Feast with Leopard’s Leap

Autumn is the perfect time of year for recipes that are moreish and comforting without being too heavy. Try this delicious and easy Chicken Carbonara with a glass or two of the popular Leopard’s Leap Chardonnay Pinot Noir! INGREDIENTS (Serves 4) 250g dried penne pasta (cooked according to instructions on packet) one handful freshly chopped parsley 2 cups cooked/cut up rotisserie chicken ½ cup cream ½ cup freshly grated Parmesan cheese 2 tsp olive oil ½ tsp salt 2 large eggs 250g crispy fried bacon 1 small onion, finely chopped ½ cup chopped mushrooms METHOD · In a large bowl, mix the eggs, cream, cheese, parsley, salt and olive oil and set aside. · In a large frying pan, fry the bacon until crisp, then crumble and set aside. · In the bacon fat, fry the onion until translucent and golden, then add the cooked chicken pieces and stir to coat. · Drain the pasta and, while still hot, add to the onion-chicken mixture and mix well. · Finally, pour the egg/cream sauce into the pasta and stir over low heat for one to two minutes, until fully incorporated. · Remove from heat and fold in the bacon, reserving some to sprinkle on top before serving. · Serve with a well-chilled glass of 2020 Leopard’s Leap Chardonnay Pinot Noir!

Where Old Roads Lead

Old Road Wine Co. knows a thing or two about finding special vines in rugged corners of the Franschhoek Valley. From Old Road Wine Co.’s cellar door next to the road into the village wine maker Ryan Puttick has explored the byways of the valley to find the grapes he needs to craft his best expression of each cultivar. He seems to be on the (old) road to success.

The single-vineyard Pepperwind Syrah hails from lofty vineyards guarded by Verreaux’s eagles, where it is rumoured the cooling south easterly winds also bring the unique peppery spice to the wine. Generous skin contact yields optimal flavour and colour. Malolactic fermentation in the barrel is followed by 18 months maturation in the same second and third fill French oak barrels. The result is an intense wine with layered flavours of berries, pepper spice and outstanding structure. It is characterised by an excellent balance between bright, juicy fruit and integrated, spicy oak and earthy minerality. The finish is moreish and refreshing. Grapes for the Stone Trail Single Vineyard Chenin Blanc are from an unirrigated, 35-year-old vineyard reached by a meandering trail among fynbos and forest. Once trellised this vineyard has reverted to an improvised bushvine. At 380m above sea level the vines benefit from cooling afternoon breezes resulting in fruit with excellent acidity and perfect balance.

Fermented and matured for nine months in mostly older French barrels the result is a wine with length and depth that retains its natural fruit character. Maturation on the primary lees with regular stirring added further complexity. Concentrated yet fresh, with mouth-filling white pear, quince and gooseberry, followed by aromatic almond blossom and a balanced, lingering finish. Its depth of flavour is one of the Stone Trail’s stand-out features, along with a bright, focused acidity and earthy minerality which should see it age well. Based on these two example one hopes winemaker Puttick finds time to explore more old roads in search of fine vines. www.oldroadwinecompany.com

Hazendal: A Destination For All Your Journeys

Stretched across the Bottelary Hills in the Stellenbosch winelands, Hazendal wine estate is a world-class destination offering culture, cuisine, adventure and entertainment for the entire family. For something different, the Pivnushka Beer Garden, brings together the estate’s wines alongside local craft brews and flame-grilled fare in a space that’s ideal for casual get-togethers. The elegant Wine Lounge, offers a number of wine tasting options and The Marvol Gallery, housed in the estate’s historic original first homestead building – is home to an ever-changing roster of artworks, jewellery, sculpture and intricate objets d’art, much of it from Dr. Voloshin’s own private collection which includes an impressive portfolio of works from the respected Grekov Studio and a permanent display of Vladimir Tretchikoff among others.
