California Rice Bowl Packed with omega-3 and vitamin E goodness, and punctuated with briny pops of salmon roe, this clean-tasting rice dish is lovely enjoyed with sake or green tea. Serves 2.

1 ) Combine vinegar, sugar and salt in a non-aluminium saucepan and stir over low heat until sugar dissolves. 2 ) Combine rice and water in a rice cooker and allow to cook. When rice is ready, spread it out onto a flat plate. Sprinkle the vinegar-sugar solution over the hot rice and use a wooden spoon or chopsticks to incorporate the rice and vinegar, taking care not

to break the grains. Fan the rice to cool it down. (Doing this makes the rice grains glossy). 3 ) Divide the prepared rice into two bowls and then carefully arrange the salmon sashimi slices in a fan shape over the rice, followed by the avocado slices. Top with a few slices of cucumber and a spoonful of salmon roe. Serve immediately.

Cod, Olive & Wild Rice Salad This healthy salad is packed with vitamins A, B and C, omega-3 fatty acids, fibre and selenium. It makes a great packed lunch, too! Serves 2. 1 cup cooked wild rice, cooled 120 g fresh cod fillet, cleaned, skin removed 50 g pitted green olives ¼ cup diced red and yellow peppers ½ cup fresh parsley leaves

Dressing: Juice of ½ lemon 1 Tbsp grated lemon rind 1 tsp yuzu soy sauce, storebought 2 Tbsp extra virgin olive oil

1 ) Heat up a pot of water till boiling, then poach the cod, about 5 minutes, until just cooked and still tender. Remove from pot and set aside to cool. 2 ) Prepare dressing. Combine lemon juice, rind, yuzu soy sauce and olive oil in a tight lidded bottle and shake well to mix. 3 ) Mix cooled rice, cod, olives, peppers and parsley leaves in a large mixing bowl, then toss well with dressing. Serve immediately.

Walnut Bread ⅔ cup water 2 cups bread flour 1½ Tbsp sugar 1½ Tbsp dry milk ½ tsp salt 1 Tbsp butter 1 tsp active dry yeast ⅓ cup chopped walnuts (add when the beep sounds)

1 ) Measure ingredients precisely and make sure the kneading blades are properly attached before adding the ingredients into the baking pan in the following order: water, dry ingredients (except walnuts), yeast. 2 ) Insert the baking pan into the breadmaker unit, close the lid and plug the cord into the electricity outlet. 3 ) Select the Basic or Regular course, and press Start. 4 ) When the beep sounds, open the lid and add the chopped walnuts 5 ) When the baking completes, press and hold the Start/Reset key. Remove the baking pan using oven mitts and gently shake the loaf out. Allow bread to cool before serving.

Chicken & Leek Yakitori Perfect with sake or ice-cold beer, this is tasty and requires little work. For even more express cooking, use pre-made yakitori sauce. Serves 4. 4 chicken thighs, skin on, deboned and cut into 1-inch cubes 1 large stem of leek, trimmed and cut into 1-inch sections 1 red capsicum, cut into bite-sized pieces Shichimi togarashi (ground Japanese chilli peppers), as condiment

Served piping hot, this light soupy dish is delicious comfort on rainy nights or when you’re feeling under the weather. Serves 6. 4½ to 6 cups dashi liquid soup base, store-bought Sufficient water, to dilute dashi stock to taste 1½ stalks Japanese leek, thinly sliced 1 large white onion, thinly sliced 1 cup honshimeji mushrooms, wiped clean 1 cup brown enoki mushrooms, wiped clean 10 pcs fresh shiitake mushrooms, wiped clean and scored cross-wise 2 leaves napa cabbage, thinly sliced, for garnish 6 portions dried tang hoon, soaked 30 slices sukiyaki beef (or as many slices as you like) Few sprigs of lamb’s lettuce, for garnish

1 ) Dilute dashi soup base with sufficient water, to taste, then boil with Japanese leek and white onion for about 8 to 10 minutes. 2 ) When mixture comes to a boil, add mushrooms and sliced napa cabbage and boil for about 5 minutes, or until they are cooked through. 3 ) Add tang hoon to the stock and boil for 1 to 2 minutes, then add beef slices and cook for 1 minute (or less, to your desired doneness). 4 ) Turn off heat and dish out into two bowls. Top each bowl with lamb’s lettuce. Serve hot.
