Chicago Chefs Cook Inaugural

‘I Cook For’ Benefit at Four Seasons

Chicago Chefs Cook, the award-winning humanitarian non-profit organization, recently hosted an inaugural, ‘I Cook For’ benefit at the renowned Four Seasons Hotel Chicago. More than 25 of the city's most celebrated chefs, pastry chefs, and mixologists gathered for a special evening designed to showcase their culinary artistry and raise critical funds for local and global causes. Uniquely, each chef will personally select a charity that best represents their identity, with a portion of the net proceeds benefiting both

their chosen organizations and Chicago Chefs Cook.

"This event is very much a celebration of the chefs in our city – a moment of appreciation for who they are and what they do," said Chef Sarah Stegner, Co-Founder. Added Co-Founder Darren Gest, “There is so much meaning and purpose behind chefs’ dedication to their craft. The 'I Cook For' Benefit is a tribute to that.”

After a record year of growth, Cilantro Taco Grill opened outside Chicagoland for the first time in April 2025, a significant milestone following the brand’s first franchise opening in November. The nation’s fastest-growing authentic Mexican fast-casual franchise secured six franchise agreements in 2024, bringing 110 units into development in its first full year of franchising. With the QSR industry projected to grow by 5.4%, reaching $321.8 billion in 2025, Cilantro Taco Grill is well-positioned for continued expansion this year.

“As we continue to expand into new communities, it’s fulfilling to know more guests will taste the authentic flavors of Jalisco and the love my family has put into the recipes from our home country of Mexico,” said Temoc Morfin, Founder and CEO of Cilantro Taco Grill. “What started as a small taqueria with my family is now a thriving franchise further fueling the American Dream. Cilantro Taco Grill will always stay true to our mission – serving the food I grew up eating in Mexico and uplifting immigrant families like my own.”

FOOD - GRADE PALLETS

ATHENIAN ROOM • 807 W. Webster Ave. CHICAGO, IL 773-348-5155. This place has stood the test of time, still serving the best Greek cuisine at affordable prices. The atmosphere in the dining room is causal and the food never disappoints. The menu consists of many Greek specialties including spanakopita, fresh salads, gyros, a feta burger, Kalamata chicken, and kebabs just to name a few. I started off with a cucumber salad that was so fresh. For my meal I ordered their chicken shish kebabs which were cooked to perfection and so flavorful along with their Greek fries. Those fries bathed in a vinegar and oil sauce are so good, you might need more than one order. They do a nice job!

CAPANNARI ICE CREAM • 10 S. Pine St. MT PROSPECT, IL 847-392-2277. This is an adorable ice cream shop; it looks like someone’s house. I was eyeing the case and decided to have my own tasting. So, I picked up a few treats to go. I ordered a scoop of the cosmic cookie – a blue ice cream with cookies in it, which I’m sure is a big hit with the kids, and a scoop of butter pecan. Those two flavors were so creamy and the butter pecan was some of the best I’ve ever had. Their ice cream is homemade and super premium. And, I picked up two pints of ice cream - the Black Raspberry Chip and Mint Chocolate Chip. Oh my gosh those flavors were incredible too. You can also find their ice cream at -tastesofchicago.com.

GOLDEN NUGGET PANCAKE HOUSE • 1765 W. Lawrence Ave. CHICAGO, IL 773-769-6700. If you haven’t dined here, I highly recommend stopping in. They have been around forever offering an abundance of breakfast specialties. Favorites include breakfast combos, crepes, French toast, omelets, pancakes, skillets and waffles. I usually order the French toast, but this time I ordered the buttermilk pancakes. I had a short stack - three fluffy pancakes served hot with a dab of butter on top and a side of syrup. So yummy! Plus, I ordered a side of bacon. Not in the mood for breakfast? They have plenty of other choices as well. The service here is always so attentive and the staff in the dining room keeps a good eye on making sure your coffee cup is always full.

LA TIENDA MICHOACANA • 6050 N. Belmont Ave. CHICAGO, IL 708-669-7134. This is a full service grocery store offering all the regular staples along with a lot of authentic Mexican specialties. The bakery department here was packed when I came in. You take a tray and fill it up with all your goodies and bring it over to the bakery counter and they will price it for you. I picked up some fresh croissants and a few guava pastries. In the produce department they had an interesting mix of fruit and vegetables that I’ve never seen before. They have a big meat department too. In the snack section I picked up a bag of Crujitos Chile lime corn cheese chips and I also got a bag of Bizcochitos baked snack crackers.

LOS COMALES • 9055 N. Milwaukee Ave. NILES, IL 847-663-0747. They have a very spacious dining room and can accommodate a large group comfortably. The staff here is so friendly! They start you off with salsa and chips and both are so fresh. The menu offers a nice selection of Mexican favorites including burritos, fajitas, tacos, tortas, seafood and so much more. I always start off with an order of guacamole and I love their steak tacos with onion and cilantro. The tacos are small, so order a few. My friends never dined here before so we ordered a combination of items to try. We had cheese enchiladas, the skirt steak dinner with rice and refried beans, and the Chicken Milanese followed by an order of the Vanilla Flan for dessert. Everyone was stuffed!

WING SNOB • 1713 W. Golf Rd. MT PROSPECT, IL 847-752-WING. Wow! I was very impressed with the food here. Place your order ahead of time or order at the restaurant. They have seating so you can dine in. On the menu they have traditional or boneless wings and cauli wings, tenders, sandwiches along with a combo of sides. Choose your wings- pick your flavor: I ordered the boneless Honey BBQ wings and the cauli- wings. I chose bleu cheese, ranch and the sweet chile sauce to dip the cauliwings in. The chicken was cooked perfect; those cauliflower wings were great too. They have a few fry options as well; I ordered the seasoned (salt & pepper) fries. Order extra sauce to dip your fries in.

Red Lobster Plans for a Path Forward

Shops Adapt as Bean Prices Rise

Small and midsize coffee companies are facing challenges as arabica bean prices rise due to adverse conditions in major producing countries such as Brazil and Vietnam. Some, like Couple’s Coffee, are raising prices, while others, including Cafe Aroma, are buying opportunistically, and companies are also cutting costs where possible to manage the financial strain.

Damola Adamolekun, a former P.F. Chang’s CEO who is now leading Red Lobster, plans to guide the company’s path after exiting from bankruptcy by focusing on a combination of product quality and affordability. More effective communication with customers is one of Adamolekun’s goals, as he says many consumers are unaware of the brand’s pursuit of quality.

Whether you’re a business owner, supplier, or industry leader, effective networking can open doors to new opportunities, collaborations, and insights that fuel growth. Here’s how to make the most of your connections:

1. Be Intentional. Don’t just collect business cards; build relationships. Have a clear purpose for networking, whether it’s learning about industry trends, finding mentors, or exploring partnerships.

2. Give Before You Get. Approach networking with a mindset of generosity. Offer insights, referrals, or support before asking for favors. Strong relationships are built on trust and mutual benefit.

3. Master the Follow-Up. A great conversation means nothing without follow-up. Send a quick email or LinkedIn message to keep the connection warm and explore ways to collaborate.

4. Leverage Industry Events. Trade shows, conferences, and food expos are prime networking opportunities. Engage in discussions, ask thoughtful questions, and be genuinely interested in others’ experiences.

5. Stay Visible and Engaged. Stay active in industry groups, contribute to discussions, and share insights on LinkedIn. Consistency keeps you top of mind when opportunities arise. Educating Consumers on Seafood

With many years of experience and multiple distribution facilities throughout the Midwest, MacCARB has developed a reputation as the most trusted beverage gas, and service fulfillment companies around. Whether you need beverage grade carbon dioxide, nitrogen, helium, blended gases or just plain service, MacCARB is your single one stop shop. For Personalized Service, Call us Today!

Although 93% of consumers recognize the health benefits of seafood, only 10% of shoppers account for 42% of seafood purchases, according to The Power of Seafood 2025 report from FMI: The Food Industry Association. The belief that seafood is healthy yet complex to prepare acts as a barrier to purchase, the report found, suggesting “shoppers view seafood as a healthy, yet intimidating protein,” said FMI’s Vice President of Research and Insights Steve Markenson. Partnering with dietitians to educate consumers on seafood preparation and health benefits can support sales, FMI suggests.

Made with passion and high-quality ingredients, Margherita Italian meats ensure every bite is rich in distinctive taste. As one of the most popular pizza toppings in the U.S., pepperoni continues to dominate, and adding a spicy kick meets the increasing consumer desire for bold, spicy options.

Cosmopolitan Linen: Elevating the Dining Experience

When dining out, most guests do not realize all the many behind-the-scenes vendors that help restaurants create the perfect dining experience. From the candles to wall décor to the flowers on the patio, there is an army of companies deployed by restaurants to win over customers.

One such company is Cosmopolitan Linen, a familyowned business that has worked exclusively in the food service industry for over 80 years. They partner with many of Chicagoland’s most recognized brands. And although the average diner may not know Cosmopolitan’s name, they have probably used one of their napkins.

Restaurants rely on Cosmopolitan to provide them with everything linen: from tablecloths to floor rugs. They have built a reputation as the leading linen rental company by anticipating their customer’s needs and being available and accessible when needed. Cosmopolitan is structured to mirror a restaurant’s needs with seven-day-a-week routes and 24/7 customer service. Their customer support has made them one of a restaurant’s most valuable partners.

Meat Sales Hit $104.6B

The next time you dine out and enjoy a clean, soft napkin, remember that there’s a team of dedicated professionals working behind the scenes to make it all possible. Cosmopolitan Linen may not be in the spotlight, but they help restaurants create a dining experience that makes customers want to come back to again and again.

– You can find Cosmopolitan Linen in our directory under: “Linen Supply & Rental Service.”

Meat sales reached a record $104.6 billion in 2024, with a 2.3% increase in pounds sold and a 4.7% rise in dollar sales, according to The Power of Meat 2025 report from the Meat Institute and FMI – The Food Industry Association. The report highlights that 98% of households purchase meat, driven by a desire for protein and the convenience of meal preparation options. “As shoppers’ definition of value has expanded to include price, quality, relevance, convenience and experience, they are including meat in 90% of home-cooked dinners and looking for various options to suit their schedules, tastes, and interests,” said Rick Stein, FMI’s vice president of fresh foods.
