Sketchbook Brewing Company opened the doors to its second taproom this summer. The location, 4901 W. Main St., is the first brewery to open in Skokie, Ill. The new site boasts a large patio, 4,000-square-foot interior and a brewing system that’s three times the size of the original in Evanston. “We had outgrown our Evanston brewery, and Skokie welcomed us with open arms,” said Cesar Marron, managing partner at Sketchbook, along with Shawn Decker. Marron and Decker started out as home brewers. Guests can choose from up to 20 beers on tap. Takeaway cans and growlers are also for sale. Sketchbook offers light snacks and customers can bring their own food. A parking lot is available west of the brewery, which is adjacent to the Skokie Bike Trail and two blocks from the CTA’s Oakton Yellow Line station. While walk-ins are welcome, reservations are encouraged in order to ensure social distancing. -C.C. a

Local, State Groups Across Country Aim to Help Ailing Restaurants Restaurant associations in states including Illinois, Texas and Ohio are creating initiatives to help restaurants stay afloat as further federal relief from Congress stalls. Pork processors are shipping out large pieces of meat for further processing. They are not doing as much because they don’t have the people to do the work. Just how popular is pepperoni? Nat’l Restaurant Assn. Launches Campaign to Entice Diners Grills firing up; silverware against a plate; and the familiar clink as glasses connect over the laughter of friends together again, these are the rhythms of dining out that the National Restaurant Association is highlighting in its new multimedia Restaurant Revival campaign. The national ad taps into the sights and sounds associated with eating out and asks diners, “Doesn’t dining out sound good?” “This campaign is about reigniting the memories we cherish about dining out. While diners have been able to enjoy some restaurant meals through take-out and delivery, we all have missed hearing the words, ‘Your table is ready,’ and the unique experiences that dining out provides,” said Tom Bené, president & CEO of the National Restaurant Association. “We know safety is top of mind for returning diners—it’s top of mind
for us as well—so, the ad pairs the familiar sights and sounds with new visual safety cues, including servers wearing masks and the ServSafe Dining Commitment door decal.”
Where restaurant dining rooms are open, owners and employees are doing everything they can to create safe and inviting experiences. As part of this campaign, the National Restaurant Association and ServSafe launched the ServSafe Dining Commitment, an initiative showcasing restaurants that have demonstrated their ongoing commitment to the health and safety of their employees and guests. Through participation in the program, a restaurant is assuring returning customers that the operation is following recommended reopening
guidance and is ready for business. On the ServSafeDining.org website, consumers can see what restaurants are doing to keep them safe and use a locator tool to find participating restaurants. This is the first national consumer ad campaign from the association. It worked with the Richards Group to create the unique feel for the storytelling and partnered with Coca-Cola, DoorDash, Stella Artois, Ecolab, Beam Suntory, Cargill, Tyson, Hormel Foods, International Foodservice Distributors Association and GP Pro to launch the campaign nationwide. “Support for this campaign spans the entire industry. From well-known, trusted brands to the suppliers and distributors restaurants rely on, every part of the food-service community is coming together to help restaurants recover,” said Tia Mattson, executive vice president

Rockford Coffeemaker Honors Naval Tradition Veteran-owned Fire Department Coffee has introduced its newest coffee roast, Shellback Espresso, paying tribute to one of the Navy’s most time-honored traditions and shining a light on the deep connections between the Navy and the fire service. In a centuries-old seafaring tradition, upon crossing the equator for the first time, a sailor sheds their lowly “Pollywog” status and becomes a “Shellback.” The occasion is marked by an elaborate ceremony that incorporates the mythology of King Neptune and Davy Jones. Shellback Espresso features a blend of Brazilian, Indonesian and Colombian coffee beans, harvested along the equator. Fire Dept. Coffee founder Luke Schneider served in the U.S. Navy from 2004 to 2008, receiving an honorable discharge as a Damage Controlman 2nd Class Petty Officer. He also obtained the Shellback status, reserved for sailors who have crossed the equator. “The Shellback Espresso honors those who serve and have served in our U.S. Navy,” said Schneider, who is a full-time firefighter and paramedic in Rockford, Ill. “Every sailor is trained as a firefighter so there’s a natural connection between shipboard firefighters and civilian firefighters. Helpful Hints to Tell Whether Your Hand Sanitizer Is Up to Snuff Although soap and water will always win the hand hygiene game, hand sanitizer is a passable stand-in to deactivate most germs. Unfortunately there are many brands sold that can't do the dirty work. Here are five signs that your hand sanitizer isn't up to the task.
1. It's made with essential oils instead of alcohol. Some websites and blogs have promoted essential oil hand sanitizer recipes, especially this year in light of product shortages due to the COVID-19 pandemic. The CDC says a hand sanitizer must be at least 60% alcohol to be effective. Essential

oils contain zero, so unless you’re adding alcohol, skip the recipe. 2. You've been storing it in your steamy car. Contrary to that viral social media post, your hand sanitizer won't burst into flames or explode if you store it in your car. It will, however, begin to lose potency. The FDA recommends storing your hand sanitizer in areas where it's always less than 105° F. 3. If you're trying to use it on visibly dirty hands. Hand sanitizers are quick and efficient for healthcare workers to use in hospitals and all of us to use on-the-go when soap and sinks aren't handy. Still, when hands are noticeably dirty or greasy, the CDC says you should wash hands thoroughly with soap and water. 4. It's marketed specifically as a solution for COVID-19. The FDA allows "unlicensed entities" (such as distilleries) to register as facilities to make alcohol-based hand sanitizer "during the duration of the emergency." These can be slightly less regulated. Be on the lookout for a drug facts label that lists ingredients and alcohol percentage. 5. It doesn't have— or is past its—expiration date. Unless a product is stable for more than 3 years, the FDA says it needs to list an expiration date. If your bottle doesn't have a date listed or is past its prime, buy a new one. -Eating Well

A car hop will take your order and bring it out to you. Ace is known for its sandwiches and root beer. They also have burgers, hot dogs, ice cream and so much more. I ordered one of their beef sandwiches, which was tasty, along with fries and of course, a root beer. They have a few tables outside. Check their hours, because they are open seasonally. A&W ALL AMERICAN FOOD, 113 S. Lincoln Way, NORTH AURORA, Ill.; 630-844-9393. It’s always a treat for me to go to A & W and get a root beer float: It is soft-serve vanilla and delicious root beer soda. The root beer here is so good. On the menu there is also soft-serve cones, sundaes, shakes and polar swirls. Plus, there is a full line-up of fast-food favorites; burgers, chicken, hot dogs, onion rings and more. I also tried an order of the Wisconsin cheese curds, which were lightly breaded. EL FAST BURRITO, 1165 Lee St., DES PLAINES, Ill.; 847-2991144. This is a small storefront restaurant serving Mexican specialties. They have a big selection of burritos, whether you want it with meat or vegetables. They have tacos, nachos and more. I have two favorite things I order from here: the steak burrito and the steak tostada. I always get an order of the guacamole. It is made fresh to order and it is consistently good! The guacamole comes with a bag of fresh made chips, too. The guys working there are the best! JERRY’S QUALITY MEATS, 3706 Dempster St., SKOKIE, Ill.; 847677-9360. Jerry’s is located in a strip mall and has been serving the neighborhood for years. My mother-in-law always purchased skirt steaks and tenderloin here. It’s a small butcher shop offering prime cuts of meats along with friendly and knowledgeable service. I picked up a prime piece of sirloin and some of their burgers. I cooked them up on the grill and the meat was so tender and delicious. MISSION BBQ, 1570 Butterfield Road, DOWNERS GROVE, Ill.; 630-824-3606. I had the five-bone “BAY-b-Back” ribs, which were very tender and I chose a side of fresh cut fries. Both were tasty and delicious. If you choose an American Heroes Cup, your refills are only 99 cents, and $2 is donated to support nonprofits. They do a lot of giving back through charitable donations toward many organizations including firefighters, police and military. ONCE UPON A BAGEL, 1888 1st St., HIGHLAND PARK, Ill.; 847433-1411. This is a well-known, classic Jewish deli. They have a huge variety of fresh bagels and even skinny bagels. To go with your bagel, there is an assortment of cream cheeses. My favorite is the chive. They offer breakfast, sandwiches, salads, soups, lox, baked goods and so much more. To the right of the deli counter, they have coolers stocked with to-go items. I saw a lot of deli trays being picked up along with to-go orders while I was dining outside. Did I mention they have great customer service? WAHLBURGERS, 825 S. Randall Road, ST. CHARLES, Ill.; 331235-5200. I’m a fan of the Wahlberg brothers, so I definitely had to check this place out. They recently opened and since there was a long line to get in, I decided to place a to-go order. I tried the barbecue bacon burger (Donnie’s Choice); it came with white cheddar, barbecue sauce, avocado spread, bacon and jalapenos. It was really good! My friend tried the Jenn’s Chicken, which was a chicken breast sandwich with two kinds of onions and a honeygarlic mayo. For our sides we tried the sweet potato tots and regular tater tots. I plan to go back soon and dine inside.

Children of Hormel Workers Eligible for Tuition Benefit Hormel Foods Corp. will pay the tuition of a two-year college for any of its employees’ children, the company announced. Every graduating senior with a parent or caretaker who works at Hormel will be offered a free community college education. The program is designed to be inclusive, without a GPA or test score threshold. The only academic requirement is that the student has to graduate high school and meet any standards outlined by the college. Molson Coors Donates Water After Hurricane Molson Coors Beverage Company donated 200,000 cans of water to the American Red Cross to help support recovery efforts in communities along the Louisiana and Texas coasts that were hardest hit by Hurricane Laura. “In times of distress and crisis, Molson Coors believes that access to safe drinking water is critical,” said Michael Nordman, senior manager of community affairs for Molson Coors. Largest Pizza Hut Franchisee to Sell
NPC International is preparing for the sale of “all of or a portion of” its Pizza Hut business and the closure of up to 300 restaurants after coming to an agreement with Yum Brands Inc. as part of ongoing bankruptcy proceedings, the company said. The Leawood, Kan.-based franchise operator is the largest Pizza Hut franchisee with 1,227 restaurants in 27 states, representing about 20% of the pizza chain’s system in the U.S. As NPC International begins the sale process, the agreement with Yum Brands will allow the franchise operation to close up to 300 unprofitable Pizza Hut restaurants, or almost 25% of its total Pizza Hut portfolio, most of which are dine-in restaurants. First Food-Service Job: Started working at 13 as a dishwasher at Asselta’s Italian Restaurant in Wildwood, N.J. Favorite Food: Homemade pasta Memorable Customers: I used to own a motion picture catering company called Movie Chefs and worked for many years on movie sets. I still think about cooking for Paul Walker during “Fast & Furious 2” and Jim Carey during “Ace Ventura 2.” I personally delivered their meals every day and got to know them. But I will never forget my time at Wildfire Oakbrook because we had just started our gluten-free menu, and many customers would come in and tell me that I knew more about eating gluten free than their doctors. I was able to customize their meals and let them experience a safe meal in a restaurant before most knew what gluten free was. Worst Part of Job: My biggest challenge is navigating the how our business has changed during this pandemic and what the future holds. Favorite Food to Prepare: Anything barbecue on my smokers. It requires a blend of art and science to achieve great results. On the flip side, I also like to prepare healthy recipes and make them taste great, which is sometimes a challenge. What part of the job gives the most pleasure? No. 1 is identifying and working with great people and watching them grow into leaders. A close second is preparing a meal that makes people happy. For me there is no better feeling than that in hospitality. If you couldn’t be a chef, what would you be? After 40-plus years in the hospitality industry, the only thing I could see myself doing would be a vegetable farmer. Favorite vacation spot: The Jersey Shore. Best advice you ever got was: An amateur does the job only when the boss is looking but a professional does the job when no one is looking. What do you enjoy most about FIN? It is a great way to keep up with the local Chicago food scene and restaurant industry. Other than family, who was your greatest culinary influence? Chef Katsuo Sugiura aka Chef Suki. I met him while I was working at the Trump Castle in Atlantic City and followed him to Miami to work at the Grand Bay Hotel. They were a five-star hotel at the time. He taught me what it was to be a professional chef and to hold yourself to a higher standard than everyone else.

For decades, smart food-service operators have been trying to sell desserts to their customers. They increase check averages, drive coffee and cordial sales, and are also great add-on items for delivery and carry-out orders. Canadian Vegan Meat Shop Expands Vegan meat brand The Very Good Butchers— owned by parent company The Very Good Food Company—recently announced plans to build out its Vancouver production facility and expand into the United States. The company began as a local provider of vegan meats in 2016 and has quickly grown to sell its plant-based burgers, hot dogs, pepperoni, bacon, steaks and more through Canadian retail outlets, along with its own shop. The U.S. expansion plans are supported by $8.5 million that the company raised in the closing of oversubscribed funds from its public offering in June. In addition, VGB has partnered with three new logistics partners that will allow the company to get its products to customers anywhere in North America within three days via ground transportation. Dr. Pepper Shortage Due to Coronavirus Since the coronavirus pandemic began, the U.S. has experienced shortages of toilet paper, hand sanitizer, bleach and even puzzles. Now, Dr. Pepper has been added to the list. Meijer Extends Hunger Relief Effort Through the End of This Year Meijer announces that its seasonal hunger relief program, Simply Give, will conduct backto-back fall and holiday campaigns to ensure the maximum amount of support for food pantries trying to keep up with increased demand caused by the coronavirus pandemic. Each Meijer Simply Give campaign replenishes the shelves of more than 250 food pantries in Michigan, Illinois, Indiana, Ohio, Kentucky and Wisconsin. With the addition of this program, US Foods customers have access to exclusive resources developed to streamline the process of starting a ghost kitchen, including proprietary technology to help identify menu opportunities, a detailed playbook to guide decision making, dedicated marketing support, webinars and one-on-one consultations with US Foods specialists. Ghost kitchens, also referred to as dark or virtual kitchens, are professional kitchen facilities set up to support delivery or carry-out meals only. Currently, with dine-in restrictions due to COVID-19, most restaurants are experiencing challenges managing through the minimum dining room capacity operators say is needed to make reopening work financially. Tallboy Taco has opened at 676 N. St. Clair St. in Chicago. Inspired by the culture of California street tacos, the fast-casual restaurant serves tacos on hand-pressed corn tortillas using local white corn masa. The menu offers tacos such as grilled chicken chimichurri with Harrison’s Farm chicken breast, pork al pastor with Beeler’s pork, 18-hour smoked brisket, masa-crusted crispy fish and more. Denny’s Gives Away Breakfast in Area Hit Hard by Hurricane In September, Denny’s sent its Mobile Relief Diner to Lake Charles, La., to help feed residents and responders following Hurricane Laura. The diner is a custom-built, 53-foot kitchen on a big rig that serves free hot breakfasts to those in
need across the country. The fully-functional diner on wheels was specifically designed by Denny’s to travel in the U.S. during emergency situations to serve free hot pancakes, along with bacon, coffee and drinks. Earlier this year, the mo-

According to researchers at Edith Cowan University in Australia, eating more cruciferous vegetables (such as broccoli, Brussels sprouts, cauliflower, and cabbage) could be the key better blood vessel health. In the study, the researchers looked at data from 684 women in Western Australia who were recruited in 1998. Results show that women who eat more than 45 grams of cruciferous veggies each day—equal to about a quarter cup of steamed broccoli or half cup raw cabbage—are 46% less likely to have calcium build-up on their aorta. The buildup of fatty calcium deposits on the aorta is a key marker of blood vessel disease. It’s also the biggest contributor to heart attack and stroke. Takeout, Delivery Expected to Grow Post-Pandemic, Says Chili Parent
Drive-Thrus Help Sustain Chain Restaurants
Chili’s parent Brinker International is expecting that customers will order more takeout and delivery in the months and years to come than before the coronavirus pandemic. “I don’t think that we’ll ever go back to the mix we ran prior,” said Brinker CEO Wyman Roberts, who credited the pandemic for pushing many consumers to try delivery through third-party apps for the first time. Before the pandemic, only 20% of Brinker’s sales came from takeout and delivery. Roberts said it’s unlikely that number will ever fall that low again, thanks in part to the latest addition to Brinker’s portfolio. During the pandemic, Brinker unveiled its first virtual restaurant brand, It’s Just Wings, through its partnership with Doordash. Chicken wings, fried Oreos and fries are made in Chili’s and Maggiano’s kitchens but are only available for delivery by Doordash. Roberts said that the virtual brand is expected to gross more than $150 million in sales in its first year. Roberts said that about half of its sales are now coming from dine-in customers, although Chili’s and its sister chain Maggiano’s Little Italy still lack full dining room capacity. Swiss Town Gets Dusted in Cocoa Residents of a Swiss town got a bit of a shock when it started snowing particles of a fine cocoa powder after the ventilation system at a chocolate factory malfunctioned. The Lindt & Spruengli company confirmed local reports that there was a minor defect in the cooling ventilation in its factory in Olten, between Zurich and Basel.
