Charity Carol Service Steep Church

Tuesday 12 December Bedales Senior Choir will lead a traditional service of reflection for Christmas with carols and readings in the beautiful and ancient All Saints’ Church, Steep. This event will be ticketed to raise money for The Petersfield Food Bank (supported by Petersfield Area Churches Together), which helps people in urgent need in the local community with food packs and fresh produce vouchers. The ticket will also include mulled wine and mince pies that will be served at Bedales in the Sotherington Barn which is very near to the church. Tickets are limited so please book early and access the refreshments by coming first to Bedales and following the signs. And remember to wrap up warm! RECIPE OF THE MONTH

Beef Wellington INGREDIENTS

METHOD

• 3 tbsp olive oil, for greasing • 1kg of beef tenderloin or fillet • Salt as desired • Ground black pepper as desired • 2 tbsp of Dijon mustard • 450g of chestnut mushrooms • 12 slices prosciutto • 1 shallot, roughly chopped • 1 large sprig of fresh thyme • 50g unsalted butter • Flour, for dusting • 12 slices prosciutto • 500g frozen puff pastry, thawed if frozen • 2 large egg yolks beaten

Heat oven to 220C or gas mark 7. Take your tenderloin and season well, with salt and pepper. Place into a roasting tin, brush with olive oil and roast for 15 minutes medium-rare or 20 mins for medium. Remove from the oven to cool and brush with dijon mustard, leave to cool in the fridge. While the beef is cooling carefully chop the mushrooms, shallots and thyme in a food processor, until finely chopped. Do not over chop as the mushrooms will become mush. Add butter to a pan and melt over medium heat. Add mushroom mixture and cook for approximately 10 minutes or until any excess liquid has evaporated. Season with salt and pepper and cool in fridge. Overlap two pieces of cling film over a large chopping board so that it’s twice the length and width of the tenderloin. Lay the prosciutto on the cling film, slightly overlapping so that it can cover the entire tenderloin. Take your cooled mushroom mix (duxelles) and spread evenly and thinly over the prosciutto. Place the tenderlion onto the prosciutto and carefully draw the edges of the prosciutto around the fillet, roll it into a sausage shape twisting the ends of the cling film to make a tight roll. Dust your work surface, then spread out puff pastry and roll it into a rectangle that will cover the tenderloin (just a little bigger than the prosciutto rectangle you just made) and place onto a non-stick baking sheet. Remove tenderloin from cling film and place on bottom of puff pastry. Brush the other edges of the pastry with egg wash, then tightly roll beef into pastry. When your tenderloin is completely covered trim off any extra pastry. Crimp the edges with a fork to seal well. Mark the beef wellington with long diagonal lines making sure you do not cut into the pastry. Cover roll in cling film and chill for 30 minutes or more. To cook, remove the Wellington from the cling film, place in a baking tray and brush with egg yolk. Bake for 20-25 minutes for medium rare, 30 minutes for medium. Allow to stand for 10 minutes before carving and serving.

As an extension of Petersfield Climate Action Network’s annual ‘A Fruit Tree in Every Garden’ project, this year we are delighted to bring you a Tree Festival! On Saturday 25th November, at Petersfield Community Garden, you will be able to collect the fruit trees you have purchased and join us to celebrate the benefits and importance of trees, via a series of workshops. Over the last three years PeCAN has distributed 950 fruit trees for gardens across East Hampshire. Types of trees available included apple, pear, plum, cherry and ornamental cherry. They were supplied with a stake and planting advice. At the Tree Festival we will expand on this, exploring how you can care for your trees and offering advice on how to plant and raise them. It will be an opportunity to learn more about planting, pruning, grafting, and fan training. There will be free workshops throughout the day, and information available on mini forests, soil suitability, and planting for the future - with climate change in mind. This will be an event for the whole family, with activities for children, allowing them to explore tree seeds and find out how to identify different types of trees. Mister Mac HP introduce a Portable computer This really is a portable desktop computer, not a laptop. It is labelled as the HP Envy Move all-in-one PC. It is very similar in looks to their HP Envy all-in-one desktop machine. The difference here is that it is designed to be portable, it has a built-in handle for carrying around. It also has a kangaroo pouch on the back for the wireless keyboard (with trackpad). It also has a built-in battery so you can use it away from the mains for up to four hours. Spec wise it has 13th-gen Intel Core i5 processor, 16 GB of RAM, and 1TB of storage. There’s just a single USB-C and one USB-A port on the side, plus an HDMI in, and the touchscreen has a 2560×1440 resolution. New to Windows 11 Copilot is now available; if your Windows has recently been updated, you might have noticed a new icon has appeared in the task bar called Copilot. Click on it and you will enter the world of AI. Here are some examples of what it can do; If you are writing a document, Copilot can suggest relevant information and insights. For example, if you are writing about the history of England, it will provide you with information about key events, figures, and documents. The Watercress Line Steam Illuminations

Local artist, Sue Webber is holding an exhibition at Petersfield Physic Garden in November. She loves to walk and paint and combines both with her Walking to London exhibition.

Steam Illuminations returns to The Watercress Line from 24 November to 6 January. Experience an incredible light show on and in a steam train, consisting of thousands of coloured LED lights and LED wristbands, creating a kaleidoscope of different colours and flashing patterns. This makes the steam train look magical both inside and out! NEW for 2023 ‘Canopy of Lights’, a sound to light show inside every carriage. Enjoy the fun, interactive show all while hosted by the legendary ‘Voiceover Man’ (as heard on Britain’s Got Talent and X-Factor); laugh with him (or at him) and compete against each other with the singalong “FlashyOke” game”.

Sue spent the past year gradually walking to London in stages. She began by walking from Rowlands Castle to Petersfield and taking the train back home. From Petersfield she walked north to Liss, Liphook, Haslemere and Witley before heading east along the North Downs and then north into London. You’ll probably recognise some of the places she has painted from your own travels. “I have travelled to London by train and car many times,” she says, “and I wondered what it would be like to travel slowly through the landscape that flashes by in the train window.” This exhibition includes some of here favourite moments along the walk and you can also see the paintings and read more about the walk on her website: www.handeyelandsky.com Petersfield Physic Garden, 16 High Street, Petersfield November 16, 17, 18 10am to 4pm. Peggy Guggenheim: Petersfield to Palazzo The Guggenheim name is synonymous with the great cities of New York, Bilbao and Venice, but less so with an historic market town in Hampshire. However, an exhibition opening in the summer of 2024 is aiming to change that. Before buying the Palazzo Venier dei Leoni and the garden behind it in Venice in 1949, for five years (between 1934 and 1939), world-famous 20thcentury patron and collector of modern art Peggy Guggenheim (18981979) lived at Yew Tree Cottage near Petersfield.

The exhibition at Petersfield Museum and Art Gallery aims to explore the multitude of literary, artistic, and intellectual figures of the period with whom Guggenheim interacted and reveal the fascinating untold story of her life in the town and neighbouring West Sussex through her family, friends and lovers. From June 2024, some of the treasures held in the Palazzo’s Peggy Guggenheim Collection are travelling to Britain, representing a rare opportunity to see them outside of ‘La Serenissima’, as Louise Weller, Head of Collections and Exhibitions at Petersfield Museum and Art Gallery explains: “This will not be a standard art exhibition, as it is a unique opportunity to use the multi-disciplinary character of Petersfield Museum and Art Gallery; combining artwork, photography, fashion and literature, to tell an often overlooked part of Peggy Guggenheim's extraordinary life.”
