2019 Eat Out Mercedes Benz Restaurant Awards

The top restaurants in South Africa were announced at the 2019 Eat Out MercedesBenz Restaurant Awards on Sunday 17 November at GrandWest in Cape Town. The best of the best in the industry were celebrated in a spectacular display of gourmet food, creative drinks, and top-notch entertainment, which had over 700 guests, including some of SA’s favourite celebrities, on their feet. RECIPE Serves 10 - 12 INGREDIENTS 2 oranges, thinly sliced ¼ cup pomegranate seeds ¾ cup Leopard’s Leap Culinaria Pinot Noir 2 bottles Leopard’s Leap Sparkling, chilled 3 tablespoons sugar 1 cup diced fresh pineapple 1 cup pomegranate juice chilled ice cubes, for serving METHOD In a large jug, dissolve the sugar in the pomegranate juice, stirring vigorously. Add the sparkling wine and Pinot Noir, then add the orange slices, diced pineapple and pomegranate seeds. Serve over ice cubes.

A Wine of Substance – Plaisir de Merle Plaisir de Merle is a hidden gem by all accounts, but a gem by virtue of its great age and the consistent quality of its wines throughout 300 years of winemaking. Located on one of the original Huguenot farms along the banks of the Berg River in the Drakenstein Valley, Plaisir de Merle means ‘at the pleasure of the Blackbird’ in French and is derived from the name ‘Les Plessis Marly’, a small town in the middle of France. Given its roots, the estate remains defiantly French in the heart of Simondium and its wines, an ode to France, made from only the noblest of grapes. In fact, in 1904, C.Louis Leipoldt in his book ‘300 Years of

Cape Wine’ recounts a scene between two of the most celebrated French chefs of their time, M. Escoffier and Mr Van Andel, saying: “In the early years of the century, shortly after the end of the Boer War, the farm ‘Plaisir Merle’ produced one of the finest light dry wines of the ‘claret’ type that has ever been made in South Africa; its delicacy, bouquet, velvety softness and fine aftertaste were highly commended by late M. Escoffier and his friend Mr. Van Andel when they sampled a bottle in London in 1904.” Today, the French legacy continues with the late Dr. Paul Pontallier of Bordeaux First Growth, Château

Margaux having consulted on the wines of Plaisir de Merle for over 13 years. Of the wine Dr. Pontallier said: “The wines are quite unique in the South African context; they have a special balance. There is a lot of power and strength, yet they are soft and round.” Winemaker and Cellar Master Niel Bester has been with the winery since its commercial relaunch in 1993 and has since built on the teachings of Dr. Pontallier and made it his own as evidenced by the wine. British Master of Wine Tim Atkin called it “one of the best producers in the Simonsberg-Paarl.” www.plaisirdemerle.co.za

Whole-baked Rainbow Trout with Tomato and Olives

“I was born in Walvis Bay, Namibia, and one of my earliest food memories was walking to the local fish shop, down a dirt road to buy Smoked Snoek – you could smell it well before you were even close to the fishmonger”, says Chef Eric Bulpitt. “My dad was obsessed with fishing and would often take me along. Its these memories spend around the ocean that contribute to my love for fish, it brings a smile to my heart when I get to break down and prepare seafood. Being in Franschhoek the natural option would be local trout farmed just up the road of course, and what is better than trout cooked over the embers with sweet tomato and good olive oil.” Slow summer lunches of grilled fish and vegetables are made for well-chilled glasses of Sauvignon Blanc. Cellarmaster Edmund Terblanche recommends the 2019 La Motte Sauvignon Blanc with Chef Eric’s Rainbow Trout. It complements the acidity of the olives and tomatoes and has enough body for the fattiness of the fish. INGREDIENTS 1 kg Franschhoek (or Rainbow) trout 200 ml extra virgin olive oil 2 medium red onions, finely sliced 150 ml white wine 150 g pitted green olives 1 head garlic, finely sliced 1 punnet rosa tomatoes (+/- 250g) 1 hand full parsley 50 g capers, rinsed 1 lemon, rind and juice 2 red chillis, cut lengthways into strips METHOD Preheat oven to 220 degrees Celsius. Scale and gut the trout, slant two cuts into the flesh on either side to allow even cooking and to ensure flavour penetration.

The Evolution of Haute Cabrière A JOURNEY CELEBRATING GROWTH AND LIVING BEAUTIFULLY

The newly renovated space makes Haute Cabrière the ultimate belle femme of the Franschhoek Valley. “The project has been about honouring the legacy of our heritage; while celebrating the beauty of evolution. Even though the wines and the destination are ever changing, it will never lose its essence,” says Takuan von Arnim, Director of Wine and 2nd generation Cellar Master. The architect’s brief was to design a space that would continue to create a stylish and authentically meaningful experience for guests; one that could adapt and cater to a variety of needs, for both local and international visitors. The existing canvas of spectacular views and majestic stone arches ensured that the spirit of ‘living beautifully’ could be executed elegantly. Says AD Muller, lead architect at A3D: “The whole ambience is lighter. There’s a powerful sense of arrival, while the flow of the property guides guests through the different spaces and offerings. landscape on one side, and the original European-inspired underground stone cellar on the other. A creative approach to décor has brought a fresh feel of modernity and an elegant style.” Christiaan Barnard of Christiaan Barnard Interior and Design says: “There’s a balance of being chic, yet relaxed; with touches of opulence, whilst maintaining a timeless elegance. My primary focus was to keep the style very understated and accessible so as not to detract from both the natural environment or the experiences guests would have.” The most notable change at Haute Cabrière is the outdoor area which has been transformed and encapsulated in glass, with an expansive infinity deck, allowing guests to enjoy the different spaces, all year-round, while guaranteeing a spectacular view. A strong desire to stay true to Achim von Arnim’s original

vision of creating a wine portfolio that is accessible has been mirrored at the tasting room and restaurant by making the offering available for longer and with varying options. “My inspiration has always been classically French, with an appreciation for the South African palate, which is a natural fit for Haute Cabrière,” says Nic van Wyk, Haute Cabriére’s Chef and Destination Manager. “I would describe the food as elegant yet comforting, and the menus offer dishes that would satisfy locals, yet impress international guests with something completely unique.” Haute Cabrière now offers a food and wine element from breakfast to dinner, and all the in-betweens! Odyssey by Tarabu

Dynamic local jazz and world music group, Tarabu, recently released their second album, Odyssey. The album contains eight original tracks in a variety of jazz and world music styles. There is literally something for everyone to enjoy. The album features Francois le Roux on saxophone and clarinet; Philip Malan on guitar, bass, and drums; and Lucas Heinen on piano and piano-accordion. It was recorded and produced by sound engineer Uys Visser from UV Productions in Franschhoek. Tarabu is a Swahili word meaning “instrumental music”, “concert”, or “joy”, depending on the context. All three musicians are highly accomplished performers and composers, drawing inspiration for their unique style from a wide variety of music genres, such as jazz, finger-style acoustic guitar music, waltzes, tangos, funk, the blues, and folk music from the middle-east and Europe, as well as a few commercial pop styles. Experimentation, creativity, and skill are a few of the key ingredients in this mix that sets them apart.

Every December, the city centre comes to life with hundreds of festive lights. The switching on of the festive lights is something all of Cape Town looks forward to.
