Respect for tradition, the local community and a creative take on food, beverage and private events are the foundation of The Shanty and the Shanty culture. The restaurant has been a gathering place for neighborhood locals to eat, drink and socialize for decades. Dimitri Kallianis and his family purchased The Shanty, 38985 Hwy. 41 in Wadsworth, Ill., in 2006. The Kallianis family—parents Dino and Elaine, and siblings Dimitri, George and Notah—also owns and operates the building next door, Captain Porky’s Seafood and Barbecue. As the community of Wadsworth has grown through the years, so too has The Shanty. By late 2010 The Shanty was reconstructed using local reclaimed barn wood restored from neighborhood farms. In 2018, The Shanty expanded again, tripling in size to add additional indoor spaces and a 24-seat outdoor deck overlooking the forest preserve. The menu boasts dishes from burgers to pasta to beef, chicken, pork, lamb and seafood. One of the restaurant’s specialities is their apple brandy braised pork shanks (right). Voted the Best of Chicago in 2019, The Shanty has been highlighted on TV shows such as Food Network’s “Diners, Drive-ins and Dives” in 2010 and 2018. Midwest Foodservice Expo Canceled The Midwest Foodservice Expo, scheduled for March 21-23, 2021, has been canceled. Since 1933 the Wisconsin Restaurant Association has been hosting the Midwest Foodservice Expo, an important resource of information, products, services and connections for thousands of people in the foodservice industry. Holding this event in the first quarter of the year has always been an exciting start to the upcoming tourism season. While there were exciting plans for 2021 to bring everyone together to once again do business face to face, the growing uncertainty due to COVID-19 has caused the association to go from optimism to realism. With Milwaukee still not allowing large gatherings, coupled with COVID spiking in the state, a difficult decision was made. The safety of everyone is a priority. And getting the industry through this crisis is the association’s main focus right now. There is no re-schedule date planned. Across the street from the Metra train station, this is a cute shop with fresh-baked breads, croissants, pastries, cookies, drinks and more. Everything looked appealing, so it was hard to decide what to order. I chose a combination of goodies that included three kinds of cookies; raspberry, peanut butter and shortbread. I also picked up a blueberry scone. BLACKWOOD BBQ, 1711 E. Golf Road, SCHAUMBURG, Ill.; 630-283-0882. Barbecue is the specialty of the house. They have brisket, pulled chicken, pulled pork, ribs, a Nashville hot chicken sandwich, tacos and a big selection of house-made sides. I tried the brisket sandwich. The bun was soft, the meat was tender and the sauce was good. For my sides, I had an order of smoked beans, coleslaw and honey cheddar corn bread. Everything was outstanding! They have locations in Chicago too.

FRATO’S CULINARY KITCHEN, 628 S. Roselle Road, SCHAUMBURG, Ill.; 847-895-2122. This place has so much to offer: beef, hot dogs, gyros, chicken and handmade burgers. Check out some of the clever names on their menu items. They are also known for their pizza. I ordered the “one-pound pizza slice” with sausage. They were right on the money about the size—it took up the entire to-go container. It was made to order and doughy with a nice crust and gooey cheese. Yum! LA ROSITA FRESH MARKET, 500 North Ave., GLENDALE HEIGHTS, IL 630-534-6890. This is a grocery store with two locations, specializing in dry and refrigerated products from Mexico and South America. In addition to grocery items, they have a wonderful bakery. Also, two hidden gems are located inside the market: the Taqueria and the La Rosita Michoacana (ice cream shop). At the Taqueria, I had an al pastor (seasoned pork) taco and asada (steak) burrito. Both were authentic and delicious. At the Michoacana I had a chocolate shake topped with whipped cream. Heavenly! QP GREEK FOOD WITH A KICK, 830 N. Roselle Road, HOFFMANN ESTATES, Ill.; 224-353-6999. I only tried two things here and I was very impressed. The first was their egg lemon soup, which was really good. The second was their broasted Greek chicken, which I ordered spicy. The flavor and crisp skin on that chicken was amazing. On the menu they also have Greek meatballs, Greek wings, pastitsio, gyros, ribs and kababs. There is a drive-thru, making it easy for pick-up. TACO MELLY, 16 S. Fairview Ave., PARK RIDGE, Ill.; 847720-4288. Mexican specialties include guacamole and chips, nachos, tacos, empanadas and burritos. You can choose to get a taco or a bowl, which comes with choice of brown or white rice. I tried the Hawaiian shrimp bowl. It had pineapple in it. Plus, I got an order of the guacamole and chips and a side of elote, which is Mexican corn. Their food is very light and tasty. TROPCIAL SMOOTHIE CAFÉ, 4874 N. Lincoln Ave., CHICAGO; 773-681-0394. When you walk in and hear the island music playing, it puts you in the mood for a refreshing smoothie. This cafe is known for its healthy, made-to-order smoothies and fruit-blended smoothies along with sandwiches, wraps, bowls and salads. I tried one of the peanut butter cup smoothies: peanut butter, chocolate and banana, which was creamy and delicious.

New Tasting Menu Available at Yügen Yügen, the contemporary Michelin-starred restaurant featuring modern Japanese cuisine made with intentionally sourced Midwestern ingredients, has debuted a new eightcourse tasting menu. Executive chef Mari Katsumura’s new tasting menu celebrates fallcentric ingredients and seasonal produce, including chestnut, celery root, apple and fig, and is inspired by the flavors of the holiday season. Pricing for the tasting menu is $195 per person, with the option to add beverage pairings for $155. Guests can enhance their dining experience with supplements such as A5 Wagyu and black truffle gnocchi. National Urban League Launches Black Restaurant Accelerator Plan Powered by $10M Grant from PepsiCo

The National Urban League and PepsiCo joined forces to create the Black Restaurant Accelerator, which will boost approximately 500 Blackowned businesses over the next five years. The PepsiCo Foundation is providing a $10 million grant to fund the program, which will provide current and aspiring Black restaurateurs with access to capital, training, mentorship and other support services that are necessary for business success. Black entrepreneurs have long faced systemic barriers to growth, including access to loans and capital, biased community perceptions and gentrification challenges. These hurdles have been compounded by the COVID-19 pandemic, as demonstrated by the 41% of Black-owned businesses that have shuttered since February 2020 compared to just 17% of white-owned businesses, according to a 2020 study by the University of California-Santa Cruz Through

Mazzone Pasta Celebrates Solar Project in DuPage Headline Solar and Mazzone Pasta recently hosted a ribbon-cutting ceremony to celebrate the completion of the largest commercial solar panel installation to date in DuPage County at Mazzone Pasta in Bloomingdale, Ill. The 30,000-squarefoot manufacturing facility features 286 solar panels covering 7,793 square feet of rooftop and will generate an estimated 143,120 kwh in electricity via solar power per year for the next 30 years. The Occupational Safety and Health Administration (OSHA) has published two additional answers to its list of COVID-19 frequently asked questions to clarify when employers must report COVID-19 hospitalizations and fatalities. Reporting Hospitalizations: OSHA requires employers to report in-patient hospitalizations only if the hospitalization occurs within 24 hours of an exposure to COVID-19 in the workplace. Employers must report COVID-19 hospitalizations only if the hospitalizations are: For in-patient treatment; and The result of a work-related case of COVID-19. The report must be submitted within 24 hours of the time the employer determines there was an in-patient hospitalization caused by a COVID-19 case in the workplace. Hospitalization for diagnostic testing or observation only is not “inpatient” hospitalization. Reporting Fatalities: OSHA requires employers to report fatalities that occur within 30 days of an exposure to SARS-CoV-2 in the workplace. Fatality reports must be submitted within eight hours of the time the employer learns that the fatality took place and was due to a work- related exposure. Some Key Components of Rodent Prevention Explained Having a well-trained staff in inspections, recognition of rodent signs and the importance of keeping doors closed can pay dividends in pest prevention. Personnel Doors: One easy way to assess doors for gaps is to look at the base of the door from the interior and check if light is visible. If light is visible, the preferred rodent proofing seals to use are rubber encased steel fabric or high-density brush-style sweeps. When choosing the door sweeps best for the facilities, keep in mind the size of the door. Personnel doors in commercial facilities are normally 36 to 48 inches wide, with some door sweeps pre-cut to fit these lengths. Pre-cut door sweep kits make installation easier; however, they must cover the bottom corners of the doors, so it stays wellsealed and not vulnerable to pest entry. Overhead Doors & Dock Doors: Just like personnel doors, overhead doors can be a common rodent entry point. Their repeated opening and closing make them susceptible to rodents as well as forklift damage that they are often subject to, which can leave doors accessible to pests. Dock Plates: The side edges around dock plates (pictured at right) are prone to rodent entry as their seals undergo wear and tear during daily loading and unloading of trailers. The corners and hinged back seal are both difficult to seal and maintain because the brushes are particularly prone to food accumulation from spills. Some facilities turn to sweeps installed along the dock levelers; they are normally tack welded or screwed into the sides of the dock leveler deck and offer a better pest prevention method. Inspection of Incoming Goods: Although mice and rats can enter facilities on shipments, mice are the more common stowaway pest. House mice can derive sufficient moisture from the foods they consume but also have a need for water to drink. They also seek shelter oftentimes using cardboard and other packaging materials provided in shipments for nesting. These nests are typically constructed out of view and in the pallet stack interior. Awards/Honors: At this time, I haven’t won any awards in this business. I don’t plan to and I don’t think I ever will. In the fast-casual space, if you’re a good operator, you don’t focus on being a chef. Chefs are the ones that win awards by being creative, and I can’t really do that in my current position. At Big Wig, we give the customers what they want. Making our customers happy day in and day out is the biggest award I can win. Memorable Customers: Our most memorable customer would be former Chicago Bulls basketball player Wendell Carter Jr. who is now my business partner. As a regular and huge supporter of Big Wig Tacos, he got to know our business and decided that we should partner up. Worst Part of Job: My least favorite part of this job would be the long hours. It can be brutal since we’re open almost 24 hours a day, and we have someone working every minute of every day at our two locations. Everybody wants to be the boss until it comes down to doing boss things. We only close 3 days out of the year and I’m either working all the time or on-call 24/7. Most Humorous Kitchen Mishap: Once we had a new line cook add salt to the horchata instead of sugar. The first customer to drink the batch spit it out all over the front counter. Luckily, the customer laughed it off. Favorite Food to Prepare: I love preparing our burritos. It’s simple, but sometimes in life, it’s the simple things that matter. What part of the job gives the most pleasure: My favorite part of the job is making a product that makes people smile. When people come to Big Wig, it’s usually a treat. It may be a small one, but people usually come in smiling and leave smiling. If you couldn’t be a chef, what would you be and why: I think I would enjoy being an engineer. I like to create things that people can use. Teas Inspired by Disney’s ‘The Mandalorian’ Hit the Market When it comes to recent pop culture sensations, few captured the Internet’s attention as much as “The Mandalorian’s” Baby Yoda (aka The Child). The new Packs of Plenty (P.O.P.) is the charity’s proprietary program and replaces the former Blessings in a Backpack program. “We recently made the decision to oversee and manage all elements of our food program. As the number of children in need continues to grow, this change helps us provide more food to children living in food insecure homes,” states charity co-founder, Darby Hills. The P.O.P. launch includes a logo and branding roll out across all the charity’s marketing efforts. Moretti’s will be providing the venue for the food packing and storage at its Moretti’s Unique Events private party facility in Hoffman Estates. First Food-Service Job: I was 14 years old and worked in a little sandwich shop on a pier in a beach community in Massachusetts. Favorite Food: French fries and béarnaise sauce (with champagne, of course!) Most Humorous Kitchen Mishap: The day before Christmas Eve, I was making my crystallized ginger and pumpkin tart. I had the bowl of my mixer filled with my wet ingredients and accidentally turned the mixer to the highest speed and the filling went everywhere! On the ceiling, on the walls, all of me — it was a mess. Favorite Food to Prepare: I love making earthy food with really good ingredients that remind me of being in the kitchen with my nana. If you couldn’t be a chef, what would you be and why: I would be a florist! I have been drawn to flowers and the art of floral design for decades. Flowers are an important part of my everyday life; in the kitchen, on the table, and in the garden! Best advice you ever got: Do what you love and the money will follow. Where do you like to vacation: My favorite spot to vacation is Paris, France. My husband and I usually go a few times a year for a couple weeks at a time to really live and eat in our favorite city (other than Chicago). What do you enjoy most about FIN: I enjoy discovering new people and read about what creative things they are doing! Other than family, who was your greatest culinary influence? I grew up watching re-runs of Julia Child on PBS with my nana — those memories are ones I will cherish forever.

Amazon will soon add four Fresh grocery locations in the Chicago suburbs, hiring 1,500 new workers to bring the high-tech, brickand-mortar shopping experience to the city. Harassment Training: Don’t forget! Starting this year, all employers in Illinois must provide annual employee training on workplace sexual harassment prevention. Despite the COVID-19 pandemic, the state is requiring the training to be completed by Dec. 31, and on annual basis thereafter. Employers have the option to outsource or facilitate the training in-house provided the training meets or exceeds the minimum standards outlined in the Illinois Human Rights Act, which include: n an explanation of sexual harassment consistent with the IHRA; n examples of conduct that constitutes unlawful sexual harassment; n a summary of relevant federal and State statutory provisions concerning sexual harassment, including remedies available to victims of sexual harassment; and n a summary of responsibilities of employers in the prevention, investigation, and corrective measures of sexual harassment. Employers within the restaurant and bar industry are subject to additional requirements: n Provide supplemental harassment prevention training specific to the industry and an explanation of manager liability and responsibility (with English and Spanish language options). n Create and distribute a sexual harassment policy (in English and Spanish) to all employees, in writing, within the first calendar week of the employee's employment. Panera Is Using New Low-Carbon Footprint Labels Panera Bread will start labeling menu items with the lowest carbon footprints with the World Resources Institute's “Cool Food Meal” badge. The label will be applied to the 55% of the chain's menu items that generate less than 5.38 kilograms of carbon dioxide equivalent, CEO Niren Chaudhary said. Chaudhary said in an interview that the change is meant to raise awareness about the link between food and greenhouse gas emissions and give customers the ability to make an informed decision. “We would love to see the food industry embrace this,” he said. “Just by the choice you make on your entrée, you can have such a dramatic impact on the environment.”-Source:
