Summer Wines Festival at Leopards Leap

Pop-up restaurant … perpetual bliss Double Michelin-starred Belgian chef Piet Huysentruyt will soon open a pop-up restaurant at The Conservatory on Happy Valley Road.

The pop-up restaurant is a visiting version of Huysentruyt’s Likoké Restaurant in Les Vans in France’s Rhône Valley. Huysenstruyt says that “Everything at Likoké has always been about a story, about roots, soul and emotion and art.” With this philosophy a ‘standard’ pop-up restaurant as a way to keep busy during the French winter simply wouldn’t do and eventually developed into a world tour – “just as a rock band would do.”

True to his rebellious nature his cuisine became famous for revolutionary combinations of noble ingredients and offal. When he published his first book, with food photographer Tony Leduc, it was appropriately titled “Contemporary and Stubborn”. It was also the first time in history that the phrase “ food porn” was coined!

Their first destination was Huysenstruyt’s native Belgium, followed by stopovers in Japan, Indonesia and Singapore. Franschhoek is the restaurant’s last and only African stop before heading back home. The restaurant team is being followed by a TV crew, writer and photographer with a view to publishing a book about their culinary world tour. Huysentruyt attended the Ter Duinen Culinary Institute against his parents’ wishes. He went on to work at some of Belgium’s and France’s most prestigious culinary

Feeling misunderstood and underappreciated Huysentruyt closed his first restaurant and went on to become a celebrity TV chef – creating more than 20 cooking shows and selling more than 4 million books along the way. Likoké welcomed its first diners in 2013 and received a Michelin star a mere five months later. The Gault et Millau Restaurant Guide awarded it three toques later the same year as well as its Discovery of the Year accolade. Today the restaurant is ranked 39th on the WBP Stars World’s Best Restaurants List. The African stop on Likoké’s world tour has particular

continued from page 1 emotional significance for Huysentruyt as his restaurant carries the nickname his father was given in the Belgian Congo. Huysentruyt says Likoké’s core values reflect his family’s roots in Africa, his love of southern France’s terroir and his hardscrabble past in Belgium where he learned to appreciate the uniqueness of simple products. The Boutique Gallery will be supplying artworks to compliment the space at the Conservatory for the duration of the pop up. ‘Large Mute” by sculptor Samuel Allerton and pieces by internationally acclaimed Belgian artist Isabelle Scheltjens, (exclusively represented by The Boutique Gallery in Africa) currently exhibiting in Paris, Dubai, New York and Saint Tropez will be on show. Likoké in Franschhoek will be open from Tuesday to Saturday, between 28 February and 15 March. It will be located at The Conservatory on Happy Valley Road. Piet Huysentruyt’s Smoked Financier Cakelets INGREDIENTS 500g butter 650g powder sugar 450g almond powder 150g flour 550g egg white some salt

METHOD

• Preheat the oven at 200° • Heat the butter till caramel brown and mix with all the other ingredients. Let it rest for a day. • Place the financier dough into silicon moulds. • Bake for 10 minutes. • Cool down and put the golden morsels under a glass dome with some rosemary in it and set the rosemary alight. • Let it burn and smoke the financiers to give a smokey rosemary aroma to the delicacies. Oliver and Becki Cattermole believe Franschhoek needs a relaxed and casual setting offering great food, craft beer, local wine and a chilled vibe. This is exactly what they are creating at their new eatery – Bovine. No doubt it will appeal to locals and tourists alike who are looking for a casual experience. Oliver brings with him a wealth of experience. He started his chef’s career in 2000 at the age of just 17, here in the Franschhoek Valley. His passion and determination have been key throughout his career, during which he worked in various establishments around the globe, including Michelin Star London Capital Club under Jean Christoff Novelli, as well as the world renowned ‘The Ivy’ in London. Moving back to South Africa in 2010, Oliver’s previous job saw him working for the Leeu Collection in Franschhoek, where he was the Group Executive Chef for the various properties which have been opened throughout the village, including Leeu House, Leeu Estates and Tuk Tuk. Opening these properties and going through the process with regards to planning, equipping and then running them has been a great learning experience for Oliver, which he’ll put to good use in opening Bovine.

Don’t miss the one of a kind Art Extravaganza celebrating and exposing the enormous talent South Africans artists have. Taking place on the Dates 17TH and 18TH March 2018, this two-day festival is set to become an annual feature in the Franschhoek Valley. Artists of all genres, Street Performers, Buskers, Mime Acts, Jugglers etc. will delight and entertain simultaneously, at three different venues in Franschhoek. The organizers hope to give valuable exposure to these carefully selected, South African artists, with exceptional potential and talent. Artists will to be painting, sculpting and performing at the allocated venues and each venue will have its own theme and feel with different Artists, Live music, Buskers, Performers and food stands.

Oliver is thrilled to open his own restaurant. Having moved to Franschhoek in 2014, he feels that now is the right time in his career to combine his expertise and local knowledge in a venture of his own. Franschhoek is the right place, and now is the right time.
