premier fundraising event of the year. The event will be held at Petersen Park, 4300 Petersen Park Rd. in McHenry, Ill., Aug. 2022, where there will be three days of great music, food and drinks. Bridal Expo ChicagoNaperville, a luxury bridal sho,w will be held Aug. 25 at the Marriott Hotel 1801 N. Naper Blvd. in Naperville, Ill. The City of Chicago presents the U.S. Navy Blue Angels, which will be a special solo demonstration by the U.S. Navy Blue Angels along the lakefront on August 21 and 22 from noon to 1 p.m. (On Aug. 20, practice runs from 10 a.m.-2 p.m.) The best viewing locations along the lakefront are between Oak Street and Fullerton. Set to open in August, Kitchen + Kocktails by Kevin Kelley, the dynamic comfort food concept, announces the opening of its second U.S. location. The new restaurant at 444 N. Wabash will feature elevated comfort food and creative craft cocktails coupled with an unmatched ambiance. The Chicago Bears and Rush Street Interactive, Inc., a Chicagobased gaming company that operates BetRivers.com, and Rivers Casino, Chicago’s leading casino, announced that they have agreed to a multi-year exclusive partnership. The Illinois Restaurant Association has announced a new partnership with A Silver Lining Foundation to provide uninsured hospitality employees with respectful and equal access to cost-free breast health testing through a network of partnerships with community, advocacy, and healthcare organizations. The Illinois State Fair is an annual festival, centering on the theme of agriculture, hosted by the state of Illinois in the capital, Springfield. The fair will be run from Aug. 12-22 at the Illinois State Fairgrounds, 801 E. Sangamon Ave. in Springfield, Ill. The Paramount Group, Chicago announced an upcoming move to a new location this fall. Expansive riverfront space between Avondale and West Roscoe Village will be home to the group’s hospitality enterprise, including a new location for Eden restaurant.

Eleven|Eleven (1111 W. Lake St., Chicago) has proudly announced that Chicago native Lamar Moore (pictured below) has joined the restaurant as its new executive chef. Located in the city’s West Loop neighborhood, the restaurant is helmed by industry veterans owner Ahmed Braimah and operating partner Justin Frierson. “Joining the team at Eleven|Eleven has already been such a rewarding experience, and I’m thrilled to be back in my hometown,” says Moore. “I’ve been friends with the team for years, and always admired the atmosphere they’ve cultivated at the restaurant. As a Black chef from the South Side of Chicago, I know there are too few Black-owned restaurants in the city, especially in the West Loop. Our team is excited to set an example for young culinarians starting out in the industry.” Braimah and Frierson share Moore’s vision for fostering new talent and shining a light on Black-owned businesses in Chicago. “We are veterans of the hospitality industry,” says Braimah. “It’s important to us that we show the next generation of BIPOC (Black, Indigenous and other people of color) youth that success can take many forms, beyond what they might typically see reflected in the media. Our team is excited to give Chef Moore a platform for his culinary talent.” Prior to joining the team at Eleven|Eleven, Moore competed on Food Network’s “Vegas Chef Prizefight,” where he won the position of head chef of the $10 million steakhouse, Bugsy & Meyer’s Steakhouse at the Flamingo Las Vegas. Drone Delivery Ramps Up for Walmart After launching drone delivery last fall to get at-home COVID-19 test kits to customers around Las Vegas, Walmart has invested in Virginiabased DroneUp. Favorite Food to Prepare: Probably anything to do with slow cooking: short ribs, duck confit, lamb shank, braised pig’s feet. What part of the job gives the most pleasure: I have been doing this for 42 years now, so there are a lot of things that make me happy. It has changed over time. Today the biggest satisfaction when I think about it is to have been able to provide stable jobs to a lot of people during my entire career. Maybe it’s the reason why some of my helpers have been on my side for the last 25 years. If you couldn’t be a chef, what would you be and why: This is my life, so it’s hard for me to think about something else. It would be easier for me what to list what I would not be (politician, journalist, ballerina ...). Maybe working in car or a motorcycle mechanic. Best advice you ever got: Try it ... If you want to do something, don’t try to identify the reason why it would not work, but spend your energy to identify the reason to it. Go for it. If not you will regret it all your life. Be curious and really don’t worry about what people will think about it. Where do you like to vacation: I have a preference for places near the ocean. One of my favorite places is probably the Basque region. The food, the mountains, the ocean, the weather there, it’s my vision of paradise. What do you enjoy most about FIN: This is a great way to keep in touch with the industry. It gives me a good update of what’s happening. Other than family, who was your greatest culinary influence? Many people influence me but getting older, I like to think that my close relationship with chef Paul Bocuse was probably the most significant. His joie de vivre, his sense of humor, his curiosity ... I miss him a lot.

The Hounds & Tap has opened for dogs and dog lovers in Menomonee Falls, Wis.., about 16 miles from Milwaukee. It's believed to be the first business of its kind to open in the Midwest that is built with hounds and humans in mind. As a locally owned small business, it seeks to promote other local small businesses while serving its Midwest community. "Our mission is to connect hounds and humans to make every day a play day. This is at the core of everything we do,” said owner Leah Neuroth. The 12,000-square-foot facility offers day care, boarding, grooming, a self-serve dog wash, a tavern, indoor dog park as well as an additional 8,000 square feet of outdoor play areas. The tavern and dog park, with a separate entrance, features TVs, free Wi-Fi and a fully stocked bar with locally crafted beers in cans and on tap, as well as wine and cocktails. The indoor and outdoor secure off-leash park is the perfect place for hounds to play while their humans enjoy a drink, regardless of the weather or the time of year. If guests are hungry, the facility also offers a variety of local food trucks.

Technomic Finds Post-Pandemic Trends

Restaurants are operating differently than they did before COVID-19 happened, and customers are changing how they experience dining out. Both are going back to some pre-pandemic behaviors, but consumers are expressing new wants, too, such as a desire for more sustainability, which reflects their own values and social responsibility. They also want to indulge in flavorful, fun foods and beverages. Recent data from Technomic indicates three big trends:  More sustainability efforts during the second half of 2021. This includes environmentally friendly packaging alternatives and food waste reduction efforts. Burger King launched a green-packaging pilot at 51 company-owned stores, and KFC is using less material in its redesigned packaging. Just Salad teamed up with online app Too Good To Go to reduce its food waste and sells leftover food at the end of the day at a reduced price.  Spiked slushies are popular in the convenience store space right now. The adult beverages, made with beer, hard seltzer or other alcohol, may also show up at restaurants now that alcohol-to-go beverages are potentially here to stay, and refreshing drinks are on the menu this summer.  Meat could replace some seafood items as the industry’s supply chain continues to face challenges, and increased food costs hamper operators’ attempts to purchase more fresh seafood. Look for grilled, smoked, cured, barbecued and roasted beef and pork as substitutes for fish, shrimp, lobster, crab and other seafood.

Bartolotta Chef to Open Restaurant

After over two decades working with the Bartolotta Restaurants and overseeing the debut of 20 different dining locations, James Beard Award-winning Chef Adam Siegel said that he will be opening a new restaurant of his own in downtown Milwaukee. The venue, which will be called Lupi & Iris, is slated to open next spring in the 7SEVENTY7 building on North Van Buren Street. The fine dining restaurant will showcase Mediterranean style cuisine inspired by the French and Italian Riviera. Editor’s Note: The following is a remembrance from Angelo Caputo’s granddaughter.

Angelo Caputo led a life of hard work, generosity, and faith. He came to America as a teenager with nothing but the desire to make something of himself and create a good life for himself and his future family. A true pioneer in the grocery industry, he founded Angelo Caputo’s Fresh Markets in 1958. His life goal was to serve others. He loved to make connections with people and make sure they were happy, especially by feeding them. With the creation of Angelo Caputo’s Fresh Markets, he was able to serve a large crowd. His work, paired with his wife’s ability to create a feast in a flash, meant that anyone who crossed their path was never hungry. He created opportunities for so many and was highly regarded as an inspiration and a teacher. When my mom was designing our Caputo’s uniforms, she very intentionally put the Caputo’s logo on the left chest and the La Bella Romana logo on the right arm. It is with great pride that we wear his name on our uniforms over our hearts. He is the heart and soul of our family and our company, so it’s only fitting that his name is written over our hearts literally, while his memory and countless lessons remain written in our hearts forever. The name of his wife, Romana, is worn on our right arm because she was his right hand and guiding force. He was a very proud man, and he got the most pride from watching and being a part of the successes of his children, grandchildren and great-grandchildren. He loved sharing a meal or an espressino with his loved ones. No matter what the occasion, he wanted to be there supporting his family that he loved so much. He drew strength from his family and they were his everything. He loved to be surrounded by them, especially when they were wearing their red Caputo’s shirts. He leaves us with an incredible legacy that our family will work endlessly to preserve in an effort to make him proud and give him the respect that he so greatly deserves. We take solace in knowing that he is reunited with and at peace with his beautiful wife, the greatest love of his life. Rest in peace, Nonno. We love you. Chris Solare Opens Paisan’s in River Grove

From humble beginnings at the age of 14 working at the Old Orchard Country Club in Mt. Prospect, Ill., Chris Solare worked his way up to an executive chef position at a large hotel. That was followed by Solare becoming director of food and beverage post at another property. As a person who loves the food business, it was always his dream to have a restaurant of his own. This dream was realized when, thanks to the COVID-19 pandemic, Solare was able to buy a fully furnished restaurant at 8347 W. Grand Ave. in River Grove, Ill. From the time the deal was closed, Chris was able to get Paisan’s Italian Kitchen open in just 44 days. The menu at Paisan’s Italian Kitchen is Northern Italian cuisine and features such house specialties as Neapolitan-style pizza with a homemade basil sauce, homemade meatball grinders, chicken grinders, pork cutlet sandwich and chicken Marsala. In keeping with Solare’s culinary roots, everything is made from scratch in house. The restaurant is open seven days from 11 a.m. to 10 p.m. Reservations are not required, and prices are very affordable with the goal of becoming a neighborhood favorite. Food Service Sales Expected to Grow

Restaurant and bar seasonally adjusted spending in May totaled a record $67 billion, up from $66 billion in February 2020, said Michael Swanson, chief agricultural economist with Wells Fargo. “That was for May, where we had limited capacity,” he said, adding that a lot of bars and restaurants are still understaffed. The inability to get staff into restaurants is holding back sales, he said. Swanson said the consumer demand for awayfrom-home food will persist at high levels for months, as consumers rebook travel they had postponed and have more freedom for social gatherings. Swanson said restaurant operators have raised prices on their menus, and some of the dollar menus have been removed. In addition, he said that restaurants have reworked their menus to drop items that were difficult to prepare or had smaller margins. “A lot of those items have come off the menu and so (restaurants’) average ticket has gone up,” he said. Fresh fruits and vegetables may not benefit from some menu adjustments. For example, McDonald's removed salads from its menus early in the pandemic and has not said when it will reintroduce them. “There’s a situation where the fruits and vegetables have been negatively impacted by their move to try to improve their menu profitability,” he said. In addition, other restaurant chains have reduced the salad selections they offer. The effect of the food-service rebound on supermarkets may not be severe, Swanson said. “Supermarket sales have actually stayed very strong, even with the recovery in the restaurant spending,” he said. “Right now, the combined spending between restaurants and supermarkets exceeds the previous peak by about $14 billion, so everybody is doing well at the moment.” Swanson noted that many supermarkets are bringing back salad bars, which he said should be a good source of demand for produce shippers. -Source: The Packer

The Most Sustainable Foods, From Seaweed to Venison to Pulses

What should we be scoffing if we want to help fight the climate crisis from our kitchens? The question has never been more important or confusing. Here is a guide to help you get started. “Good eating starts at home, and one of the most important things we can do for the future of the planet is to minimize food miles — so our staples should be foods that can grow perfectly well in this country,” advises Patrick Holden, chief executive of the Sustainable Food Trust. Another basic principle is to do your best to understand the story behind what you’re eating, be it plant or animal: “If you know who produced your food, they are accountable to you, and more likely to care.” 1. Grass-fed beef and lamb: These meats are the most controversial, complex and heavily caveated inclusion in this list, but Holden, one of the earliest proponents of regenerative agriculture (that involves rearing livestock within Photos Via Pixabay a mixed farming system in order to restore organic matter — and with it, carbon — to the soil) makes a case for eating them. By rotating livestock with crops (as was done for centuries before the intensification of agriculture), farmers can “build soil carbon and so offset livestock emissions.” In addition, says Carolyn Steel, author of “Sitopia: How Food Can Save the World,” “Grass is rich in nutrients, but we can’t digest it. So we eat animals that can.” 2. Locally grown fruit, vegetables (fresh, fermented or pickled): Eat fruit and vegetables grown in the U.S., with the shortest possible supply chain. 3. Mussels and other bivalves: Nutrient-dense and adept at sequestering carbon and purifying seawater, bivalves are up there with seaweed when it comes to sustainability points. These molluscs (oysters, mussels, clams and scallops) thrive on microscopic organic matter, including agricultural runoff; so their cultivation transforms waste into carbon storage and delicious food. 4. Pulses (beans and peas): Like red meat, pulses are a nutrientdense food, says Josiah Meldrum of East Anglian producer Hodmedod. “They can “self-fertilize the soil, through root nodules containing bacteria that convert atmospheric nitrogen into ammonia.” 5. Seaweed: If any plant is worthy of the term “superfood,” it’s seaweed, for its environmental benefits and its potent nutritional properties. Like any plant, seaweed absorbs carbon dioxide, but it can also reduce the acidification of the ocean, enabling microorganisms and sea life to flourish. 6. Venison: Venison is a great example of nutrient-rich meat produced from the grass and foraged plants and trees that humans cannot utilize. 7. “Waste” food: If, as a planet, we stopped wasting food altogether, we’d eliminate 8% of our total emissions — so one easy way to eat for the planet would be to tackle that, Steel points out. That could be through preserving and making stock from meat and fish bones — but it could also be as simple as eating as much of a fruit or vegetable as possible. “The skin, the seeds, the leaves — these are where the phytonutrients are,” she says. Supporting companies that are repurposing waste — surplus bread into beer, surplus fruit into condiments and chutneys — is another easy win. -Source: The Guardian

9 Fire Safety Tips for Your Business

Fire safety is intended to reduce destruction caused by fire. This includes measures taken to prevent fires as well as practices to limit the effects of a fire after it starts. Use these tips to evaluate and prepare: 1. Train all employees on fire hazards and what to do in case of an emergency. 2. Store flammable materials away from heat sources. 3. Properly store flammable liquids. 4. Select extinguishers for appropriate hazards. Class A: Fires with ordinary combustibles such as wood and paper. Class B: Flammable/combustible liquid fires such as oil or gasoline. Class C: Electrical fires or fires on electrical equipment. Class D: Combustible metal fires such as sodium, magnesium, titanium, zirconium, lithium or potassium. Class K: Cooking combustibles such as vegetable or animal oils and fats. 5. Know where the nearest fire extinguisher is and how to operate it using the “PASS” system. Pull the pin while holding the extinguisher away from you to unlock the mechanism. Aim low toward the base of the fire. Squeeze the lever slowly. Sweep the nozzle from side to side at the base of the fire. 6. Develop an emergency action plan. 7. Conduct emergency evacuation drills. 8. Have your exits clearly marked and free from obstruction. 9. Keep electrical equipment well-maintained. FAT Brands to Acquire Five Restaurant Chains for $442.5M

FAT Brands announced that it will spend $442.5 million to acquire Hot Dog on a Stick parent Global Franchise Group. In addition to Hot Dog on a Stick, Global Franchise Group franchises quick-service concepts Round Table Pizza, Great American Cookies, Marble Slab Creamery and Preztzelmaker. After a Natural Disaster, Be on the Watch for Fraud

As tropical storms, wildfires and tornadoes strike this summer, business owners will be left trying to find contractors to repair their property and could be victimized by dishonest contractors looking to make a quick, corrupt buck. Following a disaster, victims are understandably confused and shaken by the damage or possible loss of their belongings. Sadly, it is at this time crooked contractors arrive and press homeowners into paying out their insurance claim prior to the repairs being completed. Time and again, investigators with the National Insurance Crime Bureau have seen these bad actors collect payment and then disappear without completing the work that was promised. According to a new survey conducted by Hilton, 59% of respondents plan to jump back into travel with a bucket list vacation they would not have considered before the COVID-19 pandemic. Restaurants Attract Interest from Private Equity Firms

For investors, the U.S. restaurant industry has always been challenging, with even the most seasoned operators often recording profit margins in the single digits. And last year, during the height of the COVID-19 pandemic, many were forced to shut down altogether due to indoor capacity restrictions. But with the U.S. slowly beginning to open up, private equity investments in the restaurant industry and other related sectors have slowly ramped up, with a wider dealmaking surge expected in the second half of the year, according to PitchBook's Q1 US PE Middle Market Report. And that's opened up an opportunity for investors in the lower-middle market to jump in where larger private equity firms have faltered. Enter Mercato Partners, a Utah-based private equity shop that's launched its own restaurant investing vehicle dubbed The Savory Restaurant Fund. Recently the firm closed a $100 million fund dedicated exclusively to backing lower-middle-market restaurants, after raising $100 million last year for the same purpose. Savory Fund managing partner Andrew Smith said he's never bought into the narrative that you can't make money backing restaurants: "It's an unearned and undeserved fallacy." The vehicle makes controlling investments between $6 million and $10 million, with another $10 million available for restaurant founders to tap when they're ready to expand. The goal: Invest in restaurants that are ready to scale and don't require the nine-figure investments common for larger private equity firms in the restaurant space. ‘American Chopper’ Star Opens Florida Restaurant and Museum

I worked there during the summers my first couple years of college in the kitchen and working the register. Favorite Food: Tonkotsu ramen Memorable Customers: I am so thankful to see so many friendly and familiar faces each day at work who dine with us regularly. Worst Part of Job: When a keg kicks in the middle of the rush. Bonus points if you get covered in beer when it happens. Most Humorous Kitchen Mishap: I used to work in a French bistro, and we had just received a really beautiful absinthe fountain that the bar team and ownership were really excited about. After five days a server knocked it over and it shattered. It was so sad when it happened, but turned into a running joke for a while after. Favorite Food to Prepare: I love making eggwhite cocktails. What part of the job gives the most pleasure: Researching and developing ideas for new cocktails. It’s a long process but it’s so much fun and a great creative outlet. There is no feeling like when a recipe you’ve been working on finally comes together! If you couldn’t be a beverage director, what would you be and why: Growing up I wanted to be an artist. I still paint and draw a lot in my free time and have illustrated a couple of children’s books, too! Best advice you ever got: Every day is a new day, which applies to this industry so incredibly well. I like to remind myself of that after a rough service. Where do you like to vacation: New Orleans. I try to go once a year, even if it’s just a quick weekend trip. What do you enjoy most about FIN: Learning about restaurants I didn’t know about before.
