04 I’m Mike Davies and I love cruise ships and cruising! Since joining GoCruise after 25 years with Marks & Spencer, I have helped many guests enjoy a wide variety of destinations and cruise ships. I have personally experienced over 70 ships including the most recently launched Koningsdam and Harmony of the Seas. This vast experience helps enormously in understanding the differences between ships and cruise lines, as well as keeping up to date with the latest cruise offers.

I have experienced some beautiful, premium and luxury ships, including Oceania, Celebrity, Seabourn, Regent Seven Seas, Silversea, Crystal, Cunard, Azamara, Holland America and Princess, Royal Caribbean, Norwegian Cruise lines and Disney; and some traditional ‘greats’ with Fred. Olsen and P&O. I’ve also enjoyed the rapidly growing area of river cruising with Ama Waterways, Avalon Waterways, Viking and Discover Egypt.

Whatever you need to help make your cruise experience as smooth as possible, I can help! Increasingly, guests are interested in adding on extra days to their holiday, either before or after their cruise, and I can recommend some great options.

I can also help with alternative excursions to those offered by the cruise line.

I am also finding that guests really want the travel to and from their cruise to be as convenient as possible; I can help arrange each element of your travel, from hotel and parking pre-cruise, to flights and personal transfers from airport to ship.

Some guests are approaching their tenth cruise arranged by me and it’s been a pleasure to help very experienced cruise guests, as well as a delight to guide ‘new to cruise’ passengers. Across the Decades: A nostalgic look at how much cruising has changed throughout the years

Our Guide to Gratuities for those who are unsure of how much they should pay, when and how

• Remove the cake from the oven and turn the temperature up to 220C/425F/Gas 7 • Allow the cake to cool down in the tin for 10 minutes then place on a wire rack to cool down fully.

• For the meringue, in a large bowl, whisk the egg whites until they form soft peaks when the whisk is removed.

• Add half of the caster sugar and the cream of tartar and whisk until stiff peaks form when the whisk is removed and the meringue is satiny and glossy. Fold in the remaining sugar with a metal spoon or spatula.

• For the chocolate sauce, place the cream in a saucepan and bring to the boil. Add the chocolate and stir until just melted, then add the brandy (if using).

• Set aside until ready to serve.

• To assemble, once the cake has cooled, place it in the middle of a flat baking tray.

• Take the ice cream out of the freezer. With the help of the cling film, remove the ice cream from the pudding bowl and place it upside down on the cake.

• Quickly spoon over the meringue, spreading it thickly and in peaks over the ice cream and the sides of the cake right down to the baking tray.

• Place in the centre of the hot oven for 3-4 minutes or until the meringue is set on the outside and golden in colour.

• Serve immediately with the chocolate sauce.

For the chocolate sauce 200ml double cream 200g dark chocolate 1–2 tbsp rum or brandy (optional) Method • For the base, line the pudding basin with two layers of cling film, leaving enough hanging over the edge to cover the sides of the basin.

• Place the ice cream in the basin and press down to get a smooth surface • Cover the top with the cling film and return it to the freezer.

• Preheat the oven to 180C/350F/ Gas 4, butter the sides of the cake tin and line the base with baking parchment.

• Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Set aside.

• In a large bowl cream the butter until soft. Add the sugar and beat until the mixture is light and fluffy.

Gradually add the eggs, beating all the time.

• Beat in the melted chocolate, then gently fold in the flour until combined.

• Pour the batter into the prepared cake tin and bake for 25-30 mins

UK welcomes back Norwegian Jade Fans of Norwegian Cruise Line will be looking forward to May 2017 when Norwegian Jade starts sailing from Southampton after a six year absence from the cruise line. The 2,402-passenger ship will be totally refurbished and will sail seven-night Northern Europe cruises to Holland, Belgium and France, nine-night Norwegian Fjords and north Norway trips, as well as four-night mini-cruises to Hamburg.

Anyone for Sushi?

Celebrity Cruises has taken the bold move of replacing its popular French café ‘Bistro on Five’ with ‘Sushi on Five’ – an authentic, casual, à-la-carte sushi restaurant which serves lunch and dinner with no cover charge.

Freshly prepared items include the finest sashimi, hand-rolled sushi, and other Japanese favourites. The menu is created by Yoshikazu Okada, a fourth-generation sushi chef and has already been tested on board Celebrity Reflection and Millennium.

The restaurant will be rolled out across the rest of the fleet throughout the remainder of 2016.

More ships on the horizon for Royal Caribbean Cruises Hot on the heels of Harmony of the Seas – the world’s largest cruise ship, Royal Caribbean has confirmed plans to build a fifth Oasis Class ship, to be delivered in the spring

of 2021. The fourth Oasis class ship will be launched in 2018. These are in addition to two more Edge-Class ships for Celebrity Cruises – set for launch in the autumn of 2021 and 2022. Celebrity have previously announced the launch of two Edge vessels, set to carry 2900 passengers, which are expected for delivery in 2018 and in 2020.

New Exploration Ships for Hurtigruten Hurtigruten has ordered four brand new explorer ships to be designed

by Rolls Royce. The ships will be customised for voyages to the Arctic and Antarctica and will also take passengers along the Norwegian coastline on the voyages Hurtigruten are most famous for. On board, passengers will be able to attend lectures from experts in the fields of history, zoology, botany and more as well as be given the opportunity to enjoy activities such as climbing, kayaking, and whale and eagle safaris.

Set to hold 600 passengers, the ships are expected to be delivered in 2018 and 2019.

Boost for Solo Travellers Holland America Line’s new ship Koningsdam, launched in May this year, has added 12 single cabins in a bid to attract more single passengers.

Cunard meanwhile, has also added 15 single staterooms as part of the Queen Mary 2 refurbishments; while boutique river cruise line Uniworld has waived its single supplement on several European 2016 cruises including the Enchanting Danube departing July 31, August 28 and November 6.

Sri Lanka Stunning Sri Lanka is the perfect introduction to the Sub Indian continent. An island ruled by the sea, it offers palm-fringed beaches sheltering exotic rainforests, ancient relics and colonial towns. Its capital Colombo was once known as the ‘garden of the east’ and its rich history makes it a diverse and fascinating city to visit.

Galle, in the south of the island, is home to one of Sri Lanka’s best preserved colonial towns, the ‘Fort’

– the old Dutch quarter lying at the heart of the city. While the lively beach resort of Welligama, lies 30 kms east of Galle and is famous for its stilt fishermen, as featured on our front cover.

• Noble Caledona’s ‘Sri Lanka to the Seychelles’ voyage takes place over Christmas 2016 and calls into Galle, before heading to the Maldives and then onto the Seyschelles. Departs 22nd December 2016.

Mumbai was formed between 1782 and the early 1990s when the British reclaimed the land and connected the islands together. Now known as the Gateway to India, this vibrant city is simply bursting at the seams – some might say an assault on all the senses yet a rite of passage for those seeking to immerse themselves into modern India. With many Indian Ocean cruises departing from Mumbai, it is the perfect destination to arrange a precruise stay so that you can take in all that it has to offer at your leisure.

Mauritius Inhabited by Dutch settlers in 1635, the formally uninhabited colony of Mauritius promises its visitors endless views of blue seas, white sandy beaches and plenty of sunshine.

From its capital Port Louis, head south towards the striking Trou aux Cerfs crater, formed by a dormant volcano and the Grand Bassin.

Seyschelles Your first view of the Seychelles will most likely be the stunning Port Victoria on Mahe, with a backdrop of mighty mountains and some of the bluest waters you will ever see.

Its neighbour Praslin Island is the second largest and boasts an infectious laidback ambience that quickly engulfs its visitors. Here, you can explore the UNESCO listed Vallee de Mai Nature Reserve – one of only two places in the world where the rare ‘coco de mer’ palm grows naturally.

Mumbai The glamourous home of ‘Bollywood’, Mumbai takes its name from the Goddess Mumba –guardian of the city and the personification of Mother Earth. Originally a string of seven islands, the current landscape of

Andaman Islands This tiny archipelago is comprised of no less than 572 islands including South Andaman Island, home to the capital Port Blair – a charming Indian town surrounded by mangrove forests. As a former penal colony, one of its main ‘attractions’ is the Cellular Jail – a former colonial prison, (now a memorial) which was home to exiled political prisoners during the struggle for India’s independence. You could also explore the 280 square kilometres of the Mahatma Ghandi Marine National Park by kayak or glass bottom boat; about half an hour away from Port Blair.

Legend says that the water in the Bassin is connected to the Ganges in India, making it a pilgrimage site for Mauritian Hindus. In Port Louis itself you can experience an intoxicating mix of cultures including African, Indian, Oriental and European. Hunt for bargains at the heritage-protected central market or sample some of the local snacks on offer at its street stalls.

Having celebrated their 25th birthday earlier this year, we speak to General Manager of Star Clippers UK, Fay McCormack, about what makes Star Clippers so special, and what passengers can look forward to in the exciting months and years to come…

Star Clippers have recently announced a much anticipated fourth addition to their fleet, the aptly named ‘Flying Clipper’ - what can you tell us about the new ship?

Fay: We are very excited about the addition of Flying Clipper which will be the biggest and most ambitious of our fleet to date! Measuring 8770 tons GRT (gross register tonnage) and carrying up to 300 passengers, she will be a near replica of the dramatic France II – the largest square rig sailing ship ever built, making Flying Clipper the world’s largest square rigger and the largest ship of its kind afloat today. She is scheduled to sail

from 2017 and we will be announcing details of her first itineraries very soon… so watch this space!

What kind of facilities can we expect to see on board?

Fay: Those familiar with the rest of our fleet will be happy to see many of the same highlights on board including our popular Tropical Bar, cosy library and bowsprit net. In addition to this, she will boast three pools, a water sports platform in the stern, 34 balcony suites and open-seated restaurant.

The new ship is not the only exciting announcement to come from Star Clippers over the last few months.

You will also be sailing in Indonesian waters for the first time from May 2017. What can you tell us about these itineraries and how popular they have been so far?

Fay: Interest has been really good so far. We have two itineraries on offer in Indonesia, eastbound and westbound, with each direction offering something really unique. I would describe the eastbound sailing as very ‘scenic’, more about the beaches and stunning views – it’s a trip that will really make passengers appreciate nature. A highlight of this 7 night eastbound voyage is Komodo National Park, where guests will have the opportunity to get close (but not too close!) to the infamous Komodo Dragon. The 7 night westbound sailing meanwhile, is perhaps best described as more ‘cultural’, offering an in-depth exploration of island hideaways such as Gili Nanggu and Carik, Lombok, as well as an opportunity to visit Mount Bromo; a striking active volcano situated in the Bromo Tengger Semeru National Park. We also offer a selection of longer itineraries of 10-11 nights which will enable passengers to take in both Bromo and Komodo National Park; as well as back to back sailings of 14 nights for those who really can’t choose!

Given the interest in the new Indonesia cruises as well as the popularity of your Cuba and Asia itineraries, would you say that these more ‘exotic’ destinations are giving traditional destinations a run for their money?

Fay: We have certainly noticed a growing trend towards the exotics.

Our long haul destinations are most popular this year, particularly Thailand, Star Clippers’ Barbados itinerary and Cuba. These ‘soft adventure’ destinations are currently outperforming the Mediterranean. I do think it’s time for a new destination people are ready.

That being said there will always be interest in the ‘iconic faithfuls’ - sailing out of Venice is always going to be popular and our Monaco Grand Prix and Historic GP always sell out fast and need to be booked in advance.

Talking about Cuba – this is a ‘hot destination’ at the moment isn’t it?

Fay: Yes. When it comes to Cuba people are keen to experience it as it is now – and are in a bit of a rush to visit before its unique essence and dynamics change as tourism grows.

So now really is the time to visit.

However there is a real issue with hotel availability in Cuba and this will impact how far in advance you need to book. People also want to see Havana and stay longer to explore – Star Clippers is helping to combat the hotel shortage by extending our Cuba sailings next year to include an extra overnight stay in Havana on the ship.

All of our cabins are extremely wellappointed with ensuite facilities and passengers also get access to the Bridge for an insight into how these magnificent ships sail – a rare privilege! If I could give one tip to new Star Clippers cruisers, it would be to book early – as small ships our capacity is filled quickly.

Finally, can you sum up the SC experience in just three words?

Fay: Ooh three words isn’t a lot!

Can I have four? No. Fay: Ok, then I would have to go with… Memorable, Authentic, Experience!

Would you say that Star Clippers has a ‘typical’ passenger?

Fay: At one time I would have said yes but we get passengers from all walks of life. They are, however, likeminded and prefer the smaller more intimate atmosphere on board compared to larger ocean-going ships. Onboard Star Clippers guests are not tied to dining times or formal dress codes; passengers are independent, active, keen to explore the ports of call and have a sense of adventure – wanting to visit exotic and unique destinations but with the provision of comfortable onboard facilities. Many have a keen interest in sailing as you would expect, but not all.

When it comes to cruising ‘newbies’ would you recommend a product like Star Clippers?

Fay: Yes absolutely. If you like small, intimate ships with no stiff formalities, want to visit wonderful places, aren’t Cruisin’ Magazine 11

Cruising across the

Decades

Back in the 1800s cruising for pleasure was a very new concept.

Traditionally, ocean liners were used for transporting cargo and mail, and while many passengers signed up to join these journeys to experience ships that could go faster than any cargo ships before them, it wasn’t until 1844 that the Peninsular Steam Navigation Company (known today as P&O Cruises) launched the first ‘true’ leisure cruise, designed solely for pleasure, to the Mediterranean.

To accommodate the growing number of passengers on board, ocean liners began to introduce more and more amenities to enhance their level of comfort and transformed cruising into much more than simply getting from A to B – the journey itself started to become the destination with little luxuries such as lighting, more spacious decks, public areas and ‘entertainment’ in the form of shuffleboard, croquet and bowls to help passengers spend the time.

Before the 1960s however, cruising was very much reserved for the rich and privileged. Throughout the early 1900s any migrants seeking travel to wealthier plains were famously relegated to awful conditions within ‘steerage’; squeezed into converted cargo spaces with extremely basic facilities and often separated from the first class by metal gates. Thankfully, with the evolution of the ocean liner came the replacement of steerage with much more accommodating third class cabins. Now, ‘Inside Cabins’ - the lowest cost cabins of today’s cruise ships are actually very comfortable options for those on a budget. Royal Caribbean International has even overcome the issue of inside cabins’ lack of windows with the introduction of their ‘virtual staterooms’.

The Golden Age of Cruising After World War 1, which saw the RMS Lusitania, once the world’s largest passenger ship, sunk by a 18 Cruisin’ Magazine

German u-boat; the Great Depression; World War II, where many ocean liners including Queen Mary were commandeered as troopships; and finally the advent of the first commercial transatlantic flights in 1958; the passenger cruising industry saw massive decline, with many cruise lines losing tens of ships or going bankrupt.

It was clear that a revival was needed.

This marked the beginning of cruising as we know it. ‘Ocean Liners’ gave birth to ‘Cruise Ships’, fitted with more modern amenities, entertainment facilities and benefiting from an expansion of itineraries. Cruise holidays began to be marketed to the

general public as an alternative to traditional land-based holidays and looking back at some of the brochures and adverts that were published throughout the 60s and 70s, it’s clear to see why cruising experienced such a ‘boom’ – a boom that was to be heralded as the ‘Golden Age of Cruising’. With attention grabbing headlines such as ‘Tired or Bored’ or ‘To Sunshine & Gaiety’ and with prices starting from as low as £81, cruising suddenly became affordable for all.

This is a trend that has continued today, with the cruise industry seeing a proliferation of ships, destinations and facilities that appeal to passengers from all walks of life.

With a larger selection of cabin categories, the addition of speciality restaurants, private spa facilities and upgrades to those who can afford it at a supplement, the modern cruise passenger can almost pick and choose their own holiday – tailoring it to their own interests and budgets.

Formal Dining Cunard’s famous ‘Blue Riband’ Mauretania and its sister ship Lusitania first began the tradition of ‘dressing for dinner’ – with wellto-do passengers delighting in experiencing the lap of luxury at sea.

It was the White Star Line (who later merged with Cunard) who truly put the ‘luxurious’ into cruising with the launch of their three Olympic-Class ships, including the ill-fated Titanic.

Whilst many may wish that prices could remain at the level of 1960s cruising, it is fair to say that the evolution of the cruise industry has been more positive than negative for those seeking to travel the world by sea.

With more choice than ever before, those longing for the nostalgia of yesteryear can still find it, whilst those looking for a holiday with a difference can take advantage of the many niche cruise lines and ground-breaking facilities seen on modern ships.

Now, luxury cruise lines including Cunard, Seabourn and Silversea still advocate the spirit of dressing for dinner with at least one, or two on longer cruises, ‘formal nights’ whereby guests are encouraged to don their tops ‘n’ tails and enjoy the first class dining experience of their predecessors.

The majority of these formal nights are now optional however, and most cruise ships offer alternative restaurants and casual dining options for those less inclined to live the high life. The advent of ‘freestyle cruising’ and open dining as opposed to set meal times, has further transformed onboard dining – with mixed opinions as to whether this is a positive, or negative change.

Entertainment Onboard entertainment is perhaps one area of cruising that has seen the most radical changes; which is to be expected when looking at the rapid evolution of technology over the decades. While traditional deck games such as shuffleboard, croquet and lawn tennis can still be found on many long-established cruise lines; modern ships have surpassed the imaginations of many with the introduction of West End shows, computers and X-Boxes for the kids, rock climbing walls along with acrobatic shows and movie screenings.

Whilst it is worth noting that cruise lines do not impose any baggage restrictions, those seeking holidays in the Caribbean will most likely need to catch a flight before boarding their ship. Whatever your baggage restrictions may be, we run through a range of tips that will allow you to carry every item you could possibly need… and much more.

Check the weight of the empty suitcase Different airlines will have different restrictions on the amount of luggage you can take, but a great place to start in losing those vital kilograms is the bag itself. Heavier suitcases can weigh in excess of 5kg, whilst the lightest are around 3.5kg.

Place heavy items just above the wheels This will result in lesser likelihood of lighter or more fragile items becoming damaged in transit. It will also prevent your luggage from becoming top heavy.

Turn clothes inside out If you’ve ever turned up to your destination and unpacked only to discover a mysterious stain on your clothes – it pays to think ahead. Turn your lighter coloured clothes inside out and wrap shoes in disposable shower caps to limit the possibility of any stains.

Make use of empty spaces Speaking of shoes, they will take up a lot of space in your luggage. Try to make full use of this by placing cosmetic bottles or other loose items inside them.

Vacuum packs One guaranteed way of getting more into your luggage is to place certain clothing items in vacuum packs.

Instead of endlessly trying to roll or fold to save space, put your clothes inside the sealed bag and squeeze the air out.

Hide money It pays to be safe and, whilst you will probably want to split your currency between your hold and hand luggage, you might want to take extra precautions. For your hold luggage, why not store cash in an empty cosmetics bottle? Do the same for your hand luggage by putting rolled notes in a lip balm container.

Pack essentials in hand luggage Be wary that hold luggage is often opened for inspection and it is also more likely to go missing than hand luggage. With this in mind, don’t put anything you would be devastated to lose in your hold luggage and carry anything you will definitely need with you at all times.

Plan your outfits in advance Planning your packing in advance will give you time to co-ordinate your outfits. Pick a pair of trousers or skirt for example that you can wear with a number of tops, and choose your accessories carefully. And don’t forget, there are laundry facilities on board most ships so you can wear items more than once!

Gratuities

If you’re a first time cruiser, or even if you’re not, the subject of tipping is often one of the most debated amongst passengers. How much should you tip? Do you have to tip?

Who do you tip and when? The fact of the matter is that tipping ‘etiquette’ can vary dramatically from cruise line to cruise line, but if you don’t anticipate the amount of gratuities you could pay out, you may find your cruise budget has expanded beyond your initial expectations.

It’s worth noting that tips are not mandatory, however they are an accepted way in which you can express your thanks to the crew, including stewards, waiters, housekeeping and many more ‘behind the scenes’ staff who often go unseen.

Traditionally, tips were made by inserting the appropriate amount of money into an envelope and handing them to the crew member in question. Nowadays however, gratuities are generally added to your onboard account automatically to make things easier and are split between the relevant staff members.

Most cruise lines now also allow you to pre-pay your gratuities at the time of booking in order for you to budget accordingly and avoid any paperwork at the end of your cruise. Many luxury and boutique cruise lines, such as Azamara, Silversea, or Seabourn for example, include tips within the overall cruise fare and do not have tipping policies in place; for the more mainstream cruise lines however, we have put together a guide as to the daily amount ‘recommended’ by each of them to enable you to budget in advance:

• Remove the cake from the oven and turn the temperature up to 220C/425F/Gas 7 • Allow the cake to cool down in the tin for 10 minutes then place on a wire rack to cool down fully.

• For the meringue, in a large bowl, whisk the egg whites until they form soft peaks when the whisk is removed.

• Add half of the caster sugar and the cream of tartar and whisk until stiff peaks form when the whisk is removed and the meringue is satiny and glossy. Fold in the remaining sugar with a metal spoon or spatula.

• For the chocolate sauce, place the cream in a saucepan and bring to the boil. Add the chocolate and stir until just melted, then add the brandy (if using).

• To assemble, once the cake has cooled, place it in the middle of a flat baking tray.

• Take the ice cream out of the freezer. With the help of the cling film, remove the ice cream from the pudding bowl and place it upside down on the cake.

• Quickly spoon over the meringue, spreading it thickly and in peaks over the ice cream and the sides of the cake right down to the baking tray.

• Place in the centre of the hot oven for 3-4 minutes or until the meringue is set on the outside and golden in colour.

• Serve immediately with the chocolate sauce.

For the chocolate sauce 200ml double cream 200g dark chocolate 1–2 tbsp rum or brandy (optional) Method • For the base, line the pudding basin with two layers of cling film, leaving enough hanging over the edge to cover the sides of the basin.

• Place the ice cream in the basin and press down to get a smooth surface • Cover the top with the cling film and return it to the freezer.

• Preheat the oven to 180C/350F/ Gas 4, butter the sides of the cake tin and line the base with baking parchment.

• Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Set aside.

• In a large bowl cream the butter until soft. Add the sugar and beat until the mixture is light and fluffy.

Gradually add the eggs, beating all the time.

• Beat in the melted chocolate, then gently fold in the flour until combined.

• Pour the batter into the prepared cake tin and bake for 25-30 mins
