LOU MALNATI’S CELEBRATES 50 YEARS OF CHICAGO PIZZA Considered the oldest family name in Chicago pizza, Lou Malnati’s is as rich in history as its pizza is in flavor. Lou Malnati got his start in the 1940s working in Chicago’s first deep dish pizzeria. He took his pizza expertise to Lincolnwood, a northern suburb of Chicago, where he and his wife, Jean, opened the first Lou Malnati’s Pizzeria on March 17, 1971. Lou Malnati was known for his fun-loving character as well as making Chicago’s best pizza. Loyal patrons lined the streets on opening day for a taste of his delicious deep dish creations. New Smashburger in Schaumburg is Serving Breakfast All Day

Denver-based burger chain Smashburger, a fast casual better burger restaurant known for its Certified Angus Beef burgers smashed on the grill to sear in the juices and seal in the flavor, recently opened in Schaumburg for takeout and delivery at 1721 E. Golf Rd. Located near the Woodfield Mall, the restaurant will unveil a new look, deliver an elevated fast casual dining experience, and serve an all-day breakfast menu. “Schaumburg has been known as the ultimate shopping and dining destination in Cook County,” said Carl Bachmann, president of Smashburger. “We look forward to being at the heart of this bustling area.” The Schaumburg restaurant will be among the first Smashburger locations nationwide to serve breakfast. The new location is open for takeout and delivery.

Arcada’s Rock’N Za Pizza Opens Soon Culminating a 10-month renovation project, a new pizza experience is coming to St. Charles, Ill. Ron Onesti, president and CEO of Onesti Entertainment, announced the wood-fired pizza experience will be opening soon. “After months of renovations on the Arcada Theatre and its surrounding storefronts, we are ready to begin the re-opening process." Onesti said. “I am very excited to bring the community back for music and meals, in a safe way." The first of Onesti's creations to open will be a new and unique pizza and grab-and-go food experience. Since the eatery is more of a storefront, with a wide variety of grab-and-go food options, customers can safely order food in a carry-out fashion and wear masks. Living up to its name, Rock 'N Za will feature over 20 wood-fired pizzas, cleverly named after famous musical artists such as the Ides of Mushroom, The Freddie Meatball, the Chubby Checker Chicken Parm and more. Scofflaw Launches Pop-Up for Pickup and Delivery After being closed for a few months, Scofflaw bar has returned with a menu available via DoorDash. Items include meatloaf, cheesy baked rigatoni, “Better Than Ikea” Swedish meatballs, and split pea soup with ham. They’re calling the effort from chef Matty Lehto (Publican, Publican Anker), Chin Up, Buttercup. Beer and wine is also available, and so are Scofflaw’s bottled cocktails. EARL’S BBQ, 4835 N. Austin Ave., CHICAGO; 773-628-7870. If you like barbecue, then you definitely have to check this place out. I ordered a couple of things from here. The first was a half slab of their baby back ribs. It was smoked to perfection, meaty and flavorful; and it came with two sides. I got the cole slaw and some baked beans. My choice of sauce for the ribs was sweet barbecue. Plus, I ordered the BLT sandwich, which was incredible. The bread and the bacon was so good and it came with one side, so I got the charred corn. Yum! EL AUTHENTICO BURRITO, 16143 Weber Rd., CREST HILL, Ill.; 815-838-3030. This is a small restaurant in a strip mall. They have a good-sized menu and their prices are very reasonable. They serve burritos, tacos, fajitas and a good selection of dinner entrees and seafood dishes. I tried the steak and eggs, which came with salad, rice and beans, and tortillas. It was so filling. My drink was coffee; they serve Thomas coffee there. They also have a location in Bolingbrook. KATZ’S GYROS, 10000 W. Grand Ave., FRANKLIN PARK, Ill.; 847260-5888. Fast food place with a drive-thru offering beef, burgers, dogs, salads and more. They have three sizes of gyros sandwiches: the mini (4 inch), regular (6 inch) and the king (8 inch). I ordered the special meal—a regular size chicken gyros, fries and a drink. The chicken had a nice flavor and they gave you plenty of meat loaded in a pita. I loved their homemade tzatziki sauce. It was so fresh. MR. BURRITOS, 570 Iriving Park Rd., BENSENVILLE, Ill.; 630521-0912. One of my friends recommended we get a bite to eat here. They serve authentic Mexican food and have two sizes of burritos: baby and giant size. I decided to order the taco plate—two chicken tacos, and one steak taco with choice of tortillas. I ordered the corn tortillas, and it came with rice and beans. They gave us some chips and salsa along with our meal. Mr. Burritos has fast and friendly service, and they also cater, deliver and have a drive-thru window. OAK PARK BAKERY, 904 S. Oak Park Ave., OAK PARK, Ill.; 708383-1712. This is a cute, old-school bakery. The lady who waited on me was so sweet. I picked up a few items that included a chocolatechocolate cupcake that had cream filling inside, a pastry called hot dog in a bun, a sweet roll and one of their brownies with nuts. I have to go back for a few more of those brownies. Everything was so good. They also have cakes, breads, pastries and many more baked goods. RIO VALLEY MARKET, 2745 N. Mannheim Rd., FRANKLIN PARK, Ill.; 847-451-8440. This is a full-size grocery store where you can pick up all your regular staples, beer, produce and meat items. They also carry a lot of ethnic products too. Brands include Bimbo, Goya, La Preferida, San Marcos and La Costeña. In the canned goods section, they had a large variety of jalapeño slices and supersize cans of beans and hominy. They also had some interesting snack mixes located in the front of the store and by the checkout. RIO TWIN DRAGONS, 1820 W. Army Trail Rd., HANOVER PARK, Ill.; 630-289-4880. I was in the mood for some Chinese food, so I stopped in. I ordered Delight Lo Mein, which is shrimp, chicken and beef with some veggies over soft noodles. It was delicious. They are very serious about safety in this place. When you get your to-go order, you have to be masked and hand your credit card between some plastic sheets for protection. This is also how they give you pick-up orders as well.

Major Burger King franchisee Carrols Restaurant Group is shifting back into acquisition mode after hitting pause for much of 2020, CEO Dan Accordino said. Matt continuously believed in me, pushed me to become better, and taught me how to apply cooking foundations in a restaurant setting. Matt shaped me into a strong leader and showed me that sometimes the hardest moments in the kitchen are the most valuable. Most importantly, Matt showed me how to balance both having a family and run a thriving restaurant in tandem. Not a day goes by that I don’t use one of the lessons or cooking techniques that Matt ingrained in me.

Jim Pappas started the restaurant in 1986 and today, along with his two sons Frank and Sam, the business continues to thrive. They have a loyal following with a lot of repeat business, and their motto is, “A family business where quality still counts!” There’s no slowing down here. Looking at the menu, I would say they have over 200 items to choose from. Frank says, “If you’re looking for something to eat, you’ll find it here.” The selection is endless. For the larger appetite, there are a lot of items to choose from, which include the Big Italian Beef, Big Mama Angus Cheeseburger, Big Mannheim Chicken Philly and the Football Super Taco just to name a few. The Hungry Men’s menu comes with large fries and a large drink.

Albertsons Companies Debuts Kiosk for Automated Grocery Pick-Up at Jewel-Osco store in Chicago Albertsons Companies announced that it is the first American grocer to pilot an automated and contactless grocery pickp kiosk. The kiosk, located at one of its Jewel-Osco stores in Chicago’s South Loop, demonstrates continued expansion of the company’s eCommerce business and deep commitment to providing easy service through its websites and apps. Customers who select the “Kiosk PickUp” option will be offered two-hour time slots during which to pick up their groceries. When customers arrive at the kiosk, they scan a code on their phone and their groceries come to the front of the unit for pickup. The unit features two temperature zones: regular and a deep freeze. A customer’s order can be stored in two different zones and still be delivered in the same console for pick up. The kiosk in Chicago is currently fulfilling orders.

Decorated chef Doug Psaltis has opened Andros Taverna, a new restaurant and his passion project built out of love—love for food, family and community, honoring heritage and tradition. Restaurant Coalition Claims Cautious Victory with Indoor Dining The Chicago Restaurants Coalition (www.chicagorestaurants.org), a group of Chicago voters, restaurant owners and food service businesses, is claiming a cautious victory over the January announcement by Mayor Lori Lightfoot and state officials that indoor dining can resume at 25% occupancy or a maximum of 25 people, with a maximum of 4 people per table. Foremost and always, CRC wants maximum public safety. Restaurants should never let their guards down and strictly continue to follow the COVID-19 safety guidelines. Employees should have clear procedures to stay safe and know whether or not to come to work if they have symptoms. Older employees

should

be helped to get a vaccine.

should have procedures for customer contact-tracing, such as taking the name and number of at least one diner. Since the pandemic began, most restaurants have taken great efforts to keep everyone safe, and their superior efforts are honored. CRC truly thanks the mayor and aldermen who pressed the governor to restore safe indoor dining. From October to January, the mayor's staff said that the city's COVID positivity rate needed to go below 6.5% for indoor dining to be restored. After CRC mobilized restaurants and voters, collected over 500 petition signatures and held several press conferences, the mayor and aldermen pressed the governor, and the governor changed his rules in January to allow indoor dining with the city's positivity rate at or below 8%. CRC had a significant citywide impact. If the rate exceeds 8%, CRC opposes another indoor dining shutdown unless government contact-tracing data is pinpointed to specific restaurants. Indoor dining can't be turned on and off like a light switch, and restaurants have suffered great financial losses. For any restaurant not following the government's safety guidelines, CRC recommends maximum fines. CRC also asks city officials to double their efforts to prevent illegal, irresponsible private parties. CRC was formed last September by Fulton Market Association, a 25-year econom-

The Village of Wheeling has long been known for the Restaurant Row along Milwaukee Avenue. Now the village is earning a reputation for helping restaurateurs construct their next project. Up to $150,000 in grants are available to help build out new sit-down restaurants within the Village’s Town Center-II and North Milwaukee Avenue Tax Increment Financing Districts. The village recently announced a new Restaurant and Retail Build-Out Grant Program, which can provide reimbursement grants toward qualifying building improvements and some labor costs. Many permanent improvements installed inside and outside of the restaurant space may be covered by the grant, including plumbing, electrical, grease traps, bathroom fixtures, permanent seating, bar and kitchen fixtures, black irons, façade improvements, signage and more. In the last few years, Wheeling has continued to grow, with the construction of over 1,000 new luxury apartment units in the downtown area. The main development, Wheeling Town Center, a $110 million transit-oriented development, features 301 luxury residences and 100,000 square feet of retail space anchored by a CMX movie theater. Another nearby development, Uptown 500, recently opened its doors, with 321 apartments and over 10,000 square feet of restaurant/retail space. The Village of Wheeling is offering this grant to downtown businesses to continue this prosperous growth. The grant is also available in the North Milwaukee Avenue area, which includes prominent restaurants such as Buca di Beppo, Cooper’s Hawk, Saranello’s and Spears Bourbon Burgers and Beer. Campbell Soup Co. announced plans to close its manufacturing facility in Columbus, Ga., by spring 2022. In 1926, there was some real excitement in downtown Kenosha, Wis., when six horses pulled Franks Diner to the spot where it stands today. The structure was built by the Jerry O’Mahony Diner Company in New Jersey, and shipped to Kenosha on a railroad flatcar. Anthony Franks, who first learned of the unique restaurant opportunity through a magazine article, paid $7,500 plus $315 in shipping charges to launch his business. He added a dining room in 1935 and a larger kitchen in the mid-1940s. The Franks family operated the diner until 2001 when it was purchased by Chris Schwartz, Lynn Groleau and Kris Derwae from Don Franks and John Gilmore. Chris and Lynn sold the diner to Julie Rittmiller and Kevin Ervin in 2010. This is a small, nostalgic place serving up some great diner fare. Choose from one of the Franks’ Garbage Plates. IRAEF Offering Financial Assistance The Illinois Restaurant Association Educational Foundation (IRAEF) is a non-profit 501(c)(3) organization created to prepare Illinois' hospitality workforce through career exploration, professional development, industry training and annual scholarships. The IRAEF recently expanded its mission to offer support to industry workers by launching the Restaurant Employee Relief Fund. The IRAEF Restaurant Employee Relief Fund provides one-time grants of $500 to support restaurant employees facing an unforeseen hardship due to the COVID-19 pandemic. Grants help to cover necessary living expenses such as rent, food and utilities. Applicants are evaluated in the following order of priority for restaurant workers who: are diagnosed with coronavirus, or are a caregiver for an immediate family member who has been diagnosed with COVID-19, or are quarantined with a doctor’s note; or are out of work for three weeks or more without unemployment benefits. Interested applicants can reapply if their employment situation changes. Applications opened in October, and are available in English and Spanish. To date, the fund has awarded over $230,000 to more than 460 grant recipients, with more to come. The Fund is being supported by the generosity of Southern Glazer’s Wine and Spirits, Grubhub, Associated Beer Distributors of Illinois, DoorDash, EMPLOYERS Group Inc., Mariano’s, UnitedHealthcare and many more. What can business owners, managers possibly do during a difficult market? A hard insurance market is a period of time in which the demand for coverage increases and/or the capacity of carriers to provide coverage decreases. The result of a hard market is that the premium rates a business is paying for the same coverage goes up, there is less competition among carriers for business, and most insurers have more stringent underwriting criteria. As we exited 2020, a number of factors were affecting the insurance marketplace. First, there was a substantial increase in the number of large weather-related loss events over the past few years. Second, interest rates were at historical lows, reducing investment income which carriers have traditionally relied on for profitability, and third, the industry was dealing with a rapidly increasing loss trend across most liability lines. Each of these factors helped drive up prices and reduced coverage availability. Unfortunately, all of these conditions still exist today and the hard market is expected to continue into the foreseeable future. There are several things a business can do to help minimize the impact of a hardening insurance market: 1. It is important that a company’s upper management is involved with and committed to its safety programs to help ensure better safety results and make them a more attractive option to carriers. 2. Businesses should look to start the insurance renewal process as early as possible, from 90 to 120 days in advance of their renewal date. 3. If possible businesses should seek to take advantage of any safety or bundling discounts offered by a carrier. Some carriers will offer discounts for implementing certain safety programs or technology. Look into placing more lines of coverage with a single carrier to see if that provides a savings opportunity. 4. Program Established to Aid Restaurant and Hospitality Workers Launches Women of the Vine & Spirits Foundation, the charitable arm of Women of the Vine & Spirits (WOTVS), has launched a groundbreaking assistance program offering health, financial and legal aid to restaurant and hospitality workers in response to COVID-19. WOTVS Foundation, which provides scholarships to women to advance their careers in the food, wine, spirits, beer and hospitality industries, was faced with the challenge to find an innovative solution to offer aid to those in need. Now, MacCarb makes it easier than ever to maintain customers’ supply of carbon dioxide. “We are starting to roll out a technology that we call telemetry or remote monitoring, which lets us measure how much gas is in the customer’s tank at all times. ... The technology has been out there for a while, but it really has been cost prohibitive to the restaurant industry because the sensors were very expensive” until now. “When we install our system, there’s no capital up front,” McCarthy says. “We lease it to them, they pay us a monthly rental fee. Where it helps save them money Photos Courtesy of MacCarb is reducing the amount of deliveries.” The new system is environmentally friendly too. “With better timed deliveries, trucks aren’t out there burning fuel, emitting unnecessary carbon emissions,” McCarthy says. “It also allows us to do some trouble-shooting or send a service technician out to find a leak, repair the leak and save them money because they’re not wasting the gas.” Plus, boxes on the outside of the clients’ buildings make for contactless delivery. “That’s less we’re on the (customers’) property and less we’re in front of them, so it reduces the amount of time and exposure” during the COVID-19 pandemic. In February, the Senate approved a budget resolution for President Joe Biden’s $1.9 trillion COVID-19 relief package, which included several amendments that would impact the restaurant industry. The passage of the budget resolution will allow Democrats to pass Biden’s plan with a simple majority in the Senate. The amendment is based on the Restaurants Act and establishes a Restaurant Revitalization Fund. Eateries will not need to pay back their grants and can use the funding for benefits, sick leave, mortgages, rent, payroll, maintenance, supplies, protective equipment, cleaning equipment, food and any other essential expenses. Marvin’s Food & Fuel Revives the Classic TV Dinner During the height of the pandemic and social unrest last fall, a new neighborhood eatery opened in in Fulton Market, vowing to promote inclusivity and hospitality in an otherwise divided time.
