DRIED MANGO SLICES RED QUINOA

Dried Mango Slices make a sweet treat eaten as is, but did you know dried mango is also useful for cooking and baking?

Chop mango into small pieces and soak overnight with rolled or steel cut oats in water, fruit juice, or your favourite milk or plant milk for a delicious ready-to-go breakfast in the morning. The mango will rehydrate and be plump and chewy by morning.

Chop mango into very small pieces and add to breads, cookies and cakes as you would dried raisins or cranberries.

Add mango chopped into very small pieces to green or fruit salads, or while cooking rice dishes or pilaf for a bright flavour.

To rehydrate mango, soak the amount you would like to use overnight in the fridge. If you need it in a hurry, cut into smaller pieces and place in a glass bowl, cover with boiling water and let stand 15 to 20 minutes, or until the pieces are as soft as you need. Drain well. Rehydrated mango must be used within a day or two.

This recipe also includes Cathy's tips for cooking quinoa, which she has perfected through trial and error.

"Rinse quinoa well in cold water and drain well. Toast in a bit of olive oil 1-2 minutes over medium high heat. Add quinoa to large saucepan at ratio of 1 cup quinoa to 1 1/2 cups water. I usually add a bouillon cube at this stage for extra flavour. Bring to a boil, reduce heat and simmer, uncovered, for 12 - 15 minutes or until all water is absorbed."

Dill & Feta Quinoa Salad

The combination of flavours in this salad are simple but fresh-tasting.

4 tbsp olive oil

2 tbsp red wine vinegar

Pinch of salt & pepper

2 cups cooked quinoa, cooled (recipe above)

2 carrots, shredded

2 small zucchini, shredded

1/2 cup chopped fresh dill

1/2 cup crumbled feta cheese

Whisk together olive oil, red wine vinegar, and salt and pepper. Combine all ingredients in a large bowl. Toss until combined. Taste and add more salt & pepper if needed. -- Cathy Kirkham
