Duncan & Co for your bucket list Chef Duncan Doherty’s new venture at Colmant Cap Classique & Champagne Wine Farm brings an entirely new dining experience to South Africa’s gourmet valley.

Duncan explains the concept behind Duncan & Co as “an exclusive dining experience, hosted by me, around one long table in my newly renovated home. Trade travel stories and tips while sharing the experience – knowing you all have one thing in common – the enjoyment of great food and wine! Come alone and leave with friends.” Diners are invited to either book a table of 14 or 16 for a private group or to join fellow foodies from all corners of the globe to share the experience “while trading travel stories and tips.” Duncan & Co.’s menu changes daily and depends entirely on what’s on offer from the markets and loyal suppliers. “Menu ideas are fluid until I am happy that you are getting a unique offering of the best available produce,” says Duncan. On offer are a 3-course menu for lunch and 5 courses for dinner, including a glass of wine or bubbly with each course, dietary requirements can be noted when you book.

Of course, Duncan is on hand to talk diners through it all and offer suggestions if needed. If time permits, start your experience with a cellar tour and tasting of the excellent Colmant bubblies at the tasting room next door. Manzart presents Karin Miller’s ‘past forward’

It was almost 12 years ago when German born architect Migo Manz arrived in Cape Town and first established his art gallery. Initially focused on photography Manz took advantage of a location in the emerging art-focused space between Long Street and Loop Street. Migo’s love of photography was fuelled in part by the exciting and varied work from young South African artists as well as his friendship with French photographer, Andre Villers who was a long-time collaborator of Pablo Picasso. This led to Manz showing his work for the first time on the African continent.

After this initial success, it was a natural progression for Manz to open his gallery to a broader stable of South African contemporary artists including Karin Miller, Christiaan Diedericks, Luhanri Bekker, Lisette Forsyth, Donna Mckellar, David Filer to name a few. Migo vigorously supported the Graduate Collection from the Michaelis School of Art at the University of Cape Town offering selected graduates a springboard to pursue their careers in a commercial gallery environment. Migo moved to Franschhoek in 2010 and cofounded the Holden Manz Wine Estate –A five star country house, spa and restaurant (Franschhoek’s hidden gem!) which proved the perfect location to house his increasing personal collection of contemporary art.

Long-time gallery stalwarts and local South African artists now enjoyed an even more international exposure which has seen the value of their works increase significantly. Manz has assembled a highly select stable of fine contemporary South African artists which provide Franschhoek visitors with a veritable feast to digest – washed down with excellent Holden Manz wines of course!

Miller combines traditional artwork skills and photography with contemporary technology- a fusion of past and present, personal and public – she has developed a unique style that exudes a rich eclecticism, playfulness, quirky humour and the post-modern element of neobaroque. Each facet of the image is carefully chosen and placed to form unexpected combinations and compositions. Karin explains, “I spend days looking for a haunting face in an old photograph, or a beautiful pattern in an antique print”. Her tactic is to transform the everyday into something captivating. With meticulous attention to detail, she can convey theatrical flamboyance, splashes of parody or just about any mood or setting. This body of work suggests a uniquely South African ambience. Mont Rochelle: Festive dining with Chef Shane

Cured Franschhoek Trout

Mont Rochelle’s Head Chef Shane Louw began his training at Cape College, completing qualifications in catering and hospitality, undertaking a series of fast-paced and challenging roles in restaurants in South Africa and the UK.

INGREDIENTS:

• 2x 180g cleaned Franschhoek trout fillets, around 1.5cm – 2cm thick

Before joining Mont Rochelle, Shane gained valuable experience in Michelin star restaurants, Roger Hines at the Harrow (1 Michelin Star) followed by The Square in Mayfair (2 Michelin Stars). Shane is an incredibly passionate and motivated chef and has kindly let us in on the secrets of one of his favourite Christmas recipes. His cured trout, which can be made ahead of time and is perfect to keep in the fridge ready for when friends and family pop in over the festive period.

• 100g salt • 100g castor sugar • 120ml elderflower syrup • 60ml extra virgin olive oil • A sprig of rosemary • 5g pink peppercorns • Peel of an orange

His advice when curing, is to always use the absolute freshest fish you can get your hands on. We are lucky enough to have an abundance of fresh trout in Franschhoek, thanks to Three Streams Trout Farm in the heart of Franschhoek Valley.

METHOD:

1. Place the salt, sugar, rosemary, pink peppercorns and orange peel into a bowl and mix. 2. Allow to stand for 10 minutes. 3. Mix the elderflower syrup and the olive oil together in a large flat bottomed bowl. Separate out half the mixture and keep it safe, you’ll need it later in the process. 4. Place the trout fillets into the bowl with the elderflower mixture for 3 minutes a side. 5. Take the orange peel and rosemary from the salt mixture and reserve. 6. In a clean flat bottom bowl, equally disperse half of the sugar/salt mixture. 7. Place the trout fillets on the salt and cover the fillet equally with the remaining salt mixture. 8. Leave the trout fillets in this position for 20 minutes. 9. Once the 20 minutes has elapsed, remove excess salt mixture from the trout fillets by quickly running under cold slow-running water, then gentle pat dry with a clean kitchen towel. 10. Place the trout fillets in the remaining elderflower mixture for 3 minutes before removing and placing on a clean tray. Portion to desired size. The trout can be served with various combinations, such as beetroot or citrus fruits and crème fraiche. At Mont Rochelle we pair this with grilled gala apples, Granny Smith puree and burnt onion shells, and of course a chilled glass of Mont Rochelle wine!

The Magic of Bubbles

Franschhoeks social calendar event of the year is upon us and as per the norm, guests adorned in black and white can expect to sip on some of SA’s finest Méthode Cap Classiques (MCC) at the ‘The Magic of Bubbles’, presented by Mastercard, taking place on 2nd and 3rd December. While sipping on “stars” is the order of the day, there will also be gourmet foods to feast upon. Those who know their stuff will be delighted to sample the latest offering from L’Ormarins – the L’Ormarins Brut Classique Rosé NV. This hand-crafted MCC is perfectly suited to any occasion with the dominant varietal being Pinot Noir, which contributes the delicate salmon colour. The 2014 Plaisir de Merle Grand Brut is a beautiful addition to any dinner party or mid-week indulgence. And with its recent Wine and Spirits Competition gold outstanding and Bottle Fermented Sparkling Wine Trophy, this South African Méthode Cap Classique will add a bit of dazzle. Le Lude’s custom-build winery is one of the few cellars in South Africa exclusively used for making Cap Classique. Grapes, from specially selected blocks, are hand-picked, during cool early-morning temperatures to ensure optimum freshness. The bunches are pressed whole, a critical part of the process of creating a great sparkling wine, with only the first pressing of juice – the cuvée – used in the making of the base wines. Le Lude is the first South African winery to use

the Agrafe® method in its sparkling wines, implying that that during the time under bottle-fermentation a natural cork was used to seal the bottle instead of the more widelyused steel crown-cap. The word Agrafe® literally means “staple”, and it is this staple that secures the cork to the bottle during the process, as well as after the final process of disgorgement where it gives the wines of Le Lude a distinct feature. Colmant is a firm Franschhoek favourite. From selling their business and home in Belgium to settle with their five children on part of the original Franschhoek farm La Motte in 2001, to importing boutique champagnes while waiting for their first (2006) harvest’s production to be ready for release, to celebrating that event a decade ago, JeanPhilippe and Isabelle Colmant have lost count of the times they’ve popped a cork. Today they produce 50,000 bottles of carefully crafted, stellar-quality sparklings. The grapes used to craft the effervescent Grande Provence

Brut MCC were handpicked from specially selected Pinot Noir and Chardonnay blocks in the Franschhoek valley. The juice was cold fermented and aged for 6 months before it was sealed in the bottle for the second fermentation process. Maturation on the lees for 5 years took place to develop richness, resulting in a complex, rich leesy sparkling wine with a crisp palate. Notes of baked apples, biscotti, brioche and a hint of pears are supported by the delicate bubbles. The Franschhoek Cellar Brut Rosé a delicate sparkling wine made in the traditional method. Launched in 1998, the annual Eat Out Mercedes-Benz Restaurant Awards, celebrates the South African restaurant industry with accolades including the Top 10 Restaurants, Chef of the Year, Restaurant of the Year, and Service Excellence Awards. This year the Top Resturant was awarded to Luke Dale Roberts and his establishment, The Test Kitchen (Woodstock, Cape Town).
